EXECUTIVE CHEFANDRÉS

CHEF’S CORNER Pollo en Salsa de Andalucía

Tips:

For an authentic touch, use Spanish ingredients like Iberian chorizo and paprika.

Adjust the level of spiciness to your liking by adding more or less chorizo.

Serve with a side of sautéed vegetables or a simple green salad for a well-rounded meal.

Ingredients

1 Whole Chicken (about 3 lbs), Cut Into 8 Pieces

1/4 Cup Olive Oil

1 Large Onion, Diced

3 Cloves Garlic, Minced

1 Large Tomato, Diced

1/2 Cup Spicy Sausage (Chorizo), Sliced

1/4 Cup White Wine

1/4 Cup Chicken Broth

2 Tbsp Smoked Paprika (Pimentón)

1 tsp Saffron Threads, Soaked in 2 Tbsp Hot Water

Salt and Pepper to Taste

Fresh Parsley, Chopped (optional)

Instructions

1. Heat oil in a large pan: Heat the olive oil in a large pan over medium heat. Add the chicken pieces and cook until browned on all sides, about 5-7 minutes. Remove the chicken from the pan and set aside.

2. Sauté onion and garlic: In the same pan, add the diced onion and cook until translucent, about 5 minutes. Add the minced garlic and cook for an additional minute.

3. Add tomato and sausage: Add the diced tomato and sliced chorizo to the pan. Cook for 2-3 minutes, until the tomato starts to break down.

4. Add wine, broth, and spices: Add the white wine, chicken broth, smoked paprika, and saffron (with its soaking water) to the pan. Stir to combine.

5. Return chicken to pan: Return the browned chicken pieces to the pan and simmer, covered, for 20-25 minutes or until the chicken is cooked through.

6. Season and serve: Season the sauce with salt and pepper to taste. Garnish with chopped fresh parsley, if desired. Serve hot, accompanied by crusty bread or rice.

BOATING&MARINANEWS

Attention All Boaters

I wanted to share a couple of reminders as we approach another busy boating season.

Shore power cords-

Make sure your cords are inspected and in good condition. Cords can become weathered, cracked, and chewed. This can cause dangerous conditions around the marina for you and others. Please help keep them out of the water.

Dock lines-

Make sure your dock lines are in good condition, not chafed, and the proper size.

Approaching the fuel dock-

Sounds easy enough but please make sure you have fenders and lines ready and attached before you make your approach. Come into the dock as fast as you want to crash!

Trash disposal-

Please only dispose of household trash. Please do not throw any appliances or hazardous materials in the trash cans.

Fueling your vessel-

Remember the 90% rule. Always leave room for expansion and to eliminate overspill in the lake. After fueling, always run the blower as well as a visual inspection. If raw fuel is seen or smelled in the bilge, DO NOT CRANK!

Marina Manager Reminder

Please remember that in order for contractors, detailers, mechanics, boat cover companies, etc, to work in the marina, they must carry the proper insurance required by Safe Harbor Marinas. If they do not have the exact coverages required, I am afraid they will not be given access.

Ship’s Store Merchandise:

Come check out the new arrivals. Polos Men’s and Ladies), Tees and more!

It's that time of year again, May is here! Warm weather has arrived, warm water will soon follow, with that comes a lot of summer fun! With that summer fun on the lake comes some of the riskier activities that most of us participate in.

Now is a great time to inspect all your safety equipment. A lot of us, me included, put life jackets and other safety equipment in storage compartments on the boat, where they remain undisturbed until they are needed in an emergency. In 2022, there were new fire extinguisher regulations implemented. They cover the number and type of extinguishers based on vessel length and include the fact that fire extinguishers need to be replaced 12 years after the date of manufacture. Some extinguisher types are no longer acceptable on 2018 model year and newer boats. [https://www.boatus.org/fire-extinguishers]

Lake Norman has seen more than its share of drownings in recent years. The following are a couple statistics from the U.S. Coast Guard's 2023 Recreational Boating Statistics: 75% of boating deaths are due to drowning, 87% of victims were not wearing a life jacket, 2/3 of drowning victims were good swimmers.

SHPYC members have access to a number of great safety and education related events or seminars. There were a couple of great opportunities in April. Upcoming events include "Boating for Ladies" (5/17) and "Nighttime Navigation" (6/14) hosted by SHPYC Marina Manager and Master Captain Harry Smith The U S C G Auxiliary is performing complimentary vessel safety checks on 5/24 These do sell out, make sure to sign up when they appear on the club calendar.

Let's have another great summer on Lake Norman!

THESAILINGSCENE

About a decade ago, when the PYC had a growing junior sailing program, at the conclusion of a junior regatta each youth sailor was invited (probably more like conscripted) to sail aboard a keel boat the following day in an adult regatta As a parent, I was deeply moved by this act and expected it to be just for the one event But it wasn't the kids were welcome to sail with them anytime there was a race

It is clear that these veterans knew what they were doing when they brought the kids aboard For a handful that stuck with it (Evan West, Sims Whalen, John Polek), sailing became a passion By high school, they were all on the local HS sailing teams and had keel boats of their own Evan West and Sims Whalen went on to sail on the offshore teams at The University of Rhode Island and The College of Charleston They have competed at prestigious regattas like Charleston Race Week, Sailing World Regatta, the Chicago to Mackinac Race, just to name a few

Their passion for sailing is due in large part to the early mentoring and stewardship of PYC sailors like Jim Hill, Don Trask, and Sam & Mary Reeves. As the boys' desire for speed increased, they were fortunate enough to hone their racing skills on J/70's and J/88's! Chris Slocum and Brian O'Malley's teams provided stiff competition, and the two boys learned a lot battling against (and sometimes alongside) the seasoned crews on Spray and Blue (Tim Harbick, Robbie Laurance, Charlie Hall, Tim Weiswasser, John Kileen)

To all the sailors that have had a hand in their journey, I am excited to share the fantastic news that it has paid off The College of Charleston offshore team skippered by John Polek competed in and won the J/105 class at Charleston Race Week As a parent, I am incredibly grateful for the sailing village here at SHPYC and LNYC that all had a hand in the sailing lives of John and Sims
