Fall Greetings Las Quintas members. We made it through another summer here in Yuma. Great weather is on the way and so are so many great Activities and Special Events!!
We are kicking off in October with a Fundraiser Craft Fair for Homeward Bound Animal Rescue on October 17th.
Our 22+ generous crafters will be donating a portion of their sales to Homeward Bound. Hope you’ll join us, as we will also have a Coffee Bar, Food Truck and an Italian Ice Truck. Additionally, we will kick off our Fall Activities, with a Pumpkin Carving Contest on October 22ndth, and don’t forget our annual Halloween Dance & Costume Contest on Halloween.
All our Special Activities for this season are currently on the App. We will be adding “Daily Activities”, as soon as we confirm dates & times with our Volunteer Leaders, so check it often for changes. We have some new people joining the Activities department this season, but as always, I am available to you through email at lqractivities@cobblestoneassets.com. If you are interested in helping with Activities this season, and/or Special Events, please contact me by email as well. I am looking for a committee to help set up, tear down, hold “New Member” Orientations and other help as needed! I have no doubt; with the Calendar we have planned for you that this will be one of our best seasons ever!

Rules: The rules for Sudoku are simple. A 9×9 square must be filled in with numbers from 1-9 with no repeated numbers in each line, horizontally or vertically.
This pumpkin soup is deliciously creamy and smooth. Tender onions and garlic give it depth of flavor, and it’s lovely seasoned with fresh herbs and spices. It’s served at our family’s Thanksgiving dinner every year.

Ingredients
• 1 tablespoon olive oil
• 2 cups chopped yellow onion
• 10 whole black peppercorns
• 4 cloves garlic, minced
• 1 teaspoon chopped fresh thyme
• 3 cups pumpkin puree
Directions
• 4 cups chicken stock
• 3 tablespoons maple syrup (Optional)
• ¾ teaspoon kosher salt
• ¼ teaspoon ground nutmeg (Optional)
1. Heat olive oil in a large pot over medium-high. Add onion and cook, stirring occasionally, until onion is browned and softened, about 10 minutes. Add peppercorns, garlic, and thyme, and cook, stirring often, until fragrant and slightly browned, about 2 minutes.
2. Stir in pumpkin puree; cook, stirring occasionally, until puree turns a few shades darker, about 5 minutes. Stir in chicken stock, maple syrup, salt, nutmeg, and cinnamon. Bring to a simmer over medium-low. Simmer, uncovered, and stirring occasionally, until slightly reduced and flavors meld, about 30 minutes.

3. Transfer soup to a blender in batches; secure lid on blender and remove center piece to allow steam to escape. Place a clean towel over opening; blend until smooth, about 30 seconds per batch. Return soup to the pot and stir in heavy cream. Cook over medium until heated through, about 4 minutes.

This recipe was tested in our test kitchen in November 2023 and updated to sauté the onions and garlic before adding stock and pumpkin puree.
