Wild Rice
We suggest purchasing wild rice from Red Lake Nation Foods, the ONLY American Indian tribe in the U.S. that grows & harvests its own wild rice (MN Cultivated) on local lands.
Preparation (from Tocabe recipes)
1. Begin by rinsing 2 cups of rice well under cold water. After rice has been thoroughly rinsed add to a medium size stock pot with 8 cups of cold water. 2. Bring water to a boil then cover and turn down to a simmer. 3. Cook rice for 40 minutes then turn off heat and let rice bloom in hot water. Check every 5 minutes for doneness and desired texture. Note: This will not be similar to white or brown rice where all water is fully absorbed, 4. If water has fully evaporated prior to the 40-minute mark, add an additional cup of hot water to the pot. Once rice has reached desired texture after giving time to bloom, remove from heat and drain off any excess water. 5. We prefer a light fluffy rice but with a bit of bite remaining for texture. Remember shorter time for tougher rice, longer cook time for softer chewy texture.
