elcome to the September 2020 edition of OCIO magazine. As the visitors start to return to their real world, life on the coast takes on a degree of normality, but still, the summer vibe continues as we enjoy the fabulous September temperatures. This is a great time to enjoy all that this wonderful part of Spain has to offer, and we don’t have to search for 30 minutes to find a parking space either! This month we have put together some great editorial content which we hope you will enjoy as you relax on a less than crowded beach or perhaps over a sunset Gin & Tonic. We all know that autumn is on the horizon, bringing with it the chilly winds and cold nights but it isn’t with us just yet, so don’t pack away those flip flops too soon.

Septiembre es un mes ideal para disfrutar todo lo que esta maravillosa parte de España tiene que ofrecer, ¡y sin tener que pasar 30 minutos buscando una plaza de aparcamiento! Este mes hemos reunido una gran selección de contenidos que esperamos que disfrutes mientras te relajas en la playa o quizás tomando un Gin-Tonic vespertino en tu bar o terraza favorita. nce again, despite the special circumstances of this year, the beautiful streets of Frigiliana are once again filled with art. With all the security measures in force against COVID19, you can visit the 26 locations distributed throughout the whole village and discover the works of more than 40 artists from 14 different nationalities in the different spaces. An artistic tour full of charm in a safe environment. Come and enjoy it! The 4th ART ROUTE OF FRIGILIANA 2020 will fascinate you!

A wide variety of disciplines: painting, drawing, photography, sculpture, mosaic, ceramics, collage... different techniques and materials: encaustic, watercolour, oil, acrylic, clay, wood, plastic, canvas, cardboard, plaster, polyester, latex, stone... and as many styles as authors.

You will have the opportunity to meet each artist personally and chat with them and discover the secrets of their creative process. You’ll visit the studios of many of these artists and you will even find some of them working in the moment at their location.

We want to highlight the FRIGILIANA ART ROUTE as a protected environment against the covid-19 in which all the preventive measures in force at the time will be taken, in addition to the regulatory safety distance, limited capacity, the use of mandatory mask and hydroalcoholic gel and the disinfection of all spaces.

We will put at your disposal a QR CODE that can be scanned with your mobile phone to access the entire brochure of the 4th FRIGILIANA ART ROUTE. You will be able to scan this QR code in the tourist offices of Frigiliana, Nerja and Torrox, on our social networks, in each one of the 26 locations and at the information booth.

Also at the INFORMATION STAND, you will find our PHOTOCALL where you can take a photo or selfie and immortalize your visit to the 4th FRIGILIANA ART ROUTE by sharing it on your social networks and tagging us @rutadelartefrigiliana or by using #rutadelartefrigiliana We also want to remember the charitable initiative A DAFFODIL FOR SOLEDAD that emerged last year for the 3rd FRIGILIANA ART ROUTE as a posthumous tribute to Soledad Platero and with the aim of raising funds for sarcoma research.

Ruta del Arte Frigiliana 2020 Thanks to all the artists who donated their works with daffodils to the cause and to all the visitors who bought them allowing the ASSOCIATION A DAFFODIL FOR SOLEDAD to make a donation of 13,021 euros to the project IMPERAS de GEIS (Spanish Research Group in Sarcomas) This year, the ASSOCIATION A DAFFODIL FOR SOLEDAD will again participate in the Art Route, with donated pictures still from the previous year and with part of Soledad’s drawings.

Una gran variedad de disciplinas: pintura, dibujo, fotografía, escultura, mosaico, cerámica, collage…Diferentes técnicas y materiales: encáustica, acuarela, oleo, acrílico, arcilla, barro, madera, plástico, lienzo, cartón, yeso, polyester, látex, piedra…Y tantos estilos como autores.

Tendrás la oportunidad de conocer a cada artista personalmente y charlar con él o ella e ir descubriendo lo secretos de su proceso creativo. Visitarás los propios estudios de muchos de estos artistas e incluso te encontrarás a algunos trabajando en vivo en su localización.

Queremos destacar la RUTA DEL ARTE FRIGILIANA como un entorno protegido frente al covid19 en el que se tomarán todas las medidas de prevención vigentes en el momento, además de la distancia de seguridad reglamentaria, aforo limitado, el uso de mascarilla y gel hidroalcohólico

obligatorios y la desinfección de todos los espacios.

También pondremos a tu disposición un CÓDIGO QR que al escanearlo con tu teléfono móvil te dará acceso a todo el folleto de la 4º RUTA DEL ARTE FRIGILIANA 2020. Podrás encontrar este código QR en las oficinas de turismo de Frigiliana, Nerja y Torrox, en nuestras redes sociales, en cada una de las 26 localizaciones y en el stand de información de la Ruta.

Junto al STAND DE INFORMACIÓN, estará nuestro FOTOCOL para que te hagas una foto o selfie e inmortalices tu visita a la 4ª RUTA DEL ARTE FRIGILIANA 2020 compartiéndola en tus redes sociales y etiquetándonos @rutadelartefrigiliana o usando #rutadelartefrigiliana.

También queremos recordar la iniciativa benéfica UN NARCISO PARA SOLEDAD, que surgió el año pasado para la 3ª RUTA DEL ARTE FRIGILIANA 2019 como homenaje póstumo a Soledad Platero y con el objetivo de recaudar fondos para la investigación del sarcoma. Gracias a todos los

artistas que donaron sus obras de narcisos a la causa y a todos los visitantes que las compraron durante la Ruta del arte Frigiliana 2019, permitiendo así a la ASOCIACIÓN UN NARCISO PARA SOLEDAD hacer efectiva una donación de 13,021 euros al proyecto IMPERAS de GEIS (Grupo Español de Investigación en Sarcomas). Este año, la ASOCIACIÓN UN NARCISO PARA SOLEDAD volverá a participar en la Ruta del arte Frigiliana, todavía con cuadros de los donados el año anterior y con parte de los dibujos de Soledad.

Dar las gracias a todas las personas y agrupaciones que nos han apoyado y han hecho posible que este proyecto crezca y se convierta en una cita anual para residentes, participantes y visitantes. n

L

ike most people, we have heard a lot about electric bikes or E-Bikes as they are often called but, like most people, we really have no idea what they are about, how they work and who buys them. Well, the very nice people at Biciterraneo in Torre del Mar kindly offered us a couple of E-bikes for a day to give them a test ride.

The first thing you have to know is that E-bikes, are not mopeds. They are real bicycles with pedals, fitted with a booster system that can supply 90% of the energy needed. To go forward you don’t push on a button, you have to pedal. A smart sensor detects your pedalling force and then provides the extra power required. In other words, if you don’t pedal, you’re not going anywhere! The E-Power comes from a battery that of course is rechargeable and there are different batteries and systems to choose 10 OCIO magazine

So, battery fully charged on both our bikes and off we go.

Initially there is no difference, it is a beautifully designed bicycle and we are riding along the coast road taking in the scenery, nothing new there. Our ride took us along to Caleta de Velez where we turned left to go up the hill to Baviera Golf

Club...a good test for us and the bikes we thought. And this is where it gets very interesting. The hill up to Baviera Golf is frankly beyond our cycling capabilities but with the E-Power in reserve we were full of confidence. So, with the E-Power switched to full assistance, the bikes were doing most of the heavy work, we simply had to provide a little help on the pedals. Having reached the crest of the hill, we switched the E-Power off to conserve the battery and our leg power took over once again. The hill climb was still exercise for us but it made the climb so much easier instead of the mission impossible it would have been without the E-Power. u

Our experience with E-Bikes was fun, enjoyable and educational. If you would like to try one for a day, go along to Bicirerraneo and ask about the renting packages they have on offer. Who knows, you just might discover a brand new hobby for yourself. n

omo la mayoría de la gente, hemos oído hablar mucho de las bicicletas eléctricas o E-Bikes, como suelen llamarse, pero, igual que la mayoría de la gente, no tenemos ni idea de qué se trata realmente, cómo funcionan y quién las compra. Bueno, la encantadora familia de Biciterraneo, en Torre del Mar, nos ofreció amablemente un par de E-bikes por un día, para que las probáramos.

Lo primero que hay que saber es que las E-bikes, no son ciclomotores. Son bicicletas reales con pedales, equipadas con un sistema de refuerzo que puede suministrar el 90% de la energía necesaria. Para avanzar no se presiona un botón, se tiene que pedalear. Un

sensor inteligente detecta la fuerza del pedaleo y proporciona la energía extra necesaria. En otras palabras, si no pedaleas, ¡no vas a ninguna parte! El E-Power proviene de una batería que, por supuesto, es recargable y aunque hay diferentes baterías y sistemas para elegir, básicamente todos funcionan de la misma manera.

Por lo tanto, con las baterías de nuestras bicicletas completamente cargadas, empezamos la marcha.

Inicialmente no hay gran diferencia, es una bicicleta con un diseño muy bonito, con la que vamos disfrutando del paisaje por la carretera de la costa; nada nuevo.

Nuestro viaje nos llevó a Caleta de Vélez, donde giramos a la izquierda para subir la colina hacia el Club de Golf Baviera... una buena prueba para nosotros y las bicicletas. Y aquí es donde la cosa se pone interesante. La subida a Baviera Golf está francamente más allá de nuestras capacidades ciclistas, pero con el E-Power de reserva estábamos llenos de confianza. Así que, cambiando el E-Power

his time last year we had the pleasure of playing the fabulous Alhaurín Golf in Alhaurín El Grande and, whilst planning our summer golf, our group of golfers wanted to make sure we included it again this year in our golfing calendar.

One year later we were as impressed with the course as we were the first time around.

We were reminded of the excellent views of the Sierra de Mijas and the Mediterranean Sea below as we played this 18 hole par 72 course designed by the unforgettable 16 OCIO magazine

and legendary Severiano Ballesteros.

The course is located on uneven terrain, which gives it a wonderful personality which, when added to the original design by the great Seve, makes the course a challenge for the low handicap players but still a fun and enjoyable round of golf for the medium and high handicap players... which is us. The course consists of 5 par 3 holes, 5 par 5 holes and 8 par 4 holes, all of which are unique, creating a challenging, demanding, original and fun round of golf.

Along these 18 holes you will enjoy the magnificent contrast offered by the well kept fairways, roughs and even the wild environment of the Sierra de Mijas.

As well as the main 18 hole course that we played there is a pretty par 3 course available. Not only is this a perfect place to start playing golf but it’s also perfect for practicing your short game.

And on the topic of practice, Alhaurín Golf offers a magnificent practice area with multiple driving bays and wide open spaces plus a putting green and a chip

l año pasado por estas fechas, tuvimos el placer de jugar en el fabuloso Golf de Alhaurin, en Alhaurin El Grande. Este año, mientras planificábamos nuestro golf veraniego, nuestro grupo de golfistas quiso asegurarse de que lo incluiríamos de nuevo en nuestro calendario de golf.

Un año después estábamos tan impresionados con el campo como la primera vez. Recordamos las excelentes vistas de la Sierra de Mijas y el Mar Mediterráneo, que se encuentran

debajo, mientras jugábamos este campo de 18 hoyos par 72 diseñado por el inolvidable y legendario Severiano Ballesteros. El campo está situado en un terreno accidentado, lo que le da una maravillosa personalidad que, sumada al diseño original del gran Seve, hace que el campo sea un reto para los jugadores de bajo hándicap, pero a la vez una ronda de golf divertida y entretenida para los jugadores de hándicap medio y alto... ¡que somos nosotros! El campo consta de 5 hoyos par 3, 5 hoyos par 5 y 8 hoyos par 4, todos ellos únicos, creando una desafiante, exigente, original y divertida ronda de golf.

A lo largo de estos 18 hoyos disfrutará del magnífico contraste que ofrecen las cuidadas calles, los roughs e incluso el entorno salvaje de la Sierra de Mijas.

Además del campo principal de 18 hoyos, en el que hemos jugado, hay disponible un bonito campo de par 3. No sólo es un lugar perfecto para empezar a jugar al golf, sino que también es perfecto para practicar su juego corto.

Y en cuanto a la práctica, Alhaurín Golf ofrece una magnífica zona de prácticas con múltiples puestos de prácticas y amplios espacios abiertos, además de un putting green y una zona de chip y putt.

En el interior de la Casa Club, el Pro Shop destaca como uno de los más completos de Andalucía, ofreciendo al golfista todo lo que pueda necesitar y todo con la ayuda de personal multilingüe.

Tanto para los jugadores como para los no jugadores, la casa club, con su impresionante restaurante, bar, terraza y jardines, ofrece un ambiente relajado con maravillosas vistas al campo de golf y al campo, donde se puede disfrutar de la auténtica cocina andaluza con toques internacionales. n OCIO magazine

Azata Golf Club D

uring the month of August we had the pleasure of playing the newest golf course on the Costa del Sol, Azata Golf in Estepona. It is the only golf course to be built on the Costa del Sol in the last 10 years, but we hope it will not be the last.

The club currently offers a putting green and a chip and putt zone to practice before your round of golf. The driving range with fabulous views to the Mediterranean is currently under construction but will be available to use shortly. The impressive clubhouse, bar and restaurant is built and ready but is not yet operational aside from 18 OCIO magazine

the reservations office and temporary pro shop. The delightful golf course was designed by Sterling & Martin. The 18 hole, par 71 course of 5332 metres off the yellow tees offers spectacular views down to the Mediterranean Sea with an equally spectacular backdrop of the Bermeja mountains behind you. It is a course that you can walk but we decided to take advantage of the fleet of brand new EZGO RXV buggies.

Even with the intense summer heat the maintenance team manage to keep the course in perfect condition. The fairways are green and the grass is soft under foot,

assisiting you with good contact with the ball. The majority of the fairways are wide allowing the bigger hitters to open their shoulders off the tee. There is very little ‘out of bounds’ but there are plenty of red stake markers and water hazards to keep you on your guard. The greens are some of the best we have played all along the Costa del Sol. They are fast, but they are true and a good pitch shot will see the green respond by holding the ball perfectly for you upon landing.

This was our first round at Azata Golf and our mid handicap group managed to score well over the 18 holes. We look forward to

returning a second time and playing the course with a little local knowledge to see if we can improve on our scores. All in all, a very enjoyable day of golf at Azata Golf and yes, we will most definitely be returning for more. n

urante el mes de agosto tuvimos el placer de jugar en el nuevo campo de golf de La Costa de Sol, Azata Golf en Estepona. Es el único campo de golf que se ha construido en La Costa del Sol en los últimos 10 años y esperemos que no sea el último.

El club ofrece actualmente un putting

green y una zona de chip y putt para practicar antes de su ronda de golf. El campo de prácticas está en construcción y estará disponible para su uso a su debido tiempo con unas vistas espectaculares al Mar Mediterráneo.

La impresionante casa club, el bar y el restaurante están construidos y listos, pero aún no están operativos, aparte de la oficina de reservas y la tienda provisional.

El encantador campo de golf fue diseñado por Sterling & Martin. El campo de 18 hoyos, par 71, de 5332 metros desde los tees amarillos ofrece unas vistas espectaculares al Mar Mediterráneo con

un fondo igualmente espectacular de las montañas Bermeja a sus espaldas. Es un campo que se puede recorrer a pie, pero decidimos aprovechar la flota de nuevos buggies EZGO RXV. Incluso con el intenso calor del verano, el equipo de mantenimiento se las arregla para mantener el campo en perfectas condiciones. Los fairways son verdes y el pasto es suave bajo los pies, ayudándote a tener un buen contacto con la pelota.

La mayoría de las calles son anchas permitiendo a los grandes bateadores abrir sus hombros desde el tee. Hay muy poco “fuera de límites” pero hay muchas marcas rojas de estacas y peligros de agua para mantenerte en guardia. Los greens son unos de los mejores que hemos jugado a lo largo de la Costa del Sol. Son rápidos, pero son verdaderos y un buen golpe de pitch se sujetará perfectamente donde hemos planeado jugar.

Esta fue nuestra primera ronda en Azata Golf y nuestro grupo de hándicap medio se las arregló para anotar un buen resultado en los 18 hoyos. Esperamos volver por segunda vez y jugar el campo con un poco de conocimiento del lugar, para ver si podemos mejorar nuestros resultados. Con todo, un día de golf muy agradable en Azata Golf y sí, definitivamente volveremos por más. n

egular readers of OCIO magazine will be familiar with Los Arqueros Golf and Country Club located in the Sierra de Ronda hills, 5km north of San Pedro de Alcantara and overlooking the Puerto Banus valley. The first thing to note is that the bar and bowling venue is open to all golf players, non golf players and visitors alike. It has easy access and of course easy parking.

A

s we get older, there are new things to think about when it comes to exercising. Increasingly, barriers can stand in the way of us being able to run, jump, skip or dance like we used to, but the benefits of staying active in older age shouldn’t be ignored.

Very simply, exercise is so important to everyone and especially to those of us in the 50+ bracket.

Perhaps most obviously, exercise can help us maintain a healthy weight. Likewise, it reduces lethargy and means we can get on with the activities we enjoy. It’s not just about keeping the weight off either, as regular exercise helps us keep healthy muscles. As we get older it becomes harder for our bodies to maintain muscle, but exercise can combat this, improving our strength and balance so we can continue to lead the independent life we’re used to. With this in mind, it’s not surprising to see a link between exercise and good mental health, as we’re able to keep up things like hobbies, social commitments, or even playing with the grandchildren. Likewise, it can have an impact on our confidence and selfesteem. This is thought to be one of the reasons active people have a reduced risk of suffering from depression.

So how much exercise should you be doing? Well, in my professional opinion, I 24 OCIO magazine

recommend that the over 50s should aim for around two and half hours of moderate exercise a week.

Ideally this would be spread out, with short bursts of activity – around 20 minutes to half an hour – most days of the week. Clearly this exercise doesn’t have to be weightlifting or marathon training, but it does need to be something that raises your heart rate. Activities like a brisk walk or bike ride should work, but you can also see an impact from things like pushing the lawnmower, or even the vacuum cleaner, although I am sure this is not the kind of exercise you have in mind. It’s important

not only to focus on cardio exercise but to include exercise that encourages the building and maintaining of muscle too.

While weight training and Pilates can be good for this, household tasks involving heavy lifting – like big gardening projects – can also help. Varying our exercises is also important as it works different muscle groups. The most important thing to remember though is to do what’s right for you. Exercise in your 50s or even 60’s is going to be very different to that in your 70s and 80s. Adapt what you do as you age. If you don’t have the strength or balance you used to have, there are other ways of staying active. Yoga of course is fantastic for any age and for a healthy heart and mind slow dancing is a wonderful form of exercise and socialising to keep you happy and healthy. n

Cada vez más, las limitaciones pueden impedirnos correr, brincar, saltar o bailar como solíamos hacer, pero los beneficios de mantenerse activo en la vejez no deben ser ignorados. Sencillamente, el ejercicio es muy importante para todos y especialmente para los que estamos en el grupo de los 50+.

Tal vez lo más obvio es que el ejercicio puede ayudarnos a mantener un peso saludable. Asimismo, reduce el letargo y significa que podemos seguir con las actividades que disfrutamos. Tampoco se trata sólo de mantener el peso, ya que el ejercicio regular nos ayuda a mantener los músculos sanos. A medida que envejecemos, se hace más difícil para nuestro cuerpo mantener los músculos, pero el ejercicio puede combatir esto, mejorando nuestra fuerza y equilibrio para que podamos seguir llevando la vida independiente a la que estamos acostumbrados. Teniendo esto en cuenta, no es sorprendente ver un vínculo entre el ejercicio y la buena salud mental, ya que

somos capaces de mantener cosas como los hobbies, los compromisos sociales, o incluso jugar con los nietos. De la misma manera, puede tener un impacto en nuestra confianza y autoestima. Se cree que esta es una de las razones por las que las personas activas tienen un riesgo reducido de sufrir depresión.

Entonces, ¿cuánto ejercicio debería hacer? Bueno, en mi opinión profesional, recomiendo que las personas mayores de 50 años deben aspirar a unas dos horas y media de ejercicio moderado a la semana.

Lo ideal sería que esto se repartiera, con ráfagas cortas de actividad - alrededor de 20 minutos a media hora - la mayoría de los días de la semana. Evidentemente, este ejercicio no tiene que ser de levantamiento de pesas o de entrenamiento de maratón, pero sí debe ser algo que aumente el ritmo cardíaco. Actividades como una caminata rápida o un paseo en bicicleta podrían servir, pero también puedes ver el impacto de cosas como empujar la cortadora de césped, o incluso la aspiradora,

aunque estoy seguro de que no es el tipo de ejercicio que tienes en mente. Es importante no sólo centrarse en el ejercicio cardiovascular, sino también incluir ejercicios que fomenten la construcción y el mantenimiento de los músculos.

Mientras que el entrenamiento con pesas y el Pilates pueden ser buenos para esto, las tareas domésticas que implican levantar cosas pesadas - como los grandes proyectos de jardinería - también pueden ayudar. Variar nuestros ejercicios también es importante ya que trabaja diferentes grupos musculares. Sin embargo, lo más importante que hay que recordar es hacer lo que es correcto para ti. El ejercicio a los 50 o incluso a los 60 años será muy diferente al de los 70 y 80. Adapta lo que haces a medida que envejeces. Si no tienes la fuerza o el equilibrio que solías tener, hay otras formas de mantenerse activo.

El yoga, por supuesto, es fantástico para cualquier edad y para un corazón y una mente sanos, el baile lento es una forma maravillosa de ejercicio y de socialización para mantenerte feliz y sano. n

ow into its third generation, and in facelifted format, the ‘new’ MINI Convertible is easily the best yet. Like the latest hatchback models, the MINI Convertible for sale today is the biggest and most spacious ever, but it’s also more upmarket and has a terrific range of turbocharged power units that have improved both power and economy.

The 2020 facelift brings standard LED headlights, Union Jack Flag rear lights, new daytime running lights, fresh paint and wheel options and an improved sat-nav screen. Owners can also order 38 OCIO magazine

customisable, 3D-printed doorsills, dashboard panels, puddle lights and inserts for the side indicators Direct rivals for the sporty MINI are few and far between, but there are quite a few contenders for sporty open-air enthusiasts that arguably range from two-seaters like the Mazda MX-5, through fashionable styleled models like the Fiat 500C convertible, to more grown-up rivals like the Audi A3 Convertible. Technically, the Fiat has rollback roof panels of course, while the MINI is a full convertible, both options are perfectly acceptable and equally fun on a

hot summers day.

As well as choosing your model, there are a variety of option packs designed to tempt buyers to push the boat out further.

The Comfort pack adds automatic air conditioning, heated seats and a front centre armrest amongst other refinements, while the Navigation Plus Pack adds satnav, Apple CarPlay and a full suite of connected services.

All are also available with a six speed manual or automatic gearbox, and because the Cooper is the entry-level car there’s a decent amount of standard kit as well. Boot space of 215 litres and limited legroom in the back do harm the practicality of the car but then again, it is a MINI, so how much space do you expect it to have really?

This third-generation MINI hatchback is without doubt a worthy contender if you are considering changing your four wheel transport. Be prepared though, it is fairly expensive when considering other cars in the market place. Having said that, there aren’t many true rivals that offer open-top thrills in a supermini sized package. So with that in mind it is difficult to compare prices with other cars you may be considering.

There are a lot of personalisation options which are fun to play with but do put the price up, so be careful.

Pero prepárate, es bastante caro si consideras otros coches en el mercado. Dicho esto, no hay muchos rivales verdaderos que ofrezcan emociones sin límites en un paquete de tamaño supermini. Así que, con eso en mente, es difícil comparar los precios con otros coches que puedas estar considerando. Hay un montón de opciones de personalización que son divertidas de manejar pero que hacen subir el precio, así que ten cuidado.

En definitiva, este es un coche fabuloso que sin duda ha resistido el paso del tiempo y sigue yendo a más con el apoyo de su creciente grupo de leales seguidores. n

lthough it is common for Indian restaurants to present dishes as part of a uniform, nationalized cuisine, in actuality, the food of India is as regionally specific and diverse as its population. These cuisines are heavily influenced by India’s history, conquerors, trade partners, and the religious and cultural practices of its populace.

That said, there are certain common threads that unite the different culinary practices. Indian cuisine throughout the nation is highly dependent on curries, although the particular spice mixtures, degree of liquidity, and ingredients are determined by regional preference. Indian cuisine in general is very dependent on rice and uses perhaps a greater variety of pulses than any other world cuisine.

Perhaps the most defining characteristic of Indian cuisine though is its diverse use of spices. Indian spice mixes often use upwards of five different spices, sometimes combining 10 or more different spices to create the flavours that we have all come u

Perhaps the most prevalent culinary style found outside of India is the Northern Indian cuisine which reflects a strong Mughal influence. It is characterised by a high use of dairy: milk, paneer (an Indian mild cheese), ghee (clarified butter), and yoghurt are all used regularly in Northern dishes. Clay ovens known as tandoors are popular in the North, giving dishes like Tandoori Chicken and Naan bread their distinctive charcoal flavor. A significant number of Northern dishes make regular appearances on almost all Indian restaurant menus.

Western Indian cuisine is distinguished by the geographic and historical particulars of its three main regions: Maharashtra, Gujarat, and Goa. Maharashtra’s coastal location is responsible for its fish and coconut milk-dominant cuisine. Gujarati cuisine is mostly vegetarian and has an underlying sweetness to many of its dishes due to Chinese influence. This region 50 OCIO magazine

is well known for its chutneys, which are popular Indian condiments that use cooked, fresh, or pickled vegetables and fruits with sweet, sour, or spicy flavors. Goa acted as a major trade port and colony for Portugal, resulting in a distinctive and unique blend of Indian and Portuguese culinary elements. Goan cuisine uses pork and beef with greater frequency than other regional cuisines in India. Vinegar is also a characteristic ingredient of Goan cuisine, another result of Portuguese influence.

Eastern Indian cuisine is primarily known for its desserts. These desserts are not only favoured by other regions in India, but are frequently found in Indian restaurants.

Rice and fish also feature prominently in Eastern cuisine. Overall, Eastern dishes are more lightly spiced than those from other regions.

Southern Indian cuisine is not typically found on many Indian restaurant menus and differs greatly from other regions. Its “curries” contrast differently in their textures

and can typically be categorised according to the drier consistency, or those favouring a more soupy or stew-like presentation.

Aside from curry-style dishes, Southern Indian cuisine is known for its tasty fried or griddle-cooked snacks. Dosas consist of a large crepe-like rice pancake that is usually filled with vegetables, chutneys, or masala curries. Utthapams are similar to dosas, but are thicker with the “filling” sprinkled on top like a pizza. Idlis and vadas are fried delicacies similar to savory doughnuts that are served as accompaniments to sambars and rasams. Apart from restaurants that specifically serve Southern Indian cuisine, the only South Indian food that is frequently found in Indian restaurants are pappadams...and we all love pappadams! n crean esos sabores que todos hemos aprendido a disfrutar.

reat burgers are the stuff dreams are made of. A perfectly cooked and seasoned patty sandwiched between a good quality bun, the juices from the meat making a delicious mess, and memories of summertime barbecues lending a subtle note of nostalgia.

Whether you like your burger topped with just a few classic ingredients or prefer to be more experimental, when it comes to making a great burger you’ve got to nail the basics, especially the all important patty.

For the ground beef, an 80% - 20% meatto-fat ratio is ideal. Chefs opinions differ in which cuts of beef are best to use, but they generally agree on the 80% - 20% ratio to achieve the right balance of moisture and flavour. Anything leaner than 20% fat and the meat will be dry and will crumble as you eat it.

Ratios and cuts of beef aside, it is important to source your beef from reputable purveyors. Chefs know that the best burgers will always come from the best raw ingredients. So spend a little more and source the very best produce you can find.

In terms of size, again, Chefs opinions differ and range from as small as 4 ounces up to 10 ounces. It seems the way the patty is cooked will dictate the size. For example chefs who cooked on a griddle or plancha seemed to prefer no more than 4 ounces of beef. For grill cooking a 6-8 ounce patty is popular so the exterior is nice and seared and the interior is perfectly pink and juicy. Pan searing is a popular way to cook anything up to a 7 ounce beef patty. Anything bigger and you will need a traditional open barbecue grill.

When preparing the patty, avoid overworking the mixture and always use chilled meat.

“As a general guide”, says chef Stephen Falcom, “just grab a ball of meat the size of a pool ball and gently flatten it out. Do not mess with it too much as you want to keep it loosely packed, so that when it cooks, it stays juicy. Do not season the patty either as the salt or seasoning will draw out the moisture from the meat and the meat will stick together like glue. When it’s time to season though, don’t hold back.”

The key to a great burger is to create a hard sear to lock in flavours and add texture.

Regardless of how it is cooked, searing the exterior while keeping colour on the interior is the only way to taste the meat. Whilst 54 OCIO magazine

And finally. To cook a great burger, do not let it spend too much time on the hottest part of the grill. Place it there to start by all means as this helps to seal in the juices but then move it to a lower temperature part of the cooking surface to make sure it has time to heat all the way through. Anyone that has cooked on a barbecue in summer will tell you that it is quite surprising how quickly a burger can burn and overcook. So don’t rush it. Let it take it’s time to cook and seal in those delicious juices.

Honestly, it is the one biggest mistake people make when preparing a burger.

And if all of this seems like just a little bit too much like hard work, you can always leave it to the professionals and reserve yourself a table at your favourite restaurant. You haven’t n got to clear up afterwards either!

hat makes a good beverage pairing is similar to what makes a good friend: The ideal companion has considerable character, and that character allows you to get the most out of your interactions. Brown liquor, which derives its colour from time spent in barrels, should by that logic be considered a naturally mature, generous, and intriguing companion.

Here are a few of our favourite food pairings to complement your palate.

Cognac + Chilled Seafood It isn’t simply because the opulent tray of chilled shellfish and raw seafood echoes nicely with the layers of flavour and luxury of cognac, though it does of course. Rather, it’s that the salinity and oceanic quality of shellfish like oysters and lobster claws finds a smooth and summer fruited companion in cognac, especially a fine cognac as rich and well-balanced as Remy Martin XO. It’s the ultimate surf and turf combination.

How to serve: Neat, room temperature, and often.

Sake + Sushi Sake is the natural companion to any sushi, to the point where it is almost obligatory. The Sake benefits from the soft delicate touch and taste of raw fish and the salinity of the seaweed. The merits of Sake are more than just flavour though. It is often said that Sake is needed to kill off any bacteria that might be lurking in the raw fish.

How to serve: Straight and either chilled or hot as you prefer.

Scotch Whisky + Duck Sometimes you have to fight fire with fire or, at least, peat with fat. Scotch, especially peated, demands a strong willed dance partner.

Duck, one of the fattiest fowl there is, can more than hold its own. This tussle of smoke and peat on one side, sweet on the other, is simply delicious on the tastebuds.

How to Serve: With splash of water, to open up the flavours.

Rum + Glazed Jerk Chicken The sweet yet complex flavours of rum, an alcohol made with molasses, is a natural fit 60 OCIO magazine

Liquor & Food Pairings with the sweet yet complex profile of a glazed jerk chicken. Cooking with the alcohol you’re drinking makes perfect sense to me but, in this case, with rum’s high sugar content, it’s the prudent choice to include rum in the marinade as well as your glass.

How to serve: Neat at room temperature.

Brandy + Chocolate Brownies Brandy is a broad term of course but, aged brandies often develop dried fruit flavours, and for this reason alone, as well as the silken texture, caramelised notes, and its traditional role as a digestive, it perfectly complements gooey chocolate brownies. Please note, however, the brownies should be, as all brownies should be, not overly sweet, but

rather have traces of the innate bitterness of the chocolate.

How to Serve: Neat in a crystal glass... obviously.

Port + Stinky Cheese As the night extends to early morning, it’s only natural that flavours get stronger and discussion more heated. This is the right moment to break out the aged port and a plate of strong cheese like Stilton. The sweetness of the port and the funk of the cheese rest on opposite ends of the flavour spectrum but somehow manage to meet in the happy middle in your mouth.

How to serve: Neat, room temperature, perhaps with the windows open. n

Sake + Sushi El sake es el acompañante natural de cualquier sushi, hasta el punto de ser casi obligatorio. El sake se beneficia del suave y delicado toque y sabor del pescado crudo y de la salinidad de las algas marinas. El mérito del sake va más allá del puro sabor.

A menudo se dice que el Sake es necesario para matar las bacterias que puieran estar al acecho en el pescado crudo.

Cómo servir: Puro y frío o caliente, de acuerdo a tu preferencia.

Whisky escocés + Pato A veces hay que combatir el fuego con fuego o, al menos, a la turba con grasa. El whisky escocés, especialmente el turbado, exige una pareja de baile fuerte. El pato, una de las aves más grasientas que existen, puede más que mantenerse por su cuenta.

Este tumulto de humo y turba por un lado, dulce por el otro, es simplemente delicioso para el paladar.

Cómo servir: Con un chorrito de agua, para

abrir los sabores.

Ron + Pollo Salteado Glaseado Los sabores dulces y complejos del ron, un alcohol hecho con melaza, encajan perfectamente con el perfil dulce pero complejo de un pollo salteado glaseado.

Cocinar con el alcohol que estás bebiendo tiene mucho sentido para mí, pero en este caso, con el alto contenido de azúcar del ron, lo más prudente es incluir el ron en la marinada, así como en tu vaso.

Cómo servir: A temperatura ambiente.

Brandy + Brownies de chocolate Brandy es un término amplio, por supuesto, pero los brandies añejos a menudo desarrollan sabores de frutas secas, y por esta sola razón, así como por su textura sedosa, su toque caramelizado y su tradicional papel como digestivo, complementan perfectamente a los brownies de chocolate fundido.

Tenga en cuenta, sin embargo, que los brownies, como deberían ser todos los brownies, no deben estar demasiado dulces, sino más bien tener rastros de la amargura innata del chocolate.
