From Our Desks To You:

Dear Members,

Wow! I am so proud of all that we have accomplished together these past months at the Club. It is truly heartening to see our Club so vibrant and full of life, with members actively engaged in such a wide range of activities and events. Whether I am here for a meeting, an event, drinks, or a meal, I am always struck by the warmth and camaraderie that define our community. In a world that often feels uncertain, our Club remains a place of comfort, connection, and relaxation.

A huge thank you goes out to Sarah and her dedicated team, as well as the Membership Committee, for their outstanding efforts on our recent membership campaign. Thanks to their hard work, we have welcomed a fantastic influx of new members over the past quarter. To all of our new members—welcome! I hope you are already beginning to experience the many joys and benefits of being part of our community. Our welcoming spirit is one of the trademarks of our Club, and I am thrilled to have you join us in celebrating, connecting, and growing together.

It has also been wonderful to see so many members not only actively participating in Club life, but dedicated and involved in making this space truly your own. Special thanks to Board members Kirsten Ellis and Cynthia McClelland for their dedication in planning new member activities to share together also off property - be on the lookout for those on the calendar and as fun pop-up events via email.

At our Annual Meeting in October, I spoke about the importance of long-term sustainability and

fiscal responsibility for our Club. We are excited to delve further into these key priorities as we look to the future, ensuring that our beloved Club remains strong for generations to come. I encourage you to read the new column in this magazine and online, authored by our Facilities and Planning Committee Chair and Board member Michael Porter. He will provide insights into the history of our clubhouse, the work that has already been accomplished, and some of the important initiatives that lie ahead. Did you know our Clubhouse is a Structure of Merit in Santa Barbara? Read more on page 28!

As we look forward to spring, and warm afternoons on our Sola Patio, I am excited about the many celebrations and events that await us. Some of the highlights to look forward to include our annual Easter and Mother’s Day brunches, the always-anticipated quarterly Wine Maker’s Dinner and our Boutique Wineries Tasting event, as well as a special Wine Paulée scheduled for this quarter, among so much more on offer. Be sure to check the Club calendar - online and via the fabulous member app on your mobile devicesand stay tuned to your email for weekly updates and additions!

Finally, thank you everyone for your boundless engagement, warmth, and fellowship. It is a privilege and a joy to share our beloved Club with you all. I look forward to seeing you at the Club for another remarkable season together.

Dear Members,

As I write this, the much needed, refreshing rains of early spring are tapping at my office window, washing away any remaining winter blues. Every year, I look forward to this season – the new blossoms, the crisp air, the sense of renewal and rebirth – but this year, more than ever, I find myself embracing the opportunity to take a deep breath, recenter, and reflect on what is truly important in our lives. The love and respect we share for one another, how lucky we are to live in such a beautiful coastal paradise, and the privilege of having such a warm and welcoming space to call our own, are things I deeply cherish. Our beloved Club is not just a place to gather; it is an oasis of growth, learning, and sharing, and I feel honored to be a part of it.

Watching our Club transform these past months into such a thriving and vibrant hub of member activity has been a real privilege. Our calendar is brimming with opportunities – both formal and informal – to connect, network, share, and forge meaningful friendships. There is something truly special about seeing members support one another, sharing ideas, collaborating on projects, and celebrating both smaller as well as more significant moments together. Together, you all help make the world, and our community, a better place. Indeed, this is one of the things that truly sets our Club apart. I love that our Club brings together people from all walks of life - leaders and creators and innovators from across our community. I am constantly inspired by the energy and enthusiasm that fills these walls thanks to all of you.

Over the past months, we have been hard at work to reach our membership goals, and I am delighted to see so many new faces being warmly welcomed into our University Club family. The contributions of our newest members have already enriched our

community, and with a full roster moving forward, we are excited for the boundless possibilities ahead. As a reminder – this is your Club, your space to enjoy, to share with family, friends, and guests. I look forward, as always, to hearing your ideas for the Club and invite you to continue to be an integral part of shaping our future.

The advent of spring brings with it renewed joy and bright celebrations. Here at the Club we look forward to marking this season with our annual Easter and Mother's Day brunches, our Summer Solstice celebration at the end of June, and a fantastic lineup of Wine & Spirits events, including our quarterly Winemaker Dinner, the Boutique Wineries tasting, and a special Paulée. Most of all, I look forward to continuing to enjoy the hustle and bustle of our vibrant Club, seeing all of you gathering for meals, drinks at the bar, or meetings of our various social clubs and societies, and more.

On an operational note, I encourage everyone to take advantage of our inaugural Tech Help Hour for any assistance with website or mobile app access (details on page 13). Also please take a moment to upload your photos to the online Member Directory. This will make it easier for members to find one another and to connect. Feel free to email your photo to Member.Services@uclubsb.org if you prefer that we upload your photo for you.

As we step into this bright new season, I want to thank you all for being part of what makes our Club so exceptional. Here’s to the shared joys, connections, and experiences ahead. I look forward to seeing you all here.

Al Vafa sings and plays guitar in the styles of classic pop, jazz, and blues, adding an air of mystery and flair.

Chris Fossek is a local favorite Spanish guitarists / composers, putting his own local stamp on the Spanish and gypsy stylings.

The Summerland Trio bring a mix of blues, bossas, country, and much more.

Téka is the renowned Brazilian vocalist/guitarist known for her velvety tones, smooth bossa nova and Brazilian jazz, contemporary pop and lively sambas

Chris and Jason have been playing music together for over 20 years, first with a rock band called Mr. Friendly among others. Chris currently plays with the bands Smelly Cat and Flannel 101.

Front of House Manager Alena Gleich and her team have also been hard at work creating new seasonally inspired drinks for you to savor. Our members and your guests are invited to dazzle your taste buds with the array of new dishes and drinks featured on our Spring Lunch, Dinner, Dessert, and Cocktail menus. Coming out on April 1st.

The 1919 Bar & Happy Hour (And A Half!)

Named for the year our beloved Club was founded, 'The 1919' Bar is staffed from 5:00pm-8:00pm, with happy hour running from 5:00pm-6:30pm every Tuesday-Friday. The perfect setting for drinks with family, friends, or colleagues, to come in and relax after a long day, or to socialize with fellow members. Be sure to try any of our seasonal specialty cocktails or one of the non-alcoholic drinks on offer!

No Corkage Thursdays & Free Wine Fridays

You are always welcome to bring your own bottle(s) of wine (not currently listed on our wine list please) when you dine at the University Club. Corkage fees are waived every Thursday at dinner for up to two 750ml bottles per visit. Enjoy a free glass of wine with your lunch every Friday.

A Dish Best Served...

We serve steaks, burgers, and salmon medium rare. If you would like yours prepared a different way, please let your server know. The same goes for any of our dishes - help us ensure you are satisfied by letting us know your preferences. Your servers are happy to answer any questions you may have.

Going Green at the Club: Our New Composting Initiative

One of the hallmarks that sets our Club apart is our constant desire to always do better, for our members as well as the community around us, and to keep up with changing times, as we have been doing for over 100 years. To mark Earth Day this year, we are not only hosting two very special Distinguished Speakers (see page 14), but are also proud to share more about some of our initiatives to go green at the Club.

In addition to our full lineup of compostable to-go containers, cups, straws, and picks, the Club is now actively participating in the city's Business Foodscraps Composting Program. Since the arrival of our designated yellow bins in February, we have already seen a significant reduction in waste and have cut our trash bill by nearly 50%. Economical and great for the environment at the same time!

The range of materials that can be composted is impressive. Everything organic now goes into the yellow bins, including food scraps like coffee grounds (with soiled paper filters and all), tea bags, bread scraps, leftovers from diners' plates, and cuttings from kitchen food prep. Beyond food waste, we are also composting paper products, plants and flowers, most delivery boxes—including those from our daily food and beverage shipments, Amazon boxes, and more—napkins, tissues, towels, natural cork, and even ashes from our pizza oven.

Once collected, all compostable materials are transported from the County Transfer Station to the County of Santa Barbara ReSource Center at the Tajiguas Landfill. There, the waste is processed into compost and green energy. The ReSource Center "cooks" the compost for 60 days, transforming it into landscape nutrients while generating renewable energy. Thanks to this technology, approximately 60% more waste is diverted from the county's trash cans, raising our region’s waste diversion rate above 85% and significantly reducing greenhouse gas emissions.

Our commitment to sustainability extends beyond food waste. All of our to-go containers are 100% compostable and sourced from World Centric, a California-based company that manufactures compostable and reusable food service and packaging products. Not only are their products made from compostable materials—our to-go containers are made from coconut fiber, our straws from agave, our picks from bamboo, and our compostable plastic cups from PLA* (polylactic acid, derived from plant-based starches)—but World Centric also donates 25% of its profits to grassroots social and environmental organizations, further amplifying our impact.

We take great pride in our ongoing efforts to promote sustainability and environmental stewardship. INGREDIENTS:

1/2 cup raw pistachios

From Our Kitchen to Yours

Farmers' Market Quinoa Salad

Spring is in the air, and with it comes fresher, lighter fare with delectable seasonal flavors. Here at the University Club we aim for fresh, seasonal, and local ingredients. You can do the same! Head over to your local farmers' market to find your favorite mix of spring herbs and grains. No need to follow the recipe to the letter - use whatever you find locally and delight your taste buds!

8 ounces green beans and/or wax beans

4 ounces sugar snap peas

Kosher salt

½ cup coarsely chopped fresh tender herbs (such as parsley, chives, basil, tarragon, and dill)

1/3 cup olive oil

2 tablespoons white wine vinegar

2 teaspoons Dijon mustard

Freshly ground black pepper

2 small or 1 large head of broccoli, florets chopped (about 1½ cups)

2 cups pea shoots (tendrils)

1 cup cooked quinoa (from about 1/3 raw)

DIRECTIONS:

Step 1: Preheat oven to 350°. Toast pistachios on a rimmed baking sheet, tossing once, until golden brown, 8–10 minutes. Let cool, then coarsely chop.

Step 2: Meanwhile, cook green beans and sugar snap peas in a pot of boiling salted water until no longer raw but still very crunchy, about 2 minutes. Using a slotted spoon, transfer to a bowl of ice water and let sit until cold, about 3 minutes. Drain, pat dry, and thinly slice into bite-size pieces.

Step 3: Blend herbs, oil, vinegar, mustard, and 2 Tbsp. toasted pistachios in a blender, adding water by the tablespoonful if dressing is too thick, until smooth and the consistency of heavy cream. Season with salt and pepper.

Step 4: Toss beans, peas, broccoli, pea shoots, quinoa, and remaining toasted pistachios in a medium bowl to combine. Drizzle salad with dressing and toss again to nicely coat everything; season with salt and pepper.

The Cornell Club-New York is a 14 story Members-only Club located in the heart of Midtown Manhattan, on East 44th Street between Fifth and Madison avenues, around the corner from Grand Central Terminal. Located along a stretch known as Club Row (the clubs of Harvard, Yale, Penn, and others are in the immediate area), it has long served as a haven from the city’s bustle. Its membership is comprised primarily of Cornell University graduates as well as their family members and business associates who seek a dining and meeting facility characterized by prestigious standards in food, service, and ambiance.

The Cornell Club has two dining rooms, each with its own style. The elegant main dining room, The Cayuga Room, offers breakfast service seven days a week, lunch service, and dinner service. The less formal Big Red Tap & Grill is open for food and beverage service Monday-Friday as well as select seasonal Saturdays. Lobster Night is offered on Wednesday evenings in The Cayuga Room, reservations for lobster are required 24 hours in advance. Steak Night featuring Pat La Frieda steaks and chops is offered on Thursday evenings in both dining rooms. And finally, the summer staple of BBQ Fridays is offered in The Big Red Tap & Grill during the summer months. The third floor is home to The Andrew Dickson White Reading Room. Named after Cornell University’s first president, The Club’s library is a restful sanctum that invites one to lean back and tune out the hustle and bustle of New York City. Both the fourth and fifth floors have rooms that are available for private meetings, banquets, and parties. The sixth floor houses a Health & Fitness Center, which encompasses the gym, nutrition counseling, personal training, massage therapy, acupuncture and fitness evaluations. The seventh through fifteenth floors offer handsome overnight guest rooms. Overnight guests begin each day at The Cornell Club with a complimentary breakfast in The Cayuga Room and may also enjoy complimentary usage of the Fitness Center. The Club also offers a fully equipped Business Center for the use of Members and guests, including individual work spaces, a small conference table, telephones, computer access, internet access, and printing and faxing capabilities.

Preserving Our Clubhouse: Honoring the Past, Planning for the Future

As Chair of our Club’s Facilities and Planning Committee, I recently had the privilege of visiting the Architecture and Design Collection archives at UCSB to delve into the rich history of our beautiful clubhouse. Surrounded by architectural drawings and intricate facility and landscape plans spanning decades, I was struck by the legacy embedded within our walls but also by the inspiration that history offers for the work ahead.

While our mansion is not designated as a historic landmark, it holds the distinction of being a Structure of Merit—an honor awarded by the Historic Landmarks Commission to buildings of architectural, cultural, or aesthetic significance. Our clubhouse’s striking Spanishstyle façade, a rarity in Santa Barbara despite its popularity in 1920s Los Angeles, played a key role in earning this designation. This recognition underscores the importance of preserving and stewarding our clubhouse with the care and foresight it deserves. The foundation of our current clubhouse dates back to the 1880s, but its transformation into the structure we know today began in 1922 under the direction of Winsor Soule, a pioneering architect and University Club member. In that remodel, two-thirds of the original structure were removed, and our clubhouse took on much of its present form. Over the years, thoughtful additions, such as the library wing donated in 1937 and the expanded bar and lounge in 1953, have further shaped its character and function.

As stewards of this storied building, we constantly uncover reminders of its evolving purpose. A particularly telling example lies in the upstairs rooms. Before women were welcomed as members, these rooms were rented as lodging for young men of the Club. When the spaces were later repurposed into the meeting rooms we now use, we discovered relics of their past—such as old gas lines, long forgotten but still needing careful attention. These

moments remind us that maintaining our clubhouse is never just about the present; it is about respecting the past while preparing for the future.

To that end, our work falls into three key areas: emergency repairs, planned maintenance, and member-serving improvements. A proactive approach is essential, as investing in long-term maintenance reduces the frequency and cost of urgent fixes. The more we can anticipate and address issues ahead of time, the more we can focus on enhancements that directly enrich the member experience.

Thanks to strong leadership, our Club has embraced a strategic commitment to facility upkeep and improvements. This approach balances immediate needs with long-term sustainability, ensuring that we not only handle pressing repairs but also plan ahead to avoid unnecessary emergencies. This mindset is crucial, as maintaining a historic building comes with inherent costs—just in the past two years, heavy rains and infrastructure challenges have required over $100,000 annually in emergency repairs.

Looking forward, some of the most pressing priorities include replacing the roof and updating the windows. While these foundational projects may not be as immediately visible as other enhancements, they are essential to preserving our clubhouse. By addressing all three of our core responsibilities—responding to urgent repairs, implementing proactive maintenance, and investing in member-focused improvements—we can ensure that our Club remains a place of pride and community.

With the continued support of our leadership and our incredible membership, I am confident that together we will honor our Club’s history while securing its future. Our clubhouse is more than just a building; it is a cherished cornerstone of Santa Barbara, and its legacy is in our hands.

MICHAEL PATRICK PORTER AIA is a Santa Barbara based architect with a multi-faceted design portfolio for projects throughout Southern California. Prior to starting his own firm, he served as a city planner in a small Southern California Spanish-themed town. He has a degree in Urban Planning from Cal Poly Pomona and received his license to practice architecture in 1993. His projects have received awards from the American Institute of Architects as well as Santa Barbara Beautiful. Fascinated by art his entire life, he has served on various non-profit boards including the Santa Barbara Museum of Art, the Museum of Contemporary Art, Santa Barbara, The Orange County Museum of Art, and the CSULB University Art Museum. Michael is also an advisor for 2030 Visions, an organization devoted to the harnessing of the artistic imagination to create new paradigms and new models of society. He is currently serving as the Chair of the University Club of Santa Barbara's Facilities and Planning Committee.

Meet Our University Club Staff

Sous Chef Jonathan Dionicio

Sous Chef Jonathan (Johnny) Dionicio (32) brings with him a friendly and professional demeanor, a plethora of experience, and an innate love of cooking. Born in Santa Barbara and raised in Lompoc from the age of 9, Johnny is the second of four brothers and a self-described people pleaser. "I'm just someone who likes to laugh, to serve people, and see them be happy," he says.

He started his career working at McDonald's, "but that didn't work out," he relates. "I only lasted about 7 months, but from there I moved on to become a shift leader at Carl's Jr." In fact, he was much more appreciated at Carl's Jr. where he became a shift leader in short order. After a stint at Chili's, Johnny moved on to Del Norte. "That's where I learned to cook from scratch," he notes. Eventually, Johnny found his way to Westmont College, where worked for seven years and became the sous chef, before joining the University Club team in October of 2024.

Johnny appreciates the more personal nature of cooking for members and their guests at a private club. "It is nice to be able to cook individual dishes, and to get to know the members and their tastes," he says. At Westmont, he relates, "you are cooking for 3,000 people daily, with different stations, as well as catering. I got to work with the chef to create the menus together and cook something different every day which allowed me to learn a lot." And this is something Johnny is constantly doing - learning, evolving, and looking for opportunities to grow - all reasons for applying for the sous chef position here.

Johnny's favorite Club events to date were the holiday meals. "I really enjoyed manning the carving station and getting to interact with the members," he says with enthusiasm. "I hope the members will always give us honest opinions, so that we can serve them well," he adds.

Outside of the Club's kitchen Johnny lives with his girlfriend, Lani, and their three dogs. "When I am off of work, we mostly visit family. We enjoy barbecuing together," he smiles. "My mom and dad also cook - they make salsas and Mexican food." He also enjoys watching sports, including baseball, basketball, and soccer.

Johnny has degrees in Business Management and Hospitality Management from City College. He hopes someday to raise a family ("four kids would be nice") and to use his degrees to open a restaurant or other establishment.

In Memoriam: Erin ThErEsE Graffy dE Garcia

195?-2025

With profound sadness, we honor the passing of Erin Therese Graffy de Garcia, a beloved member of the University Club of Santa Barbara since 2005. Erin’s presence was a light within our organization, bringing warmth, passion, and an unwavering dedication to the performing arts. Erin's impact on the University Club and all she brought is immeasurable. Erin’s passion, elegance, and generosity of spirit made her a cherished friend, a respected leader, and a treasured mentor. We all remember fondly Erin and James' anniversary celebration here at the Club, as well as Erin's mirth and joy each St. Patrick's Day. Just last year, Erin took first prize in our annual limerick contest, with her usual wit and creativity. We will forever be grateful for the joy, wisdom, and artistry Erin shared with us all. Erin’s memory will live on in the music that fills our halls, the dances that grace our celebrations, and the stories that keep our and Santa Barbara’s history alive. We will forever cherish the time we had with Erin at the University Club and elsewhere.

The following excerpts from Erin's obituary in the Santa Barbara Independent further highlight her indelible spirit:

"Erin was an entertainer, publisher, researcher, dancer, singer, writer, historian, smuggler, advisor, teacher, wife, sister, daughter, entrepreneur, speaker, auctioneer, fundraiser and fun-raiser, and had the best hat for any occasion.

Far from her warm, sunny town of Santa Barbara, Erin was born on a 15-degree snowy day on a February 24 in Wichita, Kansas. As for the birth year, Erin would simply tell you, “It was a good one.” (She never divulged her age.)

[...] It was during the Graffys’ first summer in Santa Barbara that Erin discovered Fiesta. As a member of Mrs. Liam O’Sullivan’s Children’s Strolling Chorus, she learned and sang the Spanish songs of old California and wore her first Fiesta dress. The songs, dances, and pageantry would soon become part of her DNA. Erin’s education began at Marymount School, then an all-girls institution. When Marymount closed its high school, she completed her senior year at Santa Barbara High School. During these years, Erin studied dance with Jose Manero, took voice training from Mrs. Lura Dolas, and dove into Youth Theater Productions with Director Jack Nakano.

Her outstanding singing awarded her a full scholarship to Pepperdine University — the first voice scholarship given. She next entered Occidental College for a program in orchestra conducting and then returned to Pepperdine for a master’s in marketing and communications, graduating magna cum laude.

During her time at Pepperdine, she had the opportunity to visit Russia. Taking advantage of that circumstance, she smuggled Bibles, leaving them with Christians she met or dropping them in interesting locations. Erin figured, “If a non-Christian found it, they’ll sell it on the black market. So, one way or the other, it will get into the right hands.” Many years later, emboldened by that successful contraband run, she left Ireland and entered the U.S. with several undocumented salmon. That’s all you need to know.

In 1986, she founded Erin Graffy Associates, a marketing communications consultancy. Through her seminars, workshops, and personal consultations, she worked with more than 1,200 local and international businesses.

Erin wrote more than 100 books and articles on regional history and culture, [...]. She reviewed for the California Historical Society, served for 10 years as editor of La Gazeta for the Mission Archive Library, and lectured extensively on California’s Rancho Period. Her book Old Spanish Days: Santa Barbara History Through Public Art was the recipient of three national book awards. As a Southern California historian, she was featured in several documentaries, including the Emmy Award–winning documentary Impressions in Time, and was featured as a California historian in the 2015 Pasadena Rose Parade.

As part of her literary endeavors, she started her own publishing company, Kieran Publishing, where she advised, co-wrote, and ghost-wrote with a number of authors to get their dream books completed and printed.

Turning to her own half-Irish family history, she worked to promote Dingle, Ireland, as a Sister City of Santa Barbara. Sensing a bit of reluctance from City

Council members, in true Erin fashion, she brought the Dingle delegation — including several charming little red-haired Irish dancers — into the Council chambers to give it their all. After that, the Council simply could not say no in front of the little lasses.

Ozzie Da Ros, noted local Italian stonemason, had long proclaimed that the surname “Graffy” was not German, but Italian. Perhaps this is what led Erin to research and publish the history of Santa Barbara’s early Italian immigrants, resulting in the Italian American Boot Club bestowing Erin with honorary membership.

Erin truly loved three things: dancing; her husband, Jim; and chocolate. Of all the multitude of things Erin was involved in, she loved dancing the most. And it was dancing that introduced her to the smooth steps of Dr. James Paul Garcia. They met at a dance at the Bank of Montecito and a spark was ignited. All it took was one more chance meeting, and they danced together for the next 35 years.

Erin’s passion for singing, dancing, and history fueled her contributions to Old Spanish Days, where she served as an advisor, Board of Directors member, and Official Fiesta Historian. With her husband, Jim, she created Flor y Canto Californio, a special show for Fiesta at the Courthouse with live musicians, singers, and dancers performing, as Erin would say, “The Greatest Hits of 1836.” Erin provided historical narration to explain the customs and traditions of that Rancho era, the roots of Old Spanish Days.

Erin’s Society Lady column was a must-read in the Santa Barbara News-Press, covering the who’s who of local organizations and their events. Her columns were also in the Montecito Journal, the Santa Barbara Independent, and Noozhawk. Erin was a sought-after emcee and auctioneer, often handling those roles in addition to covering the event. Erin was also in great demand for her ability to parody songs for tributes and roasts of Santa Barbara locals. She was known for her gracious introductions, especially for newcomers to the community.

Along with former Sheriff Jim Thomas, Erin launched the Sheriff’s Council, which has raised millions of dollars for much-needed equipment for local law enforcement. She was instrumental in raising $5 million to establish the Father Virgil Cordano Chair in Catholic Studies at UCSB. In 2017, Erin and her husband, Jim, were honored as Community Stars for their work and devotion to the Santa Barbara community by Catholic Charities at their Mistletoe Ball. Erin eschewed coffee, carbonated drinks, and alcohol. However, there was chocolate. Her love for chocolate was so widely known that no matter the occasion, the venue, or what was stated on the menu, when it came to that certain delicacy following dinner, the hosts and staff ensured that Erin somehow would get chocolate. As she explained, “If it’s not chocolate, it’s not dessert.”

The Independent’s Nick Welsh summed up the loss to the community: “Erin was such a force of nature, delight, wit, caring, and smarts that it is impossible to imagine her not being here. Santa Barbara will be a duller, stupider, flatter place. Its fun IQ just dropped one billion points.”

Erin is survived by her husband, Dr. Jim Garcia; her brothers, Kurt (Cathay) and Neal (Veronica); sisters, Colleen and Kerry Mariea (Fred); and nieces and nephews, Colette, Colin, Kyle, Kirsten, Sarah, Olivia, and Spencer. She is predeceased by her father, Charles R. Graffy, and her mother, Jeanne Graffy, former Santa Barbara City Councilmember and County Supervisor.
