Wild Rice Casserole

Ingredients
● 1 cup wild rice ● 2 cups diced celery ● 2 large onions, diced ● 2-3 lbs. chicken, cooked ● 1 Tbsp soy sauce ● 1 can cream of mushroom soup (14.5 oz) ● 1 can cream of chicken soup (14.5 oz) ● 1 can chicken broth (14.5 oz - more as needed if casserole seems dry) ● Mushrooms, minced garlic (Optional - to taste) ● 1 Tbsp butter

5. Preheat oven to 325 6. Butter casserole dish 7. Saute celery, onions, garlic & mushrooms if using in butter over medium high heat. Add soy sauce. Add creamed soups & broth. Gently stir in chicken, left in large pieces. Skin & bones removed if using whole chicken. 8. Bake for 2 hours.
Notes: 1 day before: Wash rice at least three times. Soak in warm water for at least 1 hour and up to overnight.
