Verónica Nava Honc’s life has been governed by competition. With a vitality that is contagious, this natural-born athlete excels in watersports and other water-related activities.

La vida de Verónica Nava Honc ha estado regida por la competencia. De una vitalidad que se contagia, esta deportista nata ha encontrado en el agua su mejor ambiente para demostrar sus habilidades.

Originally from Poza Rica, Veracruz, Nava arrived in Bucerías in 2000 after having lived in Mexico City and practiced speleology—the study and exploration of caves.

Once here, she learned sailing and surfing, when these activities were barely forming a structure in our destination. In her search for extreme sports, in 2005 she traveled to Hood River, Oregon, to polish her kiteboarding and windsurfing skills. It was there she met her husband Adam Finer during a performance in which she was the main fire dancer, another of her great passions.

Originaria de Poza Rica, Veracruz, Nava llegó a Bucerías en el año 2000 después de haber vivido en la Ciudad de México y practicado espeleología y descenso de cuevas.

Aquí aprendió velerismo y surf, cuando estas actividades aún carecían de estructura en nuestro destino. En su búsqueda por realizar deportes extremos, en 2005 viajó a Hood River, Oregón para pulir sus habilidades en kiteboard y windsurf, lugar donde conoció a su esposo Adam Finer durante un performance en el que ella era la fire dancer principal, otra de sus grandes pasiones.

Returning to Vallarta • Nayarit in 2007 and with plans to stay here permanently, both combined their passion for and experience in watersports to create Pacific Paddle, a school that not only offered paddle board classes, but also trained other establishments in the area that offered this service.

Later, to raise the quality of the experience in watersports and be more professional, in 2012 they opened Surf Mexico, a training center for taking lessons in these types of physical activities.

FRIDERITAS LOS AYALA is a small town bordered by lush green hills, where you’ll find a gateway to a small beach corridor. This area is becoming increasingly popular and explored by those who love hiking, because it’s easy to reach on foot from nearby trails.

GETTING THERE After passing the turn to Frideritas Beach, you must follow the mountain path, perfectly defined and signposted, for about 45 minutes until you find the sign that announces Del Toro Beach and/or Del Toro Beach Lookout.

You must follow the path for about 25 minutes before arriving at the beach.

Enjoying a sunset takes on a whole new meaning when doing it from IK Mixology Bar & Cuisine, a gourmet restaurant opened in December 2019 that is located at the foot of Los Muertos Beach. This prime oceanfront restaurant offers a cuisine focused on the fusion of Mediterranean specialties with seafood and fine cuts of beef.

To learn about IK’s delicious concept, the Vallarta Lifestyles editorial team visited this elegant-casual style restaurant.

This place has become a popular Instagram spot because of its spectacular “nest” above the beach.

After being welcomed by the staff, diners will be escorted to one of the tables that offer spectacular views of the Mexican Pacific, where the personalized service offered by this establishment will begin.

Grilled Octopus is one of the most popular entries on the menu. After cooking the protein for about an hour, it is removed and soaked in a marinade made with olive oil, grain salt, pepper, spices and a little paprika. It is refrigerated at approximately 36 degrees Fahrenheit for 24 to 48 hours. When ready, it is cooked for 10 minutes over volcanic stone embers. It is served on a bed of arugula leaves and is finished with asparagus and zucchini. Without a doubt, this is just one opportunity to appreciate the diversity of flavors that you will find in this restaurant.

One of the most intriguing recipes at IK Mixology Bar & Cuisine is Trompo al Pastor, a delicious dish for two that takes the experience of enjoying these iconic tacos to the next level. To learn more about its production process and main ingredients, we approached Roberto Lucena, IK’s executive chef, who gave us a more detailed explanation: “The pork leg steaks are marinated for four to six hours in a sauce prepared with guajillo, ancho and chipotle chiles. Once they take on color, and the flavor is impregnated, they are taken to the grill, where they come out well cooked. They are immediately assembled in the minitrompo and served.”

Después de cocer la proteína por una hora aproximadamente, se saca y se marina en un adobo preparado con aceite de oliva, sal de grano, pimienta, especias y un poco de paprika. Se deja en refrigeración a dos grados centígrados por 24 a 48 horas. Al estar listo, se pone durante 10 minutos en unas brasas de piedra volcánica. Va servido sobre una cama de hojas de arúgula y se decora con espárragos y calabacita. Sin duda, esta es la primera oportunidad para apreciar la diversidad de sabores que encontrarás en este restaurante.

Originally from Zihuatanejo, Chef Roberto Lucena has lived in Vallarta • Nayarit for more than 40 years. His career in the kitchen began at the age of 16, when he worked for some restaurants in the Malecón area. Almost immediately, he went to the Krystal Puerto Vallarta Hotel and, after three years, he entered the Meliá Puerto Vallarta hotel, where he forged a career of 18 years, which included a six-month stay in different cities in Europe where the hotel chain has presence. Upon returning from the Old Continent, already with proven maturity, he joined the IK Mixology Bar & Cuisine team to collaborate from the conception of the project.

Originario de Zihuatanejo, el chef Roberto Lucena ha vivido en nuestro destino por más de 40 años. Su carrera en la cocina comenzó a los 16 años, cuando trabajó para algunos restaurantes de la zona del Malecón. Michael Baietti is one of the administrators of a Facebook group called PV Volleyball - Voleibol, where residents and visitors of our destination organize to play games on different beaches throughout Puerto Vallarta. The invitation to participate is open to the public, but to make sure everyone enjoys the games, players must have basic skills, such as being able to serve, pass and hit.

Although competitive games do appear from time to time, they are mostly friendly matches that foster camaraderie among the participants.
