Recipe of the month Peppered Rib Eye Steaks with Red Wine Glaze Treat the one you love on February 14th to succulent pan-fried steak with a luxurious sweet red wine sauce. Ready in 20 minutes. Serves 2. 150g baby new potatoes 2 tsp black peppercorns 2 x 250g rib eye steaks, trimmed of excess fat

1. Cook the baby new potatoes in a pan of lightly salted water for 10-15 minutes until just tender. 2. Meanwhile, crush the peppercorns coarsely using a pestle and mortar or the end of a rolling pin. Press firmly over both sides of the steaks. Set a griddle pan over a medium heat to preheat.

2 tsp olive oil 3 tbsp redcurrant jelly 3 tbsp red wine 1 tsp cornflour blended with 1 tbsp cold water 15g butter 2 tsp fresh chopped parsley Steamed baby carrots, mangetout and peas, to serve

3. Brush both sides of the steaks with oil. Place the steaks on the hot griddle pan and cook over a high heat for 1 minute on each side until seared. Reduce the heat and continue cooking for a further 2-4 minutes on each side until the steaks are cooked to your liking. Remove the steaks and cover and leave to rest for 2-3 minutes. 4. Place the redcurrant jelly and red wine in a small pan and heat gently until the jelly has completely dissolved. Stir in the cornflour mixture and simmer for a further minute until slightly syrupy. 5. Drain the potatoes, toss with the butter and parsley and season to taste. Transfer the steaks to warmed plates and spoon over the sauce. Serve with the potatoes and steamed vegetables.

Tip! Sirloin, fillet or rump steak can be used in place of the rib eye. Make sure both steaks are an even thickness and always bring the steaks to room temparture for about 15 minutes before cooking. Resting the steaks for a few minutes after cooking will also help to ensure they are meltingly tender.

This was featured on television, and in newspapers nationwide. Sold for £2800 as a speculative item, the feeling was strong overall that the story behind the flag is true. It was nice to handle a topical item such as this. (Coins of Richard III do very well also!)

Cannock Friends of St Giles Raise money for Hospice Cannock Friends of St Giles were thrilled to be able to present a cheque for £3,000 to the Hospice over the Christmas period. Chairman Janette Arrowsmith, secretary Lyn Williams and Treasurer Trish Mellor presented the cheque to Lynn Hunter, a member of the Nursing Team and Jane Mogford, Deputy Clinical Lead when they visited the Hospice during the Christmas period for one of their volunteering visits. Jane and Lynn were extremely grateful to Cannock Friends for such a large donation; although the Cannock group is small they continue to be very active in promoting and supporting St Giles – work they have done since the Hospice first opened over 30 years ago. £1,000 of that total was raised by the Rotary Club of Cannock at a golf day; the remainder was made up of other donations to the Friends’ Group along with monies raised by the committee at several events including coffee mornings, sales and also from their entry into the Christmas Tree Festival at St Luke’s Church, Cannock.

£3,000 will help the Hospice to provide many services: for example £1,000 will run the day hospice for one day enabling up to 10 patients to receive specialist care and support whilst £500 will cover the cost of an admission to the In-Patient Unit [Compassus]. It is estimated that at least one third of the people living in its catchment area will have been touched by St Giles in one way or another, so the money raised by the community is being used to support other community members at a time in their lives when they are particularly vulnerable and in need of care. As always, Cannock Friends are extremely grateful to all those who enable them to make such donations to ensure the continued level of care is available to those who need it.

Simon was particularly touched by John Murdoch and his family who came to Hednesford from all parts of the UK at the end of November to collect the book they had ordered and to see the brick for Bill Murdoch – father and brother. It so happened that Simon, Mark and Sam were positioning the bricks with names beginning with M. The Murdoch family were just delighted to be given the opportunity to lay the brick

CHAPS has been overwhelmed by the amount of help received during Phase 4 and would like to thank local skip company Coopers of Hednesford for donating a skip during the brick laying and to Craig Watts Holdings for providing Heras protective fencing whilst building works were undertaken. Stafford Players’ Next Venture Is “Hindle Wakes” If you liked “Hobson’s Choice” you’ll love Stafford Players’ February production of “Hindle Wakes”. It’s writer Stanley Houghton was one of the Manchester school of playwrights who enlivened Edwardian theatre. He offers a progressive view of female independence considered scandalous at that time. The play is set in the fictional mill town of Hindle in Lancashire. Young mill hand Fanny and her employer’s son Alan are discovered to have enjoyed a dirty weekend together during the town’s Wakes Week, to the shock and horror of their respective families - especially as Alan is engaged to Beatrice, the daughter of his father’s boyhood friend. Both families put heavy pressure on the young pair to marry, but then Fanny makes a decision which surprises them all. The play takes an entertaining look at the double standards of morality applied to women and men in 1913. Perhaps the question today is - have things changed that much in the intervening years?
