YURIDIA CURIEL A GUIDE FOR THE CONSERVATION OF THE ENVIRONMENT UNA GUÍA EN PRO DE LA CONSERVACIÓN DEL MEDIO AMBIENTE Yuridia Curiel’s daily activities revolve around the environment. At just 24 years old, she is a very active woman who leads different projects committed to preserving the biodiversity of our destination and its surroundings. Originally from Puerto Vallarta, she graduated from the Instituto Tecnológico de Bahía de Banderas (La Cruz de Huanacaxtle) with a bachelor’s degree in biology. Today, her area of focus in her career is on coral research in the Mexican Pacific.
Las actividades diarias de Yuridia Curiel giran en torno al medio ambiente. Con apenas 24 años, es una mujer muy activa que lidera distintos proyectos comprometidos con la preservación de la biodiversidad de nuestro destino y sus alrededores. Originaria de Puerto Vallarta, egresó de la Licenciatura en Biología por el Instituto Tecnológico de Bahía de Banderas (La Cruz de Huanacaxtle) y actualmente su especialidad está enfocada en la investigación de corales en el Pacífico mexicano.
During her college years, she was invited to conduct research in the Islas Marías. That trip was a watershed for Curiel, who came up with the idea of presenting ecological talks in the city when she returned from the research trip.
Durante sus años de universidad fue invitada a realizar una investigación a las Islas Marías. Ese viaje fue un parteaguas para Curiel, quien a su regreso ya traía la idea de comenzar a impartir charlas ecológicas en la ciudad.
Thus, in 2018 Corazón de Mar was born, a non-profit program whose main objective is to share environmental information among the residents of Puerto Vallarta. “Together, with Alberto Rojas, who was my colleague at the university, I lead this project that has evolved over the past three years. Likewise, Curiel together with Dulce Camacho, founded Gaceta Sustentable in 2020. This is a digital media that publishes content exclusively on Instagram. “What we do is summarize and make national and international environmental news enjoyable and easy to understand. In addition, we carry out interviews, live videos and talks with different personalities so that our readers and followers find out quickly about what is happening throughout the world.”
Siguiendo esta misma línea, en conjunto con Dulce Camacho, en 2020 fundaron Gaceta Sustentable, un medio de comunicación digital que se publica exclusivamente en Instagram. “Lo que hacemos es resumir y hacer amenas las noticias ambientales de nivel nacional e internacional. Asimismo, realizamos entrevistas, videos en directo y pláticas con distintas personalidades para que nuestros lectores y seguidores se enteren de manera rápida sobre lo que sucede en el mundo”.

In addition, I enjoy taking long walks through the jungle around our destination. In the evening, I like to visit one or two of my favorite establishments: LAMARA and/or Pal’Mar Seafood & Grill Garage, where I meet friends to enjoy a quiet, relaxing evening.” Before concluding our conversation, Curiel took the opportunity to make an exclusive invitation to the to help residents as well as the environment. “This project is about a sustainable clothing brand called Yu México. The vision of this endeavor is to raise up and support adult women who were left without work due to the pandemic, but who master the skills of clothing manufacturing made with blankets and other special fabrics for the climate of Puerto Vallarta. We also seek to promote recycling, so the fabric scraps and paper that are discarded when making the designs are taken to Rishie Papel, a company located in Bahía de Banderas that gives these products a new use.” When asked about the achievement or experience of which she is most proud, Curiel shares: “Although all my projects are related to each other, what gives me the most satisfaction is seeing people’s faces when a doubt about the significance of preserving the natural environment is clarified. Then they are moved and ask me what they can do to contribute their bit in preserving the environment. That’s when I feel like my work is worth it, whatever the future holds.” For Curiel, a free day in our destination consists of being—of course—in contact with nature,

Por la tarde-noche visito dos de mis establecimientos favoritos: LAMARA y/o Pal’Mar Seafood & Grill Garage, donde me reúno con amigos para disfrutar de una velada tranquila”. Antes de concluir nuestra conversación, Curiel aprovechó para realizar una atenta invitación a los residentes y visitantes de Vallarta • Nayarit: “Nuestra bahía es muy rica y nos ofrece demasiado. Precisamente por eso debemos saber cómo preservarla. Dense la oportunidad de conocer a todos los grupos y asociaciones locales que trabajan en pro de la conservación del medio ambiente de nuestro destino. Aunque el desarrollo es muy importante para nuestra región, considero que debe llevarse a cabo lo más cercano posible a una armonía”, finaliza.

guitarrista de la escena musical de Vallarta • Nayarit. Su acercamiento con este instrumento fue a los 12 años, cuando estudiaba en la Escuela Secundaria Técnica No. 3, pues después de clases tomaba un taller de guitarra dirigido por el ahora retirado profesor Moisés Gallardo.
Today, with more than 20 years of experience in music, Arteaga has expanded his reach into the different facets of this profession: composer, performer and apprentice. His professional training took place in Mexico City, where he studied for a bachelor’s degree in instrumental performance at the Centro Universitario de Música Fermatta.
Ahora, con poco más de 20 años de trayectoria en la música, Arteaga ha experimentado las distintas facetas de esta profesión: compositor, ejecutante y aprendiz. Su formación profesional ocurrió en la Ciudad de México, donde estudió la Licenciatura en Ejecución Instrumental en el Centro Universitario de Música Fermatta.
Although he began his career in CDMX, for a variety of reasons he returned to our destination and was surprised by the abundant job opportunities in his field. It was this that convinced him to remain in Puerto Vallarta permanently.
Aunque allá en CDMX comenzó a ejercer su carrera, por distintas circunstancias regresó a nuestro destino y quedó sorprendido ante las grandes oportunidades laborales que lo convencieron de quedarse a radicar permanentemente en Puerto Vallarta.
In 2016, he released Brilla, his first EP composed of five songs in which the music and lyrics are his own. “At that point in my life, I was more focused on acoustic music, as well as pop, soul, R&B and rock-pop. This combination of musical genres can be appreciated in this album available on Spotify and YouTube,” he comments.
En 2016 lanzó Brilla, su primer EP compuesto de cinco canciones cuya música y letras son de su autoría. “En ese momento de mi vida estaba más enfocado en la música acústica, así como en el pop, soul, R&B y rock-pop. Esta combinación de géneros musicales puede ser apreciada en este álbum disponible en Spotify y YouTube”, comenta.
When asked what goes through his mind when he gets on stage to perform in front of an audience, Arteaga replied: “I just tune out. It is like going to a very special place and away from everything to which I have always had access. My audience and my peers deserve all my respect. This feeling runs through me like a current, and it has remained this way since the first time I performed for others.”
Al preguntarle por lo que pasa por su mente cuando llega la oportunidad de subirse a un escenario, Arteaga respondió: “Simplemente me desconecto. Es como irme a un lugar muy especial y apartado de todo, al que siempre he tenido acceso. Mi audiencia y mis compañeros se merecen todo mi respeto. Este sentimiento continúa tan vigente como desde la primera vez”.
Currently, Arteaga is focused on the release of his most recent unpublished material. “It is about the single No te lo digo (I do not tell you), a song that I produced in collaboration with my friend Juan Pablo Aispuro, who is in France. Through video calls, we were able to share fragments of the music and lyrics and to give feedback until we achieved the final result. The lyrics and music of this song are also my own, and we are using the basis of soul and R&B that I have played all my life, as well as a trap-music twist. Although the song is completely ready, my intention is to make the official launch when the video clip has been produced. Soon it will be uploaded to the different streaming music platforms.”
Actualmente, Arteaga está enfocado en el lanzamiento de su material inédito más reciente. “Se trata del sencillo No te lo digo, una canción que produje en colaboración con mi amigo Juan Pablo Aispuro, quien está en Francia y a través de videollamadas pudimos compartir fragmentos y dar retroalimentación hasta lograr el resultado final. La letra y música de este tema también son de mi autoría y vamos a encontrar el soul y R&B que he tocado toda mi vida, así como un giro más trap. Aunque ya está completamente listo, mi intención es hacer el lanzamiento oficial cuando el videoclip se haya realizado. Enseguida se subirá a las distintas plataformas de música en streaming”.
For Arteaga, Puerto Vallarta is a generous destination that has helped him build his identity and a following as well as the opportunity to meet many musicians and artists who have broader perspectives on what they want to do. “Some are very advanced in the matter of their composition, and others are constantly evolving in their art. I very much admire the personal journey of achievement of each person I’ve met, as

well as the inner process that each artist goes through in order to genuinely share their gifted works with all of us who make up this vibrant art scene.” As a person who lives in El Centro, a day off for Arteaga often includes a visit to the beach, either early in the morning or just at sunset, where he walks and/or meditates while being near the sea. “I also really like going to coffee shops. I really enjoy this exquisite drink—although now I’m gradually exchanging coffee for tea. Even so, I love these establishments, where I can reflect and think for a moment about the projects I am working on.” Finally, Arteaga gave a review of the present and future of our destination: “Puerto Vallarta is an amalgamated destination whose treasure lies in its people from all walks of life and places from around the world. I see a city with a lot of desire to live—people here are very happy and full of energy. This same abundance is what encourages more visitors to come to this beautiful place where the mountains and the sea meet. I believe that this set of benefits will continue to favor the predilection for coming to enjoy this beautiful bay.”

Veo una ciudad con muchas ganas de vivir, muy alegre y llena de energía. Esta misma abundancia es la que propicia que más visitantes lleguen a este hermoso lugar donde coinciden la montaña y el mar. Yo considero que este conjunto de bondades continuará favoreciendo la predilección por venir a disfrutar de esta hermosa bahía”.

Taco Mexicano This taco
surprises the eye with the way it is served and prepared: on a tortilla of combined corn (blue, white and pink) handmade at the moment, a bed of huitlacoche (corn truffle) mole is placed and it’s added a sauteed huitlacoche with epazote (a Mexican herb), a tender grilled corn and fresh cheese. It’s garnished with some epazote leaves and a couple of chinicuiles (maguey worms, edible caterpillars that infest maguey and blue agave plants).

Taco Sirenito This taco’s main ingredients are pork belly and a crisp and striking octopus pork rind served on in a white corn tortilla. Some fresh avocado, sprouted and a couple of slices of radish accompany the proteins. To add a peculiar flavor that packs a punch in each delectable bite, the taco comes served with a habanero chile sauce made with smoked pineapple. This specialty comes as a meal of three tacos.

Taco Chino This taco is served on a fresh handmade blue corn tortilla. It contains pork belly braised with miso, soy, beef broth and pork. It is served on a bed of fresh jocoque (a Mexican fermented dairy product) and is accompanied by a slice of avocado, as well as a few sprigs of cilantro. It has a delicious mild green salsa.

Opened in December 2020, La Rústica Mita Beach Club is an establishment located at the foot of El Anclote Beach, in the heart of the picturesque town of Punta de Mita. Rodrigo Peña is the mastermind behind this casual culinary concept which started in Sayulita and it is characterized by offering a friendly, kind service and the atmosphere is totally in tune with the surfing environment of the area.
Abierto en diciembre de 2020, La Rústica Mita Beach Club es un establecimiento ubicado al pie de la Playa El Anclote, en el corazón del pintoresco pueblo de Punta de Mita. Rodrigo Peña es la mente maestra detrás de este concepto culinario casual que inició en Sayulita, el cual se caracteriza por ofrecer un servicio amigable, amable y en total sintonía con el ambiente surf de la zona.
A fabulous way to begin the culinary experience in this restaurant is with one of the most spectacular entrees on the menu: El Taco de Jaiba Suave. The crab is fried and served on a flour tortilla carefully placed inside a short glass, where previously it has served a sauce made of roasted Poblano chiles and cream cheese. The best way to savor this specialty is to soak the taco in the sauce, add a few drops of the citrus and enjoy.
La experiencia culinaria en este restaurante puede comenzar con una de las entradas más espectaculares del menú: El Taco de Jaiba Suave. La preparación de este platillo consiste en sofreír la proteína y luego servirla sobre una tortillita de harina que se coloca dentro de un vaso corto, donde previamente se ha vertido un poco de salsa verde preparada con chiles poblanos asados y queso crema. Su presentación es de tres y van decorados con unas pequeñas rodajas de limón real. La mejor manera de saborearlos es remojar el taco en la salsa, agregarle unas gotitas del cítrico y disfrutar.
One of the most outstanding specialties of this beach club is the Catch of the Day, which is prepared in a variety of ways to take advantage of the fresh ingredients of the region. To learn more about the meticulous detail that goes into preparing this dish as well as its main ingredients, we approached Fili Mayorga, executive chef of La Rústica Mita Beach Club. He kindly took the time to give us a more detailed explanation: “This is a red snapper fillet that has been seasoned with salt and pepper and then covered in a banana leaf. It is steamed in the oven and served with chopped tomato, red onion slices, whole asparagus, a couple of chambray onions, rosemary and thyme. This preparation is special only to our restaurant because it is about our reinterpretation of the Veracruz-style fish.” “One of the unexpected twists of this dish is the vegetables that are served as a garnish. We prepare a chimichurri in-house and marinate the vegetables in the sauce before we add them to the dish. Cooked in an artisanal way throughout the process, this dish is assembled with a gourmet style,” adds Mayorga. In addition to these fine dishes, one of the most casual meals at La Rústica Mita Beach Club is its wood-fired pizzas, which are made with a sourdough crust to provide a very rich touch of acidity. Para conocer más a detalle su minucioso proceso de elaboración e ingredientes principales, nos acercamos a Fili Mayorga, chef ejecutivo de La Rústica Mita Beach Club, quien amablemente se tomó el tiempo para brindarnos una explicación más detallada: “Se trata de un filete de huachinango sazonado con sal y pimienta, el cual va empapelado en hoja de plátano. Se mete a hornear al vapor y se sirve con trocitos de jitomate, rodajitas de cebolla morada, espárragos enteros, un par de cebollas cambray, romero y tomillo. Esta preparación es especial porque se trata de nuestra reinterpretación del Pescado a la Veracruzana”. “Uno de los giros inesperados de este platillo son los vegetales que se sirven como guarnición, pues previamente se bañan en un chimichurri que nosotros mismos preparamos. Originally from Tepic, Nayarit, Fili Mayorga began his career in the kitchen more than 12 years ago in his hometown, where he worked in restaurants such as Emiliano and LOMA 42. Three years ago, he arrived at our destination during a vacation season in which he planned to work intermittently to be able to enjoy his stay in Sayulita. He joined La Rústica on the recommendation of a friend, and the work environment and the job opportunity convinced him to stay there. Soon after, the doors opened for him to become the head chef in the kitchen of La Rústica Mita Beach Club. Here, he gets to exercise his culinary creativity by fusing the basic techniques of Italian gastronomy with the freshest fish and seafood caught right in Vallarta • Nayarit. Originario de Tepic, Nayarit, Fili Mayorga comenzó su carrera en la cocina hace más de doce años en su ciudad natal, donde trabajó en restaurantes como Emiliano y LOMA 42. Hace tres años llegó a nuestro destino durante una temporada vacacional en la que pensaba trabajar de manera intermitente para poder disfrutar de su estancia en Sayulita, donde ingresó a La Rústica por recomendación de un amigo. Rather, it is a philosophy of creation that can have many nuances. However, they are all governed by an idea of respect for nature and the environment that surrounds the vineyards, something that is very worth knowing and, of course, tasting,” explains Jeziel Laguna, manager and sommelier of La Rústica Mita Beach Club. In addition to the classic drinks prepared with distillates such as gin, whiskey, rum, raicilla and tequila, this restaurant’s elegant bar offers a wide variety of artisan cocktails, as well as a wine cellar with renowned labels from Argentina, Chile, France, Italy and Mexico. Be sure to leave room for dessert. An excellent option to end the evening on a delicious note is the Caramel Flan. This sweet is made with homemade caramel and is served with coconut ice cream and fresh orange wedges. “An orange cream is subtly added to promote an exquisite combination of flavors and it is decorated with flower petals,” says Mayorga.
