TIME TO CELEBRATE! For as long as I can remember, my dream has always been to run a magazine. Fast forward to May 2017, that dream was slowly realised when I launched the Sandton Magazine website. A few months later (and with an incredible creative director by my side), the SM brand soon grew into a digital magazine, as we launched our first issue for September/October 2017. Of course, myself and Danielle – who literally brought the brand to life – had a long chat about where we saw the future of Sandton Magazine going and agreed we’d do what we do best create a beautiful magazine worthy of print. Even in today’s digital world, there is still nothing quite like the feel of paper between your fingers. And so we bring you our very first print issue, and what an exciting time it is for us! It’s also our wedding issue, which means we have focussed all our attention on helping you plan your perfect wedding. Think wedding venues, bridal showers and dream honeymoon destinations. OLĂ , PAULO! Paulo Santo is no stranger to the food scene. The Portuguese chef has headed numerous kitchens of notable restaurants like Hyde Park Hotel, CafĂŠ del Sol, Cube Tasting Kitchen, Gemelli Cucina Bar, and most recently, La Boqueria in Parktown North. His love of food began at a young age, having grown up with a huge garden of organic fruit trees, grape vines and vegetable plots, but it was only until he reached 22 that he realised he wanted to become a chef. In 2005, Paulo moved to Cape Town to obtain his culinary degree and went on to work in some of the finest kitchens in the Cape and the Winelands. His favourite dish to make is, undoubtedly, risotto. In fact, Paulo explains that a well-cooked risotto has always been his most satisfying culinary offering, given the way diners take comfort in its deeply satisfying layers of flavour. Hence, it was only fitting we asked Paolo for his best risotto recipe so we can indulge in the delicious flavours ourselves.

OXTAIL RISOTTO Serves 4 | Time: 14 hours

INGREDIENTS: ROASTED GARLIC PASTE 2 garlic bulbs 30ml extra virgin olive oil 5ml Maldon Sea Salt BASIL AND CHIVE OIL 50ml extra virgin olive oil 50ml canola oil 20g fresh basil 10g fresh chives PEA MOUSSE 200g frozen peas 45ml extra virgin olive oil 100ml fresh cream, whipped Maldon Sea Salt, to taste BRAISED OXTAIL 2kg Oxtail - trimmed of excess fat 4 tbsp. Roasted Garlic Paste Salt 3 tbsp. Butter 1 onion – chopped

1 carrot – chopped 1 celery rib - chopped 2 garlic cloves – chopped 1 tbsp. tomato paste 1 star anise 1 bay leaf 500ml red wine 1L beef stock RISOTTO 30ml salted butter 30ml extra virgin olive oil 1 onion, chopped 5ml roasted garlic paste (see recipe) 80g porcini mushrooms, chopped 160g Arborio rice 125ml dry white wine 1L vegetable stock, freshly prepared 250 oxtail meat – shredded 100g asparagus, chopped, blanched handful fresh spring peas, blanched 80g Parmigiano Reggiano, finely grated 55g salted butter Maldon Sea Salt, to taste

1. Roasted garlic paste, Preheat the oven to 120°C. Lay a sheet of foil in a small roasting tray. Place the garlic bulbs onto the foil, drizzle with the 30ml olive oil and season with the sea salt. Fold the foil to create a little purse and roast the garlic, 2 hours. Remove from oven and allow to cool slightly. Remove the garlic cloves individually and squeeze the smooth garlic paste into a small bowl. Add a little olive oil and salt to create a pliable paste. Set aside. 2. Basil and chive oil: Blitz all of the ingredients in a food processor, strain and set aside. 3. Pea mousse: Fill a saucepan with salted water and cook the peas until tender. Refresh in iced water to cool. In a food processor, blitz the peas to a smooth paste with the 40ml olive oil and a dash of the salted pea water if necessary. Fold the whipped cream into the pea purée and season with sea salt to taste. Refrigerate.

4. Braised Oxtail: Lay the trimmed oxtail in a large roasting tray. Season lightly with salt and run in the roasted garlic paste. Set aside to cure in the fridge. For the braising liquid, in a large pot, melt the butter over a high heat and sauté the onion, carrot, celery rib and garlic together for 5mins. Add tomato paste and star anise and allow root vegetables to begin caramelising. Add the bay leaf and red wine, then reduce by half. Finally add the beef stock and bring to a light simmer. Pour this liquid over the marinated oxtail. Cover the tray with foil and roast in a preheated oven at 120ºC for 10-11hrs. Once cooked, carefully remove the oxtail from the cooking liquor and shred the meat gently. Strain the cooking liquor into a medium saucepan and reduce to a thick glaze. Reintroduce the glaze into the oxtail meat and reserve for use in the risotto. 5. For the risotto: Place a large saucepan over medium heat and soften the butter in 30ml olive oil until foaming. Add finely chopped

onion and cook to soften. Add the garlic paste and porcini mushrooms and cook through, a further 5 mins. Add the Arborio rice to the pan and stir well to coat all the grains of rice. Deglaze the pan with the white wine and allow the alcohol to evaporate. Stir the risotto gently and start adding ladles of hot vegetable stock to the pan. Allow the stock to cook into the rice before adding another ladleful. Continue to add stock and stir, 16-18 mins, until the rice is cooked through, but still al dente. Add the braised oxtail meat, chopped asparagus and fresh peas, cook for a further 2 mins, then remove from heat, and add the Parmigiano Reggiano and butter. Season with sea salt to taste. 6. To serve: Divide the risotto into four bowls. Top with dollops of pea mousse, grated Parmigiano, and a drizzle of basil and chive oil.

Jaguar’s newest SUV is finally arriving in SA this March and is set to take on the likes of the BMW X1.

hen Jaguar announced their SUV range, nobody fluttered an eyelid. The big question was, “Why would Jaguar bring out an SUV if its Land Rover cousins already exist?”, but without further ado, they launched their F-Pace, which became a massive hit and went on to win “World Car of The Year” in 2017. This year sees Jaguar launching the E-Pace and at a very affordable price (R598 500). It carries with it the overall Jaguar feel and luxury. Granted, the base spec is never the most luxurious model, but compared to other competitors, Jaguar is well within a realistic price range.

Its German rivals (BMW X1 at R512 900, Mercedes-Benz GLA at R557 400, and Audi Q3 at R509 900) are worthy opponents and cost less than the E-Pace, however, certain features that you would need to spec on the German vehicles are standard on the Jaguar. - LED head lights, AWD and Automatic, are just a few standard features found on the Jag. Not to knock the Germans down, but well done to Jaguar for bringing a new SUV into a very competative growing segment at a super reasonable price. The E-Pace has a few options of engines available, all being 2Litre Turbocharged engines. The ever-so-popular Diesel option will be available with 3 variations to choose from. BIG FIVE SUBURBS NOW ASKING R20M SELLING PRICE Despite more subdued trading conditions during the past two years, the average selling prices of the Atlantic Seaboard’s top five suburbs, which are incidentally also the top five suburbs in the country, have surged past the R15m average selling price for a full title house and is edging closer to the R20 million price mark.

ance Cohen and Simony Santos, Seeff’s luxury market team for the Atlantic Seaboard, notes that while overall sales have been slower since early last year, buyers have still paid significantly for the right property. We see for example that full title sales in the R20 million-plus

sector for the 2017-year exceeded R1bn at an average selling price of R32.5m, most of these coming from the big five suburbs and prices ranging to over R100m in Clifton. Seeff takes a look at the top five suburbs and ranks them according to the average selling price (for a full title house) for the 2017-year based on a mix of Propstats and Lightstone data. With all the anomalous sales removed to give an accurate reflection of the average selling prices, these rank as: 1. Clifton (R18m), 2. Llandudno (R17.8m), 3. Bantry Bay (R17.7m), 4. Camps Bay (R17.7m), 5. Fresnaye (R16.6m). Overall, full title sales (excluding vacant land sales) for these five suburbs amount to 87 sales worth over R1.7bn at an average selling price of just under R20m. This represents about 77 percent of the value of all full title sales generated for the Atlantic Seaboard for the 2017year. The biggest price movements, have been in Llandudno and Camps Bay. In terms of R20m-plus sales, Camps Bay boasted the most with 11 transactions followed by Fresnaye (7 sales), Clifton (5), Bantry Bay (4) and Llandudno (2). Notably, all full title sales in Clifton were above R20 million say the agents. Over 80 percent of sales were to local Cape buyers followed by Joburg and foreign buyers, who comprise only about 20 percent of all sales. Llandudno were almost exclusively local buyers. The agents note that the notable price shifts evident over the last five years have been driven by high demand from local Cape buyers and

from Joburg (and other wealthy upcountry) buyers rather than foreigners. Joburg buyers have invested over R500m in top end Atlantic Seaboard property over the last year. Cohen and Santos say that it is a good time to buy if you find the right priced property. The team currently holds a number of top end blue chip mandates ranging in price from R60m to over R200m in Clifton, Bantry Bay and Fresnaye. Two top end mandates are in Nettleton Road, Clifton, being the top street in the country. This includes an excellent investment opportunity, being two plots of over 3800sqm that offer ideal development prospects. The road currently commands an average selling price of almost R100m based on the last three houses sold (per Lightstone data). In Camps Bay, Seeff holds mandates ranging to R77.5m for a magnificent 1029sqm luxury home that towers over the Atlantic Ocean with exquisite sea and mountain views, six luxurious oceanfacing bedrooms, two separate guest suites, a cinema, gymnasium, steam room and more, says Lyn Pope of Seeff Camps Bay.
