As September begins, we are excited to welcome members back. We encourage everyone to reconnect and take advantage of the opportunities this month has to offer.

We are also continuing to make improvements and renovations throughout the resort. Our goal is to enhance your experience and ensure that Del Pueblo remains a welcoming and comfortable place for everyone.

I am pleased to return to Del Pueblo as your Resort manager. It is an honor to be welcomed back, and I look forward to working to make this season a great one for everyone.

Sudoku SEPTEMBER

Rules: The rules for Sudoku are simple. A 9×9 square must be filled in with numbers from 1-9 with no repeated numbers in each line, horizontally or vertically.

It’s almost time for our members to arrive at Del Pueblo for the winter. We here at Del Pueblo are looking forward to it. We have just a few more projects to be done before your arrival. Miguel and I are doing our best in keeping this park neat, clean & well maintained on a daily basis. Looking forward to your arrival this coming season. Please be safe in your travels.

Greetings Del Pueblo members! With so many exciting events planned for the Fall Season, I hardly know where to start! First off, hurry back, because once you are here, I know that cooler weather prevails. I am posting a new flyer here, that lists upcoming special events as a reminder, so that you can mark your calendar and prepare for the fun!

Now for the EXTRA FUN STUFF we are planning this season! Aside from the amazing bands, The Hypnotist’s return, an award-winning Magician Show and the Comedy Show, Del Pueblo would like to help you enjoy your time away from the Resort by planning a few off-site bus excursions! All planned and executed by Del Pueblo & the Activities department! We will charter the bus, book the hotels (if it is an overnight stay) and pass on a reasonable ticket price to you.

Here are some of the potential trip ideas we would like to present to you.

• A day trip to Oceanside CA with a spectacular Lunch & Restaurant choice

• An overnight trip to the San Diego Zoo

• An overnight trip to Peach Springs, AZ to see the Grand Canyon Caverns

These trips could potentially begin in November, January & February. We will need to jump into the planning process as soon as possible because of the need to charter a bus & book hotel rooms. Please reach out to the Activities department by email at dpractivities@cobblestoneassets.com, if you are interested. Fall in Yuma is just around the corner, so let this be our best season ever and let the Fun Begin!!!!

Harvest Casserole (Chicken Sausage Veggie)

Servings: 8 servings

This savory and sweet harvest casserole is packed with veggies, protein, fresh herbs and all the best fall flavors! Serve it as a holiday side dish or a special seasonal meal. The leftovers are delicious for any meal! Paleo friendly, dairy free, Whole30.

• 3 cups butternut squash cut into 1” cubes

• 1 lb brussels sprouts halved or quartered, depending on size

• 4 tablespoons Olive oil divided

• Sea salt and black pepper

• 1 small yellow onion diced

• 4 cloves garlic minced

• 6 links chicken sausage cut into coin shapes (check ingredients for Whole30)

• 2 teaspoons fresh rosemary minced

Instructions

• 2 teaspoons fresh sage minced

• 1 teaspoon thyme leaves

• 2 teaspoons fresh parsley minced

• 2 cups cauliflower rice fresh or frozen (buy this pre-riced)

• 1 apple (honey crisp), finely diced

• 1/2 cup pecans chopped

• 1/2 cup dried cranberries juice-sweetened

• 1/2 teaspoon cinnamon

• Sea salt and black pepper to taste

• Fresh herbs for garnish if desired

1. Preheat your oven to 425° F and line 2 baking sheets with parchment paper. Place the squash on one sheet and the Brussels sprouts on the other. Drizzle both with one tablespoon each of the oil and sprinkle all over with salt and pepper. Bake in the preheated oven for 25 minutes, stirring the Brussels sprouts halfway through. You can remove the Brussels sprouts sooner if you don’t want them to brown too much. Once done, reduce the heat to 400° F.

2. Meanwhile, heat a large skillet over medium heat and add the remaining 2 tablespoons of oil. Cook the onions until translucent, then add the garlic and cook about 30 seconds. Stir in the chicken sausage and fresh herbs, and cook until the sausage is browned on the outside.

3. Add in the cauliflower rice, apples, pecans and cinnamon and cook, stirring, until the cauliflower rice and apples begin to soften. Stir in the cranberries and season with salt and pepper to taste, then remove from heat.

4. Spray a 9 x 13” baking dish with cooking spray and combine the sausage rice mixture with the roasted squash and sprouts in the dish. Bake in the preheated oven for 12-15 minutes or until the top is toasty. Serve garnished with fresh herbs if desired, as a meal or holiday side dish. Enjoy!
