From Our Desks To You: Dear Members, What an honor it is to write my first quarterly magazine letter to you as University Club President! When Lacy Taylor recommended to my husband and I that we join the Club several years ago, we thought, “Sure, let’s see what this is all about.” Now, here we are experiencing so much joy with this shared community! I cherish our Club, and I’m humbled to be serving as your President.

It is also an honor to take over the reins from my friend Lacy Taylor. Her stellar dedication and commitment to seeing the Club through the pandemic her first two years as UClub President was a gift to us all. During her last two years, she helped the Club navigate steady and significant membership growth, with every member and visitor with history here noting that the Club has never looked better. As we head into 2024, our Club is more vibrant and robust than ever. Thanks to the hard work of our Board, we have clear strategic goals in place to guide us in the coming years. I also want to thank Sarah and her staff for making our Club so welcoming, warm, and fun! We are so fortunate for their tireless commitment to service day in and day out.

These last few years we also added a host of new member clubs, societies, and activities to our monthly calendars, in addition to all our traditional favorites, fostering ever more connections and friendships.

Our Membership Committee has been very busy implementing ways to both appreciate our members and welcome new members every month! For the coming year, we have some great new offerings in the works to help bring us all 6 THE 1919 MAGAZINE | WINTER 2024

even more opportunities for social and business networking. Speaking of membership, we are getting close to reaching our cap on proprietary members. If you are currently a social member and have considered upgrading, I recommend you speak to Sarah or Member Services.

I’ve especially enjoyed the holiday season here and the current winter ambiance of firesides, friendly faces, and so much to choose from on our calendar. I look forward to the exclusive member opportunities on the docket for this year. In addition to what is on the calendar every quarter, take a look at all the 2024 highlights in the Save The Dates list on page 17. As you can see, all our favorite annual UClub traditions are there. Be sure to RSVP as soon as reservations open for these (6 weeks in advance of each event) as they do sell out fast!

On that note, I can’t wait to experience our incredible Magic Mansion event on January 27th.

This is a BIG one and you do not want to miss it! It will be the event everyone talks about all year long.

For one night only, our majestic Riviera Mansion will be transformed, with a main stage and additional rooms featuring magicians coming to us live from the Magic Castle in Los Angeles, food and drink stations, and more. Get your member-priced tickets while they last! (Details on page 21).

We have more exciting announcements for 2024, including a brand-new, updated website and introducing a new mobile members app, both coming in the spring. Stay tuned for updates in your inboxes on these and more as we head into 2024!

Dear Members, I do believe this past year has been our busiest and most exciting to date since I started here five years ago. With the growth in membership and so many of you active and involved in the Club, it has become a truly bustling and exciting hub for members to connect, celebrate, and grow together.

I want to take a moment as we head into the new year to thank you all. Thank you to everyone who joined us for the many member activities, events, meals, field trips, classes, drinks, and fun at the Club this past year. Thank you to all of you who come to us with your ideas and passions, helping to spearhead ever-more member-driven activities, events, and exceptional opportunities for social and business connections, celebrations, and growth.

Thank you to all of you who volunteer your time, expertise, and efforts on behalf of the Club and your fellow members. Thank you to everyone who enjoyed one another’s company at our communal tables, everyone who raised a glass together, danced, laughed, and connected, and everyone who so warmly welcomed new members into the UClub family. Thank you to everyone who brought in Toys for Tots and donated to the Staff Holiday Fund, and everyone who participated all year long in our UClub traditions, new and old. Your participation in Club life, and your boundless UClub spirit, is cherished and appreciated.

More than anything, it is a joy to see so many wonderful bonds, traditions, and lasting memories being fostered every day here at the Club.

To help ensure everyone has a chance to sign up (including new members starting later in a quarter), starting in January 2024, reservations will open 6 weeks before each Club event or activity. Reservations before that time will not be possible except for certain promotions or classes with earlier cutoffs.

A reminder that we do encourage members to log in to your member accounts on our website to make or manage reservations. You can make reservations for lunch, dinner, Club events, and social groups and activities online at www.uclubsb.org/login. New Member Parking Decals

With a new year come new parking decals for your car windows. Keep an eye out for yours in the mail toward the end of January. Our private parking lot is available to members at all times, and to guests for the duration of their visit to the Club. Please place your new parking decal, when it arrives, on your front or back car window where it is clearly visible (decals go on the inside of your window).

LOIs & Reservations for Reciprocal Visits Ahead of Time - Mandatory

A reminder that you must get a Letter of Recommendation (LOI) from us for each and every Reciprocal Club visit.

We do ask for 2-3 business days to prepare and send your LOIs. A reminder also that you are responsible for making and managing any and all reservations with our reciprocal partners yourselves.

Cancellation Policies

A reminder that we do have a 72-hour cancellation policy. For special events and meals, including but not limited to special menu dinners, Club events, activities, socials, single-seating meals, and more, cancellations can be made up to 72 hours before the event only. Cancellations less than 72 hours before will be charged in full for you and all guests. Additions to reservations after a reservation deadline are not permitted without approval. Waitlist may be in effect.

HOW-TO: Reciprocal Club Visits UClub of Santa Barbara Members enjoy reciprocal access to over 200 private clubs in the US and worldwide.

• A full list of current reciprocal clubs can be found in the members area of the website.

• To access a reciprocal club, be it just for a meal or golf, or for an extended stay: 1. Members please first contact the club(s) you wish to visit to check availability*.

2. Once you have confirmed availability with the reciprocal club(s), email Member Services for the required Letter of Introduction (LOI).

3. Please allow 2-3 business days for us to email your LOI out. You will receive a copy as well. * UClub members are responsible for making any and all arrangements and reservations directly with the reciprocal clubs they wish to visit, and must settle any and all bills directly with the reciprocal clubs before they leave. Spotlight On Our Partners We are proud to introduce our newest reciprocal partner - the Maryland Club. With a blend of rich tradition, strong historical connections, and modern, state-of-the-art facilities, the Maryland Club has a lot to offer. As always, we continue to forge exciting new partnerships every year with new social, university, athletic, yacht, and other clubs here and abroad. Stay tuned for more!

Founded in 1857 when workboats, sailing ships, and steamboats jammed Baltimore harbor, the Maryland Club is one of the oldest private clubs in the United States. It was originally established as an exclusive men’s club. The large Romanesque (mid-11th century Gothic architecture) Clubhouse, dating to 1891, is in Baltimore’s historic Mount Vernon neighborhood, where it has always had its home. Noted early members include Jerome Bonaparte, the Club’s first President and nephew of the late French emperor Napoleon, and Johns Hopkins, whose fortune funded the university and hospital. The Clubhouse displays hundreds of artifacts, relics, and art depicting the Club’s and city’s history.

Political parties frequently met here to nominate candidates for President, and citizens proudly referred to the place as “the monumental city.” The Club’s members have traditionally numbered among the region’s most prominent business, professional, civic, and nonprofit leaders. Though membership is by invitation only, the Club includes a diverse membership of outstanding individuals regardless of race, gender, religion, ethnicity, or sexual orientation.

In 1861, the Club supported the withdrawal of the Confederate States of America. The Club then closed by Union troops during the American Civil War, and General Lew Wallace outraged area residents by turning the building into a shelter for homeless former slaves. The Club re-opened after the war. The Club opposed prohibition and flouted the law using private lockers. After a 1995 fire nearly destroyed its building, the Club restored its architectural and aesthetic elements.

In 2019, a major renovation added squash facilities, improved the exercise area, added a bistro-style restaurant, and made other system upgrades.

In the Bodine Room, members and guests can enjoy daily lunch specials and an à la carte dinner menu featuring Chesapeake favorites like our famous Maryland crab cakes. Savor a drink and casual fare in the relaxed Squash Lounge, adjacent to the Squash Courts. The world-class racquet sports facility includes three double squash courts and three single courts to qualify us as a highly competitive arena. In the summer, dine al fresco on the beautiful Porch, a unique oasis in the middle of the city. On the first floor, you will find the Charles Street Grill, combining history with modernity in exceptional style. The Charles Street Grill features fine food showcasing seasonal and local ingredients in a re-imagined, high end fashion. Our spacious Clubhouse boasts several large lounges and smaller meeting rooms, perfect for business meetings, social gatherings, wedding receptions, and everything in between, as well as private parking.

Meet Our UClub Staff Hipolito Urrutia Simón Born in La Palma (in the State of Guerrero), Mexico, Hipolito Urrutia Simón (age 56) has lived in Santa Barbara for nearly three decades now. A father of two (18 year old son Hipolito Jr. and 15 year old daughter Malicia Xicaili), and himself the oldest of ten children (five brothers and five sisters, including himself ), Hipolito is the epitome of kindness. In the kitchen at the University Club he is known for his hard work, his easygoing and hospitable demeanor, his smile, and good humor.

Hipolito Urrutia Simón

After high school, Hipolito first served in the Mexican Marines for six years, stationed in Acapulco. “It was really beautiful there,” he recounts. When his stint there was up, Hipolito chose to leave the Marines to come to the United States “to help out my family.” Today, most of his siblings have also moved, with only his parents and two sisters still back home.

Hipolito has worked at many local establishments, including El Encanto, the Bacara, and more.

In fact, UClub Front of House manager Alena Gleich had the pleasure of working with him eight years ago at Bacara. “I worked with him at Bacara when he was a dishwasher, and then worked his way up to breakfast cook,” Alena tells. “Not long after I started here at the University Club, he came in for an interview, not knowing I was here. I was so thrilled that our paths crossed again, and knowing him from Bacara, and what a great person and team player he is, I of course immediately hired him.”

At the University Club, Hipolito started as a dishwasher, then moved to salads, and is now in charge of preparing sandwiches. “I love to prepare the sandwiches, to make them how each of the members like them,” he says with his typical humble yet bright smile. He feels that it is an honor to serve the Club’s members, their families, and guests, helping to ensure everyone enjoys their time at the Club. “There is a great atmosphere among all of us” he adds, referring to his workmates. “We all get along well and have formed friendships,” he nods, smiling more.

During his time off, Hipolito likes to go for a run, bicycle rides, and walks with his dog, Nicolas.

He lives with his aunt, a retired teacher, and helps her out with day to day tasks and shopping as she is not so mobile anymore. If he could do anything he wanted, he says he would open a Mexican restaurant, with simple comfort foods from home.

Cooking with Chef David

Cassoulet This French dish is a perfect winter meal. It takes its name from its cooking pot, the cassole d’Issel.

Originating in Languedoc in southwest France, cassoulet was once simple farmhouse fare, but it has been elaborated into a rich and complex dish.

INGREDIENTS: 4 ounces thick-cut bacon, cut into 1-inch pieces

3 cloves garlic sliced thin

4 bone-in, skin-on chicken thighs or Protein of choice

16 oz diced tomatoes

1/2 teaspoon salt

32 oz great northern or navy beans

1/4 teaspoon freshly ground pepper

4 sprigs thyme chopped

4 sweet Italian pork sausages (about 12 ounces)

1 1/2 cups coarse breadcrumbs

2 tablespoons olive oil

2 teaspoons chopped fresh parsley

1 medium yellow onion, dice

Baguette, for serving

DIRECTIONS: • In a large skillet over medium heat, cook the bacon for 3 to 4 minutes stirring frequently, until it renders much of its fat but is not yet crisp. Transfer the bacon to a large plate. In the same skillet used to cook the bacon, add 1 tablespoon olive oil and heat it over medium-high heat.

No need to drain out the bacon grease. Add the chicken, skin side-down, and the sausages. You may need to do this in batches if the skillet is not large enough. Cook the meat until golden brown on both sides, 8 to 10 minutes.

Transfer them to the plate with the bacon one by one as they look ready. Pour off and discard all but a thin layer of fat from the skillet. Return the skillet to the stove over medium heat. Add the onions and garlic and cook for 3 to 4 minutes, until the onions soften. Transfer the cooked onions and garlic into a large (at least 4-quart) Dutch oven. Stir in the tomatoes, beans with their liquid, and thyme sprigs.

Nestle in the bacon, chicken thighs, and sausages.

• Bring the cassoulet to a simmer over medium heat. Adjust the heat to a steady simmer and cook, uncovered, for 15 minutes, until the chicken and sausages are cooked through. The chicken should measure 165ºF when an instant read thermometer is inserted into the thickest part of the meat. Evenly sprinkle in the breadcrumbs and place the Dutch oven into the oven to broil for 1 to 2 minutes, until the top browns. Watch it carefully—this only takes a minute or two. Remove the cassoulet from the oven. Ladle some beans into 4 shallow bowls. Top each bowl with a sausage and a chicken thigh. Serve with a baguette on the side and a large spoon to scoop up all the delicious juice.

Each listing lets you know if an event is a seated affair or party/reception-style without fixed seating; and if the former, whether seating is at individual, private tables or larger communal tables for the evening; if the menu is buffet, à la cart, or prix fixe; seating times; and more.

Walk-Ins For Regular Lunch & Dinner Service

While we do strongly encourage reservations (help us better serve you and your guests by letting us know to expect you), walk-ins are also welcome for regular meals! *RSVPs are, however, always needed for special meals and events. Be sure to check the online members’ calendar to ensure there is not a special meal on the date you want to come in. There are no walk-ins for special events and meals requiring reservations - see also next point below.

No Regular Dinner During Special ‘Gold’ Dinners

A reminder that there is no regular dinner available on UClub ‘Gold’ evenings - culinary evenings held in lieu of regular dinner. Walk-ins are also not possible on ‘Gold’ evenings (such as 1st Thursday wine dinner, Oktoberfest, Opera Dinner, Lobster Fest, Holiday Dinner, and similar). Reservations are always required ahead of time for special culinary evenings; food and seating are prepped ahead of time according to the reservation lists. We do have a 72-hour cancellation policy for these same reasons. You are welcome to stop by for a drink at the bar during special dinner events, but you will not be able to order dinner of any kind.

The University Club is all about forging lasting connections, celebrating and growing together. To this end we often have communal tables set up for those who attended an event or activity and wish to dine together before or afterward. If you would like a lunch or dinner reservation before or after an event or activity and would like to sit at a communal table with others who attended, please indicate this in your reservation or let MemberServices@uclubsb.org know.
