Joe’s Butcher Shop

We asked Joe Lazzara, owner of Joe’s Butcher Shop in Carmel, some of our most burning questions about summer grilling. Here’s what he had to say.

steers are finished to super marbling standards by our farmers.

What's an unexpected cut I should try this summer?

No question, it’s our Pork Super Chop. We source it from a single farm in North Carolina that raises a fattier hog. We sell them marinated in a garlic parmesan marinade that enhances their already delicious flavor.

Why does the way proteins are raised affect quality, and why does it matter?

PARTY

CECILIA ALVAREZ–HEARD AND ANDREW HEARD OF TRESSS AQUATECTURAL DESIGNS

Innovation meets excellence at TRESSS

Aquatectural Designs, where Cecilia

Alvarez–Heard and Andrew Heard are refining their sleek, multi-functional, allseason swimming pools.

23 ABSOLUTELIVING

When you think of a swimming pool cover, you might envision a flimsy tarp or picture a piece of plastic that rolls over the water to keep leaves and debris out. But what if a pool cover was more than that? What if it could transform your patio into a multi-use space with the touch of a button? It might sound fantastical or futuristic, but Cecilia Alvarez–Heard and Andrew Heard of Zionsville are perfecting moving pool floors with the TRESSS architectural pool cover and an all-in-one plunge pool right here in Central Indiana.

The couple knows what it takes to be adaptable and flexible. Cecilia, an entrepreneur from Monterrey, Mexico, and Andrew, an engineer from Leicestershire, United Kingdom, have been bending and twisting through life as internationals in Indiana for over twenty years, raising three young Hoosiers (all tweens this summer) along the way. When they were designing their home, known as Casa Heard, with a local architect almost a decade ago, they knew two things: they wanted a pool, and they wanted it to be as adaptable and flexible as they were, fitting their family, their lifestyle and the space.

As we chat about how the family and the pool came to be, the children and their friends splash in the water on the other side of floor-to-ceiling windows, almost as if they were in the room with us. “We always wanted this style—where the pool was close to the house,” says Cecilia. But other covers weren’t attractive and left the area unusable when the pool was closed. So they waited to finish this part of their

dream home until the time and the design was just right. After much exploration and analysis, they decided on a moving pool floor. But how?

The idea came during a 2012 toddler swimming lesson in the Backer Therapy Pool—a “magic pool” at the Jewish Community Center with an adjustable floor. Andrew had seen these in his research, but using one in person allowed him to envision the technology in the Casa Heard pool, which was still just a hole in the ground with a temporary wooden deck spanning the top. They looked at what was available, but Andrew knew he could design his own using the engineering he knew—racecars.

By day, Andrew is the vice president of Xtrac, where he engineers transmissions for the elite motorsport and highperformance automotive sector. He explains that racecars today are built out of composites, and he saw the potential to adapt that same technology to create a pool cover that could move, adjust and transform to meet different needs. Using composites in the TRESSS designs makes them more straightforward and less expensive to produce. In addition, the material is inherently buoyant, so the mechanics can be hidden safely underneath. It is also incredibly insulating, allowing TRESSS products to be used throughout the year, even during cold Indiana winters.

This sunny spring evening is perfect pool weather, but Cecilia scrolls through photos to show me snowball fights in the steamy

Relaxing by a pool is the ultimate summer luxury, but what if you could enjoy your outdoor pool year-round? TRESSS Aquatectural Designs, headquartered in Zionsville, combines state-of-the-art technology with beauty, safety and fun. When closed, the surface is a hardscape, doubling as a patio area. Ideal for intimate spaces, the moving floor cover is built to withstand weight and pressure like a deck while insulating the water underneath for use any time of year.

pool last winter and other events they’ve hosted, from dance parties in a few inches of water, to diving contests at eight-feet deep, to elegant dinners atop a pool you’d never even know was underneath.

Their Casa Heard pool is Andrew’s first TRESSS architectural pool cover, and he is constantly making improvements as he sees they are needed. Since the beginning, the couple has been diligently working toward a commercially viable product. Cecilia, a lifelong entrepreneur, handles the operational side of the business, which has grown to a nearby manufacturing facility and several employees. She is passionate about their work, continuously marketing, seeking new opportunities and patiently waiting for the products to meet perfection.

“We are doing this for our kids,” she says, noting that the name TRESSS is for their three children. “It is three in Spanish, tres, spelled with three Ss for Sophia, Sebastian and Stefani.”

Andrew and Cecilia’s sleek, multifunctional designs have already garnered attention from homeowners and pool builders. They currently work with local pool builders, as the architectural pool covers can be fitted to any new pool build, and they recently launched a new all-in-one plunge pool, also with their signature moving pool floor. This model is featured at Ripplebnb, Casa Heard’s

neighboring Airbnb and the first TRESSS plunge pool pioneer.

TRESSS is poised to be a stand-out in the pool industry. The designs are certainly luxurious, but Cecilia points out that they offer many additional benefits. They are safe and they save space. You can select the depth and swim during all seasons. They offer sustainability and special needs accessibility, and yes, they are super stylish.

Currently, the team at TRESSS is scaling production and working through durability testing to prove the covers and pools are fit for purpose and will meet long-term expectations. “This is the endurance test, as they call it in auto racing,” says Andrew of the end-user phase they are in, noting they are actively engaging a few new pioneers to work with at the foundational level. “Jump in,” he encourages, “and take advantage of being the first with a TRESSS moving pool floor.”

Pizzology Craft Pizza + Pub

The tight-knit team at Pizzology prides itself in showcasing the best flavors of every season on its pizzas. “We have created a handful of signature summer pizzas that have gained quite the following from our regulars,” says manager Carlee Hunter, excited about this summer’s menu, which brings some brand new pizzas to the table. “Our head chef, Paul Robinson - is a flavor master. Our regulars are always eager to taste his new menu items,” she adds. The Neapolitan-style pizzas here are wood-fired at temperatures over 700 degrees, allowing each pie to cook evenly and give the crust a crisp finish without scorching the toppings.

In addition to specialty pizzas, Pizzology offers a variety of hand-crafted Italian favorites with a Hoosier twist. The fried green tomato salad is a fan favorite, featuring green tomatoes breaded with Panko crumbs, fried, and served with slices of fresh mozzarella over an arugula salad with a tangy whole grain mustard vinaigrette. The meatballs + polenta is an old favorite returning to this summer’s menu—tomato-braised pork and beef meatballs, served over creamy polenta with fresh house-made ricotta. “What makes this dish stand out is the type of polenta we use—Professor Torbert’s Orange corn grits,” says Hunter. “They’re a local product from West Lafayette.” These top-notch grits make another appearance in the carnitas + polenta, Chef Paul’s tasty Italian Tex-Mex creation of cola-braised pork shoulder, roasted green tomato salsa, pickled red onions and queso fresco. A Paloma from the bar sets this dish off perfectly.

Summer is special at Verde Flavors of Mexico, says owner Paul Aréchiga. It’s the season they can provide a 360-degree experience, he explains, adding, “The warmer weather really represents our Mexican roots and adds the final touch to the ambiance we aim to provide as a unique dining destination.” Serving authentic, upscale Mexican fare, from shared bites to sizzling entrees to fabulous desserts, Verde is currently featuring several seasonal items for the summer months that will take you away to the tropics, including the delicious spicy pineapple guacamole and a succulent taco salad fajita. Even the drinks are taking on an exciting twist with a refreshing passion fruit margarita joining their extensive list of handcrafted margaritas and cocktails.

101 Beer Kitchen

At 101 Beer Kitchen, co-founders Thad and Jess Kittrell want you to feel right at home. They believe every neighborhood needs a welcoming gathering spot for friends and families that is unpretentious, uncomplicated and uncommon. Here you can get a fabulous chef-driven meal that matches the season— and the beer. "Pairing food and beer is something that we're passionate about," says Jess, adding that the contrasting and complementary flavor combinations are endless.

While Beer might be first in the name, Jess emphasizes that the kitchen is the heart of the operation. Chef Thad Kittrell, a Muncie, Indiana native, and his culinary team take advantage of fresh, local ingredients whenever possible, making the summer months full of exciting menu additions. Jess suggests the tuna and avocado toast, with chilled Creole tuna, served rare on toasted brioche with spring vegetables, red pepper sauce, lemon mayo and ginger vinaigrette. She loves it paired with the bar's handcrafted tropical paloma, accentuating the flavors perfectly. The crispy lemon chicken is another summer standout, especially with Sun King's Pachanga, a local, Mexican-style lager with a crisp malt flavor and thirst-quenching character to balance the parmesan-breaded chicken breast.

Both Indy locations (found in The Yard at Fishers District and in the Proscenium in Carmel) offer impressive patio seating with shaded, open-air tables and a four-season sunroom. In Carmel, individual fireplace nooks are perfect for enjoying a beer under the stars.

In the summer, there’s nothing better than pizza and people-watching, and at Bazbeaux in Carmel, you get both. So grab a beer and a seat with a view of the Monon Trail and watch the world stroll by. With delicious starters, fresh salads, hearty sandwiches and a long list of specialty pies, it’s obvious why they are a local favorite and recently named the best pizza joint in the state. Celebrating its fifth summer season, Grindstone on the Monon has a rustic yet contemporary ambiance and presents a menu honoring rich, Midwestern flavors.

Steps off the Monon Trail in the Carmel Arts & Design District, Juniper on Main brings a dash of Southern charm to the heart of the Midwest. Here, big flavor meets small-town charm, with Southern coastal cuisine and Lowcountry recipes served inside the historic cottage and out on the tranquil pergola. “Under the stars and twinkle lights, with the breeze coming through the garden, a summer night on the pergola feels like you have stumbled upon a hidden gem in a quaint, little seacoast town,” says co–owner Diane Cannon.

This summer, the menu reflects a day at the beach, with authentic dishes from the Georgia and Carolina coastline. The fresh and hearty Lowcountry Boil is a Tybee Island beach favorite, featuring Gulf shrimp, smoked sausage, sweet corn on the cob and boiled red potatoes, tossed in Old-Bay butter broth, with fresh creamy coleslaw, cocktail sauce, and a squeeze of lemon. Also new is the Bay Street Seafood Pasta, served with blackened shrimp or salmon, smoked sausage, caramelized sweet onions and peppers and a parmesan cream sauce.

Known for their shrimp and grits, Cannon says the specialties don’t stop there. “We also specialize in coastal dishes with a French Caribbean flair known to the region,” she says.
