Can you hear me now? An unexpected journey from kitchen to hearing specialist

Mitch Rockwell, owner of Rockwell's Hearing Center in Tequesta, emphasizes

'I do everything bundled' he says. 'If you purchase hearing aids from me, all follow-up visits are at no charge.'

Mitch Rockwell can’t sit still.

As a result, Rockwell’s career path reads like an adventurous roadmap, winding through restaurant kitchens, opticianry practices, and finally landing in the world of hearing healthcare.

At 48, he has transformed a series of professional challenges into the thriving Rockwell’s Hearing Center in Tequesta, which he opened a year ago.

His journey began in the high-pressure world of commercial cooking. As an executive chef in Gainesville, Rockwell managed a kitchen with 125 employees by age 20.

"The problem with commercial cooking is that it's every night, every weekend, and your shifts are anywhere from 12 to 14 hours," he recalled.

The demanding restaurant environment took its toll, both physically and mentally. He actually lived the kitchen horrorscapes that late chef Anthony Bourdain wrote about in Kitchen Confidential

Also, during this time, he was a dedicated musician. Quite literally a rock ’n’ roll chef, navigating through multiple instruments with persistent determination. He started playing drums, then trumpet, then did jazz trumpet, then hand percussion, then bass, and ultimately settled on guitar.

"It was basically whatever band I was in, I would learn to play whatever I needed to so I could fit in," he said.

Guitar proved particularly challenging, with Rockwell describing it as the hardest instrument he'd learned. "I wouldn't say I was a natural," he said.

His musical background mirrors his professional life – a pattern of adaptability, continuous learning, and willingness to embrace new challenges.

Seeking a professional change from the kitchen, Rockwell began his career in optics, starting as a lab tech for an eyeglass company with four locations. He quickly earned the position of managing all four of their labs. In the early 2000s he moved to the Treasure Coast, taking a position as general manager in a struggling optometry practice, transforming it into a $3 million annual business. While there, he became licensed as an optician, fitting glasses and contact lenses, overseeing the fabrication of lenses, cutting them to fit frames, and ensuring everything is correct.

After becoming licensed as an optician Rockwell went back to college for the second time to start the study of microbiology while simultaneously teaching continuing education classes for other opticians.

In 2010 Rockwell was approached by a competing optical practice. The owner needed someone who had his expertise in practice and developmental management, who could launch a hearing clinic within the optical shop.

This move prompted Rockwell to become licensed as a hearing instrument specialist, a process that took approximately two years. His motivation was deeply personal: a desire to spend more meaningful time with patients.

"With hearing, you get to actually take time with people," Rockwell said. "You get to know about them, what their lifestyle is like. With vision you are taught to do refraction (eye tests) quickly to prevent malingering and as a result, you never get to build a serious bond with the patient."

Unlike vision exams, which focus on precise measurements, hearing assessments require a more nuanced approach. Rockwell describes himself as part healthcare professional, part audio engineer, meticulously programming hearing devices to match each patient's unique hearing profile.

Modern hearing aids are sophisticated miniature computers, capable of fine-tuning sound at discrete frequencies. Rockwell's approach involves comprehensive testing, understanding a patient's most comfortable sound

levels, and programming devices to suppress sudden, jarring noises.

His business philosophy emphasizes comprehensive care. "I do everything bundled," he explained. "If you purchase hearing aids from me, all follow-up visits are at no charge."

Rockwell said his hearing center sees individuals in their mid-30s seeking baseline screenings, to patients from 50 to 90 who are experiencing hearing loss.

He encourages everyone to get a baseline reading. “Even if you don’t feel you have a hearing loss you should have a standard hearing test every five years and once a year if you do have a loss.”

Rockwell's diverse background - from cooking to vision care to hearing healthcare - has equipped him with unique management skills.

"Running [several types of businesses] taught me to manage multiple priorities simultaneously," he said. "You're handling inventory, patient care, dealing with doctors from multiple practices, training employees, and ensuring every patient is satisfied."

He sees patient care in hearing healthcare through a similar lens. "Managing the product that comes in and managing your employees is very simple," Rockwell said. "Managing the patient healthcare is much more difficult."

Today, Rockwell operates his hearing clinic, continuing to apply the same meticulous attention to detail that characterized his previous careers. His ultimate goal is to incorporate optical into his hearing healthcare clinic.

Rockwell is part healthcare professional, part audio engineer, working to match each patient's unique hearing profile.

Admirals Cove Foundation: A Culture of Giving in Northern Palm Beach County charity spotlight

In 2016, Rebecca Divine was appointed as the first executive director of the Admirals Cove Foundation, with a mission to transform what had been a bi-annual, eventbased fundraising initiative into a year-round culture of collective philanthropy. She launched the foundation’s signature “Season of Giving,” setting the stage for what has become a powerful movement within the Admirals Cove community.

Under Rebecca’s leadership, the Foundation, now composed of more than 70 dedicated members, has significantly expanded its impact. Since 2016, the Foundation has distributed over $18.7 million to local organizations focused on health, education, and social services, as well as educational scholarships for Admirals Cove employees and their children.

The Admirals Cove Foundation’s mission is rooted in enhancing the quality of life in the community by supporting nonprofits that provide access to healthcare, education, and critical social services. As Rebecca notes, “The needs in our community continue to grow, and our focus remains on improving the lives of those in northern Palm Beach County who need it most.”

The Foundation’s contributions reflect this commitment. In 2017, it pledged $1 million toward the Oncology Registration Suite at Jupiter Medical Center’s Anderson Family Cancer Institute, and more recently committed $5 million for the new imaging center. Beyond financial grants, Admirals Cove residents have donated medical equipment to Clinics Can Help, bicycles to Jake the Bike Man, and clothing, furniture, and shoes to Place of Hope. Rebecca highlights that food insecurity and housing remain two of the most urgent local needs. In

response, Admirals Cove Foundation organizes regular food drives and “pantry raids” in support of St. Peter’s Food Bank and El Sol. They also support several nonprofits, including the Chasin A Dream Foundation, which provides emergency assistance for housing, transportation, food, and utilities to local families with children battling life-threatening illnesses and disabilities.

Each year, the Foundation receives more than 110 grant applications.

What truly sets the Admirals Cove Foundation apart is the depth of community involvement. Residents of all ages, from 6 to 95, volunteer their time and talents. The Admirals Cove Kids Program engages the youngest members of the community in service projects like book, toy, and clothing drives, and provides community service hours for teens.

One of the Foundation’s proudest accomplishments is its scholarship program, which has awarded over $1.1 million in education scholarships to employees of Admirals Cove

and their children.

In 2024, the Admirals Cove Foundation was honored with the Outstanding Foundation of the Year award by the Palm Beach County Association of Fundraising Professionals, recognizing the impact that can be made when a community comes together with purpose and heart.

Looking ahead, the Admirals Cove Foundation is committed to growing its footprint beyond the gates of the community through volunteering, donating, and deepening its partnerships with local organizations.

As Rebecca Divine reflects, “It’s about creating a legacy of giving and doing so together.”

Jupiter 2025: Market Overview Year to Date

Through mid-2025, the Jupiter market has shifted in measurable ways. Median home values are down modestly in many segments, with Redfin reporting a median sale price around $659,500 in July, about 4.4% below the year-ago level. Zillow shows an average home value of ~$686,300, down ~4.5% over the past year. Homes are simply taking longer to sell: Redfin’s data shows about 91 days on average vs. ~72 days a year earlier.

Inventory is creeping up, though not yet to levels that make the market easy for buyers. Bankrate reported in January that there were 586 homes for sale, up from about 519 in January 2024; at that point, supplies had reached ~9 months, indicating a tilt toward buyers. But supply varies widely by price tier and neighborhood, particularly in the luxury/waterfront segments. Sellers in desirable areas are still holding power when the home is well situated, strongly built, and shows well.

What Buyers Are Looking For

Luxury & Waterfront Properties: High demand continues for homes with waterfront access and for properties in prestige neighborhoods (Admirals Cove, Jupiter Inlet Colony, Pennock Point, etc.). These homes are still commanding premiums.

Move-In Ready, Amenity-Rich Homes: Buyers are far less interested in fixer-uppers unless the discount is very big. There’s a premium for homes with modern, upgraded finishes; smart-home features; wellness amenities.

Sustainable/Energy Efficient Features: Sustainability is increasingly a selling point – solar panels, efficient

HVAC, green building materials are more in demand.

Lifestyle & Location: Buyer preferences strongly favor neighborhoods with convenience to water, golf, beaches, privacy, direct access to boating, and scenic views. Also, gated or private communities remain very desirable. Proximity to good schools, low tax burdens, favorable climate, and general quality of life are “musts.”

Price Sensitivity Under Loans and Rates: Mortgage rates remain higher than in pandemic years, which is reducing buying power and putting pressure on price expectations. Buyers are more cautious and negotiating harder. Homes priced too aggressively, especially in mid-tier and lower luxury levels, may stay on market longer.

Outlook & What This Means

The market seems to be stabilizing rather than crashing. Slight price drops, more inventory, longer days on market – these are signs of a cooling rather than collapse.

If you’re a buyer, it’s a better time than 2021-2022 for negotiating, especially outside the very high end. But for top-tier luxury waterfront properties, competition (though less frantic) remains strong.

Sellers who want to succeed will need to price realistically, offer modern amenities, and market location and lifestyle strongly. Homes that show well, with desirable features and minimal work needed, are likely to do best. Dining Where You Live: Communities That Serve Up More Than Just Homes

You can smell it before you even park: the smoky aroma of seared steak drifting out of Jumby Bay, the sugary swirl of warm pastries from Crux Coffee Roasters, and the unmistakable citrusy zing of a grapefruit spritz being poured on the patio at Civil Society Brewing. This isn’t just the scent of a weekend dinner out – it’s the daily backdrop for residents who live in some of Jupiter’s most thoughtfully planned communities.

Jumby Bay Island Grill delivers coastal-Caribbean comfort with a laid-back, beachy feel. In the mood for a burger and one of Jupiter’s best IPAs? Civil Society Brewing Company has become something of a pilgrimage site for craft beer lovers statewide.

But Abacoa isn’t just about restaurants – it’s about events. On any given weekend, the central Town Center might be hosting a food truck festival, live music, or even a baseball game at Roger Dean Chevrolet Stadium. Dining here is part of the rhythm of daily life.

Alton: Sleek, Stylish, and Surprisingly Flavorful

Just a few minutes down the road from Abacoa is Alton, a newer community that’s already established itself as one of the top choices for buyers looking for a modern, all-inclusive lifestyle. The homes are contemporary, the amenities are state-of-the-art, and the dining is abundant and walkable.

While not technically a residential community, Harbourside Place functions as the culinary and cultural anchor for nearby high-end neighborhoods like Jupiter Yacht Club, The Pointe, and even parts of Tequesta. This is where the Intracoastal meets the lifestyle magazine cover.

Dining at Harbourside comes with a view – and sometimes with a celebrity sighting. The Woods Jupiter, owned by Tiger Woods, is both a destination and a local favorite for steaks, seafood, and elevated American cuisine. Calaveras Cantina serves up bold Mexican flavors alongside an impressive tequila list For weekend brunch, Tommy Bahama’s tropical-inspired menu and live music make for an inspired lazy Sunday.

Proximity matters – and for those who live within walking distance, Harbourside adds a layer of social and culinary convenience that’s hard to beat.

Other Hidden (and Not-So-Hidden) Dining Perks in Jupiter Communities

There are other communities across Jupiter where dining is more than an afterthought – it’s integrated into the lifestyle.

Jonathan’s Landing is a private, gated country club community known for its upscale homes and marina. Its clubhouse dining options are exclusive to residents and guests, offering fine dining to casual waterfront eats. It’s luxury living with a built-in reservation.

Admirals Cove continues to raise the bar with its culinary programming. While typically limited to members, the dining experiences – especially during events – are known for their elegance and quality. Think lobster risotto, premium wine pairings, and Intracoastal sunsets.

Abacoa Golf Club’s Grille Room may be one of the best-kept secrets for locals who want a bite in a scenic setting without needing a membership. The menu is approachable and surprisingly sophisticated, with rotating specials and a wine list that makes it worth stopping in.

looking back: highlights from our first year

Tucked inside a modest corner house with no sign, Sim’s House Restaurant may be Jupiter’s bestkept dining secret. Owner Ernie Fidanza restored the 100-year-old home to preserve its rich history and transform it into an intimate restaurant that seats just 30 guests at a time. The house once belonged to Eli and Essie Sims – Essie was the daughter of Jupiter’s first postmistress and South Florida pioneer Charlie Pierce. Now a historic landmark, the home is said to still carry the energy of past “spirits,” though Fidanza assures it’s nothing unsettling.

Opened in 2021, Sim’s House serves a changing American menu using local ingredients, with dishes crafted by longtime Tabica Grill chef Francisco Lantin. Favorites include churrasco steak, snapper piccata, and the beloved 7th-generation meatloaf. There’s also live entertainment, including monthly comedy nights and a supper club.

Reservations are required – walkins aren’t accepted – and there’s often a waitlist in season. Fidanza hopes to expand with nearby event space but remains focused on preserving the charm and story of the original home.

In Jupiter, Thanksgiving blends tradition with coastal flair, turning the holiday into a uniquely local celebration. Families gather over tables that might feature roasted turkey alongside stone crab claws, mahi-mahi, or shrimp ceviche –fusing classic dishes with freshcaught flavor. Key lime pie often joins pumpkin on the dessert table, adding a tropical twist.

But it’s not just about food. With perfect November weather, many residents take their feasts outdoors. Families host Thanksgiving picnics at DuBois or Carlin Park, or even dine aboard boats as they cruise the Intracoastal. Paddleboarding and pier fishing have become post-meal rituals, proving that the outdoors is just as central to the holiday as the food itself.

Jupiter’s strong community spirit shines through local events like Turkey Trot 5Ks, festive markets, and community dinners. Eat Your Way to Happiness with Dishes From Local Chefs That Redefine ‘Delicious’

The Jupiter dining scene continues to up its game with restaurants putting out creative dishes and chefs trying to find that magic spot of traditional crowd pleasers along with new food combinations.

So how do diners choose? Usually it’s what they’re in the mood for, or cravings, as it were.

Say if you wanted a creative fish dish, you’d want to get to Little Moir’s Fish Shack.

Chef Frank Murgio and his staff kick around ideas daily to come up with lunch and dinner specials. A recent one caught our eye: the “surf and turf” treatment of a Wagyu bone marrow and shrimp. The chef explained they have been leaning toward Peruvian flavors. The marrow is paired with charred shrimp, corn, peppers and an aji verde sauce. The flavors of the lime and garlic cuts the fat of the marrow. Plantains and pita chips finish the plate.

At The Beacon, in sight of the lighthouse, we go as a group for shareable dishes. They include a fluke ceviche, with avocado, coconut milk and pistachios. Their chef also uses restraint, presenting their fresh catch of the day, resisting an overkill sauce and keeping the plate simple for the fish to star.

As an outing, the new Ona in the Singer Island Beach Resort & Spa is gaining attention. Chef Velmary Irizarry is putting out a menu at the oceanfront restaurant defined by Mediterranean coastal cuisine and packed with flavor. Along with a stuffed calamari, or Peekytoe crab Louie, find a coconut conch and corn chowder with a subtle hint of curry. And what a view!

For something a bit more traditional and meatier, we go for grilled lamb chops at The Woods. Their wine selections mean we can find a great pinot noir to pair with them – a deal at Happy Hour.

For a casual bite, in a laid-back setting, it’s usually Tiki 52 in Tequesta. Even my vegetarian friend enjoys the captain’s caviar – a medley of black beans, black-eyed peas, tomato, corn, relish ingredients – served with tortilla chips for dipping. Perfect with a cold beer. Conch fritters, cracked conch and conch chowder are what you order when bringing out-of-towners to the waterside restaurant to get them up to speed on Florida-tropics time.

Check out their live music schedule. Looking for a taco and ’rita? PapiChulo’s is in the thick of things on U.S. 1. Now that the bridge has reopened, it’s back to packed, so plan accordingly (we dine early for this reason in season). Our hidden find: the coconut-caramel-mint flan. Unusually good and get this – vegetarian and gluten free.

At Ona on Singer Island, don't miss the coconut conch and corn

perb here. The Cayman Island dressing on the dolphin Rachel is worth notice. So are the grilled pork chops with the maple-mustard sauce. A note: This is one of our BYOF restaurants: Bring up to a pound per person of a cleaned fresh catch, and they’ll cook it for you. Another dish here: Saffron Parm grits.

Sidle up to the Ke’e Grill in Juno for the sunset menu, where the food is moderately portioned and traditional cocktails made by experts. For as long as they’ve been opened, their pork chops and spinach Maria have won raves, for good reason. Don’t mess with tradition – it’s sometimes a good thing.

When we go for Greek, we hit Mana Greek Fusion in Harborside, Jupiter. For drinks and small plates, the zucchini fritters and the grilled octopus are the go-tos. The lemon chicken breast is another favorite, as is their version of paella, which you can make gluten-free by subbing out rice for the orzo. Service reigns supreme. Hospitality is front and center at Lila in Tequesta as well. Traditional favorites such as a tableside Caesar, and beef tartar are all but gone from most restaurants. Here, in a flower-bedecked, modern setting, find these poised alongside creative cocktails and clever presentations of Mediterranean coastal dishes including buttery scallops and a Faroe Island salmon dish that flakes under the fork.

For a glass of champagne or a cognac to end the night, stop by the Parisian in Jupiter, the tiny cafe with big personality. There may be jazz playing, but certainly conversation among the late night guests and owner.

Mocktails: Not Just for Teetotalers Anymore

For a variety of reasons, diners are cutting back on alcohol intake, but they still want a fun experience when going out to eat. For those drinkers, restaurants and bars have added mocktails to their bar lists. Most stand alone rather than rely on alcohol as a flavor. They are as creative and tasty as their spirited cousins, with mixologists offering up housemade mixes, herbal tinctures and more to slake thirsts and palates.

Here’s a look at some worthy of a non-alcoholic Happy Hour.

At the rebranded Nieko’s Neighborhood Bar and Grill (formerly Brick and Barrel) in Abacoa, the bar master presents the Pink Cowboy. The non-alcoholic spirit Seedlip Grove 42 is used for the base citrus flavor, along with fresh lime juice, housemade watermelon syrup, and cucumber for a refreshing sip.

Every detail down to the ice is replicated in the mocktails served at Hap and Hooch in Jupiter. A mix of freshly juiced watermelon, guava and lime go into the mock version of the Ducky Margarita Pebble ice is the structure from these talented mixologists.

From the Parched Pig, the bar adjunct to Coolinary in Palm Beach Gardens, alcohol-free drinkers can order Arnold’s Garden, a drink based on chamomile tea mixed with housemade vanilla syrup, lemon juice and muddled mint.

The bars at Blackbird in Jupiter are where it’s at starting at 4 p.m. Lucky you to get a seat outdoors, or inside in the exotic dining room. While the cocktails are potent, the mock versions bring out the base flavors. Consider Buddha’s Belly, the NA version of Confucius Says. A bracing bit of small-batch coconut Liquid Alchemist, lychee extract and a squirt of lime make this a winner.

The hotspot in Juno Beach is the bar at Aquasan, where their glassware steals the show. The Pacific Rim-inspired theme is all over their signature drinks with a tropical island flair. Mocktails include the Bird is the Word, a fruity, minty concoction balanced with the flavors of mango, a Seville orange aperitivo, lime, mint and a touch of cinnamon for spice.

Hippocrates, referred to as The Father of Modern Medicine, said, “Let food be thy medicine and medicine be thy food.” What we put into our bodies can have a direct impact not only on our physical appearance and health but also on the prevention and management of mental health conditions such as depression, anxiety, and ADHD. The link between diet, neurotransmitters, and mental health is becoming increasingly clear as research uncovers how nutrients impact brain chemistry.

Neurotransmitters are the brain’s chemical messengers that regulate mood, focus, energy levels, and sleep. These chemicals are actually built from the nutrients contained in our food. Serotonin, often referred to as the “feel-good” neurotransmitter, is produced from the amino acid tryptophan, which is found in foods like turkey, eggs, and nuts. Dopamine relies on tyrosine, another amino acid found in proteins like chicken, fish, and dairy. Magnesium helps regulate GABA, which has a calming effect on the brain and can help combat stress and anxiety. Omega-3 fatty acids, found in fatty fish, like salmon, support overall brain health and may reduce symptoms of depression.

At the heart of the link between mental health and nutrition is the gut-brain axis – a communication network

between your digestive system and your brain. About 90% of the body’s serotonin is produced in the gut, so a poorly nourished gut may lead to imbalances that affect mood, focus, and stress levels. Diets high in processed foods, sugar, and unhealthy fats have been linked to higher rates of anxiety, depression, and ADHD, while diets rich in whole foods – vegetables, fruits, legumes, lean proteins, and healthy fats support better mental health. The “Western diet” may contribute to chronic inflammation and oxidative stress, both of which have been associated with depression and cognitive decline. I often work with clients to foster a nurturing relationship with food and their bodies. Taking care of our bodies can be a powerful tool in managing our mental health. While diet alone can’t cure mental health disorders, it’s a key piece of the puzzle that is within our control. Eating well isn’t just about physical health—it’s an investment in your mood, focus, and emotional well-being.

Seeking That Hole-in-One. How He Went From Slinging Golf Clubs to Selling Homes

Jim Kirvin, with Keyes Platinum Group, leads a thriving operation, boasting 50 agents. The company has strategic partnerships with Forbes Global Properties and Luxury Portfolio International, giving them a competitive edge.

Jim Kirvin used to work for Jack Nicklaus in the 1990s, selling the legend’s brand of golf clubs.

‘I was on the marketing team there, and I could tell that the golf club company was not going in the right direction,” Kirvin said. “And I was like, ‘Maybe, I need to just go get my real estate license.’”

Now Kirvin partners with Keyes Platinum Group, selling homes. He has a history with Coldwell Banker, Lifetime Realty, and – at one time – sold homes at WCI Evergreen in Palm Beach Gardens.

With 26 years in the business, Kirvin says he will put the same effort into selling a $300,000 condominium unit as he will into a $12 million

"People always say, 'What price point do you sell?' I'm going to sell to whoever calls me,” he says.

Kirvin leads a robust operation, boasting 50 agents and an impressive market presence.

His approach to real estate goes beyond traditional sales tactics. Kirvin often advises potential buyers to take their time and truly understand the area. "Why don't you rent for six months until you figure out what you like?" he tells clients. It is a stunning demonstration of Kirvin’s commitment to his clients’ long-term satisfaction over quick sales.

"I want a happy client," Kirvin emphasizes. "If I talk you into something that you don't want and it backfires, you're not going to recommend me. You're just going to badmouth me all over town."

particularly in areas like Port St. Lucie. "The new builders are killing the resale market," Kirvin observes.

Developers are offering unprecedented incentives to attract buyers. "They got 50% off the lot premium, and then when they went into the design center, they gave them 40% off of anything that they picked out," he said.

Astor Creek Country Club in Port St. Lucie, for instance, is a new 5,000-home development. He says buyers are increasingly drawn to new construction with open floor plans and higher ceilings, challenging the market for older properties.

The condominium market presents the most significant challenges. In the wake of the collapse of a 12-story condominium building in Surfside in June 2021, the state now requires milestone inspections.

This has led to substantial assessment costs, creating a complex landscape for property owners

Each building's situation is unique, depending on how well the association has been managed and maintained, Kirvin said.

"Some buildings have people getting hit with $150,000 assessments," he added. "The condo markets are going to be tough for a while.”

There is finally some good news for home buyers on the insurance front, potentially providing some much-needed breathing room for property owners.

"One of the companies just came out, and they felt they were going to be able to offer an 8 percent decrease in premiums for single-family homes and a 12 percent decrease for condos," he said.

Kirvin says his clients get the benefit of his vast experience and knowledge of the market along the Treasure Coast. His agents have a process to make sure buyers don’t miss out on an opportunity – and even more importantly, not overpay for that opportunity.

“If I have to spend the time with them to really dive deep and search for a home, and it's going to take a year or two, I'm going to stick it out and make sure I'm meeting their needs,” he said.

Pack a Lunch to Enjoy Dining on the Water

Packing a paddle lunch? Bring a soft-sided cooler – it's easier to tuck under the bungees. And, don't forget ice!

Turn a good paddle into a great one, let’s plan for lunch on the water! Sharing time on the water with friends is great; adding food creates memories for all five senses to enjoy. Whether you plan a sandbar potluck to share or just bring your own, staying fueled and hydrated will extend your paddle day. A paddle picnic challenges you to pack efficiently, keep your outing eco-friendly and your lunch healthy.

The right gear is key for a successful lunch on the water. The ice has to last as long as you need and the containers should keep the food fresh. Cooler preference is personal. I prefer a soft-sided cooler because it is easier to tuck under the bungees. Some paddlers use a hard-sided cooler to use as their seat. Ice or reusable packs? Either or a combination of both work great, but standard ice tends to melt faster so I freeze small blocks as they take much longer to melt. Make regular sized ice last longer by spreading it loose in the cooler over your items, but also keep some in a bag, to place on top. If you are bringing single serve drinks like a juice box, or water, freeze it and it should melt in time for lunch. Reusable containers support the 'pack it in, pack it out' approach and also keep your food fresh for longer.

Food tends to taste better on the water and simple items become especially enjoyable in nature. A basic peanut butter and jelly becomes the best you have had as you float on our crystal blue waters. If you are looking

for a fancier feast, shrimp cocktail, fish dip, sandwich wraps, and charcuterie board items are easily portable. Pizza rolls can be enjoyable when served cold, making them suitable for a paddle picnic. Dessert on the water should give you energy and fuel your return paddle. Fruit is ideal. Frozen grapes, chocolate dipped strawberries and sliced watermelon are paddle picnic favorites. If you want to forego packing your own lunch, a couple of local restaurants offer weekend lunches or boxed charcuterie boards that come cooler ready. Let them know you are paddling and ask them to pack tomatoes and dressings on the side to keep your sandwich from getting soggy.
