Year 2023 - ISSUE NO. 2 - February

Year 2023 - ISSUE NO. 2 - February
Our 2023 new year is off to a great start.
The weather is still chilly but our events are warmed up and we are busy here at the club!
This month the 2023 Commodore's Ball is on February 4th. If you haven’t made your reservations for this time honored event, it is something you will not want to miss.
When the gas tanks and dispensers are complete, SHM’s initiative to sell gas at our cost will commence. This is a great way to thank our members!
Our monthly Member Mixer will be on Feb 24th and our Valentine's Dinner will be held on the11th.
The 2023 Polar Plunge is also slated for the 11th. Come and jump for a great cause - Special Olympics! If you are not interested in jumping…you can come and cheer on your member friends and SHPYC team members that are.
The new menu has been celebrated by our members. Some of the favorites are the Maine Lobster roll, Asian Pear Salad, Braised Pork Shank, Zucchini Noodles and the grilled bone-in ribeye! If you haven’t tried out the new menu, please call for reservations as you will not be disappointed with the variety or the palate pleasing tastes.
The month of February is scattered with so many events for you to enjoy your club! Including the Chili Bar, Taco Bar, Trivia Night, Burger Night, Family Cooking Show, Kids' breakfast for dinner and our ever so popular Sunday Brunch.
If you would like to plan a meeting, birthday, anniversary or any other type of event at the club, please call or email PYCevents@shmarinas.com.
Just a gentle reminder to check your boat during the off season. Batteries without trickle charges can go bad, covers that have fallen hide poles and water build up on the boat cover. Harry and his team do a fabulous job taking care of our members and their boats. Please let us know if we can assist you by calling the Ship Store or emailing Harry at Hsmith@shmarinas.com.
Please follow us on Instagram, Facebook, our Thursday Happenings eblast, and the Watch monthly newsletter. For our Yacht members we have a yacht specific email that goes out every second Thursday of the month filled with boating information and safety tips as well.
As always, it is our pleasure to serve you! We look forward to seeing you at the club.

• 1 lb. ground beef
• 1/2 lb. sweet Italian sausage
• 1 medium onion chopped
• 2 garlic cloves minced
• 1 (15 oz.) can tomato sauce
• 1 (15 oz.) can crushed tomatoes
• 2 (6 oz.) cans tomato paste
• 1/2 cup water
• 2 tablespoons sugar
• 3 teaspoons salt
• 3 teaspoons Italian seasoning
• 1 1/2 teaspoons dried basil leaves
• 1/4 teaspoon ground black pepper
• 1/4 cup minced fresh flat-leaf parsley
• 2 cups shredded mozzarella cheese
• 15 oz. (1 ¾ cups) whole milk Ricotta cheese
• 1/2 cup grated parmesan cheese
• 1 large egg
• 12 lasagna sheet
• Preheat oven to 350 degrees F.
• Make the meat sauce. Add beef and sausage to a large skillet over medium-high heat, breaking it apart with a wooden spoon. Add the onion and garlic. Cook until meat is browned, about 6-8 minutes. Drain the fat from the meat. Return the meat to the skillet.
• Add the tomato sauce, crushed tomatoes, tomato paste, water, sugar, 2 teaspoons salt, 2 teaspoons Italian seasoning, 1 teaspoon basil, and the black pepper. Stir until well combined. Cover and reduce the heat to low. Simmer the sauce for 30 minutes. Stir in 2 tablespoons of the minced parsley.
• As the sauce cooks, make the ricotta mixture. In a large bowl, add 1 cup mozzarella, the ricotta, ¼ cup parmesan, 2 tablespoons of the parsley, the egg, 1 teaspoon salt, 1 teaspoon Italian seasoning, and ½ teaspoon basil. Stir until well incorporated.
• Cook the pasta al dente.
• Assemble the lasagna. In a 13x9 inch baking dish, add a very thin layer of meat sauce (about ¼ cup). Layer 3 lasagna sheets, ⅓ of the ricotta mixture, and 1 ½ (level) cups of meat sauce. Repeat the layers twice.
• Add meat sauce, 1 cup mozzarella, and ¼ cup parmesan.
• Cover with foil that has been sprayed with nonstick cooking spray. Bake for 45 minutes. Remove the foil. Bake 15 more minutes.
• Let the lasagna cool for 15-20 minutes before cutting.
Please note there is a 48-hr cancellation policy on all club events.

Michael and Rebecca Amon have been members at The Safe Harbor Peninsula Yacht Club for two years now. Their journey to finding the club started back in Ohio. Lake Norman, NC was a place they would come to spend their family vacations for about 12 years. Why not live permanently where you vacation? Well that's the exact opportunity that came knocking on the Amons' door and they took it!
Shortly after moving to the Charlotte area, they needed to find a place to keep their boat. Their hopes were to find gated boat slips with not only a marina facility but also a club environment where they could meet people in the surrounding area. One can imagine their relief when discovering The Safe Harbor Peninsula Yacht Club! Rebecca expressed, "from the moment we walked through the door, we knew we were home."
As members, The Amons utlize the club fully.
From attending events to even hosting events of their own!
Michael has hosted his private Christmas party at SHPYC for a couple years now with no intention of stopping any time soon. Michael goes on to say "it's not just okay, it's fantastic and my staff was thrilled with it. [...] the food was top notch, the service was excellent, and the place just sort of has a wow factor." Hearing a review like that just warms the hearts of the SHPYC team.
When not at the club, the Amons are golfing, staying active, singing, and visiting their delightful addition to their family: their new grandson named Beau. (pictured above) As the season starts to ramp up, keep an eye out for Amons at the club or out on the water! They are full of good stories and great company.

Calling all Safe Harbor Peninsula Yacht Club ladies! Not only is it Valentine's Day this month but it's also Gal-entine's Day! Grab your friends and come out to our special event just for you! This event will have light hors d'oevres, champagne, and a cupcake decorating demonstration by our Pastry Chef, Mackenzie. It will be a girls' night you will not forget!
It's Valentine's Day and you're ready to spruce up the night with an elegant dinner accompanied by your significant other. Instead of leaving the kiddos behind, bring them! That is right, there will be a seperate Valentine's Day kid event in the Commodore's Room while you enjoy your romantic dinner upstairs. Please remember this is not a drop off event, which means a parent must remain on the property.
Our Commodore's Hours are a great way to get to know your fellow members of the club. On February 10th, come out to our Valentine's Day themed Commodore's Hours!
Please register online at www.peninsulayacht.com to let us know you're coming!
Let's welcome our doggies of the month Hazel (Tri-Red) and Coriander (Blue Merle)! They are originally from a Kentucky facility named Kidds Toy Aussies and are actually sisters from different litters! The girls like to spend their days jumping off the boat, swimming in the lake, paddle boarding with their doggie friends, and playing fetch. In fact, they even fetched the heel of a deer one time! Hazel (7) and Coriander (5) are so great with kids and love to play with them. However, if you're the mail person, we suggest you keep your distance. They uphold that famous tradition proudly. You may see the girls around the docks this summer. Make sure to congratulate them on being the SHPYC Dogs of the Month!
Do you have a fur baby that loves the spotlight? Send their picture in! They just may be our next Dog of the Month!
