No hace tanto que el verano vaciaba Bilbao. Hoy en día la tendencia es muy otra. La ciudad se muestra viva y dinámica. La Comarca de Uribe, integrada por algo más de una veintena de municipios, forma parte importante de la identidad de Bizkaia. Y también de la de Bilbao. Sus caseríos y explotaciones agrícolas han suministrado secularmente a la ciudad de leche, hortalizas, txakoli y ganado; sus playas y bosques han sido la primera zona de esparcimiento; y sus gentes, la primera inmigración del campo a la ciudad. El impacto de Bilbao en la Comarca de Uribe es poderoso. El Parque Tecnológico de Zamudio, el más importante de Euskadi; las instalaciones deportivas del Athletic de Bilbao, centenario club de fútbol único en el mundo, el aeropuerto de Loiu; o el internacional restaurante Azurmendi con sus tres estrellas Michelin, se encuentran en Uribe.

Pero, a pesar de todo, la comarca ha sabido mantener su carácter propio. Conserva buena parte de caseríos y explotaciones agrícolas y ganaderas, molinos de agua, viñedos dedicados al txakoli, bosques, viejas ermitas con sus senderos y romerías. A muchos de estos lugares, o muy cerca, se puede llegar en 20 minutos en Metro. O en el ferro-

EL MAYOR NÚMERO DE PLAYAS DE BIZKAIA

La costa de la comarca de Uribe está formada por unos acantilados, playas y calas que proporcionan inolvidables panorámicas sobre la costa. Tanto que forman parte de los paisajes de la serie Juego de Tronos.

Uribe cuenta con el mayor número de playas de Bizkaia: Barinatxe, Arriatera-Atxabiribil, Meñakoz, Barrika, Muriola, Plentzia, Gorliz, Armintza y Bakio. A quienes practiquen surf les sonarán algunas de ellas, sus olas se incluyen en las rutas europeas.

PATRIMONIO ARQUITECTÓNICO

Las llamadas guerras de bandos forzaron a la la nobleza rural de Bizkaia a convertir sus viviendas en pequeñas fortalezas capaces de resistir los ataques enemigos. Surgieron las torres, que abundan en la comarca. Desde la Torre Martiartu

de Erandio, pasando por Torrebillela en Mungia o el neogótico Castillo de Butrón, una de las joyas de la arquitectura romántica del norte de España. THE LARGEST NUMBER OF BEACHES IN BISCAY

ARCHITECTURAL HERITAGE

The so-called wars of factions forced the rural nobility of Biscay to convert their dwellings into small fortresses capable of resisting the enemy’s attacks. This gave rise to the towers that abound the region. From the Martiartu Tower in Erandio, to Torrebillela in Mungia or the neo-Gothic Butron Castle, one of the crown jewels of Romantic architecture of the north of Spain. There is also a good example of traditional architecture of Basque farmlife: farmhouses with buildings that reflect the life and economy of the old inhabitants of this region: vine trellises, corn ovens, mills, old forges and lime kilns; some of them, transformed into restaurants, museums or interpretation centres, are open to visitors.

TXAKOLI WINERIES AND CRAFT BEER PRODUCERS

The hills of Uribe are home to some of the most important txakoli production areas in Basque Country. Their owners have managed to preserve tradition and improve production to the point of being able to produce bottles with many of the most prized labels in Basque Country. We are talking about Gorka Izaguirre, Magalarte, Doniene Gorrondona, Zabala, Butroi and Uriarte.

Moreover, in recent years, the region has developed a particular taste for the production of craft beers, with their own tasting competitions and a host of fans. Some of the most outstanding beers are Cervezas Etxeandia, Boga Garagardoa, Tito Blas, Txorierri or Drunken Bros.

As if all this were not enough, Uribe buzzes during summer and autumn with traditional festivals, rural sporting events, gastronomic competitions, concerts, street theatre… Pubs and restaurants with incomparable savoir-faire spring up around every corner.

Otxandio es una singular villa que se esconde junto a un enorme pantano, entre bosques, en el valle que separa los parques naturales del Gorbea y de Urkiola. Su pasado se manifiesta en la fuente de Vulcano, la poderosa torre de su iglesia y la amplitud de su plaza mayor a la que se llega por calles salpicadas de palacetes. Otxandio posee un carácter especial que merece la pena conocer.

Si salimos de la villa con dirección a Durango por la carretera que asciende a Urkiola encontraremos un desvío a la izquierda que indica Dima. Pasaremos al valle de Arratia por un puerto suave pero plagado de curvas, praderías salpicadas de ovejas, vacas pacientes y algún caballo de crin rubia. En esa carretera aparece un caserío-asador muy recomendable tanto por su arquitectura como por la cocina, Korostondo.

Al otro lado de las colinas, ya en el valle, surge la laboriosa Dima. Ofrece un paseo. Con tiempo, visite las cuevas de Balzola, uno de los lugares de escalada de referencia internacional y el puente de Jentilzubi, una gran roca que forma un puente natural entre dos colinas.

Tome dirección a Bilbao. Circunvalará Igorre, el corazón industrial y de servicios de Arratia. A pesar de ello, los barrios que rodean Igorre guardan todo el sabor original, al igual que las ermitas y humilladeros que vigilan los senderos.

Desde Igorre siga dirección a Bilbao, pero tome la opción de Erletxe en cuanto tenga ocasión. En Erletxe, gire en la rotonda hacia el corredor del Txorierri. Puede visitar Larrabetzu o Lezama, con sus instalaciones deportivas del Athletic Club. Las señales le indicarán Mungia. Atiéndalas. Y preste atención a la indicación de Gatika, donde podrá disfrutar del parque acuático Wakepark y del castillo de Butrón, una espectacular ensoñación neogótica que ocupa el lugar de una torre medieval.

Si continúa hacia el mar, llegará a Barrika con su flitch que parece la espalda de un dragón entre dos aguas, sus calas y acantilados que formaron parte de las localizaciones de Juego de Tronos. Camínelas. Escuche el susurro del viento y la respiración del mar.

From Otxandio to Barrika From the mountain to the sea in 5 steps

Otxandio is a unique town that hides next to a huge reservoir, among forests, in the valley that separates Gorbea and Urkiola natural parks. Its past can be witnessed in the Vulcano fountain, the mighty tower of its church and the size of the town square, which can be reached through streets dotted with small palaces. Otxandio has a special charm that is well worth getting to know.

Leaving the town heading towards Durango and taking the road that climbs up Urkiola you will come to a turning on the left signposted to Dima. You will pass through the Arratia valley along a gentle but winding road, with meadows full of sheep, patient cows and one or two horses with blond manes. On this road, there is a basque traditional farmhouse that is home to a rotisserie, Korostondo, which is highly recommended both for its architecture and cuisine.

On the other side of the hills, already in the valley, the laborious Dima rises up. It is the perfect place for a walk. With enough time to spare, you can visit the Balzola caves, one of the world’s leading climbing spots, as well as the

Take the road towards Bilbao. You will pass through Igorre, the industrial and service heart of Arratia. Despite this, the neighbourhoods surrounding Igorre preserve all their original flavour, as do the hermitages and shrines that guard the paths. Follow the road from Igorre towards Bilbao, but take the Erletxe direction as soon as you get the chance. At Erletxe, turn at the roundabout towards the Txorierri corridor. You can visit Larrabetzu or Lezama, home to the Athletic Club’s sports facilities. You must follow signs indicating Mungia, then, look out for the sign for Gatika, where you will have the chance to enjoy the Wakepark water park and Butron Castle, a magnificent neo-Gothic dream on the site of a medieval tower.

Heading towards the sea, you will come to Barrika, with its flitch that looks like the back of a dragon caught between two waters .Its coves and cliffs were, indeed, part of the locations for Game of Thrones. Just walk along them. Listen to the whisper of the wind and the sound of the breathing sea.

Regatas de traineras el tour del mar

La costa de Bizkaia, como la del resto del Cantábrico, hierve en verano con un espectáculo único: las regatas de traineras. Se trata de embarcaciones de banco fijo, tripuladas por un patrón y 13 remeros que vuelan sobre las olas. Si tiene ocasión, no se las pierda. Desde hace unos años están en boga también las regatas con remeras

La trainera era una embarcación tradicional que podía albergar tripulaciones de hasta 16 remeros. Su origen se remonta a la primera mitad del siglo XVIII en la costa vasca. Originalmente podía llevar un palo con vela latina o cangreja. Pero el remo era vital por su destino funcional. Se utilizaba para pescar sardinas cerca de tierra con las redes de cerco llamadas ‘trainas’. Era la propia embarcación la que rodeaba a la máxima velocidad posible el banco de preciados peces. Su otra función consistió en el atoaje; es decir, remolcar naves que debían entrar a muelles situados en el interior de rías de boca estrecha que no admitían otro

sistema. En ambos casos, alcanzar el cardumen de peces antes que otras tripulaciones o contactar con el mercante en primer lugar, resultaba fundamental para ajustar el precio del producto en el puerto o del servicio. De esta circunstancia a las carreras y las apuestas resta solo una palada.

Con la generalización de los botes a vapor y, posteriormente, los motores de explosión, a la trainera le quedó poco más que la competición deportiva. El éxito de esta modalidad atesta muelles, puertos y riberas de las rías. Las hinchadas de cada tripulación las siguen de regata en regata y existen auténticas rivalidades, siempre pacíficas y festivas.

Trawler regattas the sea tour

The trainera used to be a traditional boat that could carry crews of up to 16 rowers. Its origin dates back to the first half of the 18th century on the Basque coast. Originally, it could hold a pole with a lateen or gaff sail. But the oar was vital due to its functional purpose. It was used to catch sardines close to land with purse seine nets called “trainas”. It was the boat itself that surrounded the shoal of precious fish at the highest possible speed. The other function consisted of towing; that is to say, to tow ships that had to enter docks located inside narrow-mouthed estuaries that

did bear any other system. In both cases, reaching the shoal of fish before other crews or contacting the merchant ship first was essential to adjust the price of the product in port or the service. That is the reasoning of reading and betting.

With the generalisation of steamers and, later, explosion engines, the trawler was left with the sporting competition.

This sport’s success fills docks, harbours and riverbanks. The fans of each crew follow them from one regatta to the next and there are real rivalries, always peaceful and festive.

Hoy en día las traineras y los remos se fabrican en fibras sintéticas. Deben pesar un mínimo de 200 kilos con 12 metros de eslora; alrededor de 1,75 metros de manga y de 0,90 metros de puntal. Los remeros se sientan en seis bancos de dos plazas, mientras que el patrón, con el timón en sus manos y marcando el ritmo a gritos, navega en pie, en tanto que el proel rema en un banco solitario y participa en la maniobra llamada ziaboga, que consiste en girar el rumbo 180 grados.

Si transita usted por nuestras carreteras en verano y otoño es muy probable que adelante o se cruce con un gran monovolumen que remolca una trainera. O quizá se cruce con más de una. Será día de regatas. No se pierda la experiencia.

Regatas en Bilbao

Puede usted disfrutar del espectáculo y el ambiente de las traineras en cualquiera de los puertos de la costa de Bizkaia desde Zierbena hasta Ondarroa. Y también en Bilbao, donde se disputan en el mismo centro de la ciudad.

La primera regata en Bilbao data de 1887, con motivo de la visita a la ciudad de la reina María Cristina. Hasta 1902 se organizaron con uno u otro motivo casi anualmente. Vuelven en 1917 y se mantienen hasta 1932 para regresar en 1966.

PRIMER BAR DE OSTRAS EN BILBAO

Nowadays, trawlers and oars are made of synthetic fibres. They must weigh a minimum of 200 kilos with a length of 12 metres, a beam of about 1.75 metres and a depth of about 0.90 metres. The rowers sit on six two-seater benches, while the skipper, with the rudder in his hands and shouting the pace, while the bowman rows on the bench alone and participates in the manoeuvre known as ziaboga, which means turning the direction 180 degrees.

If you are on our roads in summer and autumn, it is very likely that you will overtake to cross paths with a large minivan towing a trawler. Or you may come across more than one. Do not miss the experience.

Regattas in Bilbao

Enjoy the spectacle and atmosphere of the traineras in any of the ports along the coast of Biscay, from Zierbena to Ondarroa. And in Bilbao too, where they are held in the very centre of the city.

The very first regatta held in Bilbao was held in 1887, on the occasion of the visit of Queen Maria Cristina and until 1902 they were usually organised almost annually for whatever reason. They returned in 1917 and continued until 1932, coming back in 1966.

nato de Bizkaia de Cruceros-Porsche y la Copa Gitana; y ya en agosto la Regata Getxo-Gijón-La Coruña. A partir de septiembre es el turno de la tradicional Copa Castro, el X Trofeo El Correo, el Trofeo Social Cruz Roja o la masiva y festiva Regata del Gallo, la prueba que cierra cada año un completo calendario. The Real Club Marítimo del Abra-Real Sporting Club (Getxo) is celebrating its 125th Anniversary with several big regattas in the Biscayan waters of the Abra. After organising the ILCA 6 Spanish Cup with almost 150 boats from many regions, the Spanish Junior and Absolute Snipe Championship awaits at the end of August and the beginning of September. In the summer, the Surne-58th Eskarra Trophy Regatta, the Euskadi J80 Championship, the EKP Costa Vasca-Golden Whale Trophy Regatta, the Bizkaia Cruiser-Porsche Championship and the Gipsy Cup will take place; and in August, the Getxo-Gijón-La Coruña Regatta. Many decades ago, Los Encajeros supplied table linen, bed linen and baby linen to the important families of Bilbao. Ever further afield. Eugenia Martínez de Irujo’s newborn layette was ordered by the Duchess of Alba at Los Encajeros. That speaks volumes about their prestige and their clients.

Es el medio de transporte que une el centro de la ciudad con la pequeña meseta de Artxanda uno de los pulmones verdes de Bilbao. Lo usan cada día miles de bilbainas y bilbainos para acceder a ese gran parque formado por jardines, arbolados e instalaciones deportivas que, además, proporciona las mejores vistas sobre la ciudad, la desembocadura del Nervión y los valles cercanos. El Funi, como es cariñosamente conocido, tarda menos de cinco minutos en completar un recorrido que realiza cada cuarto de hora.

SOSTENIBILIDAD

En breve, el funicular cambiará sus vagones por otros más cómodos y con más plazas. Además. incorporará un sistema de aprovechamiento de la energía de la frenada y placas fotovoltáicas, con lo que reducirá en un 80% su consumo de electricidad.

Finalista del Premio Euskadi Ilustración, Belén ganó el premio Isaac López Mendizabal del Gobierno Vasco al mejor libro de texto y también al mejor libro de lectura, entre otros muchos galardones, y fue seleccionada para la exposición internacional ilustradores españoles ‘A todo color’ promovida por el Ministerio de Educación, Cultura y Deporte. Ha desarrollado un estilo personal inconfundible “Es el resultado de una carrera larga, parte de mi formación en

Bellas Artes, del grabado y la pintura. Y de años de trabajo donde he experimentado diversas técnicas como la tinta, ceras, acuarela, monotipia, etc. Ahora siento una libertad inmensa al poder reunir todo lo que me ha ido interesando desde mis comienzos y utilizarlo simultáneamente para crear una imagen”, explica.

“Otro rasgo que me define es la presencia de la naturaleza, y trabajo con una visión algo mágica y onírica de los personajes y sus escenarios; les suelo decir a mis alumnas que el arte sale del corazón y tienen que dejar que sus sentimientos fluyan, que busquen, que observen, que comparen y que aprovechen esta nueva era de la información para apoyarse y aprender”, detalla.

Recognised illustrator and winner of several prizes and contests, the Biscayan Belén Lucas has a broad experience in graphic arts. Her work is part of significant publishing productions and her signature is regularly found in exhibitions

“Illustration brings me back to my childhood and encourages me to grow with every project”, explains Belén Lucas. “Suddenly, the illustration comes to life all by itself, as if it didn’t need me”.

Finalist of the Euskadi Illustration Award, Belén won the Basque Government’s Isaac López Mendizabal prize to the Best Textbook and also to the Best Reading Book, among many other awards, as well as being selected for the international exhibition of Spanish illustrator “A todo color” (“In full colour”) promoted by the Ministry of Education, Culture and Sport.

She has developed a distinctive personal style. “It is the result of a long career, starting with my training in Fine Arts, engraving and painting. It is the result of years of working and experimenting with different techniques such as ink, wax, watercolour, monotype, etc. Now I feel an immense freedom in being able to bring together everything that I’ve been interested in since I started out and simultaneously use it to create an image”, she explains.

“Another defining feature of my work is the presence of nature, and the fact that I work with a slightly magical and

dreamlike vision of the characters and they settings; I usually tell my students that art comes from the heart and they have to let their feelings flow, they have to search, observe, compare and take advantage of this new information era to find support and to learn”, she points out.

The artist is not concerned about the possible impact of Artificial Intelligence on illustration. The feeling that passes through a heart and a hand until it reaches an illustration, whether in an analogue or digital format, will never be overshadowed by Artificial Intelligence. And if it does, it will be time to retrace our steps and make pictures on the walls of caves”, she says, noting that art has always been able to successfully adapt to the various technological developments.

Belén Lucas is optimistic about the current state of illustration. “I perceive a lot of interest in illustration, it is increasingly appreciated and it is very present. I can tell by the sales of editions of illustrations, through my website and specialised bookshops in Bilbao, such as La Ilusa, Magnolia Books or Espacio Aerre”.

A la artista no le agobia el posible impacto de la Inteligencia Artificial en la ilustración. “El sentimiento que pasa por un corazón y una mano hasta llegar a una ilustración, bien sea en un medio analógico o digital, nunca se verá velado por la Inteligencia Artificial. Y, si ocurre, será el momento de volver sobre nuestros pasos y pintar en las paredes de las cuevas”, apunta, tras señalar que el arte ha sabido adaptarse a las distintas evoluciones tecnológicas.

Belén Lucas se siente optimista sobre el momento por el que pasa la ilustración. “Percibo mucho interés por la ilustración, cada vez más; se valora y está muy presente. Lo advierto por las ventas de ediciones de láminas, a través de mi web y en librerías especializadas de Bilbao, como La Ilusa, Magnolia Books o Espacio Aerre”

Los acantilados, EL casco viejo y San Miguel de Ereñozar

A Belén Lucas le gusta pasear por los acantilados cercanos a Bilbao desde Azkorri hasta Plentzia, resulta una delicia disfrutar del mar y las playas”. En la ciudad se inclina por “el Casco Viejo, perderme en sus calles, para caminar después, siguiendo el curso de la ría, hasta el parque de Doña Casilda y sentarme entre árboles”.

Según la ilustradora, es imprescindible para quien visite el territorio “subir a San Miguel de Ereñozar, una atalaya natural desde dónde se contempla la ría desde Gernika hasta su desembocadura en la reserva de Urdaibai”.

Recomienda “un txakolí a la hora del aperitivo en El Globo, en la calle Diputación”. Al atardecer prefiere “una buena cerveza y una gilda en Fangaloka, viendo el mar, en la Playa de Azkorri”. Para un almuerzo informal, Kantine porque ofrece platos veganos y buen ambiente; si se trata de una ocasión especial, Nerua”.

Ida al Puente Colgante en tren y regreso en Metro

El transbordador conocido como Puente Colgante es un imprescindible de la visita a Bilbao. Recomendamos que se acerque en la línea de cercanías de Portugalete y se apee en esa estación. En su caminata hacia el Puente disfrutará de Portugalete. Goce del transbordador y de las vistas del Abra. Cuando baje, estará en Las Arenas. Deambule por sus calles. Tome algo. Pregunte por la boca del Metro. La suma de todos los trayectos le costarán menos que un pintxo con su txakoli.

Una puesta de sol desde el acantilado

La Línea 1 del Metro, muy a mano en toda la ciudad, va hasta Plentzia, que bien merece una visita, igual que la vecina Gorliz. Pero las estaciones de Larrabasterra y Sopelana permiten acceder a la parte alta de los acantilados sobre el mar. Se trata de zonas dotadas con buenos locales donde escuchar música, cenar o tomar un refrigerio. Y permiten disfrutar de la lenta caída del sol sobre el mar enrojecido.

Las fiestas patronales comienzan a proliferar en Bizkaia desde finales del mes de junio. Cada municipio, pedanía o barrio tiene las suyas, con particularidades y orgullo propio. Pero, entre las más frecuentadas se cuentan las siguientes.

Santurtzi, a mediados de julio, en torno a la festividad de la Virgen del Carmen, patrona de la marinería. Cada 16 de julio vive la procesión marinera más antigua y con mayor tradición de la costa vasca.

Barakaldo, la segunda ciudad en población de Bizkaia, también rinde honor al Carmen. Sus conciertos gratuitos son punto de encuentro de miles de jóvenes.

En Getxo el calendario festivo se encadena. Celebra a Santa Ana en Las Arenas sobre el 20 de julio; San Ignacio, en Algorta en torno al 29; a Nuestra Señora de Los Angeles en Romo la primera semana de agosto, entre el 1 y el 5 de agosto. El Concurso Internacional de Paellas que ocupa las praderas de Aixerrota atrasa su fecha este año debido a las Elecciones Generales y se desarrollará el 25 de julio. Local festivals begin to spread in Biscay from the end of June onwards. Each town, district or neighbourhood has its own festival, with its own pride and joy. However, some of the most popular are the following.

Santurtzi, in mid-July, around the feast of Virgen del Carmen, patron saint of seafarers. Every 16th of July the oldest and most traditional seafaring procession on the Basque coast is held here.

Barakaldo, the second most populated city in Biscay, also honours Carmen. Thousands of young people come together at free concerts that take place there.

In Getxo, the festive calendar is full of festivities, one after the other. Santa Ana is celebrated in Las Arenas around the 20th of July; San Ignacio, in Algorta around the 29th; Nuestra Señora de los Angeles in Romo the first week of August, between the 1st and the 5th. The International Paella Competition that takes place in the meadows of Aixerrota has been postponed this year due to the General Elections and will take place on 25th July. Las cuadrillas de jóvenes reman en sus txalupas hasta el lugar del que está suspendido un ganso, desde hace años sintéticos, en una sirga. La cuestión es que un mozo o moza resista suspendido del cuello del ganso mientras que el cable sube desde el agua del puerto hasta una altura de varios metros y vuelve a caer. Esta tradición se remonta a más de tres siglos y medio.

A partir de la primera semana de septiembre se rinde culto festivo a la Virgen en Lezama, Lanestosa, Dima, Otxandiano, Amorebieta-Etxano o Fruiz, por ejemplo. Y a Santa Eufemia en Bermeo.

Aste Nagusia en Bilbao

Las fiestas por excelencia del territorio y de buena parte del norte de la península son las de la Semana Grande de Bilbao. Aste Nagusia se prolonga a lo la largo de nueve días con programación, en su mayoría gratuita, prácticamente las 24 horas.

Desde el txupinazo que se lanza desde la balconada del Teatro Arriaga el 19 de agosto arrancan unos festejos que protege Mari Jaia, el sonriente genio femenino de la la fiesta. El Arenal, el Casco Viejo, la Plaza Nueva, buena parte del Paseo de Uribitarte, Jardines de Albia, el parque de Doña Casilda y, en general, todo el centro de la ciudad, viven para la esperada Aste Nagusia. Teatro, toros, conciertos, actividades para peques y personas mayores, romerías, baile, desfiles, eventos culturales de todo tipo, además de la infinita propuesta de las Bilboko Konpartsak se apoderan de lo cotidiano. Además, hoteles y otros organismos privados también se suman a la programación festiva. No se pierda Aste Nagusia. O, mejor, piérdete en ella.

ASTE NAGUSIA IN BILBAO

Bilbao’s Aste Nagusia (Great Week) is the most popular festival in the territory and in a large part of the north of the peninsula. Aste Nagusia lasts for nine days during which there is a programme, most of the events being completely free of charge, running almost 24 hours a day.

El joven chef Javier Izarra, que maduró junto a la lumbre del estrella Michelin Fernando Canales, lleva más de diez años al frente del Tamarises Izarra. La combinación resulta muy sugerente: uno de los más talentosos nuevos cocineros vascos al frente de uno de los restaurantes mejor ubicados en Bizkaia. Tamarises Izarra abre sus comedores y terrazas a unos pasos de la icónica playa de Ereaga, en Getxo.

Javier Izarra, que luce un prestigioso Sol de la Guía Repsol en su puerta recalca que su cocina “está basada en producto local de cercanía, son los sabores de siempre, pero actualizados”. Y añade que quien se siente en su mesa podrá degustar tradicionales guisos “como la vizcaína de callos, morros y

patas”, o bien probar platos como “el tartar de carabineros con licuado de crustáceos”.

Tamarises Izarra propone varios menús, con y sin maridaje de vinos, que parten desde solo 70 euros. La carta varía cada temporada y contempla siempre producto en sazón, ya se trate de hongos, de caza, espárragos frescos, trufa o determinados pescados. “En nuestra casa conviene preguntar qué se ofrece además de lo escrito: trabajamos con el mercado local” añade el chef. The young chef Javier Izarra who grew up next to the Miche lin-starred Fernando Canales, has been helming Tamarises Izarra for more than ten years. It is a very suggestive combination: one of the most talented new Basque chefs at the head of one of the best located restaurants in Bizkaia. Tamarises Izarra opens its dining rooms and terraces just a few steps from the iconic Ereaga beach in Getxo.

Javier Izarra, who has a prestigious “Sol” from the Repsol Guide on his door, emphasises that his cuisine “is based on local products, the flavours of tradition, but brought up to the present day”. And he adds that whoever sits at his table will

be able to taste traditional stews “such as Biscayan tripe, and trotters”, or try dishes such as “prawn tartare with crustacean liqueur”.

Tamarises Izarra offers several menus, with and without wine pairings, starting at just 70 euros. The menu varies each season and always includes seasonal products, such as mushrooms, game, fresh asparagus, truffles or selected fish.

“In our house, it’s a good idea to ask what’s on offer in addition to what’s on the menu: we work with the local market,” adds the chef. A market that offers pleasant surprises every day that Javier Izarra transforms into culinary delights in his restaurant by the sea.

Vegetarian and vegan options are available, naturally.

Cuatro décadas como referente de las buenas copas

Jaime Portela abrió el local que lleva su nombre en 1983. Desde hace casi una década, su hijo Jorge es quien maneja con maestría el vaso mezclador. Situado en la Gran Vía, muy cerca del Sagrado Corazón y frente al NH Villa de Bilbao, Jaime es uno de esos lugares que forma parte de la identidad de la ciudad. Punto de encuentro en los partidos del Athletic, tras las óperas del Euskalduna o a la hora del aperitivo. Sus vermús preparados, acompañados por los bocados que ofrece la barra a la hora del aperitivo, son leyenda en Bilbao.
