🌴 Key Lime Pie Cookies

Key limes are tarter and more aromatic than regular limes. I usually do not have a problem finding key lime juice in the specialty food section at King Soopers. Sometimes they move it though so you may have to ask. Also, I have had success in the past finding key limes in the produce section of various stores. Good luck hunting! If you can find fresh key limes, I would say they are very worth juicing and zesting for this recipe

Ingredients For Cookies: ● 3 cups all-purpose flour ● 1 teaspoon baking powder ● ½ teaspoon baking soda ● ½ teaspoon salt ● 1 cup unsalted butter, room temp ● 1 ½ cups granulated sugar ● 2 eggs, room temp ● 1 cup full fat sour cream, room temp ● Zest of 3 limes or approx. 5-6 key limes ● 3 teaspoons of key lime juice (if you cannot find, use regular lime juice but about 1teaspoon) ● 1 teaspoon vanilla extract

For Frosting: ● 8 oz block of cream cheese, room temp ● ½ cup unsalted butter, room temp ● 1 ½ - 3 cups of powdered sugar * I like my cream cheese frosting less sweet, so it depends on your taste ● Approx. 3 teaspoons key lime juice *Again to your taste, I like mine a bit tart ● 1 teaspoon vanilla extract ● Pinch of salt Topping: ● About 5 graham crackers

Preparation Cookies: 1. Whisk together dry ingredients and set aside 2. Cream together butter and sugar 3. Add eggs, sour cream, zest, key lime juice, vanilla and beat on medium until combined 4. Slowly add dry ingredients to wet while mixer is on low 5. Cover dough and refrigerate for at least 1 hour 6. Bake cookies at 350 for 12-15 minutes 7. Once completely cool, frost cookies with lime cream cheese frosting and sprinkle with graham cracker crumbs

Frosting: 1. Beat cream cheese and butter until combined 2. While on low, add lime juice, vanilla, salt, and sugar to taste 3. Beat for another 2 minutes on high – if you want your frosting thicker, you can add more sugar 4. Place graham crackers in a plastic bag and crush until fine crumbles
