Greetings Las Quintas members! Well, our summer is not starting out too bad. We have been experiencing much cooler weather than is normal for this time of year. It is still pool weather though, so for those of you that are here year-round, be sure to take advantage of swimming this summer. Our new office hours are Monday through Friday from 8am to 2pm and Saturdays from 9am to 2pm. Our maintenance crew is hard at work year-round, but they are off by 1pm in the summer to beat the heat. In case of an emergency, our after-hours number is: (503) 369-7695. Hope everyone is having an amazing summer. Remember to hydrate and don’t forget your pets as the temperatures begin to rise.

Hello Las Quintas members and Welcome to June!

We are keeping busy this summer with our Dance Parties, Movie Nights and other special events. All our Dance Parties have a “theme”. So far, we have had a lot of fun with “Hippy night”, “Crazy Hats”, “Crazy Hairdo’s” and an “All Pink” theme. We will be continuing this fun evening on Friday’s in the fall.

Rules: The rules for Sudoku are simple.

A 9×9 square must be filled in with numbers from 1-9 with no repeated numbers in each line, horizontally or vertically.

Recipe of the Month

Cowboy Beans, by Deb Recheck

1. Brown 2 lbs. hamburger, drain any grease off, add 1 package diced ham (approx. 1 1/2 cups), add about 6 slices bacon (cut in small pieces), 3 tablespoons minced onions and 1 tablespoon garlic powder. Cook all together until bacon is fully cooked.

2. In large crockpot... 2 large cans of bush baked beans, original flavor, 1/2 cup of molasses, 1/2 cup brown sugar and 1 regular size pinto beans. Add hamburger mixture and stir well. Cook on low for 4 to 5 hours.

3. You can add more molasses and brown sugar to taste.

4. Enjoy.
