Nuestro objetivo en esta edición es ayudarles a celebrar estas fiestas especiales, no sólo con creatividad, esperanza, alegría y cuidado, sino también a abrazar de forma virtual a nuestra comunidad, conectándonos emocionalmente con las ricas tradiciones culturales de nuestro pasado, y ofreciendo esperanza, amor a aquellos que lo necesitan, en el presente.

Desde que empezó este duro momento, he dedicado mi tiempo a este proyecto personal relacionado con mi profesión. Creando así la primera revista interactiva para la comunidad latina en Winnipeg, para dar esperanza a las personas en su aislamiento y ayudar a prevenir la propagación de este virus en nuestra comunidad. Intento hacer mi parte como comunicadora y espero que esto pueda llegar a todas las personas de mi comunidad.

Mi trabajo no es solo como diseñadora gráfica; Como editora también recopilo toda la información y me comunico con mis colaboradores de manera virtual, tratando de seguir los protocolos durante la pandemia Covid-19. Todos los días he visto que muchas personas han sido afectadas por estos tiempos difíciles. La prioridad de la Revista es trabajar para preservar la seguridad de la comunidad, con menos interacción física pero con esperanza, información, cultura y brindarles un espacio para mostrarnos como una fuerte comunidad latina en Winnipeg.

Our goal in this edition is to help you celebrate these special holidays, not only with creativity, hope, joy and care, but also to virtually embrace our community, connecting us emotionally with the rich cultural traditions of our past, and offering hope and love to those in need in the present.

Since this hard time started, I have dedicated my time to this personal project related to my profession. Creating the first interactive magazine for the Latino community in Winnipeg, to give hope to people in their isolation and help prevent the spread of this virus in our community. I try to do my part as a communicator and hope that this can reach all the people in my community.

My work is not only as a graphic designer; as an editor I also collect all the information and communicate with my collaborators virtually, trying to follow the protocols during the Covid-19 pandemic. Every day I have seen that many people have been affected by these difficult times. The priority of the Magazine is to work to preserve the safety of the community, with less physical interaction but with hope, information, culture and a space to show us as a strong Latino community in Winnipeg.

1. ¿Qué te motivo a escoger Winnipeg para construir un nuevo futuro para tu familia?

Mi interés de moverme a Canadá siempre había estado en mi mente desde la universidad cuando tuve la oportunidad de participar en congresos estudiantiles y poder visitar el país. En 1999 me tocó formar parte de la Organización de Estudiantes de Norte América, parte del Consorcio para la Colaboración de la Educación Superior en América del Norte, en donde me desempeñe por 4 años como Co-Presidente junto con una estudiante de la Universidad de Manitoba quien se convirtió en mi amiga y con el tiempo en mi vínculo con la provincia. Durante mi investigación de programas para aplicar a residencia, el Programa de Nominados Provinciales de Manitoba es el único que permite

que un amigo pueda ser tu patrocinador. Hablando con ella aceptó con mucho gusto, pero me hizo la pregunta ¿Estas seguro que quieres venir a Winnipeg? y me recomendó que hiciera una visita exploratoria. Visite Winnipeg en 2013 para conocer la ciudad, la cual me gustó mucho por su gente amable y por ser la tercera ciudad con empresas aeroespaciales en Canadá. Así fue como en otoño 2016 mi familia y yo obtuvimos la invitación a vivir en Winnipeg, Manitoba.

1. What motivated you to choose Winnipeg to build a new future for your family?

My interest in moving to Canada had always been on my mind since University when I had the opportunity to participate in student conferences and visit the country. In 1999 I became member of the North American Student Organization, part of the

Consortium for North American Higher Education Collaboration, where I served for 4 years as Co-Chair together with a student from the University of Manitoba. This student became my friend and over time, my link to the province. During my research of programs to apply for residency, the Manitoba Provincial Nominees Program is the only one that allows a friend to be your sponsor. Talking to her, she gladly accepted, but asked me the question “Are you sure you want to come to Winnipeg? And recommended me to make an exploratory visit. I visited Winnipeg in 2013 to explore the city, which I liked it a lot for its friendly people and for being the third city with aerospace companies in Canada. This is how my family and I were invited to live in Winnipeg, Manitoba in Fall 2016.

Jose Castellon Alvarez es un especialista en operaciones comerciales, empresariales, Finanzas y Estrategia (EOFS), en Winnipeg, Canadá.

2. Trabajo voluntario no es algo nuevo para ti, ¿Dónde lo iniciaste?

Como miembro de la organización estudiantil, tuve muchas oportunidades de participar en congresos internacionales, viajes de estudio e intercambios estudiantiles. Esto me llevo a desarrollar el interés de compartir mis vivencias con otros estudiantes y motivarlos a que participen en dichas experiencias. Los directivos y maestros de la Facultad de Ciencias Administrativas en la Universidad Autónoma de Baja California siempre me brindaron su apoyo y con su cooperación organizamos viajes para los estudiantes a varios países: México, Cuba, Estados Unidos de América, Canadá, China, y algunos países en Europa. Este trabajo en conjunto se extendió después de ser alumno ya que continúe apoyando como maestro de asignatura. Ya estando aquí en Winnipeg, ya van dos veranos que les organizo una agenda de trabajo a los estudiantes para que experimenten la cultura Canadiense a través de visitas a empresas, organizaciones gubernamentales, universidades, museos y Folklorama apoyando como voluntarios al pabellón Mexicano.

2. Volunteer work is not new to you, where did you start?

As a member of a student organization. I had many opportunities to participate in international conferences, field trips and exchange programs. This led me to develop an interest in sharing my experiences with other students and motivating them to participate in these experiences. The Principal and professors of the Business School of the Universidad Autonoma de Baja California always offered me their support and with their cooperation we organized field trips for the students to various countries: Mexico, Cuba, the United States of America, Canada, China, and some countries in Europe.

This collaboration was extended after graduation as I continued to support it as a visiting professor and now in Winnipeg, for two summers, I have organized an agenda for the students to experience the Canadian culture through visits to companies, government organizations, universities, museums and Folklorama participating as volunteers for the Mexican pavilion.

3. ¿Cuál ha sido tu mayor desafío como inmigrante desde que saliste de México?

Yo creo fue cuando una persona dudo de mi trabajo debido a mi nacionalidad de origen, causando que dudara de mi capacidad y me hiciera tocar fondo profesionalmente hablando. No tengo mucha experiencia siendo minoría y no sabía cómo reaccionar. Pude haberlo dejado pasar, pero paso justo antes de inaugurar el capítulo de latinos en la compañía, reflexione y pensé si esto me paso a mí, a alguien más le pudo haber pasado. Así es que tome las fuerzas que necesitaba para tomar una actitud más proactiva y convertirme en

un agente de cambio. Iniciamos el grupo con el mensaje de siéntete orgulloso de tus raíces, de tu color, de tu persona y no dudes en externar tu inconformidad cuando alguien no te respete.

Nosotros como inmigrantes hemos pasado por muchos retos y pruebas que nos han convertido en personas determinadas a cumplir con nuestros objetivos. Mover a tu familia a un futuro desconocido no es fácil, ya con haber tomado el primer paso nos hace exitosos porque vencimos nuestros miedos y sabemos que vamos a dar lo mejor de nosotros a donde vayamos.

3. What has been your biggest challenge as an immigrant since you left Mexico?

I believe it was when a person doubted my work due to my background, causing me to doubt my ability and making me hit rock bottom professionally speaking. I don‘t have much experience being a minority and I didn’t know how to react. I could have let it go, but it happened just before opening the Hispanic chapter in the company, I reflected and thought if this happened to me, it could have happened to someone else. So I took the strength needed to take a more proactive attitude and become an agent of change. We started the group with the message of be proud of your roots, of your color, of yourself and do not hesitate to express your disagreement when someone does not respect you.

We, as immigrants, have gone through many challenges and trials that have made us determined to meet our goals. Moving your family to an unknown future is not easy, just by Taking the first step makes us a successful person as we overcome our fears and we know that wherever we go we will give our best.

4. ¿Cuál ha sido tu trayectoria desde que llegaste a Winnipeg?

Fui muy afortunado, puse en práctica mis clases de networking de la maestría y me puse a buscar oportunidades de trabajo a través de mis contactos de Linkedin y me hicieron una oferta de trabajo en CentrePort Canadá, donde me desempeñé como gerente de MarketPort desarrollando un proyecto de cadena de suministros directa de México a Manitoba. Al año y medio regrese al sector Aeroespacial ya que contaba con 8 años de experiencia en este ramo en México y busque la oportunidad de moverme a Boeing Canadá donde me desarrollo como Especialista de Operaciones Empresariales desde hace dos años.

4. What has been your journey since you arrived in Winnipeg?

I was very lucky, I put into practice my master’s networking classes and I started looking for job opportunities through my Linkedin contacts and received an offer at CentrePort Canada, where I worked as MarketPort manager developing a direct supply chain project between Mexico and Manitoba. After a year and a half I returned to the Aerospace industry since I had 8 years of experience in this field in Mexico. I looked for the opportunity to move to Boeing Canada and since two years ago, I have been working as a Business Operations Specialist.

5. ¿Qué crees que nos ayudaría como inmigrantes a ser más activos en el tema de diversidad e inclusión?

Yo tenía miedo a quejarme de una micro agresión porque voy llegando al país y no quería que se me catalogara como una persona problemática. Muchas veces las micro agresiones son causadas por falta de conocimiento de la nueva cultura y es por eso que debemos hablar de los prejuicios inconscientes.

Frecuentemente tenemos miedo de hablar de diversidad e inclusión por el miedo de ofender a alguien, pero es aún peor él ni siquiera iniciar la conversación. Debemos de entender que mientras seamos respetuosos podemos hablar los temas que nos ayudaran a vivir en una comunidad de armonía cultural y por ende ayudar a reducir las micro agresiones. Recomiendo formar parte de organizaciones o clubs de nuestras culturas de origen para ayudar a las culturas locales a aprender sobre nosotros, nuestras costumbres e historia, pero a la vez nosotros también aprender de las culturas locales. Winnipeg es un gran ejemplo de diversidad cultural y brinda muchos espacios para aprender de diversidad y más que nada de cómo ser inclusivos.

5. What do you think would help us as immigrants to be more active on the issue of diversity and inclusion?

I was afraid to complain about a micro aggression because I just arrived to country and I did not want to be classified as a problematic person. Micro aggressions are often caused by a lack of knowledge of the new culture and that is why we must speak of the unconscious bias. We are often afraid to talk about diversity and inclusion for fear of offending someone, but it is even worse if we do not start the conversation. We must understand that while we are respectful we can talk about the issues that will help us live in a more harmonic diverse community thereby helping to reduce the micro-aggressions.

I recommend joining organizations or clubs of our cultures of our origin to help local cultures learn about us, our customs and history, but at the same time we also need to learn about local cultures. Winnipeg is a

great example of cultural diversity and provides many opportunities to learn about diversity and more than anything about how to be inclusive.

6. En base a tu experiencia personal, ¿Qué mensaje le dejarías a la comunidad Latina en Winnipeg?

Todos tenemos un motivo diferente, hemos recorrido diferentes caminos y hemos experimentado diferentes retos pero al final todos hemos coincidido con un mismo destino.

Siéntanse orgullosos de quienes son y de su origen, de su capacidad profesional y humana, capacidad que los ayudo a salir adelante en todos los altibajos de su caminar y que es la misma capacidad que les hará logras sus metas y objetivos.

Ya que estén establecidos recuerden que cada año llegan nuevos inmigrantes que vienen con el mismo miedo e incertidumbre y si tienes la oportunidad de brindarles la mano hazlo así como a ti te la ofrecieron.

Este año 2020 nos dio muchos retos, retos que nos han hecho sentir impotentes por no poder estar al lado de nuestras familias y seres queridos que se han visto afectados por Covid-19. Definitivamente es una realidad diferente a la que estamos acostumbrados, que esta Navidad sea de reflexión y de agradecimiento por un día más de vida y por todas las cosas intangibles que tenemos en nuestros corazones. De parte de mi esposa Aline, hijos Alan y Annette les deseamos unas Felices Fiestas y un Próspero Año Nuevo.

6. Based on your personal experience, what message would you leave the Latino community in Winnipeg?

We all have a different reason, we have traveled different paths and we have experienced different challenges but in the end we have all met at the same destination.

Feel proud of yourself, your background, and your professional and human capacity, a capacity that helped you to get ahead in all the ups and downs of your journey and that is the same capacity that will help you achieve all your goals.

Once you are established remember that every year new immigrants arrive

with the same fear and uncertainty, if you have the opportunity to give them a hand, do so the same way someone offered it to you. This year 2020 gave us many challenges, challenges that have made us feel powerless for not being able to be next to our relatives and loved ones who have been affected

by Covid-19. It is definitely a different reality of what we are used to, make this Christmas time one of reflection and gratitude for one more day of life and for all the intangible things that we have in our hearts. On behalf of my wife Aline, children Alan and Annette we wish you a Merry Christmas and a Happy New Year.

Un Hogar Propio: Los obstáculos que enfrentan los nuevos inmigrantes

Los nuevos inmigrantes están haciéndose sentir en el mercado inmobiliario, a medida que se establecen y hacen la transición de inquilinos a propietarios.

Más de 300,000 nuevos inmigrantes llegaron a Canadá en 2019, según el departamento de estadísticas de Canadá. Para estos nuevos canadienses ser propietario de una vivienda en Canadá puede resultar en una experiencia confusa si no se tiene la información y los recursos adecuados.

Falta de Historial Crediticio

Sin una sólida historia de crédito en Canadá algunos bancos tienden a ver a los recién llegados como clientes de alto riesgo. Por esto, es importante empezar a construir su historial crediticio justo después de su llegada, para esto necesitara dos fuentes de crédito, ej: dos tarjetas de crédito (no importa el límite), una tarjeta de crédito y el préstamo de su vehículo, etc.

Para fines hipotecarios, podemos usar el pago de la renta y las utilidades (hydro, cable, celular, MPI) como fuentes alternativas de crédito.

Grandes Pagos Iniciales (Downpayment)

Otro obstáculo que enfrentan los inmigrantes al momento de comprar su casa es la falta de información acerca del pago inicial que necesitan, el cual oscila entre 5 a 35% del valor de la propiedad.

Gracias a las políticas implementadas por Canada

Mortgage and Housing Corporation (CMHC) los nuevos inmigrantes (permanentes y no-permanentes) que cumplen con ciertos estándares pueden tener acceso a un préstamo hipotecario con un pago inicial de solo 5 a 10% del valor de la propiedad.

Tome en cuenta que ningún préstamo hipotecario es igual al otro, cada cliente trae una variante diferente a la ecuación hipotecaria, lo que hace que cada préstamo sea confeccionado a la medida de cada cliente. Por eso, la hipoteca que necesita su amigo no es necesariamente la hipoteca que usted necesita.

Si tiene planes de comprar su casa en los próximos meses…las posibilidades son infinitas.

A HOME OF THEIR OWN: THE OBSTACLES NEW IMMIGRANTS FACE.

New immigrants are making their mark on the housing market, as they settle down and transition from tenants to landlords.

More than 300,000 new immigrants arrived in Canada in 2019, according to Canada’s statistics department. Owning a home in Canada can be a confusing experience for these new Canadians without the right information and resources:

Lack of Credit History

Without a strong credit history in Canada, some banks tend to view newcomers as high-risk customers. For this reason, it is important to start building your credit history right after your arrival. For this you will need two sources of credit, for example... two credit cards (no matter the limit), or a credit card and the loan of your vehicle, etc.

For mortgage purposes, we can use the payments of rent and utilities (hydro, cable, cellular, MPI) as alternative sources of credit.

Large Downpayment

Another obstacle that immigrants face when buying their home is lacking the information about the down payment they need, which ranges from 5% - 35% of the property’s value.

Thanks to the policies implemented by Canada Mortgage and Housing Corporation (CMHC), new immigrants (non-permanent residents) who meet certain standards can have access to a mortgage loan with a down payment of only 5% - 10% of the value of the property.

Take into account that no mortgage loan is the same as another. Each client brings a different variant to the mortgage equation, which means that each loan is tailored to each client’s circumstances. So the mortgage your friend needs is not necessarily the mortgage you need.

Celebraciones

En general, se recomienda a las familias reducir el número de contactos cercanos que tienen con personas fuera de sus hogares y a evitar los espacios cerrados o con mucha gente. Otra recomendación es minimizar en el trabajo y otras reuniones sociales fuera de su hogar ya que todos intentamos mantenernos sanos durante los tiempos de COVID-19.

Las familias que estén considerando la posibilidad de celebrar reuniones navideñas deben limitar las celebraciones a los miembros de su propio hogar según los números establecidos por el gobierno. El gobierno de Manitoba publicó normas de seguridad detalladas de COVID-19 para esta temporada, revísalas con atención.

Siempre que sea posible, las familias deben considerar la posibilidad de realizar reuniones virtuales en lugar de reunirse en lugares interiores. Cualquier persona con alto riesgo de COVID-19 debe considerar no asistir.

Se recomienda mantener una lista de asistentes hasta por 21 días, para ayudar si es necesario rastrear algún contacto.

Si organizas una reunión donde habrá alimentos, sigue estos consejos esenciales:

 Limpia y desinfecta con frecuencia las superficies de contacto comunes.

Be COVID-19 wise SAFE FOOD PRACTICESTIPS FOR THE HOLIDAYS

In general, families are encouraged to reduce the number of close contacts they have with people outside their households, and to avoid enclosed or crowded spaces. Minimizing workplace and other social gatherings outside of your household is another recommendation as we all are trying to stay safe during COVID-19.

Families who are considering holiday gatherings should limit celebrations to members of their own household. The Manitoba government released detailed COVID-19 safety guidelines for the holidays.

Whenever possible, families should consider holding virtual gatherings instead of indoor gatherings. Anyone at high risk from COVID-19 should consider not attending.

It is recommended to keep a list of attendees for up to 21 days, to help if any contact tracing is necessary.

A COI confirms that, at the time of inspection, a vehicle met basic standards for operation in Manitoba, which are set out in the Vehicle Equipment, Safety and Inspection legislation.

A COI is required when:

 Ownership of a vehicle is transferred. (See Exemptions in the Manitoba Public Insurance (MPI) website).

 Bringing any vehicle into Manitoba. This includes vehicles owned by people moving to Manitoba.

I strongly recommend you have your vehicle fully inspected by a trusted mechanic before purchase. Approved inspection stations are located throughout Manitoba. Remember: You cannot register a vehicle with MPI and drive it without a valid COI.

Lo que La Navidad le debe a México

Navidad, una de las festividades mas grandes del mundo cristiano se ha convertido en una de las tradiciones y periodos vacacionales en el mundo. Así como los cristianos celebran el nacimiento de Jesucristo, esta festividad se torna en una enorme celebración de luces, colores, sabores, listones y regalos. El derrame de la cristianidad alrededor del mundo ha convertido esta festividad en una celebración universal que permite a cada cultura celebrarla en su propia, única manera que incluye elementos culturales locales y universales. Algunos de estos elementos y símbolos son considerados por excelencia universalmente representativos de la Navidad.

México, un país con historia y tradiciones ancestrales ha contribuido a la herencia cultural del mundo con muchas de sus propias festividades como son el Dia de los Muertos, Cinco de Mayo entre otras. Asimismo ha compartido su arte y cultura para hacer otras tradiciones mas ricas y brillantes y la Navidad no ha sido la excepción. He aquí algunos de los elementos culturales que la Navidad le debe a México.

Poinsettia: La Flor de Nochebuena es una especie de la diversa familia botánica de las Euphorbiaceae. Esta especie es nativa de México y es particularmente conocida por sus distintivas flores rojas y verde follaje.

La planta fue usada extensivamente por los Aztecas no solo con fines decorativos, pero también como tinte y medicina. Esta planta florece durante los meses mas fríos del año y es mas común en las tierras altas del centro de México aunque puede ser encontrada desde el norte de México hasta América Central en mas de cien variedades. Después de la conquista, los misioneros católicos introdujeron en México la celebración de Navidad y usaron la flor de nochebuena como decoración de los nacimientos, iglesias y altares por los profundos colores verdes y rojos y la forma de estrella de esta flor. La flor de nochebuena es mejor conocida alrededor del mundo como Poinsettia en honor al señor Joel Robert Poinsset , primer Ministro

Plenipotenciario de Estados Unidos en Mexico de 1825 a 1830. El Sr. Poinsset, un avido aficionado a la botánica, vió la planta por primera vez en Taxco, Guerrero y desde esta región envió innumerables especímenes a los Estados Unidos para su estudio. Sin embargo, la familia Heckle fue quien desarrollo la técnica de injerto que dio a la flor de nochebuena la forma tan conocida alrededor del mundo. Fue de esta manera como la humilde flor Azteca Cuetlaxochitl o Flor de Nochebuena se convirtió en la famosa Poinsettia y fue desde la altiplanicie Mexicana a decorar estampas, tarjetas navideñas, iglesias, centros comerciales y hogares alrededor del mundo convirtiéndose en un símbolo universal de Navidad.

¿Y de donde vino el chocolate sino de México? Los Españoles lo llevaron a Europa desde el valle del Anahuac –The heart of Mexico. Conocido por los Aztecas, Mayas y Olmecas, el xocolatl o chocol atl fue otro tesoro llevado a Europa desde América. Inicialmente fue introducido como una bebida o medicina por su sabor amargo, aunque pronto se convirtió en una industria en si mismo. Tomo case 300 años darle al chocolate la textura, sabor y forma que tiene hoy en dia. Durante este largo proceso, compañías como Lindt en Suiza, Cadbury en Inglaterra y, mas tarde, Hershey en los Estados Unidos transformaron la industria del

chocolate hasta hacerla lo que es hoy. En nuestros días podemos encontrar chocolate en casi cualquier forma, manera, color y sabor posible que nuestra imaginación pueda soñar. Pavo: Esta ave cuyo nombre científico es “Meleagris Gallopavo Mexican” era desconocido para el mundo antes de que Hernan Cortes conquistara México. Se cree que guerreros Aztecas lo encontraron en la meseta Mexicana y lo ofrecieron a su rey, Moctezuma II como un presente digno de la realeza y fue tratado de la misma manera por los

conquistadores Españoles. Fue Hernán Cortés quien lo introdujo a la sociedad Europea como un platillo exótico para ser disfrutado en grandes celebraciones como son Navidad y Año Nuevo asi como se convirtió en la cena tradicional para las clases privilegiadas de México Más tarde, los pioneros norteamericanos lo adoptaron como su cena tradicional de Acción de Gracias. Hoy en dia, es un platillo popular disfrutado como cena de Navidad en muchas mesas alrededor del mundo. El pueblo Mexicano celebra Navidad de una manera muy especial.

Posadas: Las Posadas son fiestas tradicionales que empiezan el 16 de Diciembre conduciendo a la Misa de Gallo y la cena de Navidad a la media noche del 24 de Diciembre. What Christmas Owes to Mexico

Christmas, one of the largest festivities in the Christian world has also become one of the largest holidays and traditions around the world. As Christians celebrate the birth of Jesus Christ, this holiday turns into a massive celebration of lights, colours, flavours, decorations and presents. The spread of Christianity around the world has turned this festivity into a universal celebration and allows every culture to celebrate it in their own, unique way. However, there are certain elements and symbols that are considered quintessentially and universally representative of Christmas.

Mexico a country with ancient history and traditions has contributed to the world’s heritage with many of its own festivities such as Day of the Dead and Cinco de Mayo. It has also shared its art and culture to make other traditions richer and brighter and Christmas is not a exception. Here is some of the cultural items that Christmas owes to Mexico:

Poinsettia: Flor de Nochebuena

(Christmas Eve flower) is a plant species of the diverse spurge family. The species is indigenous to Mexico and it is particularly well known for its red flowers and green foliage. The plant was extensively used by the Aztec not only as decorations, but also as a die and as a medicine. The plant blooms mainly during the coldest months of the year and it is more common in the high lands in central Mexico although it can be found from northern Mexico all the way down to Central America in more than a hundred varieties. After the conquest, Catholic missionaries introduced to Mexico the celebration of Christmas and used the Flor de Nochebuena to decorate nativity scenes and churches for its deep green and red colors and the flower star shape. The Flor de Nochebuena is better known around the world as the Poinsettia plant in

honour of Mr. Joel Robert Poinsset, the first U.S. diplomat/ambassador to Mexico from 1825 to 1830. Mr. Poinsset, an avid amateur botanic, saw the plant for the first time in Taxco in the Mexican state of Guerrero and it was from this region that he sent innumerable samples to the U.S. However, it was the Heckle family who developed the grafting technique that gave the Flor de Nochebuena the shape and form that made it so popular around the world. This is how the humble Aztec Cuetlaxochitl flower or Flor de Nochebuena turned into the famous Poinsettia plant and went from the Mexican highlands to decorate post stamps, Christmas cards, churches, shopping malls and homes around the world becoming a universal symbol of Christmas.

Chocolate: Almost as indispensable as poinsettias are chocolates. what would a Christmas dinner be without a box of chocolates? Or what would be Christmas dinner without a chocolate cake or cookies with a hot cup of cocoa?

And where did chocolate come from, if not from Mexico? Spaniards took it to Europe from the Valley of the Anahuac —The heart of Mexico. Known to Aztecs, Mayans and Olmec people, xocolatl, or chocol atl was another treasure brought to Europe from America. Initially introduced as a drink or medicine for its bitter taste, it soon became an industry all by itself. It took over 300 years to give chocolate the texture, flavour and shape it has today. During that long process companies like Lindt in

Switzerland, Cadbury in England and, later on, Hershey in the U.S.A. transformed the chocolate industry to make it what it is today. Nowadays you can find chocolate in almost any possible way, shape, colour or flavour your imagination can dream of. It covers fruits, nuts and marshmallows, is stuffed with flavoured creams, liqueurs, nugget or caramel and it can be milk, dark, or white chocolate, but whether you find it under your Christmas tree, inside your stocking or on your dinner table, it will surely make your Christmas celebration tastier and sweeter.

Turkey: This bird whose scientific name is “Meleagris Gallopavo Mexicana” was unknown to the world before Hernán Cortes conquered Mexico. It is believed that Aztec warriors found it in the Mexican Plains and offered it to their king, Moctezuma II, as a present worthy of royalty and it was treated the same way by the Spaniard conquerors. It was Cortes who introduced turkey to European society as a delicacy to be enjoyed in grand celebrations such as Christmas and New Year’s Eve dinner. During colonial times, it became a traditional Christmas dinner dish for privileged people in Mexico. Later, North American pioneers adopted it as their traditional Thanksgiving dinner. Nowadays, it is a popular dish enjoyed at the Christmas dinner table in many places around the world. Mexican people celebrate Christmas in a very special way.

Posadas: Are traditional parties that start on December 16th leading to Midnight Mass and Christmas Eve dinner at midnight. In these parties you will find singing, pinatas, peanuts, and many other treats that make the Christmas celebration more joyous, brighter and tastier. Wherever you find Mexican people, you will find these special celebrations.

El Secreto de los Panes con PAVO SALVADOREÑOS

El Salvador es el país más pequeño del continente americano, sin embargo, sus tradiciones culinarias son extensas y diversas. De sus platillos más deliciosos y tradicionales en la temporada navideña los más preferidos son el Pan con Pavo o Pan con Chumpe y los Tamales de Gallina. Hay un ‘secreto’ que los salvadoreños tienen para darle ese sabor distintivo al pavo y a los famosos tamales, ese secreto está en la salsa.

¿Pero cuál es ese secreto de la salsa que los hace tan deliciosos? En El Salvador se le llama Relajo Así es, leyeron bien, el ‘relajo’, como el nombre lo describe, es una mezcla aparentemente desordenada de especias. En el español que hablamos en El Salvador, el término ‘relajo’ se refiere ya sea a un gran bullicio y algarabía hecha por un grupo de personas, o a una situación muy complicada y desordenada y de dudosa reputación.

Cuando era niña siempre escuchaba a las mujeres de la casa mencionar esa palabra ‘relajo’, “hay que ir a comprar relajo”, “le hace falta relajo a la salsa”, etc. Si me preguntan hace unos años

atrás que es el ‘relajo’ creo que solo sabría contestar que es una mezcla de especias enteras algunas incluso con hojas. Después de más de diez años de emigrar con mis padres y de vivir en Canadá y hoy con mi propia familia la cocina es algo que me ha unido más a mi madre. Cuando me invitaron a escribir este artículo inmediatamente le llamé, y ella rápidamente me ubicó con esta receta que revela los ingredientes del relajo y que ahora les comparto al final de esta nota. La receta fue tomada del sitio web mamaslatinas.com y ahí mencionan la fuente original del libro de recetas de Maricel E. Presilla, Gran Cocina Latina: The Food of Latin America.

Aquí en Winnipeg es tradición de los viajeros salvadoreños traer una buena cantidad de ‘relajo’ para abastecer tu cocina y que te dure por mucho tiempo para preparar muchos deliciosos platillos, por suerte el relajo también se puede conseguir en tiendas latinas locales. Esperamos que disfrutes de esta receta, mientras tanto mi madre y yo seguiremos cocinando más auténticas delicias desde nuestras cocinas. En este momento nos encontramos trabajando en una etapa experimental un nuevo proyecto con modelo de cooperativa y una visión comunitaria para darle una plataforma a la cocina latina local y auténtica. Así que pronto les compartiremos más detalles sobre ese experimento.

El Salvador is the smallest country in the American continent, however, its culinary traditions are extensive and diverse. Of its most delicious and traditional dishes during the Christmas season the most preferred are the Bread with Turkey or Bread with Chumpe and the Chicken Tamales. There is a ‘secret’ that Salvadorans have to give that distinctive flavor to turkey and the famous tamales, that secret is in the sauce. But what is the ‘secret sauce’ that makes them so delicious? In El Salvador it is called Relajo. That’s right, you read correctly, ‘relax’, as the name describes it, is a seemingly messy mixture of spices. In the Spanish we speak in El Salvador, the term ‘relajo’ refers either to a big noise and hubbub made by a group of people, or to a very complicated and messy situation of dubious reputation.

Ingredientes

When I was a child I always heard the cooks of the house mention that word ‘relajo’, “you have to go shopping for relajo”, “the salsa needs to be relaxed”, etc. If you asked me a few years ago what ‘relajo’ is, I think I could only answer that it is a mixture of whole spices, some of them even with leaves. More than ten years after emigrating with my parents and living in Canada and today with my own family - cooking is something that has brought me closer to my mother. When I was invited to write this article I immediately called her, and she quickly found this recipe for me that reveals the ingredients of ‘relaxing’ that I now share with you at the end of this note. The recipe was taken from the website mamaslatinas.com and there they mention the original source of Maricel E. Presilla’s recipe book, Gran Cocina Latina: The Food of Latin America.

Here in Winnipeg it is a tradition for Salvadoran travelers to bring a good amount of ‘relax’ to fuel your kitchen and last you a long time to prepare many delicious dishes, luckily relax is also available at local Latin stores.

We hope you enjoy this recipe, in the meantime my mother and I will continue to cook more authentic delicacies from our kitchens. At this moment we are working on the experimental stage of a new project with a cooperative model and a community vision to give a platform to local and authentic Latino cuisine. Soon we will share with you more details about that experiment.

We hope that this Christmas you can enjoy dishes that remind you of your culture and your roots, just as preparing the sauce for the turkey this Christmas brings back many nice family memories for us.

Relajo Salvadoreño

1 chile guaque o un chile guajillo sin tallo y sin semillas

1 chile ciruela o un chile ancho sin tallo y sin semillas

1 cucharada de granos de pimienta negra

1 cucharadita de clavos de olor

1 hoja de laurel

2 cucharadas de semillas de sésamo

2 cucharadas de semillas de calabaza sin cáscara

2 cucharadas de cacahuate sin sal

1 cucharadita de orégano seco o de mejorana

1 cucharadita de tomillo seco

1 cucharada de achiote molido

Preparación

1. Calienta un comal, plancha o sartén.

2. Coloca los chiles en el comal y ásalos durante 2-3 minutos, dándoles vuelta una vez o dos veces. Reserva.

3. Asa los granos de pimienta, clavos y laurel durante 1 minuto, revolviendo. Reserva.

4. Asa las semillas de sésamo, calabaza y los cacahuetes durante 2 minutos, revolviendo. Deje enfriar.

5. Con un cuchillo afilado corta los chiles lo más finamente posible.

6. Desmenuza la hoja de laurel.

7. Combina todos los ingredientes asados con el orégano, el tomillo y el achiote, y muélelos en molinillo de especias o en un mini procesador de alimentos.

Ingredientes para la masa

4 Platanos verdes

10 Guineos verdes

1 libra de Yautia

2 libras de auyama

1 cucharadas de achiote/ annatto/bija

1/2 taza aceite

1/4 taza de leche evaporada

1/2 cucharadita de sal

Para el relleno

Una libra de carne molida de su preferencia

Media cebolla

2 dientes de ajo molidos

1/2 aji morrón

1 pizca de oregano

2 ramitas de cilantro picado

Sal al gusto

Preparación del relleno

Sazonamos la carne con la sal, orégano y ajo molido.

Sofreímos la cebolla y el aji y agregamos la carne moviendo constantemente. Agregamos

1/4 de taza de agua y la dejamos tapada por 10 a 15 minutos. Apagamos el fuego y

colocamos el cilantro dejándolo tapado hasta enfriar.

Para la masa

Se colocan los platanos, gunieos, yautia y auyama en un procesador de alimentos. Se pone a fuego lento el aceite con la bija por 3 a 4 minutos y se deja enfriar para colocar a la mezcla anterior junto a la sal y la leche. Se mezcla hasta que se haga una pasta uniforme.

Se coloca 3 cucharadas de la mezcla (textura cremosa) en la hoja de platano, en el centro colocamos la carne y envolvemos en forma de sobre. Se envuelve nuevamente en papel encerado y amarramos para asegurarnos que no salga la mezcla posteriormente.

Colocamos los pasteles en agua en ebullición y lo dejamos hervir por 30 a 40 minutos. Servimos caliente y ponemos queso, ketchup o mayonesa si se desea.

Put bananas, plantains, taro, and squash in a food processor.

Arroz al Olivo

Este arroz al olivo es un plato muy especial, el cual siempre está la mayoría de las mesas peruanas en la cena de Navidad, es ideal para acompañar con pavo, pollo o cerdo asado o al horno, es un arroz muy rico y fácil de hacer. Especialmente para los que gustan mucho de las aceitunas. A continuación, les detallare los ingredientes y con que nombre los puedes conseguir.

Ingredientes:

• 4 tazas de arroz ya cocido y frio, o puedes usarlo de lo que te sobro del día anterior. Yo uso arroz Jazmín.

1 ½ taza de aceituna sin pepas, licuadas con ¼ Taza de agua. Aquí las consigues con el nombre de olives pitted Kalamata

¼ de taza de aceite

• 2 cucharadas de pasta de ají molido amarillo. Ají amarillo molido (lo puedes encontrar en las tiendas de productos latinos).

• 2 dientes de ajos, finamente picados.

• ½ Taza de cebolla roja picadita en cuadritos muy pequeños

• ½ Taza de pasas negras o rubias yo uso los 2 tipos de pasas.

• ½ Taza de tocino o bacon cortados en cuadritos

½ Taza pecanas tostadas y picadas ¼ de Taza para preparación y el ¼ de taza para la decoración.

½ taza de perejil Picado (parsley)

• Sal y Pimienta

Preparacion:

1. Empezamos licuando la 1 ½ taza aceitunas con el ¼ taza de agua. Tiene que quedar como una crema, y la reservamos.

2. En un poco de aceite sofreír la cebolla en cuadrito aproximadamente 5 minutos y luego agregamos los 2 dientes de ajos finamente picados y sofreímos por otros 3 minutos.

3. Luego agregamos en la misma olla de la fritura las 2 cucharadas de pasta de aji amarillo y sofreímos otros 3 minutos,luego agregamos la ½ Taza de tocino cortado en cuadritos sofreímos otros 3 minutos.

4. Hasta ahora en nuestra olla ya tenemos la cebolla, los ajos, el aji amarillo molido o en pasta, el tocino y ahora agregaremos las aceitunas licuadas que estábamos reservando a la preparación luego agregamos ¼ de taza de Pecanas tostadas picadas, la ½ Taza de pasas negras o rubias y revolvemos todo.

5. Ahora es turno de agregar las 4 tazas de arroz cocido y seguimos revolviendo en la olla a fuego medio por 5 minutos mas y listo, apagamos el fuego o la hornilla y servimos en una fuente decoramos con el ¼ mas de pecanas de guardamos para la decoración, agregamos el perejil picado.

Este arroz alcanza para 6 personas

Olive Rice – Peruvian Recipe!!

This Olive rice is a very special side dish, which is at most of the Peruvian tables at Christmas dinner. It is ideal to accompany with turkey, chicken, or pork roast. This olive rice is delightful and easy to make. If you love olives then, this dish is for you. Below, I will explain the ingredients and what they are called.

Ingredients:

4 cups of rice cooked and cold or you can use what you have left over from the day before. To prepare this dish I used Jasmine rice.

• 1 ½ cup of Pitted olive, blended with ¼ cup of water.

• Here in Winnipeg, you can get the olives under the name of pitted Kalamata.

• Oil required quantity

• 2 tablespoon of yellow ground chili pepper. Aji amarilo peruano (you can find in any Latin market store).

2 garlic cloves, finely chopped.

• ½ cup of red onion minced in very small squares.

• ½ cup of black or golden raisins. I use both types of raisins.

• ½ cup diced bacon (optional).

• ½ cup roasted and chopped pecans. ¼ cup for preparation and ¼ cup for decoration (optional).

• ½ cup chopped parsley

• Salt and pepper

Preparation:

1. Start by blending the 1 ½ cup olives with a ¼ cup of water. Blend until creamy, and we reserve it.

2. In a little oil, fry the chopped onions for approximately 5 minutes and then add the 2 finely chopped garlic cloves and fry for another 3 minutes.

3. Add the 2 tablespoons of aji Amarillo paste to the same frying pan and fry for another 3 minutes.

4. so far, we have the onion, garlic, the ground or paste yellow pepper, the bacon and now we will add the blended olives that were set aside. Then add 1/4 cup chopped, roasted pecans and the 1/2 cup of black or golden raisins and stir everything together.

5. Now it is time to add the 4 cups of cooked rice and continue stirring in the pan over medium heat for another 5 minutes. then turn off the heat and it is ready to serve.

6. In a tray, put the whole mixture and put on top the 1/2 cup of roasted pecans and the chopped parsley for decoration.

The Manitoba Agriculture and Resource Development department just published a new video about the Animal Welfare Program in Manitoba to raise awareness of the services and programs they provide.

Animal welfare simply means how an animal is coping with the conditions in which it lives. An animal is in a good state of welfare if it is healthy, comfortable, well-nourished, safe, able to express innate behavior, and if it is not suffering from unpleasant states such as pain, fear, and distress.

Did you know that Manitoba is one of the first provinces in Canada to modernize their Animal Care Act to ensure adequate public responsibility for the animals they own including proper housing, management, nutrition, responsible medical care, humane handling, and, when necessary, humane euthanasia? Miriam Castillo was born in Guatemala and she started to get interested in arts at a very early age; she is a self-taught artist. After moving to Canada, she has had some exhibitions. El Canada Recovery Benefit es el nuevo beneficio introducido por el Gobierno de Canadá tras la finalización del CEBR. Le permitirá recibir hasta $500 por semana hasta 26 semanas para quienes dejaron de trabajar y no son elegibles en el Employment Insurance (EI), o para trabajadores independientes que hayan visto reducido sus ingresos hasta el 50%.

The Canada Recovery Benefit will provide eligible workers with $500 per week (taxable, tax deducted at source) for up to 26 weeks for those who have stopped working and who are not eligible for EI, or had their employment/self-employment income reduced by at least 50% due to COVID-19. This benefit will be paid in two-week periods

COVID alert is a new app that can let people know of possible exposures in an area close to where you currently are. The app uses Bluetooth to exchange random codes with nearby phones.

HOW DOES A REAL ESTATE LAWYER HELP IN THE HOUSE BUYING PROCESS?

The real estate lawyer will explain the steps and costs associated with your transaction. She will introduce available methods and also ensures that you receive legal title to the property. It is essential that you are aware of the mortgage obligations and what to expect from the financial institution throughout the process. There are 4 steps to consider when buying a house:

1) Go to the bank or a mortgage broker to be pre-qualified for a mortgage. If you don’t know anyone, then your realtor or RE lawyer can help you find someone.

2) View several properties with the help of a realtor and put in an offer (or several) on the one(s) you like,

3) Once an offer is accepted, then go to your RE lawyer to process the transaction.

4) The lawyer will register the deed at the Property Registry and make sure the land transfer taxes are paid. He or she will also guide you through the legal details of purchasing a house.
