Squash Casserole

4 to 5 yellow crooked-neck squash ½ medium onion 3 cloves garlic 1 can Rotel tomatoes with green chiles (2 if you like it hot!) 8 oz pkg shredded cheddar cheese ½ sleeve crushed saltines 4 tbsp butter
Preparation 1. Cook squash, onion, and garlic in a small amount of water in a covered skillet until tender. 2. Drain well and mix with 2 tbsp butter, the rotel, salt and pepper to taste, and the cheese. 3. Pour into a 9x12 casserole dish. Distribute saltines evenly over the top, drizzling the rest of the butter, melted, on top of the saltines. Bake at 350 for 30 minutes. 4. Delicious served with tortilla chips and salsa or pico de gallo.
