From the visionaries behind the concept of the Makal restaurant—the Mayan word for “root”—emerges Raíz y Maleza, an exceptional place grounded in the essence of Mexican cuisine and incorporating refined dishes from various regions of Latin America. Under the direction of chef Diego Guerrero, who was recently recognized as one of the ten best new talents on the culinary scene in Mexico by Food & Wine magazine, the restaurant’s unique brand of gastronomic fusion seeks to provide diners with a fully sensory experience.

Situated on a split-level space, the interior design of the ground floor’s interior design revolves around shades of olive green, grey and blacks. The upper floor is reserved for enjoying cocktails in a space called Maleza.

De los visionarios detrás del concepto del restaurante Makal (que en maya significa “raíz”), emerge Raíz y Maleza, un sitio excepcional que está fundamentado en la esencia de la cocina mexicana e incorpora exquisitos platillos de diversas regiones de Latinoamérica.

Bajo la dirección del chef Diego Guerrero, quien recientemente fue reconocido como una de las diez mejores nuevas revelaciones culinarias en México por la revista Food & Wine, la fusión gastronómica de Raíz busca seducir a través de toda una experiencia sensorial.

Situado en un espacio de dos niveles, el diseño interior de la planta baja despliega una paleta de colores que incluye tonos verde oliva, grises y negros.

La planta alta se reserva para disfrutar de cocteles en un espacio llamado Maleza.

CREPERIE HOUSE

Francisco I. Madero 549-A, Emiliano Zapata With six years of experience, these gourmet crepes stand out for their exceptional taste, texture, and carefully selected ingredients. The restaurant’s inspiration first came to life in Cabo San Lucas, under Juan Carlos Ramírez and chef Bárbara Maribel Rodríguez.

With experience in managing a restaurant distinguished by two Michelin stars, they decided to innovate. “We set out to create a modern concept for this traditional French specialty.

For sweet crepes, we offer chocolate, red velvet, coconut, walnut, blueberry, and classic vanilla crepe dough,” shares Juan Carlos. However, one of the most requested dishes of the house is the savory crepe, with a dough infused with fine herbs or spinach, and filled with ingredients like bacon, mushrooms, cream, and Manchego cheese, among others.

Con seis años de trayectoria, estas crepas gourmet destacan por su excepcional sabor, textura e ingredientes cuidadosamente seleccionados.

La inspiración surgió en Cabo San Lucas, donde Juan Carlos Ramírez y la chef Bárbara Maribel Rodríguez, con experiencia en la gestión de un restaurante distinguido con dos estrellas Michelin, decidieron innovar. “Nos propusimos crear un concepto moderno de esta especialidad francesa. En cuanto a las crepas dulces, ofrecemos masas de chocolate, red velvet, coco, nuez, mora azul y la clásica de vainilla”, comparte Juan Carlos.

Sin embargo, una de las más solicitadas es la crepa salada, con una masa infusionada de finas hierbas o espinacas, rellena de ingredientes como tocino, champiñones, crema y queso manchego, entre otros.

ROUGE THEATRE

Popa 2, Plaza Neptuno L-2, Marina Vallarta Having opened in September 2023, Rouge Theatre is an exciting new proposal for Puerto Vallarta’s nightlife. This space has emerged as the ideal place to enjoy a diversity of tribute concerts and musical shows inspired by nationally and internationally renowned artists, who have made history on the entertainment scene. Alejandro Villa, the operator of the theatre, highlights that the music and service found at Rouge are carefully designed to provide an enjoyable experience for anyone looking to enjoy a little nostalgia from the past. A live band complements the experience playing hits of the 80s, 90s, and early 2000s.

AL FILO DEL AGUA

Carretera a Punta Mita L-3A, La Cruz de Huanacaxtle, Nayarit Having opened in June 2023, this art gallery represents internationally renowned contemporary artists who are well-known in Mexico, the United States, Europe, and South America. Al Filo del Agua also organizes other cultural activities, such as weekly film screenings from Mexican cinema. Adam Bateman, who owns the gallery, which also has a bar in the back for patrons to extend their visit in a more relaxed way, ran an art gallery in the United States in the past.

“I’m also an artist, but I wanted to be in a place where I could surf in my spare time. Here in La Cruz, I have turned my dream into reality.” For art enthusiasts, the gallery offers advisory and curation services to enrich a collection or decorate a home with unique pieces, which can be purchased from any corner of the world.

Inaugurada en junio de 2023, esta galería de arte representa a artistas contemporáneos de renombre internacional, quienes son reconocidos en México, Estados Unidos, Europa y Sudamérica. Al Filo del Agua además organiza otras actividades culturales, como la proyección semanal de películas pertenecientes mexicanas.

Adam Bateman, quien es el propietario de este lugar que también cuenta con un bar en la parte trasera para extender la visita de una manera más relajada, solía dirigir una galería de arte en Estados Unidos: “También soy artista, pero quería estar en un lugar donde pudiera surfear en mi tiempo libre.

Aquí en La Cruz he convertido mi sueño en realidad”. Para los entusiastas del arte, este espacio ofrece servicios de asesoramiento para enriquecer una colección o decorar un hogar con piezas únicas, las cuales pueden ser adquiridas de cualquier rincón del mundo.

Abierto en septiembre de 2023, Rouge Theatre se presenta como una propuesta fresca para la vida nocturna de Puerto Vallarta. Francisco Villa 1010, Parota Center L-20, Jardines de las Gaviotas A new beverage bar offering coffee originating from the state of Puebla, which is among the top five coffee producers in Mexico. “Our coffee offers notes of nuttiness, caramel, berries and cocoa. This combination provides a unique experience of flavors in any of our drinks,” explains Ana María Lomelí, who runs this family business along with her husband, Toni Ventura.

In addition to offering different specialties, Mood Café stands out for being a great space to meet with friends or to network with other professionals with its space dedicated to executive meetings. Book launches and readings are also recurring events at this café.

EL MESÓN DE LOS SABORES Viena 159, Versalles

With delicious typical dishes that represent the traditional cuisine of many regions of the country, like Mexico City, Monterrey, Guadalajara, Oaxaca, Chiapas, and southern Mexico, El Mesón de los Sabores has an extensive menu that includes almost 150 varieties of “garnachas”.

Marvin Piña, originally from Acapulco, Guerrero, created this concept after exploring and savoring these specialties around Mexico. “Last year I decided to retire from the hotel industry to start this project that seeks to pay tribute to our country’s gastronomy.” One of the most outstanding dishes is the handmade huarache, with a rich flavor added by pieces of pork rinds mixed into the dough. It is then topped with marinated beans, meat, and a scrambled egg on top. Diners will be very satisfied by both the deliciousness of the dishes and the menu prices.

Uno de los platillos más destacados es el huarache hecho a mano, cuyo sabor sorpresivo son los trocitos de chicharrón que van añadidos a la masa. Enseguida se cubre con frijol adobado, carne al gusto y un huevo estrellado encima. Tanto la presentación de los platillos como sus precios van acordes a las antojerías originales.

LA CIGALE VERSALLES FRENCH BISTRO Roma 253, Versalles

After 14 years in El Centro in Puerto Vallarta, this iconic French bistro has embarked on a new chapter by moving to the vibrant Versalles neighborhood, with an updated name: La Cigale Versalles French Bistro.

With gratitude for the many years in the former location, chef Christophe Bevilacqua shares his enthusiasm for this new move: “The trend and growth on the culinary scene are now in Versalles. Here we were able to expand and offer a lovely terrace and a spacious patio to welcome our diners.”

The new La Cigale location is a charming pink brick house with a vintage touch, the perfect setting to offer its classic French specialties, from onion soup with Swiss cheese au gratin and Provençal escargot, to their irresistibly delicious chocolate fondant, as well as new dishes that promise to satisfy the most discerning palates.

Después de 14 años en El Centro de Puerto Vallarta, el icónico bistro francés ha emprendido un nuevo capítulo al trasladarse a la vibrante colonia Versalles, lugar al que llegan con nombre renovado: La Cigale Versalles French Bistro.

Con gratitud por los años compartidos en su antigua ubicación, el chef Christophe Bevilacqua comparte su entusiasmo por este movimiento: “La tendencia en oferta gastronómica y crecimiento está ahora en Versalles. Aquí pudimos expandirnos, ofrecer una encantadora terraza y un amplio patio para recibir a nuestros comensales”.

El sitio que ahora ocupa La Cigale se presenta como una antigua casa de ladrillo rosado con un toque vintage, el escenario perfecto para ofrecer sus clásicas especialidades francesas, desde la sopa de cebolla con queso suizo gratinado y los caracoles a la Provenzal, hasta el irresistiblemente delicioso fondant de chocolate; además de los platillos nuevos que prometen cautivar a los paladares más exigentes.

“At first, the idea of change was daunting, but today we are full of motivation and pride,” says Christophe, who studied and started his culinary career in the

south of France before moving to work in New York, where he met his now wife and business partner, Catalina Egard. Here visiting the city on a vacation, they were surprised by the wide culinary offer found in our city and they realized that they could start a French bistro in the center of Puerto Vallarta. And the rest, as they say, is history.

“Al principio, la idea del cambio nos resultaba muy desafiante, pero hoy estamos llenos de motivación y orgullo”, confiesa Christophe, quien estudió una carrera gastronómica en el sur de Francia antes de mudarse a trabajar a Nueva York, donde conoció a su ahora esposa y socia, Catalina Egard. Aunque durante unas vacaciones se sorprendieron por la amplia oferta gastronómica de nuestro destino, se dieron cuenta de que podían emprender con un bistro francés en el centro de Puerto Vallarta. El resto, como dicen, es historia.

Tecilli brings a unique combination of experience and knowledge. After completing her academic training in Mexico City, she embarked on a transformative journey to Florence, Italy, where she immersed herself in the art and technique of interior architecture. This immersive time culminated in a fusion of styles and approaches that would later define her distinguished career. “After returning from Europe, I worked in Mexico City for a while, and then arrived in Puerto Vallarta in December 2005 with the intention of spending a few days here. However, fate worked out differently and I was so well welcomed, that I decided to stay and settle permanently,” she says.

Tecilli lleva consigo una amalgama única de experiencia y conocimiento. Después de completar su formación académica en la Ciudad de México, emprendió un viaje transformador a Florencia, Italia, donde se sumergió en el arte y la técnica de la arquitectura de interiores. Este período de inmersión culminó en una fusión de estilos y enfoques que más tarde definirían su distinguida trayectoria. “Al regresar de Europa, trabajé en CDMX por un tiempo y llegué a Puerto Vallarta en diciembre de 2005 con la intención de pasar unos días aquí. Sin embargo, el destino y sus bondades me recibieron con tal entusiasmo, que decidí quedarme a radicar de manera permanente”, comenta.

Over the years, Tecilli would go on to found Altec, her design firm that has flourished over the past decade. “Since our origins, we have sought to provide excellence within each job and deliver impeccable results to satisfy our clients. With our growth expansion, we have now entered into a partnership with architect Alfonso Díaz de León, who will lead the development and construction area,” she shares.

Tecilli’s vision for this house was a masterful dance between nature and elegance.

“When I started this project, construction was halfway through. Because of this, I was able to carry out certain finishes and all the interior design. I made sure it had some touches where national craftsmanship was highlighted,” she says. The furniture, crafted by skilled Mexican hands, infuses sparks of color between elegant parota furniture and white textiles, creating a visual symphony that blends with the surroundings of the mountains and the ocean.

One of Tecilli’s goals was for its owners to feel that nature was an extension of the house, and she more than achieved this, as the El Adivino Residence is a sanctuary of comfort, elegance, nature, and privacy.

Cuidé que el lugar tuviera algunos toques donde luciera artesanía nacional”, señala.

El mobiliario, confeccionado por hábiles manos mexicanas, infusiona chispas de color entre elegantes muebles de parota y textiles blancos, creando una sinfonía visual que se funde con el entorno de la montaña y el mar.

Uno de los objetivos de Tecilli era que sus propietarios sintieran que la naturaleza era una extensión de la casa, y lo logró con creces, ya que la Residencia El Adivino es un santuario de comodidad, elegancia, naturaleza y privacidad.

During our interview, Tecilli confessed her hobby of exploring all the incredible culinary options in Vallarta · Nayarit. “I like to visit new places. I am a connoisseur that likes to indulge in the great talent that exists in the bay.

I love that there are young people who open their own businesses and put that added value to their concept and to enter and add to the dynamic culinary scene of the region,” she says. Her love of gastronomic diversity is intertwined with her passion for travel, a constant source of new ideas.

“Both Puerto Vallarta and Riviera Nayarit are very inspiring places. Practically, wherever you find a property, you can sit for a moment to contemplate the surrounding. That inspires work that is magnificent, pleasant, and timeless, that’s not based on only a trend, but that it goes in total harmony with this impressive surroundings,” she concludes.

En la confianza de la charla, Tecilli confesó su gusto por la exploración de las continuas propuestas culinarias que llegan a Vallarta · Nayarit: “Me gusta visitar nuevos lugares. Soy una sibarita que se consiente con el gran talento que existe en la bahía. Me encanta que haya jóvenes que abren su propio negocio y le ponen ese valor agregado a su concepto para ingresar a la dinámica escena culinaria del destino”, comenta.

This is Adam Bateman, originally from Ephraim, a town nestled in the mountains of Utah, United States. Here in our destination, this talented creator has found the perfect refuge to combine his two great loves: art and surfing. “For me, more than artists, sculptors are very good at solving problems. The inspiration for our concept is more general, and we take on the task of finding the appropriate material to express that idea,” he explains. This broad and flexible mindset has characterized his career and allowed him to stand out in the world of contemporary art.

With a solid academic background, including a bachelor’s degree in Art and a master’s degree in Fine Arts from Pratt Institute in New York, Adam brings a wealth of experience as a sculptor, curator, and executive director of a non-profit gallery called CUAC (Central Utah Art Center) in Salt Lake City. “That cultural space operated for 18 years, and we held over 300 exhibitions, showcasing artists who went from promising to established.”

However, Adam’s journey took an unexpected turn during the 2020 health contingency when circumstances caused him to rethink his future. His love for surfing led him to the decision to move to Mexico in 2021 and set up home in La Cruz de Huanacaxtle. In this “blank canvas,” as he calls it, his latest project was born: the Al Filo del Agua art gallery, inaugurated in July 2023.

Al Filo del Agua is not limited to being a conventional gallery, but rather presents itself as a dynamic space for experimentation and the exploration of cultural ideas.

It aims to foster an artistic community by providing an exhibition platform to create an environment that encourages interaction and connection.

In this context, the gallery becomes an extension of Adam’s artistic practice, which embraces relational aesthetics and social practice.

“I also like to go out to eat; I love ‘El Barbas’, a taco stand at the main roundabout, which I consider they are the best in La Cruz. For a more elaborate experience, my favorite is Tukari, a restaurant in Sayulita. La Cata del Mar is another good place that recently opened in the Mercado del Mar,” he concludes.

AN EPIC JOURNEY: From Canada to Banderas Bay The humpback whale (Megaptera Novaeangliae) is a migratory species, whose presence has been documented in the Pacific Ocean from Alaska to Costa Rica.

Whales visiting the lush Banderas Bay mostly come from the seas off the US states of California (northern part), Oregon, Washington, and even from Vancouver and British Columbia in Canada. Some travel almost 5,000 kilometers, which can mean a journey of up to four months.

UN VIAJE ÉPICO: Desde Canadá hasta la Bahía de Banderas

La ballena jorobada (Megaptera Novaeangliae) es una especie migratoria, cuya presencia en el océano Pacífico se ha documentado desde Alaska hasta Costa Rica.

Los ejemplares que visitan la exuberante Bahía de Banderas provienen mayormente de los mares frente a los estados estadounidenses de California (parte norte), Oregón, Washington e incluso desde Vancouver y Columbia Británica, Canadá. Algunas de ellas viajan casi 5 mil kilómetros, lo que puede significar una travesía desde hasta cuatro meses.

Since the gestation period is about 11 months, the females return to the northern waters, and the following year, they come to the bay with the intention of giving birth.”

A lo largo de los años, la Bahía de Banderas ha sido testigo de la presencia de otras especies como orcas, quienes son las principales depredadoras de las ballenas jorobadas. Es de resaltar que estas criaturas también realizan travesías similares en busca de su alimento.

“On the other hand, the presence of grey whales in Banderas Bay has been registered, although there have been few sightings. However, most of the time it is just a pause to orientate themselves and find their migratory route,” he points out.

“Por otro lado, aunque han sido pocos sus avistamientos, se tiene registrado la presencia de ballenas grises en la Bahía de Banderas. Sin embargo, mayormente se trata de una pausa que realizan para orientarse y encontrar nuevamente su ruta de migración”, señala.

IDENTIFICATION AS A MEANS OF DOCUMENTATION:

Catalog of Humpback Whales Formally, the study of humpback whales in Banderas Bay began in the late 1980s, when the Universidad Nacional Autónoma de México (UNAM) began sending teams of researchers to identify specimens arriving in the waters of our destination. “That was the origin of an ambitious project called ‘Catalog of Humpback Whale Identification,’ which basically consists of photographing their tails as they are about to dive. In addition, each of these marine mammals has a color pattern ranging from completely white to completely black. These features together act as their fingerprint.”

"I am originally from Mexico City and I first came to Puerto Vallarta in 1991, precisely when one of those UNAM teams invited me to photograph whales,” he recalls.

The aim of this catalog is to collect information in order to understand the behavior of the whales and their migratory route. In this way, it is estimated that approximately 1,100 whales arrive in Banderas Bay each season.

De manera formal, el estudio de las ballenas jorobadas en la Bahía de Banderas inició a finales de la década de 1980, cuando la Universidad Nacional Autónoma de México (UNAM) empezó a mandar equipos de investigadores con el objetivo de identificar a los especímenes que llegaban a los mares de nuestro destino. “Eso fue el origen de un ambicioso proyecto llamado ‘Catálogo de Identificación de Ballenas Jorobadas’, el cual consiste básicamente en fotografiar su cola al momento en que están por sumergirse. Además, cada uno de estos mamíferos marinos tiene un patrón de coloración que va de completamente blanco a completamente negro. Estos rasgos en conjunto funcionan como su huella dactilar”.

“Yo soy originario de la Ciudad de México y llegué a Puerto Vallarta por primera vez en 1991, precisamente cuando uno de esos equipos de la UNAM me invitó a fotografiar ballenas”, recuerda.

WHALE CALVES: Their First Objectives When a calf is born in Banderas Bay, it has to perform two primary activities: feeding and gaining strength for a journey of approximately 3,000 kilometers.

The mother’s milk is essential at this stage, but if calves are disturbed on the surface, their ability to feed is compromised.

Eduardo Lugo emphasizes the importance of respecting this sensitive period for the whale calves by following to the NOM recommendations.

Sus Primeros Objetivos Cuando un ballenato nace en la Bahía de Banderas, tiene que realizar dos actividades primordiales: alimentarse y tomar fuerza para realizar un viaje de aproximadamente 3,000 kilómetros. La leche materna es esencial en esta etapa, pero si los ballenatos son perturbados en la superficie, su capacidad para alimentarse se ve comprometida.

Eduardo Lugo destaca la importancia de respetar este delicado período de las crías a través de cumplir con las recomendaciones de la NOM.

RESPECT AND CONSERVATION:

Whale Watching Regulations Whale watching in Banderas Bay is regulated by NOM-131-SEMARNAT-2010.

This Official Mexican Standard establishes guidelines and specifications to ensure the protection of these mammals and the conservation of their natural habitat.

“Explained briefly, this NOM indicates that small vessels—less than 35 feet—must stay at least 60 meters away from where the whales are emerging. If the vessel is larger, it must stay at least 80 meters away. No more than three vessels may observe the same pod of whales. If other vessels (of any size) coincide nearby, they must be placed at a distance of 240 meters, defined as a ‘Waiting Zone.’ In any case, the maximum observation time is 30 minutes,” he notes.

Eduardo adds: “The aim of complying with this standard is to help visitors better appreciate them. At the same time, it prevents stress in cetaceans and avoids the vessel from coming between the mother and the calf.”

On the other hand, the Secretaría de Medio Ambiente y Recursos Naturales (SEMARNAT) (Secretariat of Environment and Natural Resources) is the government agency responsible for granting permits to companies so that their vessels can carry out whale watching tours in Banderas Bay.

RESPETO Y CONSERVACIÓN: La Normativa para el Avistamiento

La observación de ballenas en la Bahía de Banderas está regida por la NOM-131-SEMARNAT-2010.

Esta Norma Oficial Mexicana establece los lineamientos y especificaciones para garantizar la protección de estos mamíferos, así como la conservación de su hábitat natural.

“Explicada de manera breve, esta NOM indica que las embarcaciones pequeñas —menores a 35 pies— deben mantener una distancia de al menos 60 metros de donde se encuentren emergiendo las ballenas. Si la embarcación es de un tamaño mayor, se deben colocar en un radio de al menos 80 metros.

Solamente tiene que haber tres embarcaciones como máximo para avistar a un mismo grupo de ballenas. En caso de que en la cercanía coincidan otras embarcaciones (del tamaño que sean) necesitan colocarse a 240 metros de distancia, en lo que se define como ‘Zona de Espera’. El tiempo máximo para observarlas, en cualquiera de los casos, es de 30 minutos”, señala.

Eduardo añade: “Lo que se busca con el cumplimiento de esta norma es contribuir a que los visitantes las puedan apreciar de mejor manera. Al mismo tiempo, se previene el estrés de los cetáceos y se evita que la embarcación pueda interponerse entre la madre y la cría”.

Por otro lado, la Secretaría de Medio Ambiente y Recursos Naturales (SEMARNAT) es la dependencia de gobierno que se encarga de otorgar los permisos a las compañías para que sus embarcaciones puedan realizar tours de avistamiento de ballenas en la Bahía de Banderas.

IN THE 1970s, the visionary officials of the Bahía de Banderas Trust (FIBBA) conceived the idea of creating a fully master planned community with its own infrastructure and services in the Los Flamingos area of Nuevo Vallarta.

The Condominio Maestro Los Flamingos is a fully planned community that encompasses 440 hectares of private property, and houses five specific condominiums: Flamingos Nayarta, Los Flamingos Golf, Campestre Los Flamingos I, Campestre Los Flamingos II and Marina Los Flamingos. With about 3.5 kilometers of frontage on one of the best beaches in the bay and easy access to the Highway 200, this real estate gem features a golf course and more than 60 lots, with 40 percent being oceanfront.

The initial housing complexes were completed prior to 2000, mainly build to surround the golf course, and the project has undergone several phases of development. Between 2001 and 2006, the community experienced rapid expansion with the opening of six hotels and numerous residential developments. However, the 2008 economic crisis and other factors that occurred in the following decade slowed its progress.

But, as of 2016, the community has been back on its expansion plans, and is currently home to eight hotel/timeshare properties with close to 2,700 rooms, as well as 14 occupied residential complexes. In addition, there are three residential projects with a total of approximately 450 units currently under construction, which are expected to be occupied in the next three years. In total, this represents only 40 percent of the development that can be done in this community which still offers much opportunity for continued growth.

La estrategia consiste en recibir fondos por adelantado, incluso antes de que se inicie la construcción de los desarrollos inmobiliarios u hoteleros. Esto permite financiar y anticiparse en la creación de nuevos módulos de tratamiento.

“Este enfoque asegura que haya capacidad suficiente para satisfacer las necesidades de agua de nuestra creciente comunidad”, añade.
