Cardiff Voted the Best City in the UK"

W

e know how great our city is, but this was recently confirmed when over 500,000 readers of Condé Nast Traveller, a leading UK travel publication, voted Cardiff as “the best city in the UK” in their annual Readers’ Choice Awards this year. This award reinforces Cardiff’s reputation as a vibrant, can’t-miss city that never fails to deliver outstanding experiences. When talking about why Cardiff took the top spot, the city’s “exceptional indie restaurants, cracking bars, and up-and-coming neighbourhoods” were noted as big reasons why so many people love Cardiff, and how the city achieved a score of 86.84. They called out how Cardiff has some smashing food options you won’t find anywhere else, super fun nightlife and neighbourhoods that are getting cooler by the minute. Want to read more? Michael Sheen Takes Center Stage in Landmark Play Tracing the Life of Iconic Welsh Political Figure

M

ichael Sheen is set to star in a major new play charting the life of one of Wales’ most influential political and social figures. ‘Nye’ tells the story of the life and legacy of Aneurin ‘Nye’ Bevan, a former coal miner from Tredegar who transformed the UK’s welfare state. The show will be co-produced by the National Theatre and Wales Millennium Centre and will come to Cardiff next year.

Written by Welsh play and screenwriter Tim Price and directed by the National Theatre’s Artistic Director Rufus Norris, ‘Nye’ will play at Wales Millennium Centre for two weeks on 18 May – 1 June 2024. To purchase your tickets, head to www.wmc.org.uk/en/whats-on/2024/nye

FOR Cardiff Launches a Sustainability Hub for Member Businesses

F

OR Cardiff has introduced a Sustainability Hub aimed at providing its member businesses with convenient access to sustainability resources and the ability to exchange best practices easily.

The FOR Cardiff Sustainability Hub is a one-stop destination for all things green. Their Hub allows businesses to access a wealth of information and resources, including guides, training and event updates, to enhance sustainability efforts and reduce environmental footprint amongst the businesses in Cardiff. Think, access to cargo bikes and news on Wales’ single-use plastic ban that has recently come into play. The hub is located within the members area of the FOR Cardiff website, so users will need to be or work for a FOR Cardiff business.

Brogue Goes I

n a spectacular celebration of camaraderie and charitable spirit, The Brogue Trader Ltd, in collaboration with the dynamic Spiro at Cornerstone in Cardiff, hosted their 8th annual Brogue Goes Beaujolais event. This extravaganza drew a crowd of 170 guests, creating an atmosphere of fun and generosity that surpassed all previous years. The festivities commenced with a champagne reception featuring Bryan Gunton and the harmonious voices of the Canton RFC male voice choir. Rupert Moon, Welsh rugby legend, added his charm as the event’s host, sparking a noticeable excitement in the room. The day unfolded with a sumptuous four-course meal and a series of live and silent auctions, skillfully orchestrated by the trio of hosts, encouraging attendees to open their hearts and wallets for two noteworthy causes: Noah’s Ark Children’s Hospital Charity and City Hospice. Distinguished members of the Cardiff community, such as Rod Woodward, Wynne Evans BEM MStJ, and notable

s Beaujolais figures in the sports industry like Nick Davidson and Rhys Williams, added their presence to the event, playing a vital role in making it a truly memorable and successful occasion. The generosity of attendees reached astonishing heights, resulting in a record-breaking £100,600.00 raised — which will undoubtedly make a significant impact on the local community. The Brogue Goes Beaujolais event stands out in the Cardiff calendar for its unique funding model, with The Brogue Trader and Spiro personally covering the day’s expenses, supplemented by generously donated auction prizes, including exclusive experiences like a House of Lords visit and holiday home stays in Cornwall. The entertainment lineup included the uproarious Ceri Dupree, whose quick costume changes and razor-sharp wit had the entire venue in stitches. The grand finale was provided by the 12-piece Big Macs Wholly Soul Band, whose electrifying performance had the room dancing into the evening. et ready to meet the man of many talents, Mathew Pritchard, more commonly known as, ‘Pritch.’ From his wild days as one of the crazy crew on Dirty Sanchez to becoming an endurance athlete, vegan chef and business owner, this man has done it all. Now dropping his third cookbook this month, join us for an exclusive chat with Pritch. Let's start with your new book Dirty Vegan: Fast & Easy'. Tell us everything! “I went to Octopus Publishing last year to see if they were interested in the book concept. At the time, I was a shell of a man as I was at the height of my drinking problem and I wasn’t in the best place, but they wanted to go ahead with the book! It was just at the beginning of my sobriety. I’d stopped drinking and doing all of that kind of stuff, so I had the book to focus on and take my mind off things. Luckily, I had a few unused recipes written down as we only had a few months’ turnaround! I just locked myself away in the kitchen, which was the best distraction. The book is full of pretty straightforward, hearty vegan recipes, alongside some guest-chef recipes!” When did you discover that cooking was your thing? “Well, like most people back in the day, I was taught by my mam. I was really interested and I kept asking how to do certain things, so she’d show me. As I was leaving school, I decided that I wanted to become a chef. I went to college for 2 years to learn silver service, cooking and everything in between, and then I went out into the big, bad world. My first hospitality job was hell on earth, which put me right off. My life then took a U-turn with opportunities such as Dirty Sanchez and professional skateboarding.

“Out of all the challenges I’ve faced in my life, they seem easy in comparison to sobriety. I’d take an Ironman any day! The past 30 years had just been one big party for me, but it got to the point where I was hitting it a bit too hard. Don’t get me wrong, it’s still really difficult over a year down the line, but after the first 3 months the need for a drink eventually began to subside and I started what I call “the 4 am club”. I’m up and out by 4:30 am every morning now. I’m then either at the gym, swimming, hiking or whatever it may be, just to keep active. A routine really helps me to focus because I can’t just sit around doing nothing. It also takes away the urge to go down to the shop and buy a beer!” Would you say a vegan diet, sobriety and keeping fit is the magic recipe for a healthy mind and body? “It’s weird isn’t it, I’ve gone from one extreme to the other. When I went vegan, a lot of people said “That’s the last thing you’ll want to be doing because of all the endurance stuff. You’re going to be weak.” After that, I made it my mission to prove people wrong. I did 10 Ironman distance triathlons in a row and rowed the Atlantic, all on a vegan diet. So, if anything, it helped! I’m full of energy all day long and haven’t at all suffered. With fitness, I don’t do it just so I can get a wicked body (although it helps), I do it for my mind and discipline. If you make these things a habit, they soon become your normality.” For someone who may be looking to make a lifestyle change, what advice would you give them? I then went vegan in 2015 and was looking for recipes to try and replace the meat on my plate, and I started watching YouTube videos. I noticed that a lot of the vegan channels were really boring and I thought “There’s a market here”. So, I started my own channel, ‘Pritchard’s Proper Vegan Cookin’’, and the rest is history.” You then went on to host the BBC's first-ever vegan cooking show! What was that like? “I really enjoyed working with BBC Wales and learned a lot doing it. I met some wicked people and had the first two books off the back of it. I was used to having my mates around me so I was a bit nerve-wracking going it alone. It was a lot different to the type of show that I was used to but I enjoyed the change in environment. It was mid-week at prime time too, so swearing was off the cards and I had to actually behave! If they’d have me, I’d 100% do it again.”

“Since I started my journey, the amount of messages I’ve received on social media is unreal, and I try my best to answer all of them. I think people can relate to me because a lot of them have lived the crazy lifestyle that I’ve lived. My advice is to go ‘cold turkey’ like I did. If you’re thinking about making a change, just bite the bullet and do it. It’s down to hard work, determination and wanting to succeed. I’ve kidded myself in the past, saying “Oh it’s fine, I’ll just go out on special occasions”, but there was no such thing. If I had one drink, I’d come home three days later. The Arts With Lydia Bowen-Williams

ardiff is a hub for creativity, producing a variety of content made by Welsh and Wales based-artists in our talent-filled capital. From feature films to leading television series’, Cardiff always has a new venture to discover, just like Cardiff Animation Nights.

Founded in 2014 by award-winning animator and director, Lauren Orme, who later co-developed the Cardiff Animation Festival (CAF) in 2018, Cardiff Animation Nights is a celebration and showcase of talented animators work. From computer animation and motion graphics, to classic stopmotion and claymation, this festival exhibits every possibility the craft has to offer from creatives all over the globe. Hosting both in-venue and online events throughout the year, you can experience some of the best animated short films from the global animation festival circuit right here, in Cardiff! Did I mention, you can enjoy this innovative media presentation for free? CAF offers you a chance to widen your horizons and expose yourself to new and upcoming animators each month, giving locals the chance to watch independent animation on the big screen, whilst brushing shoulders with like-minded individuals or first time enthusiasts. Recent in-venue screenings have been located in Cardiff’s newest underground bar, The Underdog, tucked away on Guildhall Place, inviting an escape from the mundane and a chance to unwind from the outside world. CAF offers an assortment of features each screening, which include a collection of motifs. Discover Cardiff Animation Nights and Support Recognised Welsh Animation an abundance of themes from relationships, mental health, identity, sexuality and belonging. Each piece is seen as a stand alone voice from which the creator wishes to share to a welcoming and inclusive community. In 2020, CAF decided to break down the barriers that neurodiverse animators face within the industry, welcoming them to the ‘Different Voices’ showcase, bringing their work to the forefront, paving the way for more opportunities and visibility.

I

magine peace, imagine calm, imagine a state of inner tranquility. The kind of peace that makes you feel secure and safe. Amid the hustle and bustle of everyday life, peace like that can feel a million miles away. With the continued news of wars and famines and the never-ending feed of social media delivering multiple interpretations of events, one could be forgiven for having the occasional personal meltdown. That being said, here are some practical tools to help us navigate through life, give us a real chance of some sort of normality and help us find that elusive peace. Self-talk, mindfulness and breathing. These are multi-layered and we will only be dipping our toes in for now.

So often we judge ourselves too harshly. We have set our bar so high that we continually fall way short of our own lofty standards or the expectations of others. Be realistic with yourself. Remember that nobody is perfect. It’s a journey. Self-care is not all about me, myself and I. That’s selfishness. It is, however, being self aware. Self-talk, or your inner dialogue, should be your personal priority. Yes folks, it’s ok to admit that you do indeed talk to yourself. How you speak to yourself is a barometer of your own mental health. Negative thoughts can try to hijack and dominate your mind resulting in overthinking, so try a healthy dose of positive inner dialogue. Look in the mirror, smile and say “I am amazing.” Listen to yourself. Your thoughts are NOT you.You are in control and you are uniquely you, so celebrate you. You can practice the 3 C’s method of changing your thoughts. ‘Catch it, Check it and Change it’. As you practice this, you will improve your focus and be less anxious. Catch it: What is the thought behind the feeling? Check it: Is this accurate? Is this thought helpful to me? Change it: Increase positive, helpful thoughts.

2. Mindfulness Self awareness, within and without. Have the ability to observe both positive and negative ideas at the same time but without judgement, just acceptance. Equanimity. It’s okay to not always agree with the current trend of thinking or to bow to the pressure of public opinion. Have your own mind. Mindfulness is about being present, in the moment. Being aware of the chirping of the birds or the rustling of the leaves. Listening intentionally when others are speaking and being at peace with who you are.

3. Breathing Our hunter gatherer ancestors have kindly deposited in our DNA what is described as our flight or fight response, or means of survival. The sympathetic nervous system kicks into action at the first hint of any danger. Thankfully, we are not trying to escape being eaten by dinosaurs anymore! However, the 21st century does have its own carnivores for us to consider. Asthma and COPD sufferers will know the helplessness you can feel when you become breathless. Breathing practices, along with meditation, can help improve these common ailments. Take a short period of time everyday to improve your breathing. There are some great apps available to help you take care of your mental health. The Balance App, for example, is free for a year to new members. Walking is a fantastic way to exercise and get fresh air into your lungs and immerse yourself in nature. If you have a pet, this is also known to help reduce your stress levels. ome cook and content creator, Dom Horan (more commonly known online as The Curly Home Cook), reveals all when it comes to knocking up a Christmas crowdpleaser. Listen up and take note, as you could be the favourite in the family at Christmas with this festive recipe!

H

knows what they’re going to eat, and still love it. Everybody has their own way of making Christmas dinner, with family secrets trickling down over generations and new tips and tricks emerging all the time. I’m not here to mess with that.

Christmas. A time for everybody to come together, sit around a table and eat. Presents? They get worse each year. Family? Too much noise. Carols? Don’t get me started. But, food? This is the true meaning of Christmas. A time where I can swell an inch or two with none of the shame that I carry from continuing to do so for the other 11 months of the year.

We have always eaten salmon around Christmas in my house – often smoked. I’ve chosen salmon for this recipe because I see it as a real treat, and the things it’s served with remind me of winter and the holidays. It also makes a grand centerpiece, bold in both colour and size.

Being the cook in the family means carrying the weight of the holidays - pressure to deliver a better meal than the year before, compounding every year. Nevertheless, an opportunity to show love in the only way we know how – through food. Christmas is one of the rare times of the year that everybody

This is a sharing dish – a perfect centerpiece for the table on Christmas Eve or Boxing Day. I love to eat communally – there’s something so much more intimate in everyone serving themselves from the same dish, hands flying everywhere, than each having a plated meal to themselves. This can be eaten as a main, or can easily feature in a large spread.

The leftovers are extremely versatile – you can flake them into pasta, salads, sandwiches – or even make a salmon paté by whisking with some of the horseradish cream and some chopped dill. This dish can be served hot or cold, but I prefer cold (this also means that you can prep in advance). To keep up with Dom’s dining delicacies, visit his Instagram page @thecurlyhomecook


Recipe Serves: 6-8 Time: 1hr (<15 minutes active) Prep: 25 minutes Cook: 30-35 minutes Ingredients 1.2kg side of salmon 100g table salt 100g sugar 1 tablespoon lemon zest 1 tablespoon fresh dill Horseradish cream 25g horseradish sauce 100g crème fraîche 50g double cream Salt & pepper to taste To Serve Sourdough bread Red onion Capers Lemon

Method Cure In a bowl, mix the table salt, sugar, lemon zest and dill. Make a layer of the cure in a tray, using around half. Lay the salmon across it and press lightly to adhere. Cover the other side with the remaining cure, rubbing it in and ensuring that every inch of the salmon is covered. If you are using the tail end, use slightly less of the salt/sugar mix on the thinner end as it will take less time to cure. Refrigerate for 25 minutes. Once done, remove the salmon and rinse off the cure thoroughly. I find it best to do this in a deep roasting tray filled with water – this avoids the crosscontamination of tap water splashing from the salmon onto other things. Remove and pat dry with kitchen roll.

Cook Measure a piece of foil twice the length of your salmon. Lay across a roasting/baking tray large enough for it to fit into. Drizzle a small amount of olive oil onto the foil and place 6 round slices of lemon at the bottom, with even spacing. Lay the salmon across the lemon slices to elevate it and place 6 more lemon rounds on top. Feel free to add dill, either chopped or sprigs at this stage. Take the excess foil and fold over to the center, sealing the edges together to create a tent. Cook at 180⁰C for 30-35 minutes, or until the thickest part reads 63⁰C on a probe thermometer. It will vary based on the thickness of your fillet. Take out and leave to cool, then place in the fridge to chill for at least 30 minutes or up to a day in advance. For the horseradish cream, whip the 50g of double cream until thickened, but not forming peaks. Mix in 100g of crème fraîche along with around 50g horseradish sauce. Adjust the amount of horseradish to taste and season with salt and pepper. Serve Lay the salmon across a large plate. Place in the center of the table, shout ‘bon appetit!’ and grab a fistful before anyone else can even think about reaching for cutlery! My favourite way to serve I like to eat this with good, toasted bread, thinly sliced red onion, capers and lemon. Flake some salmon from the plate and toast your bread. Spread a generous layer of the horseradish cream, add pea shoots or other salad, and add a large heap of salmon. Top with red onion slices and capers and drown in lemon juice. Season, and enjoy!

ory Collingbourne is a 26-year-old entrepreneur and the Managing Director of Whitson Prestige, a leading used car dealership in South Wales. K

evin Brennan MP has been recognised for his service to the music industry by being named as one of the first recipients of an Ivors Academy Honour.

Kevin’s constituency office is located on the same street that legendary Cardiff composer, Ivor Novello, was born. When Kevin was recently presented with an Honour by the Ivors Academy, named after him, for his campaigning work for songwriters, it reminded him of the rich musical heritage of Cardiff. Cardiff West has many people who work within and around music. ”I’ve always been proud to represent them in my parliamentary and constituency work”, Kevin said. Cardiff’s Womanby Street has long provided a soundscape to the city for generations of music lovers. In 2017, the street’s vibrant music scene almost came to a close. Kevin supported the grassroots campaign which resulted in the Welsh government revising planning policy to bring it in line with the Agent of Change principle.

KEVIN BRENNAN Music venues such as Clwb Ifor Bach, The Moon and Fuel Bar on Womanby Street are a vital part of the research and development of the UK’s £6.7 billion per annum music industry. They are the starting point of a virtuous circle. Welsh music stars like Tom Jones, The Stereophonics and Manic Street Preachers honed their skills in small music venues across South Wales and without these venues, it’s highly unlikely they would have been able to develop the ability to generate millions of pounds for the local economy with big venue performances at Cardiff Castle, the Motorpoint Arena or the Principality Stadium. Artists need to be able to make money from recording music too. Music streaming services like Spotify are an incredible development, allowing fans to have all the world’s music in their pocket for a monthly fee less than the cost of one album. Despite this, music streamers have exploited outdated legislation which has allowed those to get away with paying artists too little for their music when it is streamed. Kevin tried to correct this wrong when in 2021, he introduced his Copyright (Rights and Remuneration of Musicians, Etc.) Bill to parliament. The Bill’s key proposal was to introduce “equitable remuneration” to bring

streaming in line with radio play and ensure a fairer share of the money went to the artists, musicians, composers, songwriters etc. Whilst the UK Government stopped it from passing, Kevin believes his Bill has laid down a strong foundation which can be built upon in the future. Another key area of the music industry which has long needed urgent action, according to Kevin, has been the problem of ticket touts and the secondary ticket market. As a father of a Swiftie, Kevin was appalled to see tickets for Taylor Swift’s concert in Cardiff being advertised for resale at over £3,000. He raised secondary ticketing at Prime Minister’s Questions and recently asked the Leader of the House of Commons – when is the government going to get to grips with these rip-off merchants? Music fans deserve better, Kevin told us. “I have been working on these issues and others around music now for over a decade”. As a musician himself, Kevin is passionate in using the power of music to enhance and change lives. For that to really happen, we need to value music, and value the people who make it. I

n Cardiff’s music scene, Geraint Owen is causing quite a stir. Geraint is a composer, writer, musical director and pianist who boasts an array of accolades. His educational journey led him through the halls of the University of Cambridge, with additional training stints at the Young Vic, the National Theatre and piano tutelage at the Birmingham Conservatoire. Beyond his compositional prowess, Geraint shines as a skilled music transcriber and a versatile accompanist, well-versed in classical, choral, and musical theatre repertoires. Recently clinching a coveted spot on the shortlist for the esteemed Stiles + Drewe Best New Song 2023 Award with his incredible piece, ‘Bio,’ Geraint has been thrust into the spotlight to flaunt his musical finesse. The Stiles + Drewe Prize, founded by the renowned musical duo George Stiles and Anthony Drewe, celebrates and nurtures emerging British musical theatre writers. Geraint’s ‘Bio’, taken from QueerWay, is among the 12 chosen songs from an impressive 177 submissions.

QueerWay, Geraint’s brainchild, is a contemporary musical theatre song cycle that joyously commemorates the resilience of the LGBTQ+ community with the mantra “I Am What I Am.” Inspired by the uplifting life stories of LGBTQ+ individuals in Rhondda Cynon Taf, the musical delves into the highs and lows of life, exploring themes such as finding love in your 50s and a mother’s unwavering support for her transgender child. A multifaceted artist, Geraint Owen, is not new to acclaim. His debut musical ‘Rust,’ co-written with Helena Fox, explored themes of addiction, recovery and mental health services, earning the Derek Award for Best Musical at the Edinburgh Fringe in 2019. Currently working on the verbatim musical Vox Pop, reflecting on Cardiff’s pulse during the General Election of 2019, Geraint continues to make his mark in the music industry. Having served as the Musical Director for the Welsh language musical “Branwen: Y Dadeni” which premiered at the Wales Millennium Centre last month, Geraint Owen embarked on a musical journey around Wales. His contributions extend to projects like the 27-second chain project at the Bali International Film Festival and The Gingerbread Man at the Cambridge Footlights pantomime. eet Mace The Great, born in Wales and proudly representing Cardiff, particularly Splott. Inspired by the likes of 50 Cent, Kano, Skepta, Stormzy, Dave and J Hus, Mace The Great’s musical journey began with the mind-blowing experiences of watching Lord of the Mics on YouTube as a kid. He started rapping in school and at the local youth centre, and the rest is history. Over the past decade-plus, Mace The Great has been steadily climbing the ranks in the music scene, showcasing his talent at various notable events worldwide. Highlights include appearances at the Reeperbahn Festival in Hamburg, New Skool Rules Festival in Rotterdam, Pitch Conference in Glasgow and the prestigious SXSW Festival in Texas, USA, where he proudly represented Wales as one of the first Welsh MOBO artists. Mace isn’t just leaving his mark on stage; he’s garnered nominations for the Welsh Music Prize, twice, and made a splash in the BBC Wales documentary, “Black Music Wales.” These accomplishments emphasise the importance of acknowledging and celebrating the contributions of black artists in Wales, paving a path for the generations to come. One of the standout moments in Mace’s career was supporting Dizzee Rascal at the Cardiff Utilita Arena. From growing up listening to Dizzee Rascal’s iconic album ‘Boy In The Corner’ to sharing the stage with him in his hometown, the experience was “surreal”, symbolising the support Mace The Great has gained from his city. Looking back at the grind of building a music career in a smaller city like Cardiff, Mace The Great sees the local music scene levelling up. With more studios, local gigs and workshops, the scene has shifted since he first started out. Mace’s take is clear – the key is for those at the forefront to continue to work as hard as they are, making the journey easier for the upcoming Welsh talent. It’s the secret recipe for keeping Cardiff’s music scene vibrant and thriving with success.

Founded in 2020, the company was established by Ken Pearce, a dedicated enthusiast of 3D printing technology. A mere half-year later, Yousef Ahmed became an integral part of the team, introducing fresh insights and skills that significantly boosted the company’s expansion. The Lunia 3D journey began not just as a business venture, but as an extension of their deep-rooted passion for 3D printing.
