Q: What makes the approach to wellness so unique at Defy of Indiana—and how does functional medicine guide that work?
A: At Defy of Indiana, we’re fundamentally different from conventional care. We don’t just manage symptoms—we uncover and address root causes. As a functional medicine clinic, we take time to understand your full health history, lifestyle and genetic predispositions. Instead of simply prescribing medication for symptoms like fatigue or weight gain, we ask: Why is this happening? We explore hormone balance, gut health, environmental exposures and stress levels to identify imbalances—such as nutrient deficiencies, inflammation or hormonal disruption—and build personalized plans that help the body heal and thrive..
Q: Hormone imbalance, gut health and weight gain are often treated separately, but you look at the whole picture. How are these systems interconnected?
A: These systems are profoundly interconnected, forming a complex web within the body. For example, the gut microbiome plays a key role in regulating estrogen metabolism, and inflammation in the gut can interfere with thyroid and adrenal hormone function. Hormonal imbalances—such as disruptions in insulin, thyroid or cortisol— can directly affect metabolism and appetite regulation, making weight management difficult. At the same time, excess weight
can alter the gut microbiome, fueling more inflammation that further impairs hormone signaling. In fact, inflammation is often the common thread, disrupting hormone receptors and metabolism, and contributing to both weight gain and hormonal dysfunction. By addressing these connections together, rather than in isolation, we’re able to create improvements across all systems.
Q: Your approach to weight loss goes beyond calorie counting. What makes your method more sustainable and personalized?
A: Our approach goes far beyond the simplistic “calories in, calories out” model. Weight is influenced by a complex interplay of hormones, metabolism, gut health and lifestyle. We start by addressing hormonal imbalances—like insulin resistance, thyroid dysfunction and cortisol levels—that affect fat storage and energy use. We also assess gut health, looking for issues like dysbiosis or inflammation that may hinder progress. Our plans focus on optimizing metabolism through nutrient timing, protein intake and movement, while also managing stress and sleep, both of which impact cortisol and weight. Most importantly, every plan is personalized to the individual’s biochemistry, goals and lifestyle— making it much more sustainable than restrictive, one-size-fits-all diets.
Q: You also offer bioidentical hormone therapy. Who might benefit—and what should they know before starting?
A: Bioidentical hormone therapy (BHT) can be life-changing for women navigating midlife symptoms like hot flashes, mood shifts, low libido and sleep issues. David, an authority in skincare and spa management, helped shape state licensing standards for aesthetics and continues to bridge the gap between clinical innovation and salon-based wellness. Mary, a sought-after makeup and hair color expert, has worked with everyone from Seventeen magazine and national news networks to political figures and celebrities—while remaining deeply passionate about helping local clients and fellow industry professionals feel confident and empowered.
Education is central to Eva’s mission. Eva’s path to the beauty industry began early, growing up in Huntington, Indiana, and driven by a natural creative spark and a desire to help others feel their best. After graduating from Kaye’s Beauty College in Noblesville and completing a twoyear apprenticeship, she built her career with intention, experience, and a clear artistic point of view. Today, growth and education are still central to her mission, regularly seeking advanced training and certifications. She has poured that experience into others by developing an in-house stylist training program—one of her proudest accomplishments to date. The Beauty Lounge is now a boardregistered apprenticeship site, offering aspiring stylists the opportunity to become licensed through its proprietary curriculum. From foundational skills to state board prep, Eva’s team walks new talent through every step of the process. “It’s incredibly rewarding to nurture the next generation of stylists in a setting that prioritizes excellence, integrity and growth,” she says.
That spirit of mentorship extends beyond technique. Eva is also passionate about helping other women build businesses aligned with their values. “With my history of building from penny-pinching beginnings to a multimillion-dollar brand, I want to share that wisdom,” she says. “When women believe in their worth and lift each other up, it changes everything.”
Looking ahead, Eva’s vision continues to evolve. She hopes to expand educational offerings, support more independent professionals through curated salon space, and maybe even write a book. In the meantime, a few salon stations remain available for stylists who share her commitment to craft and community. Additional professional suites are also available for wellness-focused businesses interested in joining the high-vibe, highintegrity culture she’s cultivating.

Late August arrives with a particular grace in Door County. The days are a little slower, the water a little warmer, the light a little softer. Tucked between Green Bay and Lake Michigan, this 70-mile peninsula feels like stepping into a vintage postcard. Sailboats bob in quiet harbors, general stores scoop ice cream by hand, and roadside stands overflow with cherries and summer blooms.
With five state parks, eleven lighthouses, and a rhythm that invites you to stay, Door County is pure Midwest nostalgia—only elevated.
Begin your morning in Fish Creek or Sister Bay, where streets are lined with art galleries, seasonal boutiques and waterfront restaurants. Step through the doors of Casa Santa, and you’re instantly transported. The scent of roasted chiles and warm spices lingers in the air, mingling with the soft glow of pendant lights and the hush of conversation. Lush greenery drapes from above, framing handcrafted woodwork and polished stone. Every element, from the cocktails clinking at the bar to the music weaving through the space, feels curated, inviting and full of soul.
This is Casa Santa, a refined new concept from Paul Aréchiga and the team behind Verde Flavors of Mexico. While Verde’s fast-casual roots have earned a devoted following across Indianapolis, Casa Santa offers something different—something quieter, more intimate and deeply expressive. “Casa Santa was born out of a desire to bring something truly special to the Verde family,” says Paul. “We wanted a place where the design, menu and ambiance all work together to tell a story.”
The menu is rooted in tradition but refreshingly modern, drawing on regional Mexican specialties and seasonal ingredients. Think house-made moles, bright ceviches, and upscale street food staples with thoughtful twists. Standout dishes include the birria

short rib, crafted with rich, layered depth, and a robust nixtamal tortilla program that grounds each plate in authenticity. “You’ll find familiar ingredients used in unexpected ways,” Paul notes. He adds that the bold and clean agave-forward cocktails easily complement the food as much as they dazzle on their own. It's all part of the experience, one that’s meant to feel elevated but unpretentious.
Design, as always with Aréchiga’s restaurants, plays a starring role. Inspired by frequent visits to his hometown of Guadalajara, Paul has infused the space with handcrafted details and organic elements that mirror the warmth of a Mexican home, reimagined through a contemporary lens. “Casa Santa is meant to feel like a reimagined version of home,” he says. “It’s beautiful, soulful and rich in culture.”








Paul moved to the Indianapolis area from the suburbs of Chicago in 2007. Now based in Fishers with his wife and two daughters, he leads the Aréchiga Restaurant Group, which operates a growing number of Mexican restaurants in both Indiana and Illinois. While the business has expanded significantly over the years, Paul says the heart of it remains the same. “We’ve built something that not only feeds people but creates lasting memories,” he says. “It’s a team effort. Many of our employees are longtime friends and family.”
