









































Whether it’s a hard, paper copy or a digital edition – we appreciate you taking the time to check us out and peruse our offerings. With the start of the season and our rapidly expanding base, I thought it might be time to re-introduce ourselves and let you know who we are.
Reasons To Ride is a grassroots concept that has really evolved over almost 20 years. We aren’t a “franchise” corporate brand that has been passed around from owner to owner, we are a unique concept that was originally conceived as a means of letting riders know about riding events being held in the local area. Over time that area expanded, and we partnered with larger and larger events. A little more than 15 years ago we began publishing motorcycle magazines and roughly 5 years ago we launched our online concept – Reasons To Ride. Eventually this name came to represent just about everything we do – from print publications to our motorcycle events website. We are REASONS TO RIDE.
The name represents our focus – we focus on “reasons” to get out and ride! When we first started using this name we had a lot of folks that would come up and growl – “we don’t need no reason to ride!” To which we would simply ask, “Do you enjoy it?” “Well, $%@#$% yeah I do…” And that would be the reason they ride. There’s always a reason.
While some ride simply because they enjoy it, others ride for a cause –supporting a charity or to honor someone. Or they may ride as a showing of support for a cause.
Last night, I spent some time talking with a young Pastor that has launched a ministry serving incarcerated veterans. After just a few minutes it became clear that he had a calling for connecting with men and women that were locked away and serving time. This is a group that most – even their own families in some cases – have written off. However, Chaplain Otto is dedicated to assisting veterans – preaching to those that have “fallen on the battlefield of life” after serving our country. As part of this, he organized the Incarcerated Veteran Prison Run in 2024 – and he’s brought it back this year. And that’s where we come in.
One of our mission is to support such rides and events. We help support local organizations and riders, which we believe is the backbone of the riding community. It’s what sets us apart from so many folks. It’s not the “leather” that defines a “true biker” – it’s the sense of brotherhood and the understanding that when you’re out on the road – we’re ALL together.
So we’ve built a business model that focuses on promoting such folks with the support of local, regional, and even national advertisers and sponsors. Sure we enjoy the parties, races, and rallies – but what sets us apart is the focus on helping those in need.
It’s never been about acting “tough” or trying to tell everyone how cool we are. People can decide for themselves about all that. The “act” we focus on is being our brother’s keeper – and folks that you WANT to ride with. Folks that you WANT to party with – and sometimes for causes that are worth supporting.
That’s REASONS to RIDE. We’re a bit different, and that just fine. Looking forward to seeing you all out on the road as we start to get out riding. There are A LOT of events going on all over the Midwest – from Traverse City and the UP to Pittsburgh and Cincinatti, from Illinois to upstate New York –and we plan on getting to as many as we can!

Since our launch more than 15 years ago, the RtR Crew has been dedicated to helping to support local charitable organizations, nonprofit events, and those in need. Of particular focus has always been the Veteran Community. We believe strongly that we need to not only recognize but help support those that have sacrificed for our community and nation.
As part of this commitment, we have actively sought out and worked to support Veterans organizations within the motorcycle community. We have have regular features such as our “SERVICE NOTES” columns and our annual Veterans Edition.
We are looking to bring on a VETERANS AFFAIRS EDITOR as a member of our team to help direct and drive this effort. This individual does not have to have any publishing or journalism experience – and doesn’t even have to be a Veteran, although we believe that would certainly help. While the position itself is “volunteer”, financial compensation is available through sponsorships and corporate support if desired. However, this is not a “sales” position and RtR has NO desire to retain revenues generated by this program. For more than 15 years we have actively supported grass roots veterans organizations and ran hundreds, if not thousands, of ads and notices for events free of charge for them. And as proud as we are of this record, we want to do even more in 2025.
We’re looking for someone with a passion for the Veteran community that can help us establish a more consistent and effective resource for local Vets and their families. As winter winds down, it’s time for us to focus on this year’s event schedule. One of the biggest challenges we face every year is trying to develop a schedule that covers “our market” with active appearances and reaches the most riders – without stretching us too thin… or simply burning us out. Yes, that’s an actual consideration –I promise. And of course we want to GROW each year!
Traditionally we always kick off the riding season with Bike Blessings, and we are looking to help get the word out about more blessings and related events throughout the region – and even nationally. We have sponsorship backing to offer extra marketing support at NO COST to the charities or host organizations and even have stickers for those participating!
We are looking for more BIKE NIGHTS to help promote as a way to reach more local riders. If you’re hosting one or have one you’d recommend – shoot us an email ASAP. We also have sponsors that will support more promotions and even on-site events at participating Bike Nights!

With us now expanding our focus to include APPALACHIA, NORTHERN NEW YORK, WESTERN PA, and parts south… we’re looking for existing events and strong partners for us to develop a relationship with through hosting events and sharing their message. We are also looking for more MICHIGAN locations for Ride Stops and events.
Our BIKE and TATTOO SHOWS are designed to not only entertain folks, but to actively engage riders and allow both us and our partners to network with. Anyone that’s attended our shows can attest to the family approach that we take with our exhibitors. It’s NOT simply about the bikes or even the ink – but the folks showing them off as well.
But this approach is one that we seek to develop over time – by finding the right partners and building the shows year, by year. For instance, our Geneva-on-the-Lake Bike Show is going on 15 years. During this time we’ve seen builders and “fades” come and go –and bikes exhibited by multiple generations. We’ve seen multiple cutting-edge bikes come and collect all the awards – and then serve as the inspiration for the bike that comes and takes the trophy the next year. It’s pretty cool.
Our TATTOO PARTIES are designed to not only showcase amazing artwork done throughout our communities, but to also bring out new folks into our community. We want to reach into the TATTOO COMMUNITY and encourage them to come out and experience the riding community and the energy we have. That means new customers that might not otherwise frequent your event or business. And those new folks might inspire even more folks as they come back and share their experiences without their circles.
To this end, we offer turn-key promotions that work to maximize the marketing potential of your event or business. Our shows have evolved over time, with new features and extras added each year to create excitement and ensure ours are the best in the area. We take care of all the essentials and can even bring our own power if need be. The host venues can simply focus on taking care of the guests and doing what they do best.
There’s no need to try re-inventing the wheel –when we have an established series of tattoo events and bike shows that are well known within the community. Over 900 bikes and over 500 tattoos were featured in our 2024 Tour Stops!

April is here and, if you’re like me, we have spent a great deal of time thinking about the coming season! Are you ready? In the winter months we spend a lot of time resting and doing the things we don’t usually take the time for during riding season, so we do things that prepare us for the next season, right? Oh, I know some might say, “Rest? Well, I don’t ever stop riding, even in the winter!” Good for those that can, those of us who don’t, we appreciate your bravado and smile as you go by. Nevertheless, it’s time to get ready now.
Are the lights working properly? Are they bright and visible? Are the brakes good? Both front and back? Are the belts good? Is the oil tank filled up with new oil? How about the forks, filters and clutch? You see, there are so many things to check out before we just jump on and go. Tires…definitely the tires! Especially if it hasn’t moved all winter. Finally, is the battery all charged up and ready? If it was on a tender all winter, then you should be good.
‘So, how does this relate today, MG? We are all understanding how to do the whole get ready to ride thing, we really don’t need a lesson.’
Fair enough, but let me ask this…Are You ready? Does your light shine before others so that they see our heavenly Father in you? Are you able to stop yourself from being totally rude to others? Are you able to keep the forward momentum going without
Spirit can keep you filled up and ready to go? (there’s a story in the Bible about this called the 10 virgins…you should look it up). Is the ‘tread’ good so that you are physically fit enough to go and do as you are led to do?
You see, just like our machines need care and maintenance, so do we. For those who get what I am putting down here, we have to get ready to be ready for any moment when we hear that awesome sound that calls us to our real home with the Father in the heavenlies. Our Veterans will get it when I say, ‘Always on the ready.’
In the story I mentioned above, five of the ten were ready for the bridegroom to arrive, they didn’t know when He was coming, just that He was and they had their lamps filled, trimmed and ready for His arrival. They all rested for the coming journey, however, the other five didn’t prepare as well before they slept and ran out of oil! They begged for the others to share what they had, but they said, go out and get oil somewhere because we don’t have enough to share. The lacking five left and while they were gone, He came. Unprepared, they missed the most important time of their lives…the coming of the bridegroom.
Bottom line…always be ready, whether in season or out of season. If we make sure everything is good before we rest, then we will know it’s all good when we do the recheck as we get ready to ride and enjoy yet another season of good riding! In previous articles we discussed the Sport Touring riding style- riding a fun, challenging road, at a brisk pace, getting in the "zone" of total concentration on a capable motorcycle, often with a small group of like-minded friends.
Most other riders do what I call Social Group riding, which has different objectives:
1. Informality- minimal rules, no riders meeting, etc, because those kinds of things are "not welcoming."
2. Non judgmental- Everyone who shows up is good to go.
3. No group size limitation- the more riders the better. My riding buddies know that I am not a good fit in such a group, but in 2007 a friend invited me along with about fifteen others to attend a flat track race at a fairgrounds about seventy miles away. Those who wanted to go paid him in advance so he could buy a block of reserved grandstand tickets and we could enjoy the races together as a group. He planned for us to meet and ride our bikes to the race, stopping for dinner at a nice restaurant about 20 miles from the track. A fun evening with friends- a great idea! I paid my money and was in. The races were on a Saturday in late June, and it was over 90 degrees and humid- very typical for the time of year in Ohio. We were to meet at 3PM in a Wal-Mart parking lot just off an I70 exit northwest of Dayton, Ohio.
I arrived about 2:45 PM and saw a few other people and bikes in the parking lot out near the road. There was no shade, no place to sit or get any refreshment. The others were standing around in their jeans and T shirts- I was the only person wearing gear.
3 PM came and went. Turns out we were waiting for someone who had lost track of time and was running late. I had taken my helmet and jacket off right away but was still broiling in the sun. The straggler arrived at about 3:30 and the first thing he needed to do was get gas, so we waited another ten minutes before everyone started their bikes and rolled out. Our route went north on OH 48 through Englewood, Union and other suburbs. The stop and go traffic never moved more than 40 mph between long stops at many traffic lights.

About ten miles into the ride, we arrived at West Milton, the last town before OH 48 got rural. While waiting at the light, one of the riders told the leader that he was on reserve and needed to stop for gas. Fortunately there was a station just across the street so we all pulled in. Four riders had their wives on back and they were all friends with each other. While the rider filled his tank, the women got off and headed to the bathroom. It was small and only held one person at a time, so they had to take turns. They all lit cigarettes and enjoyed a leisurely smoke. About 25 baking minutes later, everyone was ready to go again.
We finally got moving at a pace up to about 45 MPH as we got off OH 48 and onto less traveled roads. About 50 miles into the ride, we came to a non-descript little crossroads town and the leader pulled over and stopped.
After a couple minutes I walked over him to see what the problem was. Turns out he thought he knew where he was going but this town was not what he expected so he was lost. He didn't have a map or GPS. I asked what town we were going to for dinner, and offered to lead the group there.
I was able to pick up the pace and get us to the restaurant where we had a nice dinner and still got to the fairgrounds in time to enjoy the races. Afterward, we all got on our bikes and headed our separate ways home.
What can be learned from my social riding experience? Most of the problems could have been avoided while still having a social group ride. Here's how:
1. Meet and start from a nice gas station with a canopy over the pumps and a convenience store with some seating inside.
2. Riders can easily get drinks and snacks and be comfortable while waiting for others to show up.
3. Riders can easily take a bathroom break before the ride if needed.
4. The ride leader can remind each rider to top off their tank before departing.
5. The ride leader should always have a map or GPS and be sure they know the route they are leading others on.
6. The route could have been planned to get out of urban areas and traffic more quickly. People can ride whatever style they want. It's all good, but you will have a better time if you're riding with someone who enjoys the same riding style as you. (and there are a LOT of different styles!)

So. I had just finalized my divorce and I was a little broken. I had a huge list of things in my head I wanted to do now that there was no one to tell me “no”. One of which was to buy a motorcycle. I have so many friends that ride. I was always envious of their adventures and the attention they always seemed to draw.
I didn’t know anything about riding, let alone what kind of bike I would be able to start on. It was a big decision and I had no idea where to begin. One of my friends suggested Motorcycle Ohio Rider Education. I could learn to ride in one weekend and the bikes were provided. I could see if it was something I could handle without the huge risk of buying a bike. I went to the BMV, took my written test and got my motorcycle temps. My friend told me there were practice tests available online and that helped me alot. I immediately went on the Motorcycle Ohio website and signed up for a class with openings near me. I was surprised to see there were so many options.
I got to the classroom early Thursday evening with my new riding gear and there was a full class. There were even students on “stand by” in case someone no showed they could take their spot. We introduced ourselves to each other and there were riders of every age and skill level. Older bikers that had never been endorsed but had been riding for years, a kid that raced dirt bukes but wanted a street bike. A lady that her husband encouraged her to ride. I college girl that wanted to ride a sport bike. I myself had never ridden one and I was surprised at how many others had not also.
The instructors were welcoming, helpful and knowledgeable. We watched videos about buying a helmet and making ourselces visible. We discussed all the risks we will face and how to minimize those risks. We passed gear around like show and tell. We were given a written take home open book study test and asked to return on Saturday morning for day 1 of the motorcycle range exercises. I am not going to lie, I was nervous. I went home, watched videos on You Tube, and studied as much as I could.
I arrived early on Saturday morning and the bikes were already out and idling. It was raining. I was so intimidated. But I gathered my self and chugged my coffee and strolled out there with my gear. I was thankful I brought rain gear and a change of socks just in case. Those socks came in very handy later in the day. Next I chose a bike I thought felt comfy and next thing I knew we were halfway through our day. We did drill after drill. Practicing the clutch and brakes over and over. Repeating a lot of basics. It went by so fast. Then rider coaches were quick to offer suggestions to improve my abilities. After a few different drills, you could not have smacked the big, dumb smile off my face. I was RIDING! And in the rain! By the end of the day I was so happy and I felt like I had a reasonable amount of confidence on that machine.
Sunday morning came and I had butterflies. It was day 2 of range exercises and that meant it was evaluation day. A lot of my classmates were scared they wouldn’t pass. The coaches reassured us there wouldn’t be anything on the test we hadn’t practiced. After we got started, we ran through some more drills and practiced the basics we learned the day before. I was amazed at myself, i did a really sharp u-turn. I didn't touch the lines! When the drills were finished the rider coaches lined us all up for our evaluations. I made a few mistakes and I felt a little defeated. The coach told me to shake that off and continue. I did, and to my surprise when they handed out the cards, I had passed! Unfortunately not everyone did pass, but they were able to come back and try again with a lot more confidence than their first try They even offer a returning riders course that is only 1 day.
I had my motorcycle endorsement and I learned so much about riding safely. I felt more than ready to begin shopping for my new bike. The instructors reminded us to practice our new skills as much as possible to keep sharp on the life saving skills we had learned. I was so excited, I even signed up for the BRS2 class that I can take on my new bike!
One of the gus in my class said he was going to do the same and bring his wife to be his passenger in the class. I never knew there was so many options to learn about riding in Ohio.

For shows in their area, shops can show off their work and connect with local riders and future customers. Shops will be able to sponsor their customers in the shows as a means of showcasing their work as well. New TECHNICAL aspects added and improved pre-registration options.
One of our most popular, yet least promoted, aspects of the shows this past year were the SOUND CHALLENGES that we hosted. We introduced a different take on the sound categories than most shows, and we believe that it worked fairly well. Instead of using meters and specific subcategories, we adopted a more informal approach that welcomed all challengers and winners were selected through crowd participation. It was admittedly an inexact approach, which some did not care for. However, we believe that it opened the competition to a lot more folks that had never participated in anything like that before. It also involved the crowd, and they all had a lot more fun – we believe.
However, we recognize that there are some that want to do a more technical approach with distinct categories based upon the equipment used. For those folks and in an effort to further expand the shows, we will be introducing more technical judging to some of our shows. In some cases, we will be hosting dedicated audio shows focusing primarily on the sound competitions. For these shows, we will be partnering with shops and promoters that specialize in audio competitions. We recognize that we aren’t the experts in this area, so we will turn to folks that are.

The 2025 Bike Show Series will kick off this year in Pioneer Ohio with the 30th Annual Memorial Weekend Rally, hosted by Hudson Leather. This is a great rally that draws from throughout Michigan, Indiana, and Ohio. In addition to the Bike Show there is also a Bike Blessing, vendors, and a local MOTORCYCLE AWARENESS DAY PARADE hosted by AMVETS and a local equine therapy center. We will have special awards for service, memorial, and patriotic themed motorcycles in honor of Memorial Day and those that have sacrificed for our nation.
Please note: If you’d like to participate in the AWARENESS DAY PARADE and then participate in the ride when it arrives at the Rally – just PRE-REGISTER and note that you’ll be in the Ride. We will have you all set up and your space reserved for when you get there.

Reasons to Ride will once again return to Lapeer, Michigan to host the Ray C’s Bike Show as part of their 19th Annual Rodeo event. This is a GREAT event for the entire family that grows every year. Last year we added an informal sound competition and even had a few rodeo games in the lot for some riding fun. This year – promises to be even more fun as we add more games and challenges for riders! And of course, we will have the traditional bike show with the added thunder of Ray’s HORSEPOWER challenge! Jackson Street Pier, Sandusky, Ohio

It’s the BIGGEST MOTORCYCLE EVENT in the Midwest and one of our favorite rallies anywhere. Right on the Lake Erie shoreline in downtown Sandusky, the Ohio Bike Week Championship Bike Show is held on the Jackson Street Pier across from the main concert stage. With a beautiful park-like setting across the bay from Cedar Point, it’s a picture perfect spot to host a show featuring some of the nicest bikes anywhere. Like and follow the online Facebook event.

Reasons to Ride returns to Zanesville and our 5th year hosting this popular show that always brings out a great mix of bikes – all makes and models, including more than a few amazing custom builds. Over the years, this bike has featured a number of show winners that have won national acclaim. This year’s show will feature SPECIAL AWARDS for PATRIOTIC and RAT BIKE / HOME GROWN classes!

Carlton Harley-Davidson is a great family owned and operated dealership in Northeast Ohio. For almost 50 years their family has taken care of local riders and supported the riding community. Reasons To Ride is proud to announce that we will be adding Carlton’s as a series stop this year. We will be focusing on VINTAGE MOTORCYCLES at this show, with special awards and expanded classes focusing on antique and restored motorcycles – in addition to our standard classes. We will also be hosting a SOUND CHALLENGE on site, with open classes for all to participate in.

One of the most important components of a magazine, a website, or even social media is the photography and imagery of the pages or sites. Visual images allow us to connect and experience – or reexperience in some cases – events, destinations, or even machines such as motorcycles that then ignite the fires within us. We can feed a passion or craving that we have for something – such as riding, through a magazine in our hand or a website on our phone. When you have a talented or experienced photographer you can feel the energy of the moment and get a taste of the adrenaline that the featured rider felt. And when you have both – a veteran photographer with a gift for capturing the moment, the energy explodes off the page. We are fortunate to collaborate with just such a photographer, Michigan native Stephen Tripp. StephenTripp. com
Stephen Tripp has a passion for motorsports that he captures and shares with the use of a camera. He’s a nationally recognized photographer that covers everything from Supercross to truck racing, from Indy cars to flat track racing. His real love, though, seems to be for the unofficial sport of Northern Michigan – ice racing! Every season – when there’s ice – he shares the energy of the regional ice racing series with the world through his camera. It was through his coverage of northern ice racing that we first met Stephen and collaborated on several covers and features. Over time we came to realize what a gift Stephen has and looked to him to capture more events, such as Daytona hooligan and supercross races, that we can then share with our readers and the world! Stephen has an incredible ability to freeze a moment and frame it in just such a manner that he captures the speed of the bike, the excitement of being inches from the asphalt, or the spray of the dirt – all in a single moment and photo. It’s a gift.
It’s through collaborate efforts like this that we are able to share the excitement of motorsports with our readers and create more racing fans – and possibly even inspire new racers! And Stephen is able to both support the local racing series and share his art.
Reasons to Ride would welcome the chance to collaborate with other photographers that might be interested in helping us cover not only racing events but the local riding community as well. If you consider your camera essential riding gear – even if it’s just the one on your phone – we’d love to hear from you. Shoot us an email and let us know where you are and what you like to shoot. Experience and technical training are certainly optional, as we are more concerned with responsible conduct and respect for both the community and other riders as well when we consider bringing someone onto the team and handing them a RtR Media Pass. You don’t have to have Stephen’s technical expertise of racers to be an RtR Photographer and get featured in the magazine. In many cases we are just as excited to share the smile of a pretty girl having fun at an event or the embrace of two brothers after a long ride. Those are the moments that define our community and we want to share.

If there’s an issue, it’s better to discover it in your garage than on the road!
1. Start with a Thorough Inspection
Before you even start the engine, take a good look at your bike. Inspect the frame for any cracks or signs of damage. Straddle the motorcycle and bounce a few times to make sure the front and rear suspension systems offer smooth travel and damping.
Levers and pedals should move with the right amount of tension. Control cables should be well lubricated and free of kinks or fraying, while brake hoses should be free of cuts, bulges or leaks. Turn the handlebars in both directions to make sure they do not interfere with the routing of all cables and hoses. The throttle should also move freely and snap closed when released. If your motorcycle is chain or belt driven, make sure they have the correct amount of tension and seat properly in the sprockets. Belts should be free of cracks and not show any fraying. Drive chains should be lubricated and free of kinks.
Check for any visible signs of wear and tear, such as:
• Cracks in the tires
• Leaks under the bike
• Frayed cables or hoses This simple visual inspection can catch small issues before they become big problems.
Tires are the foundation of your ride. Inspect them for:
• Tread Depth: Make sure there’s enough grip for safe riding. TIP: Replace tires if the tread depth falls below 1/16th of an inch or if you notice cracks or bulges.
• Pressure: Use a reliable gauge to check the PSI. Overinflated or underinflated tires can affect handling and wear.
• Cracks or Damage: If your tires show signs of aging, it may be time to replace them.
After sitting idle during the winter, your bike’s fluids might need attention. This includes:
• Oil Change: Fresh oil is key to a smooth-running engine.
• Brake Fluid: Check the level and top off if necessary.
• Coolant: If your bike is liquid-cooled, make sure it’s at the correct level.
• Fuel: Old fuel can cause issues. Consider draining and replacing it if your bike has been sitting for months.
Cold winter months can take a toll on your battery. Test it to ensure it’s holding a charge. If you stored it on a trickle charger, you’re probably good to go. Otherwise, you might need to recharge or replace it. The terminals should be clean and free of corrosion. If applicable, check the electrolyte levels. If the battery uses a vent tube, ensure it is properly routed and free of kinks.
Brakes are non-negotiable when it comes to safety. Regularly inspecting the brake pads, rotors, and brake fluid ensures that your braking system works effectively. Worn-out brake pads can lead to longer stopping distances, and low brake fluid can cause the brakes to feel spongy. Check for:
• Brake Pad Wear: Replace pads that are too thin.
• Rotors: Look for grooves or damage.
• Brake Lever and Pedal: Ensure they’re responsive and not sticking.
Tip: Replace brake fluid every 1 to 2 years, as it can absorb moisture and lose its effectiveness over time.
6. Clean and Lube the Chain or Belt
A clean chain or belt ensures smooth power delivery. Remove any dirt or debris and apply the appropriate lubricant for your model. Proper tension is also essential for optimal performance.
7. Check Lights and Electrical Components
Spring rides mean longer days, but you still need your lights working perfectly. Test all your:
• Headlights
• Brake lights - Make sure the brake lights activate when you apply either the front or rear brake levers.
• Turn signals
• Horn
Replace any burned-out bulbs or fix wiring issues to stay safe and visible.
A spring tune-up isn’t complete without a good wash. Give your bike a thorough cleaning to remove dust and grime from winter storage. Waxing the chrome and paint will not only make your bike shine but also protect it from the elements and grime from the road.
If you’re not a DIY mechanic or just want the peace of mind that everything is in top shape, bring your bike to a local shop that you trust. A professional mechanic / technician can give your bike a comprehensive inspection and tune-up to ensure it’s road-ready. Call as soon as possible to schedule the service though, as far too many people wait until it’s time to ride!
Don’t forget your riding gear! Inspect your helmet for any damage or age (it’s recommended to get a new helmet after 5 years), check that your gloves, jacket, and boots are in good condition, and make sure your bike’s registration and insurance are up to date.

Bike Event, Classic Car & Truck Show

Ingredients:
• 1 (32 oz) bag frozen hashbrowns
• 1 kielbasa sausage, diced
• 1 small onion, diced
• 2 cups shredded cheddar cheese, divided
• 1/2 cup sour cream
• 1/2 cup milk
• 1 (10 oz) can cream of mushroom or chicken soup
• Salt and pepper to taste
Optional: minced garlic, onion powder
Instructions:
• In a greased slow cooker, layer the diced kielbasa, frozen hashbrowns, diced onion, and 1 1/2 cups of shredded cheddar cheese.
• In a mixing bowl, combine the cream of mushroom or chicken soup, milk, and sour cream. Add salt, pepper, and any additional seasonings like minced garlic or onion powder, if desired. Stir until well combined.
• Pour the soup mixture evenly over the kielbasa, hashbrowns, and cheese in the slow cooker. Sprinkle the remaining 1/2 cup of shredded cheddar cheese on top.
• Cover the slow cooker and cook on low for 6 hours or on high for 3-4 hours, until the casserole is hot and bubbly.
• Serve hot with a side of salad or roasted veggies for a complete meal. For an extra indulgent option, serve with Texas garlic toast.
Ingredients:
• 4 cups shredded chicken
• 3 tablespoons butter
• 1 bag frozen peas and carrots (10–12 oz)
• 1–1 1/2 cups heavy cream
• 8 oz mushrooms, sliced
• 1/3 cup chicken stock (optional)
• 1 tablespoon (2 cloves) minced garlic
• Salt and pepper to taste
• 1 tube flaky biscuits
• 2-3 cups shredded cheese
• 1 cup chopped onions
• Parsley for garnish Instructions: Preheat your oven to 375°F.
• In a large skillet or Dutch oven, melt the butter over medium heat. Add the chopped onions and minced garlic, cooking until the onions become translucent and fragrant.
• Add the sliced mushrooms to the skillet and cook for about 5 minutes, until they release moisture and become tender.
• In a large bowl, mix together the frozen peas and carrots, shredded chicken, shredded cheese, heavy cream, and the cooked mushroom mixture. Season with salt and pepper to taste. If you prefer a saucier casserole, add the optional chicken stock or more heavy cream.
• Transfer the creamy chicken mixture to a 9x13-inch casserole dish that has been sprayed with cooking spray or brushed with melted butter.
• Place the biscuits in a single layer on top of the filling. Brush the tops of the biscuits with melted butter.
• Bake the casserole in the preheated oven for 20-25 minutes, until the biscuits are golden brown. If necessary, cover the casserole with aluminum foil and bake for an additional 10 minutes to ensure the filling is hot and bubbly.
• Garnish with fresh parsley if desired, and serve hot. Enjoy your creamy and comforting chicken pot pie casserole!
