A successful brand and a family enterprise. How did it begin?

My father Elisio and my uncle Enrico founded the company.

They and their wives loved their work, which was making classic men’s shoes with ancient artisanal workmanship. My sister Cinzia, my cousins Alessia and Flaminio and I are the second generation.

What makes your creations special?

Our passion, enthusiasm, high standards and above all our obsession for quality. We cultivate beauty and superior craftsmanship.

What are the trends for Spring/Summer 2017?

Innovation and practicalness, with the leading role assigned to colors. Our new hand-dyed sneakers are an example. A real explosion of colors.

True elegance lies in...?

The details. A bow-tie, a clutch, but also a loosely-tied necktie, for a more understated look.

What are your favorite places in Rome?

Rome is the city I love most. Every time I come to Rome I feel recharged. It’s a powerful injection of beauty, art and culture – all essential for my work.

As a father my biggest dream is to know that my children will be able to make their wishes come true, no matter what they are.

How did this idea come to you?

The idea came three years ago, with Stefania Mittiga, a friend and contemporary, and like me, passionate about ballerina flats. We saw that there was a lack of a brand for this type of shoe that offered a choice of colors, with Italian-made quality and an affordable price.

Why ballerina flats?

We loved them and have always worn them in every moment of the day. They’re a classic in a woman’s wardrobe because they’re comfortable and can be worn at all times, without ever sacrificing elegance and style.

What do you have in addition to Ballerette?

We offer the customer more than 300 shoes in different models and colors. I like to think that women can play with accessories and buy a colored shoe depending on the earrings she wants to put on.

The average cost of our shoes is 80 Euros per pair, and we’ve put something of ourselves in the packaging. Each pair of shoes is sold in a transparent Plexiglas box that allows customers to always have them at hand.

Where was the first store opened?

We opened in March 2015, with the first store on Via del Gambero, which crosses Via Frattina, and in April 2016 a second store on Via Cola di Rienzo. And we’ve already sold on all the continents; the idea is to grow and develop the brand each year. .

Carlotta Fabrini is from Rome, and with her friend and associate Stefania Mittiga, has created the beautiful and colorful Ballerette, a brand that offers the customers more than 300 ballerina flats in different models and colors 20 Roma | the Eternal City

Come è nata questa idea?

L’idea è nata tre anni fa, con Stefania Mittiga, amica, coetanea e, come me, appassionata di ballerine. Avevamo visto che mancava un brand di ballerine che offrisse una scelta ampia di colori, con la qualità del made in Italy e un prezzo accessibile.

Perché le ballerine?

Le amavamo e le abbiamo sempre portate noi in ogni momento della giornata. Sono un grande classico del guardaroba femminile perché sono comode e si possono indossare in ogni occasione, senza mai rinunciare ad eleganza e stile.

Cosa hanno in più le Ballerette?

Offriamo al cliente più di 300 scarpe tra modelli e colori diversi.

Mi piace pensare che le donne possano giocare con gli accessori e comprarsi una scarpa colorata a seconda dell’orecchino che vogliono mettere. Il costo medio delle nostre ballerine è di 80 euro a paio e anche nel packaging abbiamo messo qualcosa di nostro.

Ogni scarpa viene venduta dentro a una scatola di plexiglasse trasparente che permette alle clienti di averle sempre a portata di mano.

Dove è nato il primo negozio?

Abbiamo aperto a marzo 2015 il primo store a via del Gambero, una traversa di via Frattina e ad aprile 2016 un secondo negozio a via Cola di Rienzo e abbiamo già venduto in tutti i continenti; l’idea è quella di crescere e sviluppare ogni anno il marchio.

What made Harry’s Bar one of the favorite spots of the stars?

It was a place where aristocrats, prelates, diplomats and movie stars could meet discreetly.

Who was the first Vip to discover Harry’s Bar? Princess Soraya, Fellini, Sinatra, Alberto Sordi, Anna Magnani and Virna Lisi just a few of the early regular guests of the bar.

The actor with which it is most often associated?

They are more numerous: Pino Insegno, Giancarlo Magalli, Valeria Marini and Penélope Cruz.

Who is the next star you’d like to welcome?

Hillary Clinton has already visited us, but I’d love to see her seated at the same table as the new First Lady, Melania Trump.

The strangest anecdote about Harry’ Bar? One night a wealthy US senator reserved the whole place and wanted just one table with two chairs, a bouquet of 100 red roses, candlelight, a pianist and a singer.

A friend of yours comes to Rome for just one day. Where would you take him?

First to the Imperial Fora, then along the Appia Antica and to the Fountain of Trevi. Lunch at the Dal Bolognese restaurant or Pierluigi, then a visit to Trastevere and Piazza di Spagna. Dinner at Camponeschi or the trattoria Luigi and, to finish the evening, some good music at Harry’s Bar. Your motto?

Welcome, respect and a smile.

Cosa ha reso l’Harry’s Bar una delle mete preferite delle star?

L’ essere un locale dove incontrare nobili, prelati, diplomatici e attori in tutta riservatezza.

Il primo vip che scoprì l’Harry’s Bar? La principessa Soraya, Fellini, Sinatra, Alberto Sordi, Anna Magnani e Virna Lisi sono solo alcuni dei primi frequentatori del bar.

L’attore a cui è più legato?

Sono più di uno: Pino Insegno, Giancarlo Magalli, Valeria Marini e Penélope Cruz.

Qual è la prossima star che vorrebbe avere come ospite?

How did this idea come to you?

This project began more than 25 years ago at a high school desk, with my classmate, the son and grandson of the owner of a historic saddler on Via Veneto. In those days, we had fun designing and creating artisan bucket bags for our mothers with leather scraps.

You’ve always had an artistic streak?

I can say I’m the son of an artist: my father was an artist and my grandmother taught art history.

What is your must?

Our strong point is the bucket bag, dedicated to globetrotting urban Amazons, whose names are inspired by the world of horses: Araba, Beberbeca, Manipurà; made in colored tones with different varieties of leathers, some with precious mink or python inserts and all with our logo in silver, punched by hand.

Speaking of a “must”, we also have a travel bag with this name that we sell in different sizes.

How do you ensure exclusivity and luxury?

Each bag has an individual serial number and before being put on sale passes through my hands; the silver logo can be customized with your initials or a nickname and the same can be done with hot branding on the leather.

Come è nata questa idea?

Questo progetto è nato più di 25 anni fa al liceo, con il mio compagno di banco, figlio e di nipote del proprietario di una storica selleria a via Veneto. In quei tempi ci divertivamo a disegnare e a creare con i ritagli di pelle dei secchielli artigianali per le nostre mamme.

Hai sempre avuto una vena artistica?

Posso dire di essere figlio d’arte: mio padre era un artista e mia nonna insegnava storia dell’arte.

Qual è il vostro must?

Il nostro punto di forza sono i secchielli (o “bucket bags”), dedicati alle globetrotter e alle amazzoni metropolitane, i cui nomi sono ispirati al mondo dei cavalli: Araba, Beberbeca, Manipurà; realizzati in nuances colorate e con diverse varietà di pelli, alcuni con preziosi inserti di visone o pitone e, tutte con il nostro logo in argento punzonato a mano.

Parlando di “must” abbiamo anche una borsa da viaggio che ha proprio questo nome e che vendiamo in diverse misure.

Come fate a garantire esclusività e lusso?

Ogni borsa ha un numero di serie progressivo; il logo in argento può essere personalizzato con le proprie iniziali o con un nickname e lo stesso può esser fatto marchiando la pelle a caldo.

What is special about this restaurant? How is the menu?

It’s a restaurant with typical Roman cuisine. We also designed a bar corner for aperitifs where we serve large platters of cheeses and cured meats. For the first courses, instead, we use only homemade pasta that cooks in less time. This really shortens the waiting time for the customer and allows you to have the dish on the table after 5 minutes instead of 15. We have a real grill for cooking the meat, which is another feather in our cap, and fresh seasonal vegetables, given my passion for the vegetable garden.

What is there of Cesaretto in this venue?

My ability to establish a relationship with people and make them feel at home. Those who come for lunch or dinner here must feel welcome. For me the important side of this work is primarily having people eat well and, hand in hand, to create a sense of conviviality, humanity and affection. In my restaurants, I like to think that I’m creating an oasis of serenity.

It’s important to have the innkeeper in the restaurant. What are your schedules?

We are open daily for lunch and dinner, except on Mondays.

I’m always here.

When did you realize that you would become a restaurateur?

I come from a family of architects and I had started along that road and then it happened by chance, when the former owner of the “Fiaschetteria” - where I often went to eat - wanted to close the place. In order to keep it open, I became the landlord. It all started from there.

Cesare Fazioli, Cesaretto for his friends, is a famous Roman restaurateur who for over 20 years has had a restaurant on Via della Croce, “La Fiaschetteria”. Today with some partners, he opened “Osteria Rinascimento”, on Corso Rinascimento, a restaurant with Roman cuisine, between Piazza Navona and the Pantheon 26 Roma | the Eternal City

Che peculiarirità ha questo ristorante? Come è il menù?

E’ un ristorante con tipica cucina romana. Abbiamo anche studiato un angolo bar dedicato all’aperitivo dove serviamo grandi taglieri di formaggi e affettati. Per i primi piatti, invece, utilizziamo solo pasta fatta in casa che cuoce in tempi più brevi. Questo accorcia notevolmente il tempo di attesa del cliente e permette di avere il piatto in tavola dopo 5 minuti anziché 15. Abbiamo una griglia vera per cuocere la carne, che è l’altro nostro fiore all’occhiello e verdure fresche di stagione, vista la mia passione per l’orto.

Cosa hai portato di Cesaretto in questo locale?

La mia capacità di instaurare un rapporto con le persone e farle sentire a casa. Chi viene a pranzo o a cena qui deve sentirsi accolto. Per me l’importante di questo lavoro è in primis far mangiar bene una persona e, di pari passo creare un senso di convivialità, umanità e affetto.

Nei miei locali mi piace pensare all’idea di creare un’oasi di serenità.

E’ fondamentale avere l’oste all’interno del ristorante. Che orari fai?

Siamo aperti tutti i giorni a pranzo e a cena, eccetto il lunedì.

Io ci sono sempre.

Quando hai capito che saresti diventato ristoratore?

Vengo da una famiglia di architetti ed io avevo iniziato quella strada poi per casualità, quando il vecchio proprietario della “Fiaschetteria” - dove andavo spesso a mangiare -, voleva chiudere il locale, io per non farlo chiudere mi sono autocelebrato oste. Da lì è iniziato tutto.

What kind of training did you have?

My grandfather was an abstract painter. I lived with contemporary art every day. I grew up in his studio and always went to museums with him. I had my first exhibition at age 18, and then, at University I studied architecture.

What kind of artist are you?

Mostly I’m a cartoonist. I use paper and cut it up to create big installations like the life-size tank and airplane.

Where is your studio?

For 14 years, I’ve been at the Pastificio Cerere, a space where a lot of people from the Italian and international contemporary art world come. My studio is organized like an architectural studio.

There are various young people who work with me and every one of my works has to go through several stages.

What are your forms of inspiration?

My inspiration is the world around us. I’m fascinated by political and historical topics, by the social development of peoples and the issue of immigration which is one of the engines of human history.

Which people have most helped you to become a famous artist?

I have to thank my first gallerist, a Milanese, Edoardo Testori; Flavio Misciatelli, President of the Fondazione Pastificio Cerere and Lorcan O’Neill, my current gallerist, who took me on when I was 26 and has continued to believe in me since then.

Che formazione hai avuto?

Mio nonno era un pittore astratto. Vivevo l’arte contemporanea nel quotidiano. Sono cresciuto nel suo studio e andavamo sempre in giro per i musei insieme. La prima mostra l’ho fatta a 18 anni, poi, all’università ho studiato architettura.

Che tipo di artista sei?

Principalmente sono un disegnatore. Uso la carta e la intaglio e creo grandi istallazioni come il carro armato e l’aereo in scala uno a uno.

Dove è il tuo studio?

Da 14 anni sto al pastificio Cerere, uno spazio dove gravita molto mondo dell’arte contemporanea italiana e internazionale. Il mio studio è organizzato come uno studio di architettura. Ci sono vari ragazzi che lavorano con me e ogni mio lavoro deve attraversare diverse fasi.

Quali sono le tue forme d’ispirazione?

La mia ispirazione è il mondo che sta intorno a noi. Sono affascinato dal tema politico, storico e sociale dei popoli e dal tema dell’immigrazione che è uno dei motori della storia dell’uomo.

Chi sono le persone che più ti hanno aiutato a diventare un artista famoso?

Devo ringraziare il mio prima gallerista, milanese, Edoardo Testori; Flavio Misciatelli, presidente della Fondazione Pastificio Cerere e Lorcan O’Neill, il mio attuale gallerista che mi ha preso quando avevo 26 anni e da allora continua a credere in me.

Bernardino di Betto Betti, better-known as Pinturicchio or Pintoricchio (Perugia, (circa 1452 - Siena, 11 December 1513), was an Italian painter.

ruary, The Origin of Still Life in Italy - Caravaggio and the Master of Hartford at Rome’s Galleria Borghese. The exhibition explores the evolution of Italian still life in the Roman context from the 16th century through the development of Caravaggio’s early-17th century works. The exhibitions opened in November that will close on 19 February include first and foremost Edward Hopper, at Rome’s Vittoriano. Introverted and quiet, lover of seascapes and of the soft light of his large studio, Edward Hopper (1882-1967) is the most popular and well-known American artist of the 20th century. The artist himself explained what he thought of his art: “if I could say it in words, I would have no reason to paint.”

Another exhibition closing on 19 February is Picasso Images.

The Artworks, the Artist, the Personage, at the Museo dell’Ara Pacis. Over 200 photographs and graphic works by Pablo Picasso, directly from Paris. The Roman exhibition presents an original journey through the wealth of photographs, works of art and documents on loan from the Musée National Picasso in Paris, many of which on display for the first time.

Cos’è la cosa che più ti piace della recitazione?

Mi piace stare sul palcoscenico di un teatro e amo l’idea di poter interpretare persone molto diverse da me.

Qual è stata l’esperienza più formativa della tua carriera?

Sicuramente Violetta. A vent’anni ho avuto il mio primo ruolo da attore protagonista. Mi sono trasferito a vivere a Buenos Aires. Lì ho capito veramente cosa significa fare teatro.

Che consiglio vorresti dare a un giovane ragazzo che vuol diventare attore?

Consiglio di studiare tantissimo. Bisogna essere pronto in tutte le situazioni e imparare a diventare molto versatili.

Che rapporto hai con l’Italia?

Amo l’Italia, il cibo, il carattere della gente e l’architettura. E’ un popolo molto simile agli argentini. Di Roma il monumento che più mi piace è l’Altare della Patria, maestoso e gigantesco.

Massimo Pieroni, the son of Bruno Pieroni and current owner of Rome’s Bruno Pieroni Atelier, admits that he drew inspiration from delicate stacks of perfectlysized and pastel-colored macarons to design hats worthy of winning an Oscar.

Probably not everyone knows that he designed Piazza del Campidoglio, the dome of Saint Peter’s and parts of the basilica, Palazzo Farnese, Santa Maria degli Angeli and Porta Pia. Yet these imposing constructions not only stand out in Rome’s urban layout, but are also universally-known symbols of the city, such as Saint Peter’s cupolone. During his first sojourns in Rome, Michelangelo devoted himself almost exclusively to painting and sculptural works, but it was during his last and definite stay that he carried out impressive architectural projects that were to change the appearance of the city forever. His first significant one, in chronological order, was the restyling of Rome’s Capital Hill, Il Campidoglio. Michelangelo began redesigning the plaza in 1534, by request of Pope Paul III, who could not accept the poor conditions of the famous hill (it had been such a forlorn land ever since the Middle Ages that it had come to be called “the goat hill”, because it was used as a pasture). Michelangelo did not change the diagonal orientation of the preexisting buildings, obtaining a slightly trapezoid-plan space; restyled the facades of Palazzo Senatorio and Palazzo dei Conservatori; constructed a new palace – for this reason called Palazzo Nuovo – to close the side of the plaza towards the Basilica of Santa Maria in Aracoeli; and designed the paving of the plaza, eliminating the preexisting dirt surface. His project for Palazzo dei Conservatori implied the removal of all the previous structures and harmonizing it with Palazzo Senatorio. To the latter he added a double staircase leading to the new entry, which no longer faced the forum but the plaza. Michelangelo also designed the staircase of the Cordonata and the balustrade overlooking Piazza d’Aracoeli. In 1539, he had the imposing statue of Marcus Aurelius (the only equestrian statue of the classical era that has survived intact to our days)

Il primo intervento significativo in ordine cronologico è la sistemazione del Campidoglio. Dal 1534, in più interventi, Michelangelo ha ridisegnato la piazza per volere di Paolo III che non accettava lo stato in cui versava il celebre colle (già dal Medioevo il luogo era in uno stato tale di abbandono da essere chiamato anche ‘colle caprino’ poiché utilizzato per il pascolo delle capre). Michelangelo conservò l’orientamento obliquo delle preesistenti costruzioni, ottenendo uno spazio a pianta leggermente trapezoidale, ridisegnò le facciate del Palazzo Senatorio e di quello dei Conservatori, costruì un nuovo palazzo, detto per questo Palazzo Nuovo, per chiudere la prospettiva verso la Basilica di Santa Maria in Aracoeli e pavimentò la piazza eliminando lo sterrato esistente. In its volume, the building’s simple and orthogonal lines recall the rationalist architecture of the 1930s, which characterizes the district. It consists of three distinct architectural elements: the Teca (Theca), Nuvola (Cloud), and Lama (Blade). However, what all these exhibitions have in common is that they take us beyond the mere admiration for artistic genius to prompt a reflection on and foster a deeper consciousness of our times and issues.

Palazzo Braschi illustrates the still relevant condition of women who break the rules, while at Palazzo delle Esposizioni Time revolutionizes shape and perception and Scuderie del Quirinale highlight the value of beauty as a tool to create shared culture.

Artemisia Gentileschi Rome, Florence, Naples, Venice, London.

In the years of her very intense life, filled with painting but also personal adversity and scandal, including a rape trial during which she was tortured, Artemisia Lomi Gentileschi lived in the great capitals of art of seventeenth-century Europe.

The one hundred works on show at Palazzo Braschi, including masterpieces of extreme violence, like the two versions of Judith Beheading Holofernes on loan from Florence and Naples, tell us about a female painter who was able to surpass the art of her father Orazio and carve out a unique style even among the Caravaggesque painters. text Luisa Nocentini photo Samanta Sollima A chat with Luigi De Filippo, heir to the great Italian theatre dynasty Il nostro incontro con Luigi De Filippo, erede della più grande dinastia del teatro italiano We meet at the theatre, in the morning, during rehearsals of Natale in casa Cupiello. The curtain opens, and he is sitting with his back turned to the empty hall. The magic is instantly recognisable. He directs his young actors, and you can see that he feels at home up there on the stage. A man in his theatre. On the wall is a black and white blow-up photograph of the three De Filippo siblings, Eduardo, Peppino and Titina, with their parents.

Three siblings who shared the same talent and the same destiny, three lives crowned by personal achievement. Peppino’s son Luigi De Filippo is the latest representative of the great dynasty of Italian theatre, the De Filippo-Scarpetta family.

If you look up De Filippo in the Treccani encyclopaedia, you will find a family tree packed with human interplay, sentiment, talent and passion. All this and an extraordinary humanity is tangible in Luigi De Filippo, whose fate became intertwined with that of the Parioli Theatre in Rome in 2011. Luigi De Filippo and his wife Laura fell in love with the theatre and decided to bring it back to life as their family theatre. Luigi named the theatre Teatro Parioli Peppino De Filippo after his father, as a way of acknowledging a great Italian actor, playwright and screenwriter whose work went beyond the bounds of his native city, Naples, to become universal.

How important is tradition to you?

Just about as important as breathing. With this background, without the repertoire my family has built up over the years, I would never have been what I am: an actor who has been an actor all his life.

This year the theatre began its season with “Natale in casa Cupiello”, now on tour all over Italy. What does it mean to you to be the first member of the De Filippo family, after the great Eduardo, to direct and appear in this work?

I consider it the crowning achievement of my career, as well as a challenge which I addressed with all the enthusiasm I could muster.

You were your father Peppino’s closest team member for years, 130 Roma | the Eternal City

Quanto è importante per lei la tradizione?

Lo è quasi quanto respirare. Senza questo sfondo, senza il repertorio che la mia famiglia ha costruito nel tempo non sarei quello che sono diventato. Un attore che per tutta la vita ha fatto solo questo.

Quest’anno il titolo che ha inaugurato la stagione del Parioli, ora in tour nei principali teatri italiani è “Natale in casa Cupiello”. Che cosa significa per lei dirigere e interpretare (primo della famiglia De Filippo dopo il grande Eduardo) quest’opera?

Lo considero il giusto coronamento della mia carriera, oltre che una prova da affrontare con tutto l’entusiasmo possibile.

Lei che è stato per vent’anni il più stretto collaboratore di suo padre Peppino, ha anche lavorato con Eduardo?

Fu proprio lo zio a farmi esordire nel 1948. Una grande lezione…

It was my uncle who first put me on stage, in 1948. A great lesson…

Have your family ties ever affected your professional relationship?

We have always put aside our family ties, which were never allowed to affect the student/teacher relationship. I have had some arguments with my father, I’ve questioned what he does; but I’ve always respected my teacher completely. Eduardo is Eduardo not just because he was born Eduardo, but because he became Eduardo, by working hard and making a lot of sacrifices.

There’s an old anecdote linking your career with the theatre in Rome you own and direct. Can you tell us the story?

It was in 1973, when I staged my first comedy, Storia strana su una terrazza napoletana, in which I appeared alongside my father Peppino. He left me a note in my dressing room: “Bravo! Your comedy is really good. I wish I had written it myself!”

Six years ago you took over from Maurizio Costanzo at the helm of the Parioli Theatre, giving it a new name and new life. How did you to about this new venture?

With intelligence, hard work and good will. Attempting to bring these three strengths together. The theatre might have become a parking garage, or a supermarket, but my wife Laura and I decided to try and change things, and we managed to do so. Opening a theatre in Rome is a bold adventure, especially nowadays. It takes courage and a bit of madness: the combination of these two essential ingredients allowed Teatro Parioli Peppino De Filippo to become reality. Mine is a solitary adventure, a family-run operation, a return to the great playwrights, to the best traditions, with a high artistic profile.

In short, a family business. And it’s always sold out!

Il rapporto di sangue ha mai contaminato quello professionale?

Il legame familiare è sempre stato accantonato, non doveva in alcun modo inquinare quello fra studente e maestro. Con mio padre ho avuto degli scontri, l’ho messo in discussione; il maestro invece l’ho rispettato fino in fondo Eduardo è Eduardo non solo perché è nato Eduardo, ma perché lo è diventato, lavorando duramente, sacrificando tutto.

Le è mai pesato il nome che porta?

Il nome De Filippo è sempre stato per me uno stimolo oltre che il simbolo di un amore sconfinato per il teatro.

C’è un episodio di vecchia data che lega la sua carriera al teatro romano di cui è proprietario e direttore artistico, ce la racconta?

Fu nel 1973 quando debuttai con la mia prima commedia da titolo Storia strana su una terrazza napoletana, a fianco di mio padre Peppino che dopo lo spettacolo mi lasciò un biglietto in camerino “Bravo! La tua è una bella commedia, avrei voluto scriverla io!”.

Sei anni fa, dopo la direzione di Maurizio Costanzo, lei ha preso il timone del Teatro Parioli, dandogli un nuovo nome e una nuova vita. Quali sono gli ingredienti di questa avventura?

L’intelligenza, l’impegno e la volontà. La struttura rischiava di diventare un garage o un supermercato, ma io e mia moglie Laura abbiamo deciso di provare a cambiare le cose e ce l’abbiamo fatta.

Aprire un teatro a Roma è un’avventura coraggiosa, specialmente di questi tempi. Ci vuole tanto coraggio e una giusta dose di pazzia: il mix di questi due ingredienti ha fatto sì che prendesse vita il Teatro Parioli Peppino De Filippo. Si tratta di un’avventura solitaria, una gestione familiare priva di aiuti pubblic, con una consuetudine con i grandi autori, con la migliore tradizione , con un alto profilo artistico”.

Insomma ancora un affare di famiglia che fa sempre il tutto esaurito..

After an exhibition of Picasso’s ceramics (in this picture), the hotel hosts La Célestine exhibit from January 24 to February 25, 2017 world together with poet and friend Jean Cocteau. He stayed for three months in the luxurious 5-star hotel on Via del Babuino, at the center of the lively Roman artistic life. If Dan Brown had had a chance to taste the pasta dish made with skate broth and broccolo, he would have chosen the restaurant Sora Lella, on the Tiber Island in Rome, as the setting of the final scenes of his Da Vinci Code.

Like other vegetable varieties, the Romanesco is a fractal, meaning the bud is self-similar in character, and the number of spirals on its head is a Fibonacci number.

On a more mundane level, this inflorescence of the cabbage family is a great ingredient for winter dishes, since this is its harvesting season. Low in calories (25 Kcal/100g), it is packed with calcium, iron and vitamins (A and C) and it can be used in a surprising variety of dishes on account of its delicate flavor.

Actually, there are few restaurants in Rome whose menus do not feature a broccoli dish in winter, so I will only talk about those which seemed more traditional or surprisingly innovative.

The owner of the previously mentioned Sora Lella (www.trattoriasoralella.it) was the sister of a very famous Italian actor of the past, Aldo Fabrizi, who, in wintertime, preferred “this balsamic fish soup” to any other dish. But, this is not the only restaurant that serves broccoli and skate dishes. Others are Taberna de’ Gracchi (www.tabernadegracchi.com), in Prati, and Ristorante Salvi (www.ristorantesalvi.it), formerly Trattoria delle Corse, at Capannelle.

At La Taverna del Ghetto (www.latavernadelghetto.com) you can order pasta with Romanseco broccoli and Epiro (on Facebook), in Prati, whose menu changes each month, occasionally serves interesting twists, such as a mini baguette with broccoli and beltfish. Foodie friends of mine have raved about it. Marzapane (www.marzapaneroma.com) often has Romanesco broccoli dishes on its winter menu, such as their current appetizers.

Last but not because less tasty, I would like to mention Tram Tram (www.tramtram.it), where they serve orecchiette with Romanesco and clams.

Se Dan Brown avesse mai assaggiato la minestra di pasta e broccoli al brodo d’arzilla, probabilmente avrebbe ambientato le scene finali del suo “Codice Da Vinci” sull’Isola Tiberina, a Roma, tra i tavoli della “Sora Lella”.

Il broccolo romano infatti, come altre varietà di vegetali è un frattale, cioè ogni sua singola rosetta riproduce in scala la forma del fiore intero, e le sue spirali si dispongono secondo la successione di Fibonacci. Restando su un livello decisamente più prosaico, questa infiorescenza delle Brassicacee, è un ottimo ingrediente per dei preparati invernali, dato che questa è la sua stagione di raccolta; dal basso contenuto calorico (25 Kcal/100g) e ricco di Calcio, Ferro e vitamine (A e C), dato il suo sapore più delicato degli altri cavolfiori, si presta ad una varietà di preparati sorprendente. In questa stagione sono poche invero le trattorie romane che non offrano una pietanza a base di broccolo, quindi ci limiteremo a segnalarvi quelle che ci sono apparse più tipiche o sorprendentemente innovative.

A parte la già citata trattoria Sora Lella (www.trattoriasoralella.it), il cui più famoso fratello nei mesi invernali preferiva “sta minestra barsamica de pesce” a qualsiasi altra pietanza, offrono preparati a base di broccolo e razza anche, la Taberna de’ Gracchi (www. tabernadegracchi.com) nel quartiere Prati e il Ristorante Salvi (www.ristorantesalvi.it), già Trattoria delle Corse, a Capannelle.

A “La Taverna del Ghetto” (www.latavernadelghetto.com) si può assaggiare una minestra di pasta e broccoli romaneschi, mentre Epiro (su Facebook), in Prati, che varia il menù mensilmente, propone talvolta delle interessanti divagazioni, come uno sfilatino di broccoli e pesce bandiera che amici gourmet mi hanno descritto come una delizia. Marzapane (www.marzapaneroma.com) in stagione offre spesso delle ricette a base di broccolo romano.

In questo momento tra gli antipasti troviamo Le Crucifere.
