Hello Summer!!

If you are a winter visitor and you’re still here with us or if you’re a brave year-round member, make sure you take advantage of this wonderful weather and enjoy a day out in the pool, a good volleyball game or a fun pickleball game. I encourage you to come to our Ice Cream Social this month and make some memories with other members.

As always, I have an open-door policy, don’t hesitate to stop by and say hi. I wish you all a very happy Mother’s Day and a memorable month of May.

Welcome to Summer, Yuma members! Looks like the heat is not going to ignore us this summer! That is just one more reason to Gather inside.

We will be planning more Ice Cream Socials for you as soon as the Rec Hall construction is completed and a 4th of July Potluck, if it works out for everyone! We have bowling equipment that we’d also like to try out this summer! If you are a full-time member and have any ideas on events you’d like to try over the summer months, please email the Activities department at dpractivities@cobblestoneassets.com!

We are starting to put Next Season’s Special events on the App, so be sure to check daily so that you will be ready for this fall! This November, Karen and I will be hosting a “Coffee & Donuts gathering for all the Ramrods. We will be gathering contact information while also putting your “Activity” on the Calendar for t he days & times you are requesting.

Stay tuned this summer for more information on our fall line-up. Stay cool, stay hydrated and remember, “The more you focus on Fun, the more fun you have”!

MAINTENANCE TEAM UPDATE

Well about 95% of the members have left for the summer, It’s mighty quite here at Del Pueblo. Maintenance has a lot of projects & maintaining to do this summer. Between replacing R/C floor, painting R/C laundry room & N/C building, distributing 50 tons of rock, maintaining the park with weeds, trees, plants, sprinklers & many more projects.

Recipe of the Month

Ingredients

• 2 to 3 slices sourdough bread, torn into pieces

• 1 tablespoon unsalted butter

• 10 to 12 cups chopped romaine lettuce

• kosher salt and pepper

• 1/3 cup finely grated parmesan cheese

• 1/3 cup shaved parmesan cheese

• 12 ounces cheese tortellini, cooked

GREEK YOGURT CAESAR DRESSING:

• 4 garlic cloves, minced

• 3 tablespoons greek yogurt

• 2 tablespoons parmesan cheese

• 1 tablespoon dijon mustard

• 2 teaspoons red wine vinegar

• 1 teaspoon anchovy paste

• 1/2 lemon, juiced

• kosher salt and pepper

• 1/3 cup olive oil

Cheese Tortellini Caesar Salad

Yield: 4 | Prep Time: 45 minutes | Total Time: 45 minutes

This cheese tortellini caesar salad is irresistible! Crisp romaine lettuce, greek yogurt caesar dressing, shaved parmesan and crunchy croutons are tossed with tender cheese tortellini. It’s a perfect side dish or base for your favorite protein!

Instructions

1. Heat the butter in a skillet over medium heat. Add in the sourdough pieces with a pinch of salt. Cook, tossing often, until they are golden and toasty and crisp. Turn off the heat.

2. Place the romaine in a large bowl and toss with a big pinch of salt and pepper. Drizzle with a few tablespoons of the caesar dressing. Add in the finely grated parmesan. Toss the lettuce well so everything is coated. Add in the cooked tortellini and gently toss so the pasta doesn’t get smashed, adding more dressing if you would like. Toss until everything is combined and well coated.

3. Top with the shaved parmesan and the sourdough croutons. Serve with extra dressing and more parmesan cheese. You can use this as a base salad for chicken, steak, salmon, chickpeas, etc.

GREEK YOGURT DRESSING

1. To make the dressing, add the garlic, yogurt, parmesan, mustard, vinegar, anchovy paste, lemon juice, salt and pepper to a food processor or blender and blend until pureed. With the processor still on, stream in the olive oil until a creamy dressing forms. (This may make more dressing than needed, but you can store it sealed in the fridge for about 3 to 4 days and stir well before using.)
