THE MARCH 2024
Source

Dear Cypress Woods Members,

Congratulations to Treasurer, Diane Tache, who was unopposed in her reelection to represent Veranda II & III and Gardens III Voting Group 3 on the Master Board, and to Greg Applejohn who also ran unopposed in Terrace IV & V Voting Group 1. Mike Kiernan and Craig Sipich will both run for the Bradford Lakes seat in Voting Group 7. Everyone in Bradford Lakes should have received either a paper copy or an email from Beckerballot for those voting online. If you have not received your ballot, please reach out to the Administration Office staff.

The I75 expansion is currently in the Planning and Feasibility stage. The next step is Project Development and Environment Study which is when acoustic testing will be conducted to see if Cypress Woods qualifies for a wall. These large projects tend to slow down during election years, but the project is set to start in Fall 2027. We will continue to monitor the progress of the project with our attorney and update you as things change. Updates from Florida Department of Transport are available at www.swflinterstates.com/i75-south-corridor.

While we have had to work around the weather in the opening two months of the season, it has still been extremely busy at the club. Please take advantage of the third crossover in the afternoon if you would like to play a little more golf. Sunday night dining has been slow to take off, so we hope more of you will help support this 7th night of dining so we can keep it going in the future.

Lastly, March will be my last month at Cypress Woods. I am sad to leave my home for the past seven years, yet excited to take on a new challenge at Collier’s Reserve. I would like to take this opportunity to again say thank you to the wonderful Members and staff of Cypress Woods for the love and respect you have shown me and my family during my tenure. I will leave with nothing but fond memories and sincere gratitude for the friendships I have been fortunate to cultivate at this truly special club. I wish the very best for Cypress Woods and the most welcoming membership in SW Florida.

See you at the Club soon.

MASTER BOARD OF DIRECTORS

NOTE FROM THE PRESIDENT

Dear Fellow Members,

At the February Board meeting, our GM Sean Hynes presented some details on solutions for our parking issues. The video of the presentation is available on the club website and here. The need for additional parking spaces has been highlighted again and again as Members struggle to find parking during the busy season. In addition to safety concerns with parking in fire lanes and on Northbrooke, our Members with disabilities, in particular, have a very hard time finding parking close to the clubhouse. The proposed project includes adding 6 more handicapped parking spaces in front of the fitness center, 16 additional standard parking spaces in the parking lot, and another 10 parking spaces behind the pickleball courts. No assessment will be necessary, as the entire cost of the project ($221,000) is already funded through New Capital Fund. The Board will vote on this project at the next scheduled Board Meeting on March 18th at 2pm in the Dining Room.

We will continue to accept applications for Committees through the Annual Meeting on March 25th. If you have some valuable skills or qualifications and would like to serve on a committee, please fill out the application form which may be found on the Club Website, or you may pick up a copy at the office. We are also looking for Members who are not willing to serve a full year term on a committee, but who would like to offer their professional skills to committees on an as needed basis. Please reach out to Hollie at communications@ cypresswoodsgolf.com with a brief resume highlighting your skill set and how it may benefit a committee. The Board views the committees of Cypress Woods as a valuable part of the governance and feedback process of the Club. Most of the hard work is done at the committee level, and historically the Board has accepted and implements almost all of the committee recommendations. We encourage our Membership to attend committee meetings and see how dedicated our volunteer leadership is at Cypress Woods.

FOOD & BEVERAGE CHEF’S CORNER

The Mother Sauces

In the culinary world, the term Mother Sauce refers to five basic sauces; the starting points for making various secondary sauces. Auguste Esccoffier, a French Culinary Artist known as the Father of French Cuisine or the “King of Chefs,” developed the Mother Sauces, named as such because each one is like the head of its own unique family.

Béchamel sauce is probably the simplest because it doesn't require making stock. Béchamel is made by steeping milk with a cove studded onion and thickened with a simple white roux, then simmered until it is creamy and velvety smooth.

Espagnole sauce, also sometimes called Brown Sauce, is slightly more complex. Espagnole is made by brown beef stock (the brown stock itself is made from bones that have first been roasted to add color and flavor, combined with tomato purée and mirepoix and stewed for a couple of hours for deeper color and flavor, strained, then thickened with roux.

Velouté sauce is another relatively simple sauce made by thickening white stock with a roux and then simmering it for about a hour. While the chicken velouté, made with chicken stock, is the most common type, there is also a veal velouté and fish velouté.

Hollandaise sauce is a tangy, buttery sauce made by slowly whisking clarified butter into warm egg yolks. Hollandaise is an emulsified sauce, and uses clarified butter because whole butter contains water and milk solids which can break the emulsion. Clarified butter is just pure butterfat, so it helps the emulsion remain stable.

Tomate sauce resembles the traditional tomato sauce that is used on pasta and pizza but has a few more steps to make. It’s made by sauteing and caramelizing aromatic vegetables, adding fresh chopped and seeded tomatoes, vegetable stock, and fresh herbs such as basil, oregano, or thyme, and simmering in a pot slowly or in the oven for a couple of hours. Cooking the sauce in the oven helps heat it evenly and has less of a chance of scorching.

Sauce Bearnaise (Mother Sauce Hollandaise)

Ingredients (serves 6-8)

For the tarragon base

.25 cup dry white wine

3 tablespoons white wine vinegar

.25 cup shallots, very finely chopped.

.25 teaspoon black pepper

1.5 tablespoons fresh tarragon, chopped, divided. For the sauce

8oz unsalted butter, cut into cubes.

3 each egg yolks

3 tablespoons water

1 tablespoon lemon juice, or more as needed.

Pinch salt, to taste

1. For the tarragon base, add all the ingredients to a skillet on med. heat and stir until almost all the liquid is evaporated. Remove from heat, set aside.

2. Heat butter in a small pot until it reaches a temp. of 140°-150°, let simmer until all in milk solids fall to the bottom of the pot.

3. Set up a double boiler pot on a low-medium. In a bowl, whisk egg yolks until slightly thickened, place bowl over water in double boiler and whisk constantly until it thickens and forms ribbons and/or reaches a temperature of 120°-130° and remove from heat.

4. Slowly stream hot butter into yolks while whisking constantly until emulsified, then add tarragon mixture, lemon juice and salt. If too thick, add warm water until proper consistency.

COMMITTEE CORNER

The Audit Committee provides board interface with external auditors. An audit is required by Florida Statutes and serves as our Annual Report to members within 90 days of year end. The audit work was completed this month with a draft report coming mid March and board approvals next month.

The Finance Committee will be meeting over the summer and holding a number of special meetings during the budget process in August and September. Each month the finance committee along with the General Manager reviews the monthly and year to date operating financial statements compared to current budget and prior year as well as the Capital Expenditures and activity within the replacement reserves and New Capital Fund. January operating results were negatively impacted due to adverse weather conditions reducing golf course and dining revenues. With only one month into the current fiscal year, there is nothing to indicate any major ongoing impact for 2024 operations. Kent Eliason and Lee Broad from the committee have been assigned to review the current portfolio of investments and existing controls and processes. During the summer, an annual update to the Replacement Reserve Study will be reviewed to avoid any special assessments. About 50 % of the reserve funds are related to the golf course and irrigation replacement scheduled in the next 2 - 3 years. Potential Facility Projects have also been reviewed with the Board Treasurer for recommendations on potential funding methods and resource planning for future amenity improvement.

The Greens and Grounds Committee reports that the El Niño weather pattern this winter, continues to have a negative effect on the golf course. While we think of Florida weather as a second summer, it is winter. As such , cold, cloudy and wet conditions affect the ability for our grounds crew to provide our normal excellent conditions. The Bermuda grass on our greens and course need the soil temperatures to be in the high 60 degree vicinity for growth. The constant wet conditions cause the plant roots to stay near the surface , and in some cases die off. Sod strips and hexagonal sodding has been added on the greens where the turf has died, as well as sand topdressing which helps to smooth the surface , improve green speeds, and actually encourages the grass to fill in the dead areas, as the temperatures increase and the sun pops out occasionally. Cisco planned ahead for these conditions, by raising the height of cut and applying additional fertilizer. Many courses around the area have lost greens or experienced greater turf loss. We are fortunate to have Cisco, the past President of the Everglades Golf Course Superintendant’s Association , looking out for our community.

The Communication Committee hosted an inter committee meeting, inviting all committee chairs and committee members. Our goal was to explore and implement collaborative strategies for improved efficiency, productivity and overall benefit of the club. New content to our official Facebook page is being added regularly with the intention to make this Page the best resource for timely, accurate and informative club related information. We are working with committee chairs to ensure that there are monthly committee updates to keep members informed on what is being discussed at monthly committee meetings. New Videos published explain the great work being completed by all committees to assist with new member recruitment. All club videos are published on the club’s YouTube page. Go to YouTube.com and search for @cypresswoodsgolfcountryclub and hit subscribe to see the club videos. The committee will be working with house committee on an end of season survey to get feedback on dining and events and assist with planning for next year. All committee agendas are posted at the front and back entrances on the bulletin boards and meeting reminders are now being posted on the official Facebook page as reminders. (@cypresswoodsgolfcountryclub )

The Recreation Committee is planning advanced and beginner pickleball clinics as well as beginner, intermediate and advanced pickleball tournaments leading up to the “end of season” club pickleball tournament. Members can continue to participate in interclub play in the Southwest Florida League in the spring, summer and fall. Sign up for spring is now underway. Intramural pickleball has concluded. The 10 week bocce league is finishing up and there are plans for a third session starting on March 19th. Water Aerobics participation has increased and more members are frequenting the pool. New umbrellas have been added and additional lounge chairs have been requested. A new rowing machine has been added to the fitness center. A Flexibility/Mobility Workshop was well attended in February. Similarly, the Pickleball Fiesta in January was a success with perfect weather, good food, great tunes, lots of pickleball and quality time with friends.

The Strategic Planning Committee has diligently completed the SWOT analysis and will be creating a slide presentation for the March meeting followed by an invitation for written comments or suggestions from members.

The House Committee reports that all events all selling out! Watch for additional amazing March events and reserve early! The committee discussed the buffet options for Trivia and Bingo and will be reviewing options with the chef. Food service for the court area has also been reviewed. Additional items could be stocked at the halfway house and increased usage is being discussed. Concerns regarding voicemail and phone call to the hostess stand were addressed. The continued violations of the dress code precipitated discussion on administrative and management procedures to address non-compliance.

ON THE GREENS

GOLF COURSE MAINTENANCE

Cypress Woods Members,

I hope everyone is enjoying this awesome weather we have finally been having. The course is starting to fill in from the cold winter months. With plenty of nutrients in the soil after a bulk fertilizer application, in conjunction with a wall-towall insecticide and pre-emergent application, the groundwork has been placed to have a very successful April-May. With growing conditions becoming more favorable, projects will be geared towards maintaining detailed work such as trimming bunker faces, edging cart paths, etc. This is due to an increased rate of turfgrass growth.

We will be starting with some irrigation work, raising some greenheads, and repairing some that are not working. Please be patient with us if you see us working around the greens or on the fairways. This month, we will slowly start lowering our mowing heights to the designated heights. The green’s height is always being adjusted depending on the conditions.

The greens are coming out of the winter in great shape. We will start our yearly maintenance program to ensure the best playing surface possible for everyone.

Please help us with the cart traffic on the course. If you see an area that is getting worn down from cart traffic, please try to avoid it and use a new route. Fill in all divots, Fix ball marks, or at least one in the general area of your ball’s landing spot.

FINANCIAL FOCUS

Greetings Members! I hope you are all taking advantage of your Club amenities despite our unfortunate dreary weather that we have been experiencing due to El Nino. Our staff is working very hard to make every experience a great experience. The Finance department has been very busy in February working with our auditors that visit us annually. I was very pleased with how the process went and we look forward to receiving their audit report in March! I would like to remind all of you to please take advantage of having the option to go GREEN and have your statements emailed to you rather than being mailed to you via snail mail. ACH (auto-pay) is another great option we offer to the membership. Funds are drafted from your bank account on the 21st of every month. This gives you ample time to review your statement for any discrepancies that may arise prior to drafting the payment. The greatest advantage of this feature is that you will never experience a late fee for when we have those forgetful moments to make payments. If you are interested in either of these options, please email Kathy Burt at accounting@cypresswoodsgolf.com.
