From Our Desks To You: Dear Members, This is my final letter to you as your Club President. When I was first selected by the members of this club to serve as Club President, I could not have anticipated what the next four years would bring.

Shortly after beginning my first term as your President, COVID shuttered the Club and upended all of our lives. Over the next four years (two terms as President), your board, along with Sarah and Chef, worked tirelessly to reinvent and transform the UClub into what it is today – a thriving social club with energy and eyes on the future. I could not be more comfortable passing the baton on to your next Club President at our Annual Meeting on October 20 (see page 9 for more information and details). I cannot wait to see what the next two years hold for the our Club.

I will still be finishing out my last term on our Board and of course intend to stay active as a UClub member for many years to come.

I am very excited for some of the wonderful initiatives in the works for our Club, and excited as well to give you a little peak at what is coming down the pipeline: I know Sarah and her team are hard at work on a number of new projects, not least of which --BREAKING NEWS!-- is a new, upgraded website and also a new member app for our mobile phones, both slated for launch in early 2024!

The other big project that will kick off 2024 is our exclusive Magic Mansion event. You have no doubt seen the poster

and flyers around the Club (and the beautiful ad on the back page of this magazine). This will be one of the most impressive and high-end events we have put on here at the Club to date, with the goal of raising funds for our beloved Club. I hope you will all attend, but also that many of you will step up as sponsors – I have. Be sure to get your sponsorship inquiries in soon, before all the best options are sold out! Sponsorships are now open and regular tickets go on sale on October 20th.

As we head into the holiday season, I am eternally grateful for and appreciative of my UClub family. Thank you for the honor of serving as President and thank you for all of the life-long connections, celebrations, and opportunities to grow together.

And on that note, I once again encourage all of us to participate in our UClub holiday tradition of thanking our staff for all of their hard work during the holidays and throughout the year. Every year our members generously contribute to the UClub Holiday Staff Fund to help us ensure our staff have the holiday they deserve.

Let’s shower them with our appreciation once again this year for all that they do for us! (See page 12 for details on how we can contribute.)

Dear Members, Fall is here, and with it the fresh, crisp autumn air combined with the cozy togetherness of harvest spices, Thanksgiving, and the winter holidays just around the corner. October through December at the Club are truly special months. Our beautiful weather and often times Indian Summers keep us outside well into October and even November.

Here at the Club autumn also signals the start of our new fiscal year, kicked off with our Annual Meeting. This is the seminal event of our year, where we go over all of our important Club business, give core updates, and review the previous year’s financials. We also go over plans for the coming year(s) together. Invitations (all members) and ballots (proprietary members only) were sent to you in the mail. I hope to see everyone there – you really do not want to miss this important and also festive evening together.

(A reminder that dinner reservations for the evening are separate and space for dinner is limited. RSVP soon!

This evening is for UClub members and your spouses/ partners only – no guests at the Annual Meeting or dinner this evening. The Annual Meeting evening is truly a UClub members’ occasion.)

In the true UClub spirit of connecting, both fall and winter bring with them a number of great shared Club events and traditions. From our Voodoo Lounge in October to Friendsgiving in November and our Holiday Social, Holiday Dinner, and Hanukkah Candle Lighting in December, fall and winter are a real treat at the Club.

(I have it on good authority that Santa and Mrs. Cookie Claus are flying in again from the North Pole for our Holiday Social, complete with gifts for all the kids! Be sure to sign up for the Social and register any kids in your party for gifts. Santa needs to know!)

The holidays are a time of traditions, and one UClub favorite is the Holiday Staff Fund. The Holiday Staff Fund affords UClub members a special opportunity to show the Club’s staff your appreciation, not only for all of their hard work during the holidays, but also their dedication and care all year-round. See page 12 for more information on how to make your contribution.

LOIs & Reservations for Reciprocal Visits Ahead of Time - Mandatory

A reminder that you must get a Letter of Recommendation (LOI) from us for each and every Reciprocal Club visit.

Please do try to give us 2-3 business days to prepare and send your LOIs. A reminder also that you are responsible for making and managing any and all reservations with our reciprocal partners yourselves.

Cancellation Policies

A reminder that we do have a 72-hour cancellation policy. For special events and meals, including but not limited to special menu dinners, Club events, activities, socials, single-seating meals, and more, cancellations can be made up to 72 hours before the event only. Cancellations less than 72 hours before will be charged in full for you and all guests. Additions to reservations after a reservation deadline are not permitted without approval. Waitlist may be in effect.

HOW-TO: Reciprocal Club Visits UClub of Santa Barbara Members enjoy reciprocal access to over 200 private clubs in the US and worldwide.

• A full list of current reciprocal clubs can be found in the members area of the website.

• To access a reciprocal club, be it just for a meal or golf, or for an extended stay: 1. Members please first contact the club(s) you wish to visit to check availability*.

2. Once you have confirmed availability with the reciprocal club(s), email Member Services for the required Letter of Introduction (LOI).

3. Please allow 2-3 business days for us to email your LOI out. You will receive a copy as well. * UClub members are responsible for making any and all arrangements and reservations directly with the reciprocal clubs they wish to visit, and must settle any and all bills directly with the reciprocal clubs before they leave. Meet Our UClub Staff Jaime Quirino & Concepción (Concho) Cruz If you have been to the University Club of Santa Barbara for lunch you will undoubtedly have been met by the warm smiles and personable attentiveness of Jaime Quirino and Concepción (Concho) Cruz. With decades of experience in service and hospitality between them, their attention to detail and gracious, accommodating demeanors are unparalleled. Both Jaime and Concho take pride in ensuring every diner – UClub members and their guests alike – enjoy the best quality experience possible while at the Club; and both bring to the table unique life skills and backgrounds to help them achieve that goal.

Jaime Quirino (age 57) hails from Mexico City, Mexico where he worked as an accountant in sales and inventory for the Jarritos Jaime Quirino company. When he moved to the United States some 32 years ago, he found it difficult to get certified in his field in English. “The first years are very difficult, with the language and trying to study,” he relates.

Nonetheless, Jaime was determined, working as a dishwasher at Hola Amigos restaurant and a cook at a local fish company, as well as a cook at a local convalescent home. What he he is most proud of, however, are the more than two decades spent working for the local community here in Santa Barbara, first as a parent advisor and also as an administrator and assistant to one of the board of directors, among other roles, for Storyteller Children’s Center - a preschool providing early childhood education for children facing adverse challenges in Santa Barbara County and comprehensive support services for their families.

At the same time, starting in 1991, Jaime also did some part-time work as a busboy at La Cumbre Country Club and as a server at the Hyatt from 2007-2016. He also worked for six years at El Encanto as a busboy and server. In 2016 he began working full-time at La Cumbre and also the Montecito Club. Jaime joined the staff at the University Club in 2019.

When asked about his family, Jaime smiles and his face lights up. His wife Leticia Elizalde is a private caregiver. Jaime has three sons, now ages 37, 30, and 27. “Jaime Jr. studied engineering and logistics and now owns his own martial arts gym,” the proud father shares. “Edgar studied to be an automobile technician and works at Hyundai Ventura, and Erick studied engineering and audio recording, working for Sony Studios.” During his time off Jaime enjoys music and walks with his wife, as well as visiting family in Ventura and eating good food (but not too much fish!).

Concepción (Concho) Cruz (age 46) was born in Oaxaca, Mexico. At the age of 17 he came to visit his aunt in Napa. “I came to check out the grapes for the wine,” he says, “and the weather, the people, the community just grabbed me.” While he had family on his father’s side in Napa, he also had family on his mother’s side in Santa Barbara. He made the move to Santa Barbara in 2000.

Concho initially started out as a houseman at the Montecito Club doing maintenance, cleaning, and moving furniture, “but the busboy was always a no-show, so they offered me the job, Mondays to Fridays, with tips.” At that time he also worked nights at Café Buenos Aires. Concho started at the University Club two years ago (“One of my neighbors worked here and Jaime told me how good the people and the management are here, so I came.”) and also works at La Cumbre Country Club and Montecito Club.

Like Jaime, Concho also has three sons – Rene (20), Gustavo (15), and Cristofer (13). His wife Maria Maganda is a special aid at the Franklin School. “In 2002 I met my wife. I asked her for her number and took her to Starbucks. She loves Starbucks,” he laughs, nodding with a smile that they still go to Starbucks together to this day. All three of his sons and Concho himself enjoy playing golf and his two youngest are avid soccer players. “I love golf,” Concho says, “And music. Music is my soul – salsa, cumbia, merengue, mariachi.”

Both Jaime and Concho appreciate working at the University Club. “We see the members often,” Concho says, “and we get to know them and what they like so we can have everything ready for them.”

Jaime agrees: “It is what makes the service more exclusive,” he says. “In a restaurant they are customers, but here they are members, and our connection with them is closer.” Concho nods, “Yes, exactly. Here we get to know everyone’s names, their favorite dish, which table they prefer. We can really give them a more personal and more private experience.”

Speaking to the UClub members Concho says:“We are here to serve you. If you have questions, we are glad to share and help.” Jaime agrees and adds, “Thank you for the opportunity to serve you each day as best as we can.”

No Regular Dinner During Special ‘Gold’ Dinners

A reminder that there is no regular dinner available on UClub ‘Gold’ evenings - culinary evenings held in lieu of regular dinner. Walk-ins are also not possible on ‘Gold’ evenings (such as 1st Thursday wine dinner, Oktoberfest, Opera Dinner, Lobster Fest, Holiday Dinner, and similar). Reservations are always required several days ahead of time for special culinary evenings; food and seating are prepped ahead of time according to the reservation lists.

We do have a 72-hour cancellation policy for these same reasons. You are welcome to stop by for a drink at the bar during special dinner events, but you will not be able to order dinner of any kind.

Communal Tables

The University Club is all about forging lasting connections, celebrating and growing together. To this end we often have communal tables set up for those who attended an event or activity and wish to dine together before or afterward. If you would like a lunch or dinner reservation before or after an event or activity and would like to sit at a communal table with others who attended, please indicate this in your reservation or let Activities@uclubsb.org know.

COOKING WITH CHEF DAVID Mr. Leggett and the Butternut Squash

It is a little known fact that the butternut squash actually has a most unusual origin. Native Americans, of course, cultivated squash for thousands of years before the modern era. But butternut squash was not amongst their annual crops. It actually only dates back to 1944.

It was ‘invented’ in the United States by one Mr. Charles Leggett of Stow, Massachusetts. Mr. Leggett was not a plant expert, or even initially a farmer, but had been forced to leave the city for the country because of problems with his father’s health.

As it turns out, the house Mr. Leggett purchased after this move to the country came with a fair amount of land. The intrepid new agriculturalist decided to try his hand at developing a squash big enough, and also tasty enough, for a family to consume. The Hubbard squashes popular at the time were, in his opinion, too big, while Halloween pumpkins were there for scaring people rather than eating.

As the legend goes, Mr. Leggett eventually took his new, unique strain of winter squash 16 miles down the road to the to the agricultural experiment station in Waltham, Massachusetts.

He said “Look here, boys. I’ve developed this strain of winter squash over the past few years and want to see what you think about it. It’s a cross between Hubbard and Gooseneck squash.” The crop researchers took his seeds and asked “What do you call this squash, Mr. Leggett?” He responded by saying “Well, it is smooth as butter and sweet as a nut, so let’s call it ‘Butternut.’”

They confided that they were skeptical the strain would hold for repeated production. After the appropriate field testing was completed and the variety proved to be consistent (and delicious), the scientists proudly released the University of Massachusetts “Waltham Butternut” variety of winter squash. Poor Mr. Leggett never got his due for developing one of the best winter squash varieties in history. He died in the late 1980’s at the age of 88. The land he grew the famous crop on in Stow, Massachusetts is now a golf course - Butternut Farm Golf Club.

Butternut Squash Ravioli serves 6 INGREDIENTS: 3 Butternut Squash

Semolina flour

2 tablespoons olive oil

About 3 pounds fresh pasta sheets

1 tablespoon light brown sugar

3/4 cup unsalted butter

Salt and black pepper

8 fresh sage leaves, finely chopped

1 egg

2 tablespoons crushed walnuts

1/2 teaspoon freshly grated nutmeg

DIRECTIONS: • Heat oven to 400 degrees and line a rimmed baking sheet with parchment paper. Place pumpkin on pan, cut sides up, drizzle with olive oil and generously season with brown sugar, salt and pepper. Roast for 35 to 45 minutes, or until soft. Allow to cool slightly.

• Scoop out the flesh of the pumpkin into the bowl of a food processor. Add egg and nutmeg, and purée until smooth. You should have about 3 cups (1 1/2 pounds) purée total. Set aside 1/3 cup pumpkin purée for the sauce.

• Dust a work surface with semolina flour. Lay out a sheet of pasta, then place 2 teaspoons of filling every few inches. Brush around the filling with water, then place a second pasta sheet over the top. Press the top sheet of pasta down around the mounds of filling. Cut 2 1/2inch square ravioli with a large ravioli stamp or sharp knife, trimming as needed, and crimp around the edges with a fork to seal individual raviolis.

• Bring a large pot of water to boil and season generously with salt. Drop in ravioli a few at a time and cook for 5 to 7 minutes, until soft but still al dente. Set aside 1/4 cup pasta cooking water, then use a large slotted spoon to remove the cooked ravioli to a plate.

• Make the sauce: Heat the butter, sage and walnuts in a medium skillet over medium-high heat, stirring occasionally, until the butter browns, about 5 minutes. Add the reserved 1/3 cup pumpkin filling, a few grinds of nutmeg and a pinch of salt. Stir to combine and sizzling, then add 2 tablespoons reserved pasta cooking water, stirring until sauce is glossy and smooth; thin with additional pasta water if desired. Spoon sauce onto plate.
