Welcome to our June edition of Windsor & Maidenhead Local magazine, brought to you by Local Area Magazines. I mention Local Area Magazines as we now have a new website where the current digital editions of both this magazine and also our premier publication, Wokingham Local can be page turned and read online. What’s more, we are very excited to announce the launch this week of our third publication entitled ‘Cheshire’s Golden Triangle’ which incorporates the Cheshire towns and villages of Wilmslow, Alderley-Edge and Prestbury, and our team ‘up North’ are delighted to follow in the footsteps of our very popular Windsor & Maidenhead Local magazine. We wish them the best of luck!

So, what have we been up to recently, where have we been, and what have we seen? Well, we visited Holme Grange craft village and stopped off to see Gayle at Enchanting Glass Designs who offers bespoke and unique handmade fused glass art, and she also offers courses if you fancy a go yourselves? Poggenpohl has the most fabulous case study to share with contemporary kitchen architecture and design. Our teenage reporter Madison takes us on a trip to York, and I have the enviable job of tasting street food in Istanbul - well someone had to do it! What a ‘must see’ vibrant city it is, I have to say. We hear from Mel at Melanie Curtis Accountants and Jim at Hamilton Nash talks about conflict resolution, which is a very interesting read. Our local colleges and libraries have so much going on over the next weeks, and talking of events this issue is cram packed with festivals, craft markets, and shows; with something for everyone throughout our amazing Royal Borough.

Turn Your Dream Kitchen into Reality

Creating kitchens within small spaces can often be a challenge as there are restraints in place that a larger space might not have, but this shouldn’t reflect the overall design. This kitchen was in a 1st floor apartment in a Georgian townhouse, and so from the outset we wanted to embrace the period features of the building.

By using the architecture to make it part of the space, drawing on features, such as the original sash windows, rather than working against it.

It was ultimately a reconfiguration of the space, but in a period building there are constraints as to what you can do. It was really interesting architecturally, and the client wanted the architectural details to be complimented rather than hidden.

It was very clear from the outset that the most important thing for them was the fluidity of the design from kitchen through to living space, and that while it would be a separate area for cooking, it must also be one entire space for living and dining.

The addition of the Crittall framework to create a glass wall between the kitchen and living area looks so striking in the overall look of the space. We incorporated it into the design by utilising the top of the arch as a focal point and designed the wall units to reach the same height.

The ceilings in the apartment were incredibly high, and so even though we added additional storage by utilising the height, there was still more space above, ensuring that the kitchen didn’t over-power the space, but instead extended the elegance that aligned with the door height.

By adding height, we created elegance by drawing the eye up. We also added interest with fluted glass doors which also adding a traditional element to the design.

The client was mindful not to overcomplicate the kitchen and have too many units, as it was quite a small space. Therefore, agreed on the design to include open shelving on one wall. This allowed a place for plants and decorative items to have pride of place, while keeping the wall open, allowing light to bounce around the room and stop the space feeling too enclosed.

We also incorporated a breakfast station with pocket doors, in order that all the smaller breakfast style appliances could be hidden from view, to reduce clutter and keep the worktop clean and tidy.

York - A Magical City

York, with its ancient cathedral towering over the cityscape, is like stepping into a time capsule of history. As a teenager, I find myself drawn to the mystique of York Minster, its Gothic architecture looming over the cobblestone streets below. The sheer size of the cathedral is awe-inspiring, making me feel small in comparison to the grandeur of centuries past.

The Shambles (left), nestled within the winding alleys of the city, feels like something out of a storybook. In particular, Diagon Alley from the Harry Potter novels - and I am a Potterhead myself. The crooked timber-framed buildings lean in towards each other, casting shadows that seem to dance in the narrow lanes. It’s a bustling hub of activity, with quaint shops selling everything from handmade crafts to traditional sweets. I love exploring these unique stores, each one offering a glimpse into York’s rich heritage.

The atmosphere in York is palpable, especially as dusk settles and the street lights flicker to life. There’s a sense of mystery and adventure around every corner, as if the city itself holds secrets waiting to be discovered. Whether it’s wandering through the ancient city walls, visiting the ancient York Minster, or admiring the view from Clifford’s Tower, there’s never a dull moment in York.

The Benefits of Voluntary VAT Registration

Some businesses choose to register voluntarily for VAT before their annual income reaches the compulsory limit of £90,000 on VATable turnover.

But why on earth would somebody volunteer to register for VAT and pay a tax when they don’t have to? It’s because the benefits may sometimes outweigh the disadvantages - it really depends on your individual circumstances.

VAT is a tax collected on behalf of HMRC. It never belongs to you. VAT registered businesses add VAT to their sales invoices and can reclaim any VAT included in the items they have bought. If you are not VAT registered you still have to pay the VAT on your purchases but are unable to reclaim it. Those who suffer in paying the actual tax, are the non-VAT registered businesses and individuals, at the bottom of the chain.

What are the benefits of being VAT registered?

You’ll appear to be a bigger business if you’re charging VAT, as the current limit for compulsory registration is £90,000 on VATable turnover (2024/25).

If you sell to VAT registered businesses they can reclaim the VAT from HMRC so your selling price is still competitive and you will be able to recover the VAT on your costs.

Maintaining up to date records will provide better information for running your business.

You can claim VAT on certain items that you purchased prior to the date of VAT registration. Talk to your accountant about the exact details. If you are in a VAT reclaim situation then you will definitely be better off.

You’re likely to receive repayments because your VATable sales are lower than your VATable costs. This may be because you’re accumulating stock or because your sales are below the standard rate of 20% at either the reduced rate of 5% or zero rate 0%.

Here’s an example of how being VATregistered could help:

If your income is £50,000 and your costs are £24,000 then you would have a profit of £26,000.

If you register for VAT then you would have income of £60,000, of which £50,000 is yours and £10,000 is VAT collected on behalf of HMRC.

If your £24,000 includes £2,000* of VAT then you pay HMRC £10,000 - £2,000 = £8,000.

Your profit is then £50,000 - £22,000 = £28,000 so you are better off by the £2,000 of VAT that you are now able to reclaim from HMRC.

*Not all costs include VAT (e.g. there is no VAT on salaries or bank charges).

Are there any disadvantages of being VAT registered?

There can be increased admin and bookkeeping costs. Although this needs to be done for your annual accounts anyway and there is software to help you - such as the VAT feature in the Starling Business Toolkit.

If your customers are not VAT registered themselves then you will immediately appear 20% more expensive when you add VAT onto your sales invoices.

If I register for voluntary VAT, can I deregister again?

Yes you can, but only under specific circumstances, which can be viewed in detail here: starlingbank.com/resources/ business-guides/benefits-of-being-vat-registered/

How do I register for VAT voluntarily?

The process is exactly the same as for a compulsory registration. You can read more about that in our article on becoming VAT registered, also at the page shown above.

From 1 April 2022, anyone registered for VAT (including those who registered voluntarily) will need to comply with Making Tax Digital.

Resolving Conflict at Work

I have previously written for Local Area Magazines about four cognitive biases that we all have. They cause us to get into disagreements because they make us assume that our view of the world is correct, and an opposing view is wrong. I’m a workplace investigator and mediator, and I specialise in managing conflict within businesses. In this month’s article, I’m going to introduce techniques you can use to de-escalate conflict.

De-escalate Before Trying to Resolve

At first, when we disagree with someone, there’s no anger involved. We assume the other person has simply misunderstood and we can set them straight. Of course, they’re thinking the same thing, and so the disagreement continues. Then the negative emotions bubble up, and we can see the other person as an adversary that must be defeated. It becomes a matter of principle!

The problem is that it is hard to have a rational discussion when we’re being influenced by irrational emotions. The first thing you need to do is try to take some of the heat out of the situation.

The Power of “Time Out”

When you are butting heads and people are getting hot under the collar, calling a ‘time out’ can be a very effective de-escalation technique;

“Okay, let me take some time to think about what you’ve said. Let’s get back together in 30 minutes.”

This is a useful technique because:

- It allows time for any emotion to dissipate

- It allows you (and them) some thinking time

- It sends a powerful signal that you are listening to what they’re saying

- They’re more likely to listen to you when you reconvene

The beauty of this is that you don’t have to admit you’re wrong in order to defuse the situation!

When the conversation resumes, the other party will usually be more receptive to listening to you. Now, this technique only helps take the heat out of the situation, but the time it buys you gives you a chance to think about closing the gap with your opponent.

Interests Rather than Positions

Most conflicts, especially ones that have escalated, are a battle between entrenched positions. What people want, what must happen, what must change, and so on. The problem is that this leaves you nowhere to go. Everyone digs in, and the argument gets increasingly bitter.

So how do we break the deadlock? The key to unlocking it is to try and identify what concerns and/or interests lie behind the positions. Instead of arguing about opposing solutions, try to reframe the discussion back to the requirements: what’s important here? What are we trying to solve, or avoid? There’s a good chance you can find some mutual interests that you can agree on. That gives you an opportunity to shift from a why we can’t agree, to a how we can discussion. The problemsolving partnership can be restored.

The ‘time out’ I mentioned before gives you the chance to think about what might be important to the other party. What concerns or interests might be

behind their position? What questions can you ask to check those concerns and explore alignment? This is a technique I use a lot in workplace mediations, and it’s very effective.

Changing of the Guard

During any visit to Windsor, whether resident or tourist, the Changing of the Guard Ceremony at Windsor Castle is a lovely spectacle to see, and for many visitors a highlight of their stay. Guard Change will take place every Tuesday, Thursday and Saturday mornings.

There are plenty of fantastic vantage points from the Victoria Barracks at Sheet Street, along the High Street, past Windsor Guildhall (a great viewing point is on the Corn Exchange under the Guildhall) and up Castle Hill, past the Victoria Statue.

We recommend that you arrive and are in position by 10.45am to watch the ‘new guard’ march up from the barracks and into the Castle, and in position by 11.15am to see the ‘old guard’ retiring from duty and return to Victoria Barracks.

The actual Guard Change Ceremony takes place within the Castle Quadrangle, so you will need an entrance ticket to the Castle to enjoy this part.

The Queen’s Walkway

A Symbol of Heritage, history, and the British Monarchy

The Queen’s Walkway is a 6 kilometre (4 mile) self-guided walking trail in Windsor, celebrating Queen Elizabeth II’s Diamond Jubilee. Marked by 63 bronze pavement markers, it showcases landmarks, historic sites, and cultural attractions significant to the Queen’s reign. Visitors can explore the town’s rich heritage while enjoying scenic views.

The walkway begins at the grand entrance of Windsor Castle, known as the Henry VIII Gate, named after the Tudor monarch. From there, the route winds through the historic streets of Windsor, offering walkers a glimpse into our town’s fascinating past. Along the way, walkers can admire the picturesque architecture, shops and cafés while proceeding southeast along the Thames via the Queen’s Walkway. Pass through Eton, soaking in its historic charm and continue along the riverbank, enjoying scenic views.

Traverse the bustling town of Maidenhead, keeping the river on your left, and follow the path as it winds through picturesque landscapes, crossing over quaint bridges. Journey onward, passing through charming riverside villages until reaching the heart of London. Upon arrival, navigate through the city’s vibrant streets until reaching the iconic Westminster Abbey, a genuine testament to centuries of British history and culture.

From Westminster Abbey, the Queen’s Walkway winds its way towards the Houses of Parliament and Big Ben, two of London’s most iconic landmarks. Here, visitors can marvel at the stunning architecture of the Palace of Westminster and learn about the inner workings of British democracy. Standing tall beside the River Thames, Big Ben is a symbol of resilience and strength, its chimes echoing across the cityscape and marking the passage of time.

As the walkway continues eastward, visitors find themselves at the Tower of London, a fortress steeped in history and intrigue. Are You Wildlife friendlY?

Applications Now Open for the Wildlife Gardens Awards in Windsor and Maidenhead.

The Wildlife Gardens Awards, aimed at celebrating and encouraging wildlife-friendly outdoor spaces, are now officially open. Running from April 1st to July 31st annually, this volunteer-led initiative run by the local ‘Wilds’ groups invites residents, workers, and students in the Royal Borough of Windsor and Maidenhead to showcase their efforts in supporting local wildlife, biodiversity, and sustainability.

The Wildlife Gardens Awards, which are free to enter, promote 24 simple and cost-effective features that enhance outdoor spaces for wildlife.

These features include providing food, shelter, water, and adopting environmentally friendly practices.

Participants are encouraged to incorporate elements such as nectar-rich flowers, birdfeeding stations, wildlife ponds, and avoiding the use of pesticides and chemical weed killers.

The awards offer three levels of recognition: Bronze, Silver, and Gold, depending on the number and variety of wildlife-friendly features implemented in the garden.

And with the availability of design and build bespoke brackets, there are virtually no applications in the UK where a retractable sun awning cannot be installed. Retractable sun awnings are usually fixed externally to the ground floor wall of a home, or commercial building, full width above the window and or/entrance door.

When retracted to the fully closed position, sun awnings take up only a small amount of space as the awning arms and fabric retract into a full width cassette for long-term protection of the sun awning

against the elements and a neat trim finish when not in use. The awning arms and cassette are available in a number of ‘on-trend’ colours, with anthracite grey being a popular choice along with white.

Most sizes of areas can be covered by a retractable sun awning, with a size maximum of a single awning generally being 6.5M maximum width and a 3.5M maximum projection. For areas wider than 6.5M it is usual to install more than one awning alongside each other.

Installation is completed usually by two technicians with the help of an electrically operated awning lift that moves the awning safely into the install position ready to be attached to the wall. A normal 240v, 13 amp electrical supply is all that is required to power the awning’ tubular motor within the cassette.

Control of a sun awning is by a simple hand-held remote controller that quietly extends the awning out to the required position and retracts it back into its cassette.

Further automatic control options can be added by way of a wind sensor that retracts the awning back into the closed position should the wind rise to an unacceptable level and a sun sensor can also be included to open the awning automatically when the sun is at its fullest.

Integral LED lighting and overhead heaters can also be added to ensure the awning can be enjoyed well into late autumn and early winter. There are many challenges when it comes to textiles for awnings.

They must, of course, serve well as sun protection, but without foregoing quality or colour. The fabrics are, of course, flame-retardant too, and the quality guarantees that the awning lasts well, even when used frequently. Made for a long, safe and beautiful

The Savill Garden of Windsor Great Park

The Savill Garden is a 35-acre haven of gardens, woodland and seasonal displays. Commissioned by George V and created by Eric Savill in 1932, this special place has delighted nature lovers, photographers, friends and families.

Generations of plant-hunters have brought back numerous specimens to be nurtured here. From the Himalayan flowers of the Winter Beds to the fragrant summer roses. Whenever you visit, there will always be something special to see.

In June, the borders are a wonderful display of seasonality with oldfashioned scented French musk roses inter-planted with a wide range of shrubs and perennials.

The Dry Garden, the first of its kind in the UK has been planted with a Mediterranean feel including great swathes of South African Angel’s Fishing Rods, many of which are noted for their silver foliage and herbal scents. This part of the Garden is definitely one for the ‘water wise’ to take inspiration.

Lose yourself amongst the many delicate soothing colours of the beautifully designed Golden Jubilee Garden, designed for the 50th anniversary of the accession of Queen Elizabeth II in 2002.

Cercis Chinensis / Chinese Redbud

Produces abundant, densely-clustered dark purplepink flowers in late spring before the leaves appear; leaves are relatively large, heart-shaped and tinted red-purple when they unfurl. This plant will provide nectar and pollen for bees and the many other types of pollinating insects.

Ceanothus ‘Ray Hartman’ / California Lilac

A cultivated hybrid of Ceanothus arboreus and griseus. It originated in 1929 at the Leonard Coates Nurseries in Morgan Hill and is now widely grown in nurseries throughout California. It has dark green glossy leaves, and grows quickly to full size. Its blue flowers range from powder blue to dark blue.

Euphorbia Characies / Mediterranean Spurge

Evergreen perennial to 1.5m, with vertical or arching biennial stems, leafy throughout at first, then bare, almost woody at the base, densely leafy above, carrying flower heads in the second year.

Slender, blue-green, rather downy leaves to 15cm long. Profuse flowers, in large, terminal, cylindrical heads in early spring have petal-like bright yellow-green bracts surrounding the tiny flowers. May be shortlived, but often self-seeds

Rhododendron ‘Loderi King George’

A large evergreen shrub to 4m tall, with long, rather pale leaves, and richly-scented, white, lily-like flowers to 15cm wide, opening in tall trusses from bright pink buds in late spring and early summer.

Lysichiton americanus / Yellow Skunk Cabbage

‘Canberra Gem’ / Spider flower

A medium-sized evergreen shrub of rounded habit, with rigid, linear leaves, and bright deep pink flowers in clusters from late winter to late summer. With its intricate foliage, delicate flowers, and vibrant dark pink colour, Grevillea Canberra Gem is sure to catch the eye and make a bold statement.

Maidenhead Library

Albert Einstein famously said “The only thing you absolutely have to know is the location of the library”. I trust everyone reading this has St Ives Road SL6 1QU firmly embedded in their memories, because without a doubt Maidenhead Library will be the place to be in June.

Everyone knows that libraries are a great place to go for books, and hopefully more and more people are becoming increasingly aware of the other fabulous things that go on in our buildings. In June, local RBWM branches are hosting a diverse series of exciting events.

Probably one of the things you’d least expect to find in a library on a Saturday evening is a music gig? And of all the genres, a punk gig probably seems the least likely? Well, we’re defying all expectations by hosting just such an event on Saturday 1 st June in Maidenhead Library from 4:30- 9pm. Wittily entitled “Never Mind the Books”, the Punk Dylans are providing entertainment, describing the evening as “old classic punk played by old classy punks”.

Tickets are £4 and available on Eventbrite. Proceeds from ticket sales will go to Maidenhead Men in Sheds. There will also be a bar which will raise money for the Friends of the Library.

We proved last summer during Maidenhead Library’s 50th birthday celebrations that the building Is a wonderful, flexible venue for events, so dig out your safety pins, polish your DMs, spruce up your

mohicans, and come along for a truly unique experience.

On Saturday 8th June, bestselling novelist Ben Kane will be in the area for two separate author events. Ben’s passion for history and travel has become the inspiration for his historical novels.

He claims to have always had a passion for Rome, to have been inspired by Bernard Cornwell’s Sharpe books and to be “a sucker for any book about military history”. He will be discussing his latest novel Stormcrow at Datchet Library on Friday 7 th June at 7pm and at Cookham Library on Saturday 8 th June at 11:30am. Stormcrow is set on the east coast of Ireland and follows the story of thirteen year old Finn who crews on a longship, raiding up and down the Irish coastline.

Tickets for both events are £5 and available on Eventbrite.

These are just a couple of examples of the variety of events that RBWM libraries are organising and hosting in June. They will run alongside all the usual weekly activities like Knit and Natter groups, Storytimes, Rhymetimes and games groups.

The Prestigious Henley Royal Regatta

The Henley Royal Regatta is one of the most respected events in the rowing calendar, which its customary blend of tradition, athleticism, and camaraderie.

Street Food

Just what is it about street food and our fondness for it? Well, in essence it captivates us with its rich tapestry of flavours, convenience, and cultural authenticity. It offers an immersive culinary experience, connecting us to the heart and soul of local traditions and communities. Each bite tells a story, crafted from recipes passed down through generations. The vibrant street markets provide a sensory feast of sights, sounds, and aromas, creating a lively atmosphere that enhances the enjoyment of eating.

Convenience and affordability also make street food irresistible. It’s quick, accessible, and often much cheaper than restaurant dining, making it an ideal choice for busy urban lifestyles. The variety of options available caters to diverse tastes and dietary preferences, ensuring there’s something for everyone.

Also, street food fosters social interactions and a sense of community, as people gather around stalls, sharing food and stories. This communal aspect adds a layer of warmth and connection, making street food a beloved part of our culinary landscape, and even moreso in Countries all around the World.

And so, I set off once again on my travels to seek out some of the best authentic street food I could find, and a few hours later I was in Istanbul in the ‘Old City’ taking in the dusty heat, the atmosphere and the tasty street food.

But just before I take you to Istanbul, this recipe - for spicy chicken burgers is a family favourite, and while it might not be street food exactly it certainly is a crowd pleaser at our barbeques - give this one a go!

Spicy Chicken Burger with Smoked Cheese

Ingredients

2 Small Chicken Breasts

Marinade:

15g (6-7) Thai Birds Eye Chilli Peppers

50g Onion

4 Garlic Cloves

2 tbsp Malt Vinegar

2 tbsp Groundnut Oil

1 tbsp Smoked Paprika

½ tbsp Lime Juice

1 tsp Dried Basil

1 tsp Dried Oregano

½ tsp Dried Rosemary

½ tsp Salt

Burger:

4 tbsp Mayonnaise

2 Burger Buns

Lettuce Leaves

1 Tomato

2 Slices Smoked Cheese

Red Onion

Method

Butterfly the chicken breasts to an even thickness of around 10-15mm and place them in a sealable bag.

Add the chilli peppers, onion, and garlic to a blender, and blitz to a paste, then add the rest of the marinade ingredients and blitz again to a smooth paste. Remove 2 tablespoons of the marinade and mix it through the mayonnaise, cover with cling film and place in a fridge until you make the burgers, and add the remaining marinade to the chicken breasts and place them in the fridge. Leave to marinate for 1 hour.

Remove the chicken breasts from the marinade and place them in a frying pan/griddle with a little oil and cook for 6-8 minutes per side, or until the internal temperature reaches 73°C or 165°F. Slice the tomato and red onion. Remove the chicken breasts and set them aside and griddle the burger buns to pick up any residual flavour from the pan. This will take no longer than 90 seconds.

Build your sandwich, starting with the spicy mayonnaise on the base, followed by lettuce, a slice of tomato, and then the smoked cheese. Finally add the chicken breast, more mayo and some red onion rings.

Street Food: Istanbul

What better place to start than the Old City and just outside the Grand Bazaar, which actually as I arrived felt initially like turning up on a film set from ancient biblical times, with thick, tall fortress like City walls and stone archways. There’s a palpable sense of history here, where every stone and archway whispers tales of Byzantine and Ottoman splendour.

Arriving at the Old City in Istanbul is also a sensory feast. As I step into this ancient quarter, I am immediately enveloped by a vibrant blend of sights, sounds, and smells. The air is rich with the aroma of spices wafting from the Grand Bazaar, where vendors call out, eager to share their wares. Cobblestone streets wind through a tapestry of architectural wonders, each telling stories of empires past.

The calls to prayer from minarets echo harmoniously, weaving through the daily hustle and bustle. But before I go on my tour of Istanbul (which I will guide you through over the next two issues) I set about to discover the street food - here we go…

It’s a well-known fact that even the most elite of Istanbulites have a hard time resisting the tantalising scent of this freshly baked, molasses-dipped and sesame-crusted dough.

Turkey’s answer to the American bagel, simit is a staple of breakfasts on-the-go. I expected it to be dry and not really tasty, but this was surprisingly chewy and delicious I have to say.

Durum or Kebab

One of the most democratic Turkish culinary inventions. Why? You’re just as likely to encounter it on a street corner as you are at the fanciest of restaurants. Whether it’s the chicken, beef, cheese or veggie variety you prefer, this meal in wrap form is sure to set you free from your hunger pangs. I tried one of each over the next few days, and yes, you know it - they are all delicious.

Kestane

Apparently, the street vendors mentioned above shift to roasted chestnuts in wintertime, however, right now (in May) they are selling both! Very popular they are as well, equally with locals as with tourists.

Misir

Freshly boiled or grilled corn on the cob, often sprinkled with salt or spices. This popular snack is almost exclusively sold during the summer months by the real street sellers with their push cars.

I am soon getting to understand that eating street food and drinking freshly pressed fruit juice is very much part of the Istanbul way of life, and as I leave the Grand Bazaar and Eminonu Square to continue on my tour I see the juxtaposition of the ancient and modern; traditional tea houses sit beside contemporary cafés, and historic sites blend seamlessly with everyday life. The Old City is a living museum, where each corner turned reveals another layer of Istanbul’s rich, multifaceted heritage.

It’s an exhilarating immersion into a world where past and present coexist in perfect harmony.

Turkish Lamb Koftas

Fragrant, exotic, and so easy and fast to make. Perfect for summer grilling!

Ingredients

1 lb / 500g lamb mince (or substitute with beef)

1 small onion, grated or minced

1 garlic clove, minced

1/4 cup pistachio nuts, ground (optional)

1 1/2 tsp salt

1 tsp black pepper

1 tbsp cumin powder

1 tbsp red pepper flakes

1 tbsp olive oil

Yoghurt Sauce

3/4 cup plain yoghurt

1 tbsp lemon juice

1/2 garlic clove, minced

Salt and pepper

To Serve

Pita bread or Lebanese flat bread

Couscous

Lettuce leaves

Sliced tomato and red onion

Method

Mix together Yoghurt Sauce ingredients and place in the refrigerator to allow the flavours to develop.

Place the Kebab ingredients except the oil in a bowl and use your hands to just combine. Be careful to not overmix.

Divide into 8 portions and mould onto skewers.

Heat oil in a large skillet over medium high heat.

Add skewers and cook for 8 minutes, turning to brown all sides.

Serve kebabs with bread or couscous (or both), lettuce, tomatoes, red onion, and yoghurt sauce on the side.

Wedges of lemon are also a great accompaniment.

I know Pravin from his time at Bombay Story’s premier restaurant in Wokingham Town Centre, and on a recent visit to Maidehnead’s Waterside Quarter where they have opened their second restaurant I took 5 minutes to have a chat with him as the now head barman at this amazing new Indian restaurant.

Being a bartender and a mixologist is a rewarding and dynamic profession that offers numerous opportunities for creativity, social interaction, and professional growth.

What is your favourite cocktail and what are the ingredients?

Definitely a RIVERSIDE ROYALE
