Dear Members,
Thank goodness for our Club these past months! Throughout the abysmal weather we had here in Southern California, the Club truly was a trusted, safe port in the not-so-proverbial storms. How lucky we are to have the Club’s warm and welcoming fireplaces, meals, activities, and ever-attentive staff to embrace us on such cold, tempestuous days and evenings. I know that we were all appreciative as well when Sarah and her team reached out to offer up the Club for anyone affected by the flooding and evacuations during that first massive downpour in January. This really is what our Club is all about -being a welcoming place for all of us to connect, celebrate, and grow.
I am thrilled to see so many of you embracing these aspects of our Club. Every time I am at the Club, I see new connections and friendships being made, members celebrating together, and our Club continuing to grow. I am equally thrilled to see so many new faces joining our UClub family and being welcomed by everyone. On that note, you may have

Speaking of our Club calendars, our Spring quarter is once again filled with exciting offerings. I am looking forward to both our annual Easter Brunch & Egg Hunt and Mother’s Day Brunch, as well as some of the private tours off-campus coming up (the Maritime Museum tour with sunset reception looks great!). I know many of you are eager for the new Mah Jongg classes, the writing workshop series, and so much more. Be sure to sign up early!

For this upcoming quarter we are excited to have Tom Davenport giving us an overview of AI and its implications (what a timely topic and how lucky to have such a prolific author on the topic among us!); Peter Moore sharing with us about his time as CEO of Liverpool FC and his efforts to bring professional

For special events and meals, including but not limited to Wine Dinners, Club events, activities, socials, single-seating meals, and more, cancellations can be made up to 72 hours before the event only. Cancellations less than 72 hours before will be charged in full for you and all guests. Additions to reservations after a reservation deadline are not permitted without approval. Waitlist may be in effect.

• To access a reciprocal club, be it just for a meal or golf, or for an extended stay:
1. Members please first contact the club(s) you wish to visit to check availability*.
2. Once you have confirmed availability with the reciprocal club(s), email Member Services for the required Letter of Introduction (LOI).
3. Please allow 2-3 business days for us to email your LOI out. You will receive a copy as well.

Walk-Ins For Regular Lunch & Dinner Service
While we do strongly encourage reservations (help us better serve you and your guests by letting us know to expect you!), walk-ins are also ok for regular meals!
*RSVPs are, however, always needed for special meals and events. Be sure to check the online members’ calendar to ensure there is not a special meal on the date you want to come in. There are no walk-ins for special events and meals requiring reservations - see also next point below.
No Regular Dinner During Special ‘Gold’ Dinners
A reminder that there is no regular dinner available on UClub ‘Gold’ evenings - culinary evenings held in lieu of regular dinner. Walk-ins are also not possible on ‘Gold’ evenings (such as 1st Thursday wine dinner, Oktoberfest, Opera Dinner, Lobster Fest, Holiday Dinner, and similar). Reservations are always required several days ahead of time for special culinary evenings; food and seating are prepped ahead of time according to the reservation lists. We do have a 72-hour cancellation policy for these same reasons. You are welcome to stop by for a drink at the bar during special dinner events, but you will not be able to order dinner of any kind.
Communal Tables
The University Club is all about forging lasting connections, celebrating and growing together. To this end we often have communal tables set up for those who attended an event or activity and wish to dine together before or afterward. If you would like a lunch or dinner reservation before or after an event or activity and would like to sit at a communal table with others who attended, please indicate this in your reservation or let Activities@uclubsb.org know.
No Corkage Thursdays & Free Wine Fridays
You are always welcome to bring your own bottle(s) of wine when you dine at the UClub. Corkage fees are waived every Thursday at dinner. Enjoy a free glass of wine with your lunch every Friday.
A Dish Best Served...
We serve our meat - steaks, burgers, etc. - medium rare. If you would like yours prepared a different way, please let your server know. The same goes for any of our dishes - help us ensure you are satisfied by letting us know your preferences. Your servers are happy to answer any questions you may have.

Meet Our UClub Staff
From Dishwasher to Sous Chef
Santa Barbara born and bred, UClub Sous Chef Anthony (Tony) Figueroa (23) grew up cooking with his mom and grandma. “I come from a Hispanic family,” he relates. “Usually, the women do most of the cooking. I am the only one in my whole family who went into cooking professionally.”
Tony is the second of five siblings (3 brothers and 1 sister who is the youngest of the bunch). As a teenager he attended San Marcos High and transfered to city college for the culinary program.
Professionally he was quick to rise through the ranks, thanks to a positive outlook, a can-do attitude, and a healthy dollop of passion for the trade. “I started at Kanaloa Seafood as a dishwasher,” he tells. “I did that for about a week and a half when the cook quit. It was a small, 2-man kitchen. I was always looking over at what the cook was doing, so when he quit I said ‘I got this’.”
From there Tony worked his way up from dishwasher to prep, to working the line. Within a year he was in charge of ordering and making menus. He took all of this knowledge with him to his next job at the Ritz Carlton. “I worked there for about four years, mostly in charge of meat and fine dining. Then Covid happened. I was let go, then hired, then let go, and hired again. It was not great.” As Covid restrictions eased up, Tony realized it was time for him to take the next step in his career. That is when he came across the advertisement for the Sous Chef position at the University Club of Santa Barbara.
He describes food and cooking as his passion. “I love the whole aspect of making people happy and seeing them enjoying your creations,” he says. With regard to his work at the UClub, Tony says the best part “is getting to know the members and what they want, having a community of people you are cooking for.” In fact, he laughs, “I mostly know our members by name and their preferred dish, but not the faces!” This is why he enjoys events such as the Club’s Summer Soiree so much, “because we set up food stations which mean I get to get out of the kitchen and interact with the members more, and to put faces to the names.”
When he is not in the kitchen at the UClub Tony is usually out in his jeep, often with this “doghter” (dog daughter) Riley, a German Shepard-Husky mix who has been with him for 2 years now (“I got her on the 4th of July 2020”). Tony notes that “we have always had dogs in our family, but Riley is my first own dog.”
As a quick glance at his Instagram shows, Tony enjoys his jeep, walks on the beach with Riley, traveling (he took a trip to Paris a few months ago), and trying new foods and getting new ideas for dishes. He also recently picked up snowboarding.
His dream is to one day open his own modern steakhouse.

Chicken Khao Soi
A delicious coconut curry noodle found in Northern Thailand, Myanmar, and Laos
INGREDIENTS:
KHAO SOI PASTE
4 large dried New Mexico or guajillo chilies, stemmed, halved, seeded
2 medium shallots, halved
8 garlic cloves
1 2” piece ginger, peeled, sliced
1/4 cup chopped cilantro stems
1 tablespoon ground coriander
1 tablespoon ground turmeric
1 teaspoon curry powder
SOUP
2 tablespoons vegetable oil
2 14-oz. cans unsweetened coconut milk
2 cups low-sodium chicken broth
1 1/2 lb skinless, boneless chicken thighs, halved lengthwise
1 lb Chinese egg noodles
3 tablespoons (or more) fish sauce (such as nam pla or nuoc nam)
1 tablespoon (packed) palm sugar or light brown sugar
Kosher salt
Sliced red onion, bean sprouts, cilantro sprigs, crispy fried onions or shallots, chili oil, and lime wedges (for serving)
DIRECTIONS:
KHAO SOI PASTE
• Place chilies in a small heatproof bowl, add boiling water to cover, and let soak until softened, 25–30 minutes.
• Drain chilies, reserving soaking liquid. Purée chilies, shallots, garlic, ginger, cilantro stems, coriander, turmeric, curry powder, and 2 Tbsp. soaking liquid in a food processor, adding more soaking liquid by tablespoonfuls, if needed, until smooth.
SOUP
• Heat oil in a large heavy pot over medium heat. Add khao soi paste; cook, stirring constantly, until slightly darkened, 4–6 minutes. Add coconut milk and broth. Bring to a boil; add chicken. Reduce heat and simmer until chicken is fork-tender, 20–25 minutes. Transfer chicken to a plate. Let cool slightly; shred meat.
• Meanwhile, cook noodles according to package directions.
• Add chicken, 3 Tbsp. fish sauce, and sugar to soup. Season with salt or more fish sauce, if needed. Divide soup and noodles among bowls and serve with toppings.

There will be NO access to our parking lot for most of the day. Santa Barbara Street and Sola Street will be closed to ALL through traffic. This is a police closure for parade and event security. There are NO exceptions. If you plan to arrive before the street closures to park your car in our lot, please be aware that you will not be able to get out until streets are reopened. We have no control over these street closures and cannot help you get your car in or out of our lot.

Victorian attitudes about roles in society prevented women in nineteenth-century England from pursuing a formal education, however, an interest in plants was considered a socially acceptable pastime.
This exhibit sheds light on women who used their skills in writing and drawing to make meaningful contributions to the emerging science of botany.
