Peruvian Noodle Casserole aka Traditional Christmas Breakfast Serves 4-6, protein, starchy vegetable

1 lb sausage meat (Jimmy Dean) 1 cup sliced fresh mushrooms 1 cup chopped onions 1 13 oz can stewed tomatoes 2 tbsp mustard ½ tsp salt 1/8 tsp pepper 1 ½ cup cooked medium noodles 1 cup grated cheese
Preparation 1. Preheat oven to 350°. 2. Start boiling water to cook the noodles. 3. Sauté sausage meat, mushrooms, and onions together until onions are tender and meat is browned. Drain off excess fat. 4. Stir in tomatoes, mustard, salt, and pepper. 5. In a 2 quart casserole dish, arrange as many layers as possible of cooked noodles, grated cheese, and sauce – ending with sauce. 6. Bake in oven for about 25 minutes.
