This new partnership aims to raise awareness and funds to support the MND Association Cardiff and Vale Branch in their vital work, enhancing the lives of people living with MND and driving forward research towards a cure.

Why Your Business Should Speak Welsh
Cardiff is a bilingual city. Walk down any street, pop into a café, or glance at a road sign, and you’ll see both Welsh and English side by side. And while not everyone in the capital is fluent in Welsh, there are plenty of people who use it daily. So, as a business, why wouldn’t you want to tap into that?

The Welsh language can be great for business. Customers love a personal touch, and even a simple ‘Bore da!’ (Good morning!) or ‘Diolch!’ (Thanks!) can go a long way in making people feel welcome. Using Welsh can also give you a competitive edge. More and more people, especially younger generations, are learning and using the language. Parents are sending their kids to Welsh-medium schools, and there’s a real pride in speaking it.
The Welsh Language Standards mandate that public sector organisations must provide services in Welsh. Although not legally required, many businesses choose to follow suit due to the numerous advantages. Providing bilingual menus, signs, and social media content fosters an inclusive business environment and demonstrates a commitment to the local community.
Furthermore, there are many free resources available to businesses, including translation services, Welsh language lessons for staff, and guidance on developing a bilingual brand. Even small steps towards incorporating the Welsh language can have a significant positive impact.
So, where do you start? Keep it simple. Greet your customers in Welsh. Add a ‘Diolch’ to your receipts or emails. Label products bilingually. Pop a ‘Croeso’ (Welcome) sign in your window. So, beth amdani? (What about it?) Give Welsh a go; it might just be your best business decision this year!

Words and Phrases to Get You Started:
Hello / Good morning – Helo / Bore da
Nice to meet you – Braf cwrdd â chi
How are you? – Sut wyt ti?
Welcome – Croeso
Please / Thank you – Os gwelwch yn dda / Diolch
What do you think? – Beth yw eich barn chi?
Let me know – Gadewch i mi wybod
Do you have any questions? – Oes gennych chi gwestiynau?
Looking forward to working together –Edrychaf ymlaen at gydweithio

leader's Picks
We’ve journeyed through the best of Cardiff’s business scene and now, as we draw to a close, we arrive at the Leader’s Picks. This is where the city’s industry captains share their local favourites – the businesses they rely on and genuinely admire. These are establishments that have earned the trust and respect of Cardiff’s business elite, offering not just quality but a true reflection of the city itself.

Professor Dylan Jones-Evans OBE
Co-founder, IDEAS

“Coffi Lab’s success is driven by founder James Shapland’s clear vision: to create more than just a coffee shop, but a brand built on purpose, community, and quality. His passion is evident in every aspect of the business, from ethical sourcing and customer experience to the strategic choice of locations that foster a welcoming atmosphere. By staying true to this mission, Coffi Lab has built a loyal following and proven that a founder-led business with a strong sense of purpose can stand out in a competitive market.”

Vicki Spencer-Francis
Founder and Managing Director,
“Founded by Liam Jones, Overseas Apparel is a Cardiff-based ethical clothing brand and shop. They have a strong focus on community, holding monthly events and a weekly run club and do so much for charity, it’s a real stand-out business in the beautiful Royal Arcade.”

Jonathan Saunders
Founder, Crack On Coaching
“Pro Steel Engineering and Richard Selby. A great leader who is level-headed and has turned a small start-up into a steel giant in South Wales!”

Bethan Lewis
Director, Brandrocker
“My pick is the charity Royal College of Speech and Language Therapists (RCSLT) Wales. Based in Cardiff, the team recently celebrated its 80th anniversary at the Senedd and launched its first State of the Nation Report which details the work of the profession in the past and present, and looks ahead to a future where they continue to transform lives.”

Laura Davenport Founder, Posh on Wheels and Scoop
“I’ve got to say Eva Ashley Bridal. I’ve followed Becks’ journey for a long time as in another life, we both worked for British Gas. One day, she set off with a dream to set up a bridal empire and fast forward 8 years and the dream to open her Cardiff flagship has become a reality – and what a flagship it is! Creating something spectacular and a completely different experience from anything else out there.”

Emyr Afan OBE CEO, Afanti Media
“I’d have to choose Whisper Cymru for their inspiring creation of the Wales Broadcast Centre and Carys Owens’ leadership.”

Lesley Williams CEO, Welsh ICE
“I’d love to spotlight Natalie Collins. For me, her story demonstrates the bravery, grit and determination it takes to be a successful business owner. Natalie launched her business through Welsh ICE’s 5-9 Club, which supports early-stage entrepreneurs in turning their ideas into reality. Since then, she’s been making real waves and is growing at a pace! Her story is a fantastic example of what happens when ambition meets the right support system.”

MANDY POWELL Founder, The Goodwash Company
“I think Picton & Co Deli in Cardiff is an exciting new arm of the business. It offers exclusive Welsh Deli products and the menu is stunning – I can highly recommend the gooseberry crempogs/pancakes. You can even get served the menu including cocktails whilst you’re having your hair done at Pictons Salon.”

Carolyn Brownell
Executive Director, FOR Cardiff
“Foresight is an exciting and innovative organisation focusing on Welsh-based businesses to build sustainable futures and thriving economies. Attracting businesses of this calibre into the city centre showcases the diversity of employers and companies we appeal to as a destination.”

Liv Jenkins
Founder, D.Louise
“I’m so excited for the launch of Oren Wellness Studio! Kelly is truly innovating the wellness space in Cardiff, bringing something fresh and forward-thinking to the city. It’s amazing to see Cardiff staying ahead and embracing new wellness experiences.”

Emma Waddingham
Founder & Editor, Legal News Wales
“Minuteman Press in Cardiff is my absolute go-to and an unsung hero for my events and my clients and contacts. In a world of digital, printed assets can often get so overlooked. These superstars –especially Glenn and Martin – come to my rescue, often at the last minute, and go above and beyond every time, even handdelivering products on the day. I know they offer added value to charities across Wales too.”

Yasmin Li
Founder, Impacting the Young Speaking Agency
“Fabulous Welshcakes, Cardiff Bay. I genuinely cannot walk past this shop without buying their freshly made Welsh Cakes (seriously!) This is when you know you have a winning business. The service is always exceptional but what stands out for me is the fact they have such a consistent product and always deliver. Even walking towards the shop in Cardiff Bay, puts a smile on my face. Credit to the team!”

Lloyd Morgan
Managing Director, Rockadove
“Tom Overton at The Bike Lock. Tom saw a challenge and a gap in the market and threw himself into trying to find a solution. The result is one of the best coffee shops in Cardiff, hidden away off Queen Street. Also, if you are a cyclist, you can keep your bike safe there all day.”

Helen Wild Managing Director, Equinox Communications
“The business I’d like to recommend is: August in Bloom. It’s an incredible florist, with a beautiful story behind it. The owner, Sophie, worked as a plumber and transitioned into floristry after motherhood. Her blooms fill a much-needed gap in the market — wild, subtle colour palettes, beautifully assembled.”

Rebecca EdwardsSymmons
Chief Executive, Commonwealth Games Wales
“I would say that Cardiff-based PureCyber stands out for me as Damon, Ceri and the team are growing exponentially across not just Wales but the UK and the globe. I knew they were destined for this because they offer a comprehensive guide to a very scary world of Cyber and protect businesses with care.”

Gwen Morgan Evans Partner, Hugh James
“Ogi is more than just a broadband provider – they’re a game-changer for businesses like ours, delivering at scale and keeping our teams seamlessly connected as we embrace hybrid working from our Cardiff HQ to London, Manchester, and the South Coast of England. As both a client and trusted supplier to Hugh James, they bring innovation, reliability, and a true spirit of collaboration to everything they do, enhancing connectivity across Cardiff and beyond. Their impact extends far beyond broadband – Ogi is a champion for equity, diversity, and inclusion, actively driving change through initiatives like the Equity Forum, which I’m proud to vice-chair.”

Giovanni Malacrino
Founder, Giovanni’s Restaurant Group
“I’d have to choose Simon Delve from Samten. It’s a business that’s going to help thousands of people deal with their stress and enjoy a better life.”

Ceri Maund MCIM Chief Marketing Officer, PureCyber
“My pick would be Lab22 - they always go above and beyond with service, looking after the PureCyber team and our guests (and creating the best cocktails in Cardiff!)”

SEO Doesn't Have to Be Boring
How to Win on Google in 2025
By Aled Nelmes
If you’re a business owner or marketer, here’s something you should know – SEO has finally become fun. Yes, really. For the first time in its 27-year history, it’s enjoyable.
Hear Me Out...
Take yourself back to 2004. Facebook had just been launched by a Harvard student called Mark, and the Olympics were being held in Athens. If you had the unfortunate experience of meeting an SEO expert back then, they would have bombarded you with talk of keywords, backlinks, coding, and URL configurations. I’m yawning too – it’s not just you.
Fast forward to today. It’s 2025, AI is dominating tech headlines, and Google understands more about websites and user behaviour than ever before. It’s using this knowledge to provide searchers with the most useful and engaging results possible.
And it has to. ChatGPT recently took 2% of Google’s search market. That might sound small, but it’s a warning – if Google doesn’t step up and deliver more satisfying search results than ChatGPT, it could be the beginning of the end.
What This Means for You
As a business owner, here’s what you need to know: The best experience wins.
Google has a term for this – EEAT: Experience, Expertise, Authoritativeness, and Trustworthiness. Google wants to see all of these reflected in your website and online presence (yes, it can see your social media too).
The reward? Position 1. Top of search glory. So, here are some practical ways to get ahead with EEAT and SEO:
1. Blogging (Not the ‘Dear Diary’ Kind)
A blog is where people go to find useful information. It’s also a great way to showcase your authority and expertise.
l Quality over quantity – one high-quality, 800+ word blog per month is better than short weekly posts.
l Use subheadings to structure your content.
l Include at least three images.
l Back up your points with links to high-quality sources.
l Include internal links to your products and services where relevant.
Need ideas? Free tools like AlsoAsked and Ubersuggest can help you find trending topics in your industry.
2. User Experience (Make It Easy for People)
You know when a website hits you with a hidden fee at checkout? That’s called friction – and it’s annoying.
l No hidden fees – be upfront with pricing.
l Make sure your mobile site works perfectly.
l Improve site speed – slow pages lose visitors fast.
l Test your website on someone older – if they get stuck, improve it.
3. Building Trust (Because People Buy from People)
Google prioritises trustworthy websites. Here’s how to build trust:
l Showcase reviews and testimonials.
l Add an FAQ section to answer common questions.
l Include more images of your team and products.
l Offer live chat or WhatsApp support – people love quick answers.
At the end of the day, Google wants to keep people using Google.

That means prioritising websites that are easy to use, build trust, and provide value. So, help them out. Make sure your website wins trust, demonstrates great experience and expertise, and makes buying from you as simple as possible. Because trust me – your competitors are still stuck in 2004.

Starting a business network is no easy feat – especially when your goal is to make networking less intimidating and more inviting for the younger generation. Lewis Turner, the founder of Cardiff Young Professionals (CYP), has done just that. What started as a way to meet people in a new city has grown into a thriving network of like-minded professionals across Wales and beyond. In this exclusive interview with Cardiff Life Magazine, Lewis shares the inspiration behind CYP, the challenges he faced, and what’s next for this growing community.
Lewis’s motivation to launch Cardiff Young Professionals stemmed from his own experiences navigating the professional world at a young age.
“I started working in professional services at 16 and regularly attended traditional networking events as part of my role. However, I found these to be very formal and intimidating, and I rarely saw other young professionals in attendance,” Lewis explains. A few years ago, he moved from Swansea to Cardiff and faced a new challenge – finding his place in a new city.
“I was struggling to meet people, which led to going out drinking a lot to try and find people my age. I thought there had to be a better way for people to connect, and that’s how Cardiff Young Professionals was created – to bring people of similar ages together in a relaxed, friendly setting where they could grow both professionally and personally, without the pressure of traditional networking events.”
Like any new venture, CYP faced growing pains. Lewis notes that one of the biggest challenges was building awareness and helping people understand the vision. “It took time for people to understand what I was trying to achieve with CYP. As it was different from other networking events, it took some time for people to know about it and what CYP events involved.”
Since its launch, Cardiff Young Professionals has expanded well beyond its original monthly social events. “Almost three years on, we now offer a range of events to meet different needs and interests,” Lewis says.
“In addition to the monthly socials, we host fitness events like Spin & Smoothies and Padel, Supper Clubs for food lovers, and a new CYP Book Club for those with a shared interest outside of work. We’ve also launched in Swansea, Gloucestershire and Bristol.”
Cardiff’s unique character has played a key role in CYP’s success. Lewis believes the city offers a rare combination of professional opportunities

and social vibrancy. “Cardiff combines that authentic Welsh warmth and friendliness in a multicultural and progressive city. There are so many opportunities here for young people, not just in their careers but also for hobbies, sports and events.”
Reflecting on the most memorable CYP event, Lewis doesn’t hesitate. “Our Summer Party in Tiger Yard in June 2024. We had over 250 people in attendance — it felt like a Young Professionals festival! It was amazing to see the work of the last few years come together and to feel so much support from the community.”
When it comes to inspiration, Lewis draws from the very people who attend CYP events. “I’m inspired by those who push themselves out of their comfort zones and take steps to expand their networks. Hearing from our event speakers – how they’ve overcome challenges and built successful companies – is also incredibly motivating.”
With CYP now established in multiple cities, Lewis has ambitious plans for the future. “Our expansion into other cities has been successful, so the aim is to keep this momentum going and create groups all across the UK. For Cardiff Young Professionals specifically, we’re planning to host workshops to teach young professionals and entrepreneurs the skills that aren’t always taught in school. And of course, we’ll keep building on our social and fitness events.”

The Entrepreneur's Edge: Why Mindset Fuels Success
By Rhian Lindley

Running a business is exhilarating, but let’s be real – it’s also demanding. From managing clients to leading a team, the pressure is relentless. Yet, many entrepreneurs overlook their mental well-being. Here’s the truth –your business thrives when you do. Happiness, clarity, and resilience aren’t just “nice to have”; they’re the foundation of longterm success.
Let’s explore why prioritising mental well-being is a game-changer and how you can cultivate it.
The Mindset-Performance Connection
Your mindset shapes how you lead, make decisions, and face challenges. A resilient mind helps you:
l Stay Focused – Mental strength helps you make smarter decisions.
l Handle Pressure with Ease – Managing stress keeps you from self-doubt.
l Foster Creativity & Problem-Solving – A positive mind breeds innovation.
l Lead with Confidence – Strong leadership starts with mental wellbeing.
The Pillars of Entrepreneurial Mental Wellbeing
Cultivate Happiness Daily
l Practice Gratitude – List three things you’re grateful for daily.
l Celebrate Small Wins – Acknowledge every step forward.
l Surround Yourself with Positivity – Connect with uplifting people.
Prioritise Mental Clarity
l Take Breaks – Stepping away sparks new insights.
l Declutter Your Mind – Journal, meditate, or walk to reset your thinking.
l Simplify Decisions – Streamline your routine to free up mental space.
Build Resilience Like a Muscle
l Shift Your Mindset – Say “What did I learn?” instead of “I failed.”
l Control Your Inner Dialogue – Reframe negative self-talk.
l Mindful Stress Management – Use tools like deep breathing to reset.
l Set Boundaries to Protect Your Wellbeing – Boundaries prevent burnout and fuel creativity.

l Define Work Hours – Don’t work all night just because you can.
l Say No Without Guilt – Prioritise what truly matters.
l Make Time for Joy – Hobbies and downtime fuel creativity.
Your Business Reflects Your Wellbeing
Your mental well-being is your business’s greatest asset. When you prioritise happiness, clarity, and resilience, you perform better and enjoy the journey. Success isn’t about grinding; it’s about showing up as your best self every day.
When you thrive, so does everything you build.

A Week in the Life of a Cardiff Freelancer
By Charlotte Lewis

As the daughter of parents who ran their own business, I know all too well that no two weeks ever look the same. Some days, I’m deep in creative work –crafting workshops, rehearsing talks, or refining the ways I work with people to ignite their confidence. Other days, I’m out in the world, sharing what I do, connecting with people, making space for movement, creativity – and, of course, good coffee! This week was a buffet –a little bit of everything…

Sunday Bikes & Brunch
Feeling VERY smug – I doubled up at Studio Tarw, booking both a spin class and yoga. I met my wonderful friend afterwards, and we had long chats over coffee, brunch, and clifftop walks. Conversations with friends always fuel my creativity and fill my cup – leaving me excited to dive into another week at my DREAM JOB.

Monday Planning Presentations
(Easier Than Pilates!)
After a walk and talk with a client, I got stuck into planning and rehearsing my upcoming talk for the Cardiff Met Centre for Entrepreneurship. I’m a big believer that everyone has something special to share with the world – they just need the tools to unlock their unique voice. I’ll be hosting other workshops at USW and Swansea Uni soon too – I love working with students. Later that evening, I tried something new – reformer pilates with a group of friends. I’m not sure my coordination is quite “Pilates Princess” level, but I had a blast (and so did my posture!).

Tuesday
Working ‘Backstage’ on My Business
Today was all about fine-tuning – coaching a client, refining my talk, and squeezing in a walk. With a brand-new website launching soon (thank you, Tom Collins!), my group coaching programme in development, new 1:1 clients coming on board, and Power-Up programs being added to my calendar – there’s a lot I want to get right.

Wednesday
Walks, Talks & JOY!
I hopped on the train, grabbed a coffee at Corner Coffee, and spotted my testimonial in Cardiff Life from the awesome Ben John, The Rugby Trainer – a client whose vocal confidence is going from strength to strength! After a walk through Bute Park (and meeting a horse), I arrived at Cardiff Met to deliver my workshop. Later, I put on my directing hat, meeting up with the JOY Club crew (a TEAM Collective Cymru project) at The Sustainable Studios in Grangetown. I wrapped up the day with a Mind Body Connect webinar – this programme is like a gym membership for your mental health, and it’s a seriously important priority for any entrepreneur.

Thursday
BIG Dreams Need BIG Voices
A mix of gym, client calls, deep work, and theatre. I updated my website copy, had discovery calls for my new VIP 1:1 coaching program, and drafted my email announcement for a BIG speaking opportunity this May –my upcoming workshop at The Big Retreat Wales! I also nabbed a last-minute ticket to Housemates – a Sherman Theatre & Hijinx co-production that reminded me how truly powerful voices can be. Did I cry? YES. Did I sing along? Absolutely! What a show.
FridaY
Brain Food & Soul Food
The morning started with a gym session and some self-study (lifelong learner alert!). Later, I celebrated my sister’s belated birthday with a trip to The Ivy Asia – good food, mindful pauses, and hours of conversation. Bliss.

Saturday
The Calm Before the Sporting Storm
A visit to Love Light Healing Hub for pressotherapy and a Rose Love Latte (basically Turkish Delight in a cup) was the perfect way to round off the week. Afterwards, I caught up with my brother over – yes – more coffee before watching Wales v Scotland. What a game! I nearly lost my voice shouting at the TV.

What's Next?
With a rebrand, a new website, and exciting new ways to support my clients in unlocking their speaking confidence, 2025 is shaping up to be an incredible year. If you’re looking to power up your voice at The Big Retreat Wales, step into a confidence session at university, or work with me 1:1 as a VIP, connect with me online – I’d love to hear from you!

Launch Like a Pro
Nikki Pope's Mission to Empower Entrepreneurs

Launching a business isn’t just about having a great idea, it’s about knowing how to bring it to market with confidence and strategy. That’s where Nikki Pope and The Modern Launch Club (MLC) come in. Founded from her journey of pivoting from a performance career to entrepreneurship, Nikki now helps businesses – especially women-led ones – launch successfully and stand out.
With a background in performance, Nikki spent much of her twenties in the US as a singer and actress. But when Covid shut down the industry overnight, she dived into the online business world. “I launched my first online business, Wed-in-Bliss, which helped brides plan their dream weddings. It grew to over 8,000 members, and people kept asking me how I did it,” she recalls in an interview with Cardiff Life Magazine. “I realised I had a knack for helping entrepreneurs build their dream businesses, and The Modern Launch Club was born.”
MLC is now a thriving coaching and mentorship brand, giving entrepreneurs the tools, confidence, and strategies to launch successfully. It offers a range of services, from group programmes like ICONIC, which helps new entrepreneurs build solid business foundations, to one-on-one coaching tailored to refining sales strategy and increasing brand visibility. Free masterclasses and challenges provide deep dives into launching and sales techniques, while VIP experiences give hands-on, expert-led launch strategy support. “It’s all about making launches feel effortless, profitable, and aligned with each person’s strengths,” Nikki explains.
When it comes to launching, Nikki swears by three core elements: positioning and messaging, audience and visibility, and confidence and consistency. “Your offer needs to be different, and your messaging needs to make people say, ‘I need this NOW.’ Most launches fail because the messaging doesn’t create urgency. You also can’t sell to an empty room, so warming up your audience before launch day is essential. And if you’re hesitant, your audience will be hesitant. People buy with certainty when you sell with certainty.”
She emphasises that successful launching is not just about following a step-by-step strategy but about execution. “If strategy alone was enough, we’d all be millionaires,” she laughs. “The way you show up, the energy you bring—that’s what makes the difference.”
To stay ahead of the curve, Nikki is constantly testing, adapting, and evolving her strategies. “I don’t just teach launch strategies, I use them myself,” she says. “I focus on psychology-driven sales rather than cookie-cutter methods. The way people buy is always shifting, so we make sure our clients never feel like they’re playing catch-up.”
For startups in Cardiff, her biggest advice is to start before they feel ready. “So many people wait for perfection, but by then,

they’ve lost momentum. Get visible, talk about your offer daily, and create demand before selling it.” She also encourages women in business to step into their expertise with confidence. “Own your expertise and make yourself visible – because people can’t buy from you if they don’t know you exist!”
She also highlights the importance of seeking guidance. “Launching is so much easier with support and a roadmap. I waited too long before hiring my first coach, but once I did, I made back my investment four times over in the first year.”
So what’s next for MLC? Nikki has big plans. She aims to expand her programmes with more high-level masterminds, live retreats, and intimate coaching experiences. MLC already supports entrepreneurs worldwide, but she envisions it becoming the go-to launch brand internationally. 2025 will see the launch of the Solopreneur Awards, celebrating trailblazing solo business owners making waves in their industries. In 2026, The MLC Membership will be introduced, blending feminine and masculine-led strategies to help women build wealth by stepping into their power. “Five years from now, we’ll make sure the Solopreneur Awards is the most anticipated event of the year globally,” she says. “This is just the beginning.”

The Priory
A Historic Gem in Caerleon Reinvented for the Future
The Priory, situated in the heart of Caerleon, South Wales, is a hotel and restaurant steeped in history and dedicated to evolution. Since 1180, it has consistently provided exceptional hospitality, quality produce, and immersive experiences while adapting to the everchanging needs of its guests. A recent refurbishment has modernised the venue, ensuring The Priory remains a premier destination for dining and accommodation.
The Priory’s recent transformation of its 100cover restaurant marks a significant milestone, reflecting a growing trend in the hospitality industry where experience-driven dining is key. The redesign, which includes an open kitchen with state-of-the-art dry-ageing fridges, a Chef’s Counter, and a 60-cover bar, seamlessly blends tradition with contemporary aesthetics.
With a dedicated cheese and wine tasting room set to open later this year, The Priory is positioning itself as a culinary hotspot for 2025 and beyond.
Owner Benito Martinez emphasises that the refurbishment is an evolution, not a reinvention, of The Priory’s commitment to excellence. By maintaining its focus on outstanding produce and an inviting atmosphere while integrating new elements, The Priory has enhanced its offering without losing its identity, ensuring it remains relevant in an increasingly competitive landscape.
The redesign carefully balances the building’s historic character with a fresh, luxurious ambience. Dark tones, rich timbers, and natural stones contribute to an intimate setting, while carefully curated lighting enhances the

guest experience. The result is a space that not only pays homage to The Priory’s past but also caters to the expectations of modern diners seeking both quality and atmosphere.
From a business perspective, The Priory’s evolution is a case study of how historic venues can reinvent themselves without losing their essence. By focusing on high-quality dining, exclusive wine experiences, and an elevated ambience, The Priory is successfully attracting a new generation of guests while maintaining its loyal customer base. With its refined menu, extensive fine wine selection, and upcoming experiential events, The Priory is set to remain a leading name in destination dining for years to come.

Gorse
An intimate restaurant nestled in Pontcanna, Gorse, has earned a Michelin Star – a remarkable achievement for a venue that opened its doors less than a year ago. This isn’t your sprawling, bustling restaurant though; Gorse offers a more personal experience.
In a restaurant with just 22 seats, diners are treated to a close-up view of chef Tom Waters at work in the open kitchen, creating a relaxed and engaging atmosphere. The Michelin Guide’s recognition highlights Gorse’s commitment to showcasing Welsh produce. Waters’ menu is a celebration of the region, emphasising seasonal ingredients and straightforward, flavour-driven cooking
‘A taste of Wales on a plate’ is how the Michelin Guide describes the experience, and it’s an accurate portrayal. Expect dishes that

A Michelin Star in the Heart of Pontcanna
highlight the best of Welsh seafood, meats, and vegetables, prepared with precision and respect for the ingredients.
Tom took time out of his very busy schedule to chat with Cardiff Life Magazine about the amazing achievement:
Q: What inspired you to open Gorse?
“Gorse is the culmination of a long time working in some good kitchens in London and the wider UK. I also wanted to open my place eventually, and my wife and I always wanted to move back home to Cardiff and open a restaurant here.”
Q: How does it feel to receive a Michelin star in less than a year of operation?
“Yes, overwhelming to be honest. We believe in what we’re doing and think we’re offering a good product, but we just didn’t expect it to come so soon. It’s a testament to the hard
work of our team, to our great guests and our amazing suppliers.”
Q: What does this recognition mean for Cardiff and Welsh cuisine?
“To be honest, time will tell. There are already some amazing chefs doing great things in Cardiff and Wales who will no doubt also be rewarded with a star in the coming years. Hopefully, the fact that our cuisine is Welsh produce will open a bit more conversation about Welsh food in the wider UK media.”
Q: What are your hopes and plans for the future of Gorse?
“We’re only just scratching the surface of what we can achieve at Gorse. We’re just going to keep working and get a little bit better every day, every week, every year and try to be the best we can be.”

A Labour of Love
Martin Roberts on Transforming The Hendrewen

Martin Roberts is perhaps best known as the affable presenter of BBC’s Homes Under the Hammer, guiding viewers through the trials and triumphs of property renovation. But his latest project, which is a far cry from the auction houses and suburban refurbs he’s used to, has seen him take on a much grander challenge: restoring and reimagining a historic pub in the heart of the Welsh Valleys.
Martin speaks to Cardiff Life Magazine from the rolling hills that surround his latest venture, The Hendrewen in Blaencwm, Treorchy. The landscape is breathtaking, a reminder of what first drew him to this remote yet deeply special location. “I probably wouldn’t do this anywhere else in the world,” he says. “I have no desire whatsoever to run a pub, a restaurant, or a hotel – it’s not what I do. But this place? It’s stolen my heart.”

The Hendrewen, nestled in Blaencwm, Treorchy, represents something more than just a pub to Martin. His vision extends beyond pouring pints and plating up pub grub – he wants to create a true destination, a beacon for tourism, and a hub for the local community. “I’m running this with my heart,” he shares candidly. “And I need to run it with my head, too, because it has to be financially viable. But at the moment, I’m focusing on what it will achieve for the community – for the kids who are working on it, for the boost it will give to tourism in an area that’s still relatively undiscovered.”
A key part of Martin’s plan is integrating the pub into a broader tourism initiative. He speaks passionately about linking attractions like Bike Park Wales, the Penderyn Distillery, and the Rhondda Tunnel, which, if reopened, could provide a direct cycling route from the Valleys to Swansea and Port Talbot.“This has the potential to be so much more than just a pub,” he explains. “It could help drive real economic growth in the area.”
Beyond its tourism potential, Martin sees The Hendrewen as a place of opportunity. The renovation itself has already brought young, disengaged people into the fold, giving them hands-on experience in construction and valuable industry qualifications. “We’ve got kids who were told they were rubbish, kicked out of school, and now they’re here learning how to plaster, do electrical work, carpentry – you name it,” Martin says. “And they shine. They absolutely shine!”
The pub will also feature a teaching kitchen, run in partnership with Coleg y Cymoedd, where students can develop their culinary skills. Live music will play a key role, too, with a dedicated stage and top-tier equipment available for young musicians to hone their craft. “This is about creating a balance between serving the community and making the pub a financially viable destination,” he explains. “The area has lost its heart, and this is about bringing some of it back.”
A Unique Atmosphere
The Hendrewen won’t be a run-of-the-mill country pub. Instead, Martin envisions an eclectic mix of styles – think Hard Rock Cafe meets Antiques Roadshow!
“I’ve been collecting stuff for years – my wife calls it ‘cr*p’, I call it ‘collectables’ – and it’s all going into the pub,” he laughs. “It’s going to be filled with quirky, fascinating things. Old school science equipment, vintage board games, funky lighting – it’ll be an experience.” While one side of the pub will maintain a relaxed, dog-friendly atmosphere with open fires and cosy seating, the other will feature vibrant live music and a cocktail bar.
“I can’t compete with the local pubs on cheap food and drink,” Martin acknowledges. “But what I can do is create a place where people want to come for a special occasion, a weekend getaway – something they haven’t seen before.”
Juggling It All
Taking on a million-pound restoration project would be daunting for anyone, let alone someone still juggling a fulltime television career. But Martin remains undeterred. “If you want something done, ask a busy person, right?” he jokes. “After my health scare a few years ago, I was supposed to slow down, but it’s only made me more determined. I want to achieve as much as I can in the time I’ve got.”
Despite the workload, he has found incredible support within the Welsh business community. “There’s something unique about the way people here help each other,” he reflects. “It’s not about rivalry, it’s about lifting each other. I’ve never known anything like it.”
The Road Ahead
With an ITV documentary series chronicling the journey of The Hendrewen in the works, more people than ever will see the highs and lows of Martin’s ambitious project. “I started filming just to document it for myself, and it’s turned into this rollercoaster story,” he says. “It’s a real mid-life crisis project – who hasn’t dreamed of owning a pub? But it’s also about something much bigger.”
His ultimate goal? A grand opening night complete with performances from Katherine Jenkins, the Treorchy Male Voice Choir, and the Stereophonics. “Will it happen? We’ll see,” he laughs. “But if nothing else, this project has taught me to aim high.” The Hendrewen is set to open in late autumn. And if Martin’s enthusiasm and dedication are anything to go by, it won’t just be a pub – it’ll be a landmark.
