From Our Desks To You:

Dear Members,

What an invigorating first meeting of our new board! When asked about their goals for the Club, the themes were about how to bring more engagement and connection opportunities for members, continuing to up our game on food and beverage offerings, and keeping our building, grounds and equipment beautiful and humming while meeting our fiscal responsibilities.

Our first goal: to sell out proprietary membership, and we're really getting close! Now is the time to consider upgrading your non-resident or social membership, taking advantage of our current promotion. It's also the time to ask that friend or colleague of yours if they'd like to take advantage of our promotion before we have a waitlist. Reach out to member services!

To all of you joined us recently under the current promotion – Welcome! We are so thrilled to have you here with us. I know you will find a warm and welcoming home here at the Club, and we look forward to enjoying many meals, drinks, activities, and more together.

Please come to our member reception events to have a lovely opportunity to meet and greet new and current members! In addition to the quarterly free Member Appreciation Happy Hour, you are also invited to enjoy Welcome Wednesdays! Every Wednesday from 2:30-4:30pm, starting on January 8th, you can come meet fellow members while enjoying complimentary coffee, tea, and mulled cider. Take a break and unwind by the cozy fireplaces in our library or main living room or enjoy friendly conversation in the bar area.

Meet new people and deepen your connections in a relaxed, welcoming atmosphere!

I also enjoy just showing up for time by the fire and a drink in the bar, especially during our winter season when the Club is so warm and inviting. In fact, I find the ambiance and serenity of our Club such a joy during and after the holiday season and with so much uncertainty in our world, it is truly an oasis of comfort, and camaraderie. Have you tried any of the seasonal cocktails on offer? I hear there are also wonderful non-alcoholic options available. Whatever your drinks of choice, the Club bar– appropriately christened The 1919, after the year our Club was founded– is a great place to enjoy them!

On the food and beverage front, have you been in recently to try some of the wonderful new dishes on our seasonal menus? The lamb burger and scallops are standouts for me! Long-time member Robert Monk loves the homemade dressing on our Caesar salad and the recent Japanese stir-fry (to which I added salmon) was mouthwatering! I'm so excited about what's to come with Chef Tony's inspiration and the leadership of our General Manager Sarah and Chair of the Food & Beverage Committee, Patrick Day.

Dear Members,

What a pleasure to see our Club so vibrant and busy. The recent surge in energy and camaraderie within these walls is truly outstanding, and it fills us with pride and eager anticipation for the possibilities ahead for our beloved Club. Whether you are a long-standing member or one of the many new faces we’ve welcomed recently, it is wonderful to see you all making the Club your own, fostering connections that enrich our community, and participating in Club events, activities, and more.

We enjoyed so many wonderful Club traditions during the holiday season, as well as the addition of some truly special events thanks to our members. Of particularly note was the incredible evening organized by our members Cara and Randall Rademaker from the Couture Pattern Museum, the only dedicated fashion museum on the Central Coast of California, located right here in Santa Barbara. Be sure to take a look at the photos of the special Balenciaga evening with Maria Kublin on page 19.

It is also such a joy to see everyone enthusing over our new seasonal menus and weekly Chef’s Specials. Chef Tony and his team, alongside Front of House Manager Alena Gleich and her team, are excited to continue to inspire, stimulate, and offer exceptional dining experience for all.

I would like to extend a heartfelt thank-you to the many members who continue to bring us fresh ideas and initiatives for the Club, and to all of you who have stepped up to lead our various social clubs and societies. Your enthusiasm and dedication are key to making your Club the dynamic and engaging space it is. A new member society joining the ranks starting this quarter is the Performing Arts Society Roundtable Luncheons. This exciting initiative provides a platform for members to come together, share their passion for the arts, and build meaningful relationships through lively discussions and shared experiences, as well as occasionally share the table with special guests from the industry for behind-the-

scenes insights, and more. This new society meets on Fridays, so you can also enjoy the free glass of wine all members enjoy on Fridays with lunch!

I’m also excited to introduce Welcome Wednesdays, a new member-driven initiative designed to help you connect, meet new faces, and deepen their ties within the Club. Whether you’re looking to expand your network, make new friends, or simply enjoy great company, Welcome Wednesdays are the perfect way to do so.

For another great way to connect and celebrate together, I encourage you to join us for our daily Happy Hour and a Half at 'The 1919' bar, from 5-6:30pm. It’s a wonderful way to unwind, share a drink, and relax with friends, family, or colleagues after a long day. Whether you’re catching up with familiar faces or meeting someone new, the bar is the perfect spot to enjoy the lively spirit of our Club.

As we start off the new year, I look forward to some of our annual favorites this quarter, including Chinese New Year, St. Patrick’s Day Dinner, and Valentine’s. For our quarterly Wine Maker’s Dinner we have the honor of hosting Dovecote Estate Winery in March, and our quarterly Boutique Wineries Tasting Room in February is promising to be fabulous as always. I am also thrilled to share that we have nearly reached our goal of selling out of proprietary memberships. This marks an exciting new phase for the Club, one in which we can focus even more on bringing engaging and innovative offerings to our members and their guests. Thank you for your support in making this milestone possible.

REMINDERS:

LOIs & Reservations for Reciprocal Visits - New Online Form

A reminder that you must get a Letter of Introduction (LOI) from us ahead of time for each and every Reciprocal Club visit. We do ask for 2-3 business days to prepare and send your LOIs. A reminder also that you are responsible for making and managing any and all reservations with our reciprocal partners yourselves. Please see page 18 for more information and instructions on how to access reciprocal clubs. Please use the online form via the website and mobile app to request your LOIs.

Cancellation Policies

A reminder that we do have a 72-hour cancellation policy. For special events and meals, including but not limited to special menu dinners, Club events, activities, socials, single-seating meals, and more, cancellations can be made up to 72 hours before the event only. Cancellations less than 72 hours before will be charged in full for you and all guests. Additions to reservations after a reservation deadline are not permitted without approval. Waitlist may be in effect.

CLUB POLICIES: Creating Enjoyable Experiences for All

As we continue to evolve and improve, we ask that all members take a moment to review our updated Club policies to ensure we maintain the welcoming and respectful environment we all enjoy.

University Club of Santa Barbara - Code of Conduct

Mission Statement

The University Club of Santa Barbara is a community where diverse members come together to connect, celebrate, and grow. This Code of Conduct outlines the standards of behavior expected from all members to maintain a respectful, welcoming, and enriching environment.

1. Respect and Inclusivity

• Respect for Diversity: The Club values diversity and inclusion. Members are expected to treat each other with respect, regardless of race, ethnicity, gender, sexual orientation, religion, age, or any other characteristic.

• Inclusive Environment: Discrimination, harassment, or any form of exclusionary behavior will not be tolerated. Members should foster an environment where everyone feels welcome and valued.

2. Professional and Social Conduct

• Courtesy in Interactions: Members should engage in all Club activities with courtesy and professionalism. Polite behavior and considerate communication are expected at all times.

• Networking Etiquette: The Club encourages networking, but solicitation or promoting of personal business interests in an aggressive or intrusive manner is prohibited.

3. Respect for Club Spaces and Staff

• Use of Facilities: Members are expected to use Club facilities responsibly, maintaining cleanliness and respecting the shared spaces. Club property should be treated with care.

• Interaction with Staff: Members should treat all Club staff with respect. Any concerns or issues should be addressed through appropriate channels rather than directly confronting staff members.

4. Celebration of Food and Beverage

• Dining Etiquette: Members should observe proper dining etiquette and respect the dining experience of others. Loud or disruptive behavior is not appropriate in dining areas.

• Responsible Alcohol Consumption: The Club promotes the enjoyment of fine beverages, but members must consume alcohol responsibly. Excessive drinking and inappropriate behavior due to intoxication are unacceptable.

5. Participation in Events

• Engagement and Punctuality: Members are encouraged to actively participate in Club events. Punctuality is important, and members should arrive on time to avoid disrupting events.

• Respect for Speakers and Organizers: Members should show respect for speakers and event organizers by listening attentively and engaging constructively during discussions.

6. Conflict Resolution

• Addressing Concerns: Any conflicts or concerns should be addressed promptly and respectfully. Members are encouraged to resolve issues through direct, civil communication or by reporting concerns to Club management.

• Zero Tolerance for Harassment: Harassment of any kind is strictly prohibited.

7. Compliance with Club Policies

• Adherence to Rules: Members must comply with all Club rules and policies, including this Code of Conduct.

• Cooperation with Club Management: Members are expected to cooperate with Club management and staff in enforcing these rules and maintaining a positive environment.

The University Club of Santa Barbara is dedicated to providing a space where members can enjoy social, cultural, and educational experiences in a respectful and inclusive environment. By adhering to this Code of Conduct, members contribute to the Club's mission and ensure it remains a vibrant and welcoming community for all.

Dress Code

A visit to a private club includes the assurance of certain hallmark standards. This includes a carefully curated environment and fostering a true home away from home among peers and like-minded friends. In this inclusive spirit we do not have a dress code but ask members and their guests dress appropriately (Smart Casual* attire is suggested) and refrain from wearing the below:

• No Baseball Caps in Dining Room

• No Political Attire

• No Graphic Tees

• No Dirty, Unkempt, or Suggestive Attire

Certain Club events may have specific dress codes. These will be published on each event’s promotional materials.

All final decisions or settling of disputes with regard to appropriate dress will be made by management. We do ask all guests to be courteous of shared spaces and to follow any and all directions from our Club staff.

*Smart Casual is defined as clothing that is neat and professional but not necessarily formal.

Changes to Reservations:

Changes to reservations after reservation deadlines have passed must be emailed to member.services@uclubsb. org. Additions to reservations after a reservation deadline are not permitted without approval. Waitlist may be in effect.

* Examples of special culinary events include Wine Dinners, Oktoberfest, St. Patrick's Day Dinner, Lobster Boil, Holiday Social, New Year's Eve Party, and similar evenings when regular dinner is not served.

Wine Corkage Policy

At our Club, we strive to offer an exceptional dining experience, complemented by a curated wine selection. For members who wish to bring their own bottles, we have the following corkage policy:

Proprietary Members: As a benefit, Proprietary members enjoy waived corkage fees for up to two 750ml bottles per visit.

Wine List Restrictions: We kindly ask that you refrain from bringing bottles that are currently featured on our Club’s wine list.

Thursday Corkage Waiver: On Thursdays, all members are invited to bring their own wine without any corkage fee, regardless of membership category, for up to two 750ml bottles per visit.

Private Events: Please note that this corkage policy does not apply to private events hosted at the Club.

We appreciate your cooperation in making the wine program a success. Should you have any questions or need assistance with selecting a wine from our list, our staff is happy to assist.

Dog Policy

At the University Club of Santa Barbara, we are proud to be a dog-friendly establishment. We warmly welcome dogs on our patio, allowing members and their canine companions to enjoy the Club's ambiance together.

To ensure a pleasant experience for all our members, we kindly ask that you adhere to the following guidelines:

1. Leash Requirement: All dogs must be kept on a leash at all times while on Club premises. Please keep your dog close to your table and avoid allowing them to approach other diners.

2. Behavior: We ask that dogs remain calm and well-behaved during their visit. If your dog becomes disruptive or causes discomfort to fellow members, you may be asked to remove your dog from the Club.

3. Service Dogs: Service dogs performing a task in accordance with the Americans with Disabilities Act (ADA) are welcome throughout the Club, including all indoor areas. These dogs are trained to provide essential services to their handlers and are exempt from the above restrictions.

4. Therapy Dogs: Please note that therapy dogs, while providing valuable emotional support, are not classified as service dogs by the health department and are subject to the same guidelines as other pets.

We appreciate your cooperation in maintaining a welcoming and enjoyable environment for all our members and their guests. Thank you for being part of our community!

HOW-TO: Reciprocal Club Visits

University Club of Santa Barbara Members enjoy reciprocal access to over 200 private clubs in the US and worldwide.

• A full list of current reciprocal clubs can be found online (website and mobile app).

• To access a reciprocal club, be it just for a meal or golf, or for an extended stay:

1. Members please first contact the club(s) you wish to visit to check availability*.

2. Once you have confirmed availability with the reciprocal club(s):

Use the online form (accessible via the website and the mobile app) for the required Letter of Introduction (LOI).

3. Please allow 2-3 business days for us to email your LOI out. You will receive a copy as well.

Please Note:

• Members are responsible for making any and all arrangements and reservations directly with the reciprocal clubs they wish to visit.

• Members must settle any and all bills directly with the reciprocal clubs before they leave.

• The University Club is not responsible for any outstanding member bills with reciprocal clubs.

• Each of our reciprocal club partners has their own rules, regulations, pricing, and amenities for visiting reciprocal members. Please contact the club(s) you wish to visit to learn more about what they offer reciprocal club members.

Balenciaga Through the Lens of Tom Kublin

In November, the Couture Pattern Museum hosted a special evening at the University Club with Maria Kublin, author, art historian, and daughter of Balenciaga photographer Tom Kublin. University Club members were invited to attend this exceptional evening and to learn more about the Museum - the only dedicated fashion museum on the Central Coast of California, located right here in Santa Barbara.

Dynamic Duo: Phil & Dylan

If you are looking for friendly Santa Barbara style service with a winning smile, a gentle demeanor, and an excellent intuition for making guests feel at home, look no further than the University Club’s very own Philip Spadoro (29) and Dylan Osgood (25). Both born and raised in Santa Barbara, this dynamic duo share a love for what they do and for their hometown.

Santa Barbara native Philip Michael Spadoro revels in the simple pleasures. Santa Barbara, he notes, “is an easy place to stay.” Most of his family hails from Santa Barbara and he himself attended Hope Elementary, La Colina Junior High, and Dos Pueblos High School, followed by City College to pursue a degree in photography.

Phil came to the University Club through Front of House Manager Alena, with whom he had worked previously at Enterprise Fish Co. Before working here, he says, “I had no idea what the University Club was, but I knew I was up for more of a challenge and was excited to work in fine dining. Once I started here, I realized it was exactly what I was looking for.” Phil appreciates that the Club gives him opportunities to better himself and to constantly learn thanks to the regular trainings and supportive environment.

He also appreciates his coworkers. “They are more like family,” he says. “They welcomed me with open arms and I felt like I fit in right away. It’s fun to come to work and I’m always happy to see who I get to work with each shift.”

In his free time Phil likes to fish – he recommends Lake Cachuma by the pass and the Goleta Pier for nice spots. “A bunch of us staff from the Club went fishing together recently at the lake,” he recalls with a chuckle. In fact, he says with a smile, “golfing has also taken over my life recently thanks to the gang here. Some of us play golf together as well.” He also enjoys photography and spending time with Tyra, his girlfriend of 10 years. “We met on State Street, at Tilly’s. We were both buying shoes,” he recounts with a grin. “She was new to town. I don’t know how I had so much confidence that day… maybe it was the new shoes!”

The best thing about working at the Club, according to Phil, is the camaraderie: “We all have each other’s backs, everyone is always ready to help each other out.” He also enjoys working with and for the members: “It’s nice to be able to make relationships with members. It is easier to serve them, catching up with them, beyond just the food and the drink. And it is fun to get to know their needs and likes over time to be able to better serve them and their guests.”

This past year in particular Phil is thankful for the tremendous amount of growth the Club has seen. “We have definitely leveled up, especially the past few months,” he notes. “I am very excited for the members to continue to see this and all that we are working so hard on. They’ve gotten a taste already, and there is so much more we look forward to doing for them. The Club is really thriving now and we have so much space within which to create and grow. It’s exciting!”

Dylan Osgood - Then and Now

Dylan Osgood exudes SoCal vibes and style. Another proud local, Dylan attended Monroe Elementary on the Mesa, La Colina Junior High, and San Marcos High School, followed by City College for economics, until Covid derailed his plans to transfer to San Diego.

“I moved to NorCal,” he recounts, “near San Francisco.” There he worked in sales for two years, noting with a sheepish chuckle that “I was good at it, but I was too honest!” He decided to come back home, working at Enterprise Fish Co. before coming to work here at the University Club, starting at the same time as his friend Phil. (In fact, Dylan met Alena and Phil when he was just 18. “Seven years! Wow! So crazy,” he exclaims.)

The thing Dylan likes the most about his work here are the members. “They’re super kind and genuinely care about the Club,” he says. “We have a rapport with them that goes beyond just ‘order taker’ like at other clubs.” Dylan says the members are what make the Club so special: “It’s not really home without the people – the members and the staff too.”

Like Phil, Dylan’s favorite event here at the Club is also the Summer Soirée. He loves how vibrant and lively it is, and getting to see everyone having a good time under the Santa Barbara sun. “It’s a grand party!” he grins. Dylan particularly enjoys being able to give members and their guests more than just regular service. “It is fun to be able to curate experiences for each member, and to have people leave feeling better than when they came in.”

Dylan revels in the sense of community here at the Club. “I think it’s really beautiful, that so many like-minded people have found a space to be themselves. Everyone here seems so connected, so engaged. It’s a privilege to get to be a part of this and to see what is possible.”

In his free time, Dylan loves skateboarding. He has been doing it for nearly two decades, ever since his uncle bought him and his brother a full setup for Christmas when he was just five years old. (“You never know the impact a gift can have!”). He also enjoys hiking the trails around Montecito.

A reminder to please take note of event details when signing up. For all of our events, information is included about pricing, seating, start times, type of menu, and more. You can find event listings in this magazine on pages 27-35 and via the online calendar on our website and via the member app. Each listing lets you know if an event is a seated affair or party/receptionstyle without fixed seating; and if the former, whether seating is at individual, private tables or larger communal tables for the evening; if the menu is buffet, à la carte, or prix fixe; seating times; and more.

Walk-Ins For Regular Lunch & Dinner Service

While we do strongly encourage reservations (help us better serve you and your guests by letting us know to expect you), walk-ins are also welcome for regular meals!

*RSVPs are, however, always needed for special meals and events. Be sure to check the online members’ calendar to ensure there is not a special meal on the date you want to come in. There are no walk-ins for special events and meals requiring reservations - see also next point below.

No Regular Dinner During Special Culinary Events

A reminder that there is no regular dinner available during culinary evenings held in lieu of regular dinner. Walk-ins are also not possible on ‘Gold’ evenings (such as Wine Maker Dinners, Oktoberfest, St. Patrick's Dinner, Lobster Fest, Holiday Dinner,

and similar). Reservations are always required ahead of time for special culinary evenings; food and seating are prepped ahead of time according to the reservation lists. We do have a 72-hour cancellation policy for these same reasons. You are welcome to stop by for a drink at the bar during special dinner events, but you will not be able to order dinner of any kind.

The 1919 Bar & Happy Hour (And A Half!)

Named for the year our beloved Club was founded, 'The 1919' Bar is staffed from 5-8pm, with happy hour running from 5-6:30pm every Tuesday-Friday. The perfect setting for drinks with family, friends, or colleagues, to come in and relax after a long day, or to socialize with fellow members. Be sure to try any of our seasonal specialty cocktails or one of the nonalcoholic drinks on offer!

No Corkage Thursdays & Free Wine Fridays

You are always welcome to bring your own bottle(s) of wine when you dine at the University Club. Corkage fees are waived every Thursday at dinner for up to two 750ml bottles per visit. Enjoy a free glass of wine with your lunch every Friday.

4 bone in chicken thighs

4 chicken drumsticks

From Our Kitchen to Yours

The Perfect Winter Dish to Stew On

Chicken Cacciatore, “Hunter’s Stew,” or Pollo Cacciatore in Italian, is a hearty, rustic stew made with chicken and vegetables simmered in a tomato sauce rich with wine and herbs. Simple, cozy, and downright tasty homemade comfort food!

1/2 tsp cooking salt / kosher salt

1/4 tsp black pepper

1 tbsp olive oil

1 onion , halved, finely sliced

DIRECTIONS:

CHICKEN:

2 rosemary sprigs

2 bay leaves

3 garlic cloves , finely minced

3 anchovy fillets

8 oz mushrooms , sliced 1/3 cup tomato paste

1. Season – Spread the chicken out on a tray. Sprinkle both sides with the salt and pepper.

2.  Brown skin – Heat the oil over high heat in a large, deep, heavy based pan, preferably one with a lid . Place the chicken thighs in the pan, skin side down, and cook until the skin is golden brown, around 6 minutes. Turn and cook the flesh side for just 1 minute, then remove the chicken onto the same tray. Then add the drumsticks and brown each side as best you can, about 1 1/2 minutes on each side .Remove onto the tray.

CACCIATORE:

3/4 cup pinot noir or other dry red wine  2 cups chicken stock/broth , low sodium

14 oz canned crushed tomato

16 whole kalamata olives , pitted, drained

1/4 tsp cooking/kosher salt

1/4 tsp black pepper

1 tsp dried oregano

1. Onion – Pour off and discard all but about 2 tablespoons of fat. Turn the heat down to medium and let the pan cool slightly. Add the onion, rosemary leaves, bay leaves, and dried oregano. Cook for 3 minutes until the onion starts to soften.

2. Garlic and anchovies – Clear a space in the middle of the pan. Add the anchovies and garlic, cooking, mashing up the anchovies, until the garlic is light golden, then stir it into the onion.

3. Vegetables & tomato paste – Turn the heat back up to high. Add the mushroom. Stir until softened – about 5 minutes. Add the tomato paste and cook for 2 minutes to cook out the sour flavor – do not shortcut this.

4.  Sauce – Add the wine. Stir, bring to simmer then allow to reduce by around 75%. Add the stock, canned tomato, salt and pepper. Stir, bring to a simmer.

5. Simmer – Then carefully place the chicken into the sauce (skin side up) and pour any juices on the tray in as well. When the liquid returns to a simmer, cover, reduce the heat to medium then simmer for 20 minutes. Remove lid, add olives, simmer for a further 10 minutes (no lid). This will reduce and thicken the sauce.

6. Serve the chicken with plenty of sauce over mashed potato or polenta, sprinkled with parsley if desired.
