We begin this packed spring edition with congratulations to our fabulous local independent schools, who lead the way with exceptional achievements. We move on to private health care and I spend ‘5 minutes’ interviewing Mark Manaton of MNM Healthcare who talks about the demand for private medical insurance, and we welcome new business ‘Body Engineering Health’ in Alderley Edge as we shine the spotlight on Tasha Carthew. Joel White talks about mental health, and asks questions about what real strength looks like.
We look at the subtle yet delicious flavours of spring, before turning to our attention to home interior decor. We showcase bespoke furniture by Supreme Upholstery, Smarter Home 4U for home improvements, providing ‘Harmony’ by Dan Lancaster - local architect and landscape designer, and we get to know Tatton Kelly of Knutsford.

The atmosphere at Pownall Hall School has been filled with pride and celebration as our Form 6 pupils have achieved incredible success in their 11+ exams. With 26 children sitting the exams, an astounding 72 offers were received from prestigious Independent Senior Schools, including two academic scholarships from King’s School, Macclesfield and Cheadle Hulme School. This exceptional achievement is a testament to the dedication, resilience, and determination shown by each and every child - we could not be any more proud.
Our children have secured places at leading schools both nationally and internationally, reflecting the high regard in which Pownall Hall School is held. A remarkable 21 offers were received from Cheadle Hulme School, 17 from King’s School, Macclesfield, and 14 from Stockport Grammar School. Additional offers came from The Grange (5), Manchester Grammar School (1), Alderley Edge School for Girls (6), Repton Al Barsha, Dubai (2), Marlborough College Boarding (2), Farringtons School (1), Hulme Hall (1), Cransley School (1), and Terra Nova (1).
Headmaster David Goulbourn expressed his immense pride in this year’s Form 6, saying:

Do we need to pay attention to anything specific as we get older, or should we just expect to have ‘aches and pains’ as we age?
Looking after our health and wellbeing is incredibly important for several reasons. It impacts both our physical and mental quality of life. Here are a few key reasons why it matters:
Physical Health: Good health allows us to have the energy and strength to live life to the fullest. Regular exercise, a balanced diet, and sleep are essential to prevent chronic illnesses like heart disease, diabetes, and high blood pressure.
Mental Wellbeing: Our mental health is just as important as physical health. When we take care of ourselves mentally by reducing stress, practicing mindfulness, or seeking help when needed, it can help boost our mood, enhance focus, and improve overall happiness.
Longevity: Taking care of our bodies and minds can help us live longer, healthier lives. It reduces the risk of preventable diseases and complications as we age.
Productivity: When we are healthy, both physically and mentally, we tend to be more productive, focused, and creative in our personal and professional lives.

After spending 25 years in Recruitment, I wanted to improve my work-life balance and become selfemployed. I researched the market for opportunities from owning a hotel in the Lake District, to buying an existing Healthcare Insurance franchise, as an Appointed representative of WPA Healthcare Plc.
I did not know anything about owning a franchise, let alone anything about WPA Healthcare as a Private Medical Insurance provider. I conducted my due diligence and realized that whilst WPA Healthcare were the fifth-largest provider in the UK, they punch above their weight in terms of customer service, retention and overall creditability.
I purchased my franchise from the previous owner of 13 years and have subsequently more than doubled the premium in the last 5 years and more recently been awarded the Healthcare Partner/ Franchise of the Year 2024. Winning the award was a great team effort being that I now employ 2 Qualified Account Managers, Jimmy Creighton and Andy Young (pictured left).

What do you like most about living in Cheshire?
I have lived in Cheshire for nearly 30 years; it is great county as you can access some fantastic villages, towns and cities, and even venture into North Wales, all with great restaurants, entertainment and sports clubs, especially rugby.
I had to retire playing rugby recently, at the age of 54 years old, as I was no longer capable of taking the knocks each week! I am now realizing the benefits of Private Medical Insurance with my damaged knees.

MNM Healthcare is continuing to grow each year, based on the continuing demand for Private Medical Insurance, due to the long NHS waiting lists and the speed of accessing treatment.
It is my ambition to retire and let both Jimmy and Andy purchase my franchise allowing them to develop the business even further, safeguarding our existing client base and continuing to be recognized as one of the leading WPA franchises in the UK.
What is your ambition for the future?
My ambition is to continue the successful growth of MNM Healthcare Ltd and eventually sell the business to Andy and Jimmy. When I am retired, my wife, Paula and I will be travelling the globe, purchasing a Motorhome and having a great time relaxing.
I am Tasha, and I hold a Bachelor’s degree in Osteopathy. Currently, I am pursuing a Postgraduate Certificate in Specialist Paediatric Osteopathic Practice. With many years of experience in the health sector, I focus on holistic health, helping patients understand their bodies and promote natural healing.
An osteopath aims to restore the normal function and stability of the joints to help the body heal itself.
I use my hands to treat the body in a variety of ways, employing a mixture of gentle and assertive techniques tailored to the individual patient and their reported symptoms.
I am particularly passionate about both paediatric and adult osteopathy, effectively diagnosing and managing complex problems commonly presenting in osteopathic practice. I recognise
these presentations in both age groups and differentiate them from features associated with normal development and ageing. This ensures that all patients receive appropriate care. I also create a supportive environment, addressing various conditions including musculoskeletal pain, postural issues, and stress-related ailments, ensuring that all patients feel comfortable and cared for.
If you woke up tomorrow with a serious injury—let’s say a broken ankle—what would you do? You’d get it checked without hesitation. You wouldn’t try to “push through” the pain or pretend it wasn’t there. You’d seek help, follow the treatment plan, and probably talk about it openly. Yet, when it comes to mental health, the response is often different. Many men hesitate to acknowledge stress, anxiety, or burnout, let alone talk about it. But ignoring an issue doesn’t make it disappear—it usually makes it worse.
For generations, men have been conditioned to equate strength with silence. We’ve been taught that enduring hardship without complaint is a sign of resilience, that handling everything alone is what makes a man strong. But here’s the truth—mental health is just as real and important as physical health.
Think about how openly we discuss physical health. We swap gym routines, recommend supplements, talk about sleep optimisation, and compare fitness trackers. If we pull a muscle, we rest and recover. If we’re feeling run-down, we adjust our diet and lifestyle. These conversations are natural. So why not apply the same mindset to mental health?
What if checking in on stress levels became as normal as tracking our steps? Mental and physical health are deeply linked—stress, anxiety, and emotional exhaustion can impact sleep, energy, digestion, and even heart health. Ignoring mental wellbeing affects the body too.

about normalising mental health the same way we do physical health.

As spring approaches, making dressings with olive oil is an excellent way to embrace the fresh, vibrant flavours of the season. Olive oil is not only a delicious addition to any dressing but also a heart-healthy choice, rich in monounsaturated fats that support cardiovascular health. These fats help lower bad cholesterol levels while boosting good cholesterol, contributing to overall wellness.
Olive oil is also packed with antioxidants, including vitamin E and polyphenols, which help fight inflammation and protect the body from oxidative stress. This makes it an ideal base for fresh spring salads that feature crisp, nutrient-dense vegetables and fruits. The natural richness of olive oil adds depth and complexity to simple dressings, turning any salad into a flavourful, satisfying dish.
Olive oil helps to enhance the absorption of fatsoluble vitamins like A, D, E, and K, which are essential for maintaining healthy skin, immunity, and bone health. Try these ‘Organic Garden’ recipes...
A creamy, light, lemony salad dressing with a touch of garlic. Perfect for greens with any vegetables you wish.
Ingredients
½ cup extra virgin olive oil
3 tbsp freshly squeezed lemon juice
1 small garlic clove, peeled and minced
1 tsp honey
Pinch sea salt
Freshly ground pepper, to taste
1 tbsp freshly chopped chives
Method
Step 1
(If you do not have a blender, whisk vigorously until emulsified)
Place everything except chives in a blender and blend till smooth and creamy.
Add chives and whisk!
This lovely viniagrette can be stored in the fridge in an airtight container for up to a week.
A delicious tangy apple salad dressing perfect for many spring salads.
Ingredients
1/2 cup extra virgin olive oil
6 tbsp apple juice concentrate
4 tbsp apple cider vinegar
1 tsp Dijon mustard
2 tsp fresh lemon juice
2 tsp honey
1 pinch sea salt
1/2 tsp freshly ground pepper
Method Step 1
Combine all ingredients in a bowl and whisk.
Save extra dressing in covered container in the fridge for up to a week!
A beautiful, brightly coloured, antioxidant rich salad dressing made with reduced pomegranate juice. You can reduce your own or buy it already reduced and save some time. This dressing goes really well on many salads. Its perfect with an assortment of greens and fruits like persimmons, apples, and pomegranate seeds.
Ingredients
½ cup extra virgin olive oil
¼ cup pomegranate juice reduction
2 tsp finely minced shallots
2 tbsp champagne vinegar
Juice of half a lemon
2 tsp honey (optional)
Pinch of sea salt
Method Step 1
Combine all ingredients in glass container.
Shake!
Can be kept refrigerated for one week.
* To reduce pomegranate juice, simply simmer 1 cup pomegranate juice in small pan until it thickens and reduces to a 1/4 cup and allow to cool before using.
Ingredients
2.5kg lamb leg
3 cloves garlic, sliced lengthways
2 rosemary branches, leaves removed
Salt and pepper
1 lemon, zested
Old-fashioned Gravy
1/4 cup flour
2 cups beef stock
Salt and pepper, as required
Method
Step 1
Preheat oven to 180°C
With a small sharp knife, pierce the lamb every 3cm.
Stuff each incision with a slice of garlic and a few rosemary leaves. Sprinkle the roast with extra virgin olive oil, salt, ground black pepper and lemon zest.
Step 2
Roast for 1 ¼-1 ½ hours for medium lamb. Remove from the oven and rest in the pan under foil for half an hour.
A rule of thumb for lamb is 15 minutes, then 15 minutes per 500g. Drain some, but not all, of the fat and use the pan juices to make the gravy.
Gravy
After the roast has rested, remove it to the carving board and leave it under foil.
Stir the flour into the pan juices, ensuring there are no lumps. Place the pan over a medium heat and introduce the beef stock little by little. Bring to the boil.
Taste and season. Pour into a serving jug.

These almost effortless, incredibly summery mango mousses are perfect for a dinner party dessert, as they need to be made in advance anyway. With just five ingredients and 15 minutes prep time, this is a great recipe to have in your repertoire.
Ingredients
3 ripe mangoes, peeled and stoned
1 lime - finely grated zest and juice
60g light brown sugar
3 medium free-range egg whites
300ml whipping cream
Method
Step 1
Dice one of the mangoes into 1cm cubes, then put in a bowl with most of the lime zest. Make a purée by blending the remaining 2 mangoes with the lime juice and 1 tsp of the sugar until smooth.
Step 2
Using a stand mixer or electric whisk, whip the egg whites until they form stiff peaks (they don’t flop over when you lift the beaters out), then add in the remaining sugar, a spoonful at a time, until smooth and glossy.
Step 3
Whip the cream in a separate bowl to soft peaks, then gently fold in half of the mango purée. Finally, gently fold the mango cream into the egg whites, taking care not to knock the air out.
Step 4
Spoon into glasses or ramekins, layering with the diced mango and the remaining mango purée, ensuring the top layer is diced mango.
Put in the fridge to set for at least 2 hours before serving.

Once Upon a Smile is a children’s bereavement charity that provides emotional and practical support to bereaved families at their time of need. Families are often left to grieve alone with no, or little support available and this can often have a devastating impact on family life and children. Our charity is the only bereavement charity in the area to offer this variety of support to families through such a difficult time, not only are we unique in this way but we also tailor the support we provide to families to fit their individual needs.
We also provide financial support, respite breaks and bereavement support groups both for children and more recently for parents. Based in Manchester, we welcome and support hundreds of children each year from across Greater Manchester.
Sidley House includes 10 bespoke tailored rooms which provide a safe environment for children and young people. This allows them to express their thoughts and feelings about death and dying. From humble beginnings as a helpline in the middle of a stairwell, it’s incredible to think of the quarter of a million people we’ve helped in the last fifty years. And that’s just over the phone; we’ve since grown to be the largest LGBTQ+ health and wellbeing charity in the UK, offering free services and testing, along with our events that serve as an important reminder to our community members that they’re not alone.
The early success of Manchester Gay Switchboard was often attributed to the times: there were few safe spaces for gay and lesbian individuals to talk about their identity and the issues they faced, without fear of judgement or even attack. We became LGBT Foundation in 2015, marking a new era of inclusion, and now help over 40,000 LGBTQ+ people annually;
we’re celebrating our golden birthday in 2025 with not just one day, but a year of public events, which shows we’ve come a long way towards a world where LGBTQ+ people can live and love freely.
But a recent spike in US-based donations and changes to policy both at home and overseas suggests otherwise: LGBTQ+ rights are being threatened now on a scale we’ve not seen for many years, and that same fear in our communities from the ‘70s has returned.
Here at LGBT Foundation, we’re championing hope: we know our community is louder than it’s ever been, and the fact we’re celebrating fifty years means we’re not going anywhere. Base Recipe for the famous dish that can be found almost on every street corner in Bali – a true classic.
Ingredients
500g raw peanuts, deep fried
5 cloves garlic, peeled
8 – 10 bird’s-eye chillies
50g ginger, peeled and chopped
50g palm sugar, chopped
2 ltr fresh coconut milk
4 tbsp sweet soy sauce
2 lime leaves
1 tbsp fresh lime juice, squeezed
1 tbsp shallots, fried
Method
Step 1
Combine peanuts, garlic, chillies and ginger in a food processor and purée, or grind coarsely in a stone mortar.
Step 2
Place in a heavy saucepan with coconut milk, sweet soy sauce and lime leaves.
Bring to boil, reduce heat and simmer uncovered, stirring frequently to prevent the sauce from sticking, for 15 minutes.
Step 3
Add lime juice and sprinkle with shallots just before serving as a dipping sauce for satay. Season to taste with salt.
Balinese satays are always a little charred on the outside, which give them a particularly delicious flavour.
Ingredients
600g beef topside, cut in 1 cm cubes
3 – 5 bird’s-eye chillies, chopped
2 tbsp brown sugar
½ cup beef spice paste
¼ tbsp salt
Satay skewers
Method
Step 1
Combine meat, chillies, brown sugar and spice paste (satay sauce) and mix well. Cover and marinate for 24 hours in the refrigerator.
Step 2
Spear four pieces of meat very tightly on a satay skewer. Place beef satays on charcoal cooker or barbecue and grill over very high heat either on coconut husks or on charcoal.
Step 3
Serve with Satay Sauce.
Note: To make satay with lamb, pork, chicken or shrimp, follow the directions above but use basic spice paste.

Cruising is a luxurious way to explore the world, offering adventure, relaxation and the convenience of visiting multiple destinations, only unpacking once. But as concerns about climate change and ocean pollution grow, the cruise industry has come under scrutiny for its environmental impact. The good news is that cruise lines are implementing measures to become more sustainable. Whether it’s ocean, river or polar expedition ships, here are some changes to reduce their footprint.
Many cruise lines have eliminated single-use plastics such as straws, bottles, and cutlery. For example, Virgin Voyages and Viva river ships offer refillable water bottles and water stations, saving millions of plastic bottles per year.
Fred Olsen and Ponant plan itineraries to avoid large crowds, while Norwegian Cruise Line, Regent Seven Seas, and Oceania focus on reforestation and carbon offsetting projects. Some excursions promote ethical, sustainable businesses, such as a ‘bean-to-bar’ chocolate tasting tour in the Caribbean that supports local farmers.
Instead of traditional heavy fuels, many new ships now run on Liquefied Natural Gas (LNG), reducing CO2 emissions by 25%. P&O Cruises’ Iona and Arvia are among the first UK-based LNG-powered ships.
Buffet-style dining on cruise ships has traditionally led to a lot of food waste. Virgin Voyages has eliminated buffets entirely, serving made-to-order meals reducing 225 tonnes of waste per ship per year. Many cruise lines focus on locally sourced, seasonal food, reducing transport emissions and supporting local economies.
Instead of paper menus and daily newsletters, many ships now use digital formats, saving the equivalent of 50 trees worth of paper each month. Handwoven hammocks on every Virgin Voyage’s balcony are sourced from a social enterprise that empowers women in rural Thailand.

A cruise through the Galápagos Islands is an unforgettable journey into one of the world’s most pristine ecosystems. This volcanic archipelago, located 600 miles off Ecuador’s coast, is famous for its fearless wildlife, crystal-clear waters, and breathtaking landscapes. But beyond the incredible nature and adventure, a Galápagos cruise also offers a chance to savour some of the freshest seafood, including the delicious Ecuadorian shrimp ceviche.
Expedition cruises in the Galápagos are designed for exploration. Small ships, typically carrying fewer than 100 passengers, allow travellers to visit remote islands and secluded bays. Each day brings new discoveries, from snorkelling with sea lions and marine iguanas to hiking rugged volcanic trails where giant tortoises roam freely. Naturalist guides lead small-group excursions, providing fascinating insights into the region’s biodiversity and the evolution of its unique species.

Shrimp ceviche, typical of Ecuador in which we replace the shrimp with prawns, this ceviche has a perfect balance of flavours, it is super fresh, delicious and very easy to prepare.
Ingredients
500g cooked and peeled shrimps or prawns
2 tomatoes chopped in small cubes
1 red onion, julienne
Fresh coriander
½ red and ½ green pepper chopped in cubes
3 limes or lemons
1 tablespoon of ketchup
½ tablespoon mustard
Salt and pepper to taste
Method
Step 1
In a bowl add the tomato, peppers, red onion, ketchup, mustard, cooked shrimp, chopped coriander, lime juice, pepper, salt and mix everything until it is perfectly incorporated.
Step 2
Let it rest for 30 minutes in the refrigerator and we have our delicious shrimp ceviche ready.
*If you are a fan of spiciness, add a little chilli pepper, which is great.

Can you tell me more about Tatton Kelly?

Was your background in property management?

We also have properties in Alderley Edge and Mobberley so we really are embedded within the Golden Triangle.
What types of business do you collaborate with?
Our most important connections are with landlords or anyone who owns a second property and wants a hassle-free income from their assets. We also always want to work with tradespeople, Estate Agents, financial advisors etc as well as influencers who can help boost our advertising and online presence.
What advice would you give to someone looking to invest in property?
Just get started! Everyone deliberates over purchasing property as it feels like such a big investment. But if you run the numbers, (which we can help you with), and the deal works, then just go for it! The absolutely worst thing that can happen that you sell it again.
There’s always an exit strategy with property and that’s why I love the industry. It might fluctuate in returns, but it will always be increasing, as people will never stop needing homes.

If you take a walk through Cheshire’s meadows, gardens, or woodlands on a warm day, chances are you’ll see a variety of buzzing, fluttering, and hovering creatures hard at work. These are our local pollinators—bees, butterflies, moths, hoverflies, and even beetles—playing a crucial role in keeping our environment healthy. Without them, we’d lose many of the wildflowers, fruits, and crops we often take for granted.
When we think of pollinators, bees are usually the first to come to mind—and for good reason. Cheshire is home to several species, from the familiar honeybee to the hardworking bumblebees and solitary mining bees.
Honeybees (Apis mellifera) are well-known for their role in beekeeping, but they also contribute massively to pollinating crops and garden flowers. However, they’re just one part of the picture. The buff-tailed bumblebee (Bombus terrestris) is another common sight, often one of the earliest bees to emerge in spring, feeding on crocuses and primroses. Then there’s the striking red-tailed bumblebee (Bombus lapidarius), easily recognised by its velvety black body and vibrant red tail, busily working away on wildflowers in meadows and hedgerows.
Not all bees live in colonies, though. The tawny mining bee (Andrena fulva), for example, is a solitary species that nests in the ground. You might spot tiny mounds of soil in lawns or flower beds—these are the entrance holes to their burrows. Despite their small size, these bees are hugely important for pollinating fruit trees in orchards and gardens.
Butterflies might not be as efficient as bees when it comes to pollination, but they still play a vital role, especially for wildflowers. One of the most familiar species in Cheshire is the small tortoiseshell (Aglais urticae), often seen fluttering around gardens and feeding on plants like buddleia and dandelions.
The peacock butterfly (Aglais io), with its striking eyepatterned wings, is another regular visitor, favouring flowers such as thistles and knapweed.
Brimstone butterflies (Gonepteryx rhamni) are one of the first to appear in spring, bringing a welcome splash of yellow to the countryside. They’re particularly fond of primroses and violets, helping to pollinate these early bloomers. Meanwhile, the speckled wood (Pararge aegeria) prefers shadier spots, often found darting through woodland clearings and hedgerows.
We often associate moths with fluttering around porch lights, but they’re actually crucial pollinators, particularly for nightblooming plants.
The hummingbird hawk-moth is a fascinating day-flying species that hovers over flowers just like a hummingbird, sipping nectar from plants like red valerian. Other moths, such as the elephant hawkmoth (Deilephila elpenor), take over when the sun sets, pollinating honeysuckle and other fragrant flowers.
Hoverflies are often mistaken for wasps because of their yellow-and-black markings, but they’re completely harmless and incredibly beneficial. The marmalade hoverfly (Episyrphus balteatus) is a common garden visitor, flitting between flowers while also keeping aphid populations in check. Then there’s the batman hoverfly (Myathropa florea), named for the batshaped marking on its thorax, frequently found in woodlands and hedgerows.
Even beetles get in on the act! The thick-legged flower beetle (Oedemera nobilis), a metallic green insect often seen on daisies and buttercups, is one of the many beetles helping to pollinate Cheshire’s wildflowers.
Our local pollinators are facing challenges, from habitat loss to pesticides and climate change. By planting bee-friendly flowers, reducing chemical use, and leaving wild areas in our gardens, we can all play a part in helping them thrive. These small creatures may go unnoticed most of the time, but without them, our countryside—and our food supply—would look very different. So next time you see a bee buzzing past or a butterfly landing on a flower, take a moment to appreciate the vital work they do every day.
The Bolly Skyline is a mountain bike enduro, which is an increasingly popular sporting activity. This is because of the combination of fitness and skill that are required, the physical feeling of intense excitement and stimulation and the enjoyment of the relaxed environment that surrounds these events.
The event was run for the first time in 2024 when an experienced organiser of the Bollington Festival (Richard Gay) asked Josh and another local mountain biker and bike shop owner Adam Sebes to come together to run a mountain bike event.
With permission from lots of wonderful, local land owners, the Bolly Skyline was born and the inaugural event in 2024 was deemed a great success and the 2025 Enduro will be run using very similar arrangements and control structures.
One change is that in 2025 there will be two races, the ‘Full’ Enduro will take place on Saturday 9 August and there will be a shorter, ‘Half’ on Sunday 10 August. The Full Enduro will be open to all genders over 15 years old whilst the Half will be open to all genders over 11 years old. There will also be an e-bike category.
The Enduro will consist of various timed stages, and competitors will go as fast as they can on the stages. The winner is the person with the shortest cumulative time for all stages.
The stages are all off road and on private land. The stages are linked by ‘transitions’. The transitions are not timed; they use private land, bridleways and public roads. The total length of the full enduro course will be about 25 km.
A part of the enduro course will be accessible for reconnaissance and practice on Friday 8 August (Full) and Saturday 9 August (Half).
The event base or ‘Hub’ will be on private land, at the Old Slaughterhouse Shrigley Road, Bollington SK10 5RD. There will be all sorts of entertainment and activities at the Hub as well as live music, food and a free shuttle bus to spectator areas and to and from the parking.
We are looking to welcome around 1,000 riders and up to 2,000 spectators and visitors to share in the fun!

Get ready for the Bolly Skyline Mountain Bike Enduro - August 8th to 10th 2025 Riders will be racing all weekend, and there are free shuttle buses from the Hub to Spectator Zones. There will be loads of music, food, and entertainment, with live bands on Saturday evening.
