Our Wokingham, Windsor and Maidenhead Local businesses are once again gathering for our social networking event on the 4th April, this time at the Ship Inn on Peach Street in Wokingham where Mel of Melanie Curtis Accountants will be headlining as guest speaker. We set off once again on our ‘Springtime’travels, starting at our very own neighbouring town of Reading and a walk along the canal before venturing off to Bali for a taste of the exotic.

The Natural Richness of Olive Oil

As spring approaches, making dressings with olive oil is an excellent way to embrace the fresh, vibrant flavours of the season. Olive oil is not only a delicious addition to any dressing but also a heart-healthy choice, rich in monounsaturated fats that support cardiovascular health. These fats help lower bad cholesterol levels while boosting good cholesterol, contributing to overall wellness.
Olive oil is also packed with antioxidants, including vitamin E and polyphenols, which help fight inflammation and protect the body from oxidative stress. This makes it an ideal base for fresh spring salads that feature crisp, nutrient-dense vegetables and fruits. Lemon Vinaigrette
A creamy, light, lemony salad dressing with a touch of garlic. Perfect for greens with any vegetables you wish.
Ingredients
½ cup extra virgin olive oil
3 tbsp freshly squeezed lemon juice
1 small garlic clove, peeled and minced
1 tsp honey
Pinch sea salt
Freshly ground pepper, to taste
1 tbsp freshly chopped chives
Method
Step 1
(If you do not have a blender, whisk vigorously until emulsified)
Place everything except chives in a blender and blend till smooth and creamy.
Add chives and whisk!
This lovely viniagrette can be stored in the fridge in an airtight container for up to a week.
Apple Vinaigrette
A delicious tangy apple salad dressing perfect for many spring salads.
Ingredients
1/2 cup extra virgin olive oil
6 tbsp apple juice concentrate
4 tbsp apple cider vinegar
1 tsp Dijon mustard
2 tsp fresh lemon juice
2 tsp honey
1 pinch sea salt
1/2 tsp freshly ground pepper
Method Step 1
Combine all ingredients in a bowl and whisk.
Save extra dressing in covered container in the fridge for up to a week!
Pomegranate Vinaigrette
A beautiful, brightly coloured, antioxidant rich salad dressing made with reduced pomegranate juice. You can reduce your own or buy it already reduced and save some time. This dressing goes really well on many salads. Its perfect with an assortment of greens and fruits like persimmons, apples, and pomegranate seeds.
Ingredients
½ cup extra virgin olive oil
¼ cup pomegranate juice reduction
2 tsp finely minced shallots
2 tbsp champagne vinegar
Juice of half a lemon
2 tsp honey (optional)
Pinch of sea salt
Method Step 1
Combine all ingredients in glass container.
Shake!
Can be kept refrigerated for one week.
* To reduce pomegranate juice, simply simmer 1 cup pomegranate juice in small pan until it thickens and reduces to a 1/4 cup and allow to cool before using.

Spring Lamb
Ingredients
2.5kg lamb leg
3 cloves garlic, sliced lengthways
2 rosemary branches, leaves removed
Salt and pepper
1 lemon, zested
Old-fashioned Gravy
1/4 cup flour
2 cups beef stock
Salt and pepper, as required
Method
Step 1
Preheat oven to 180°C
With a small sharp knife, pierce the lamb every 3cm.
Stuff each incision with a slice of garlic and a few rosemary leaves. Sprinkle the roast with extra virgin olive oil, salt, ground black pepper and lemon zest.
Step 2
Roast for 1 ¼-1 ½ hours for medium lamb. Remove from the oven and rest in the pan under foil for half an hour.
A rule of thumb for lamb is 15 minutes, then 15 minutes per 500g. Drain some, but not all, of the fat and use the pan juices to make the gravy.
Gravy
After the roast has rested, remove it to the carving board and leave it under foil.
Stir the flour into the pan juices, ensuring there are no lumps. Place the pan over a medium heat and introduce the beef stock little by little. Bring to the boil.
Taste and season. Pour into a serving jug.

Mango Mousse
These almost effortless, incredibly summery mango mousses are perfect for a dinner party dessert, as they need to be made in advance anyway. With just five ingredients and 15 minutes prep time, this is a great recipe to have in your repertoire.
Ingredients
3 ripe mangoes, peeled and stoned
1 lime - finely grated zest and juice
60g light brown sugar
3 medium free-range egg whites
300ml whipping cream
Method
Step 1
Dice one of the mangoes into 1cm cubes, then put in a bowl with most of the lime zest. Make a purée by blending the remaining 2 mangoes with the lime juice and 1 tsp of the sugar until smooth.
Step 2
Using a stand mixer or electric whisk, whip the egg whites until they form stiff peaks (they don’t flop over when you lift the beaters out), then add in the remaining sugar, a spoonful at a time, until smooth and glossy.
Step 3
Whip the cream in a separate bowl to soft peaks, then gently fold in half of the mango purée. Finally, gently fold the mango cream into the egg whites, taking care not to knock the air out.
Step 4
Spoon into glasses or ramekins, layering with the diced mango and the remaining mango purée, ensuring the top layer is diced mango.
Put in the fridge to set for at least 2 hours before serving.
This light and airy dessert made with ripe mango has a creamy texture and a rich, tropical flavour. Served chilled, it’s refreshing and perfect for warm weather. Garnished with mango chunks, it’s a delightful treat.

Bank Vole
These speedy, reddish-brown creatures are our smallest voles. You might spot bank voles scampering through woodlands, hedgerows, and dense vegetation on our canals to feed on nuts and berries. Bank voles don’t hibernate in winter – but they are less active when the temperatures drop.
Bat
As the only flying mammal, bats are fascinating creatures who sleep upside down and use echolocation to navigate. There are 1,400 species of bats in the world – and more are still being discovered.
Known as the ‘water bat’, Daubenton’s bats fly close to water to fish insects from its surface. Despite common misconceptions, bats aren’t blind. They can actually see very well.
However, they use their ears more than their eyes at night. Bats shout as they fly, using the returning echo to detect what’s ahead –known as echolocation. These sounds are so high in frequency that we cannot hear them without bat detectors.

Many of our 200-year-old tunnels, bridges, buildings, and aqueducts are home to bats. This means we have to take care when working with any of our heritage structures or trees in case bats, which are protected by law, are present.

Red Foxes
An adaptable and highly cunning species, foxes are as common in cities as they are on our rural canals. These bushy-tailed, orange animals are famed throughout fairy tales, folklore, and mythology. Foxes are more visible in winter, as their bright fur stands out against the bare vegetation.
Red foxes are canines, which makes them relatives of dogs, wolves, and coyotes. But in some ways, they’re actually more like cats. They have long whiskers, retractable claws, and excellent night vision. Also much like cats, red foxes prefer to hunt alone rather than in wolf-like packs.

Understanding Your Responsibility as an Employer
Did you know that, as an employer, you can be held responsible for how your employees behave, even outside the workplace? Employers are expected to take all necessary ‘reasonable steps’ to ensure that their workers are not harassed. This means that, if harassment does occur, an employer may need to demonstrate that they did everything reasonably within their power to prevent it from happening. We call this ‘vicarious liability’, and must be taken very seriously.
What is harassment?
Under the Equality Act 2010, harassment is defined as “unwanted conduct related to a relevant protected characteristic, which has the purpose or effect of violating an individual’s dignity or creating an intimidating, hostile, degrading, humiliating or offensive environment for that individual”.
A form of bullying on the basis of race, sex, age, disability, gender reassignment, pregnancy or maternity, marriage or civil partnership, sexual orientation, religion or philosophical belief.
Sexual harassment, however, is unwanted conduct of sexual nature, which can include both physical and non-physical behaviour; unwelcome advances, flirting, touching, leering, and even inappropriately intimate gifts.
Employers also have a duty to protect staff from sexual harassment by third parties, e.g. customers
and visitors to your premises. There are also proposals to extend this to all forms of harassment, and to introduce protection against bullying generally.
The Importance of Taking Action
It’s not enough to have policies in place; employers must also enforce them consistently. If a complaint is raised, it should be handled swiftly and fairly, with clear documentation of the steps taken. A failure to act on reported incidents can be seen as negligence,
further increasing the risk of legal consequences. Encouraging open communication and fostering trust within the workplace can help employees feel confident in reporting issues before they become more serious.

Springtime in a garden is nothing short of magical. As winter’s chill fades and the days lengthen, nature awakens in a dazzling display of colour, scent, and sound. Whether nestled in the countryside or a small urban space, a garden in spring is a sanctuary, brimming with life and renewal.
One of the first signs of spring is the emergence of early blooms. Snowdrops, crocuses, and daffodils push through the thawing soil, painting the landscape with delicate whites, purples, and golden yellows. These resilient flowers remind us that, even after the darkest of winters, life will always find a way to flourish. Jacqui Priestley spends five minutes with Jo Nervi of ‘A Dust of Flour & Sugar’ - the bakery at Holme Grange Craft Village
Did you grow up loving to bake, and when did you decide it was going to be your profession?
I have always enjoyed baking. My Mum encouraged us to help in the kitchen when we were younger, and she used to bake every week. My brothers and I loved to help and lick the bowl.
I never decided to become a professional baker. Lockdown happened in 2020, and I made an afternoon tea for some friends, just to have something to do! I delivered it to them as a surprise, and then we zoomed each other as we shared the tea together. They posted it on Facebook and the bookings quickly came flooding in.
Luca, my husband, had worked in the food
industry for over 30 years as an Executive Chef and Food Development Chef. He was furloughed, developed some of his recipes including our amazing English muffins and perfected the sourdough and soon everyone wanted fresh sourdough loaves.
We managed for a short time juggling our full-time jobs and fulfilling private orders, but the business got too big, and we opened the bakery at Holme Grange in 2023.
What is it like to own and run a family bakery?
Exhausting, exhilarating, entertaining and very rewarding. We absolutely love our customers!
What do you like best about being based at Holme Grange Craft Village?
I love the feel of the village and how beautiful Holme Grange is, and the fact that all the other businesses are independent, and we all support each other. Holme Grange offers free and easy parking, and it’s in the heart of Wokingham!
What is your favourite thing to bake?
Cherry and Amaretto cake, Pistachio Cookies and Sausage Rolls. My husband is the sourdough baker though, and he loves to make ciabatta and seeded sourdough.
Do you watch the TV series ‘Bake Off’?
Always. I think Alison Hammond and I could be good friends! To be honest, I love a cookery show, so I watch all of them.
What is the most popular item purchased?
Seeded sourdough and Cruffins

Do you think you will open more shops and expand the bakery empire?
The amount of products we make and bake is incredible. My husband is always developing new products for the bakery, and he works so hard.
We are just going to keep doing what we do and keep developing our skills and products and enjoy what we do! No plans at all to expand.
