The 2017/18 pistachio crop was very large, but producers and traders were not happy. How come?

Die Pistazienernte 2017/18 war sehr groß, und trotzdem waren Produzenten und Händler nicht zufrieden. Wie kam das?

The average size was smaller. It’s not so easy to understand, and that’s why I’d like to explain the facts to you. For us, 31 is the usual export size for the Fandoghi variety, i.e. 31 pistachios per ounce (28,35g). This is not particularly large, but it is the standard size for Iranian pistachios. Our large sizes start at 28/30 and 30/32, and in 2016 size 31 was as large as 32/34 this year.

What I‘m saying is that this year’s pistachios have less density. The fruit looks the same from the outside as in 2016/17 and it has the same size, but in 2017/18 it has a lower weight. In international trade, the benchmark is the number of nuts per ounce. Our customers buy 28/30 or 30/32 from us, but they actually get 34/36 or 32/34. It is not about the outer dimension. Buyers all over the world fear small calibers. This crop resulted in a large quantity of „light“ pistachios.

Why was that?

Weather conditions. In 2016/17 ideal conditions prevailed. The winter of 2017 was not cold. And the crop volume was too large. The

Was ich damit sagen will ist: der Pistazienkern dieser Ernte hat weniger Dichte.

Die Frucht sieht von außen gleich aus wie 2016/17 und hat die gleiche Größe, ist aber 2017/18 von geringerem Gewicht. Im internationalen Handel gilt als Maßstab die Zahl von Nüssen pro Unze. Unsere Kunden kaufen bei uns 28/30 oder 30/32, bekommen aber eigentlich 34/36 oder 32/34. Es geht nicht um die äußere Dimension. Käufer überall auf der Welt fürchten kleine Kaliber. Diese Ernte brachte eine große Menge von Pistazien „light“.

IRAN Warum war das so?

Wetterbedingungen. 2016/17 herrschten ideale Verhältnisse. 2017 war es im Winter nicht kalt.

Und die Ernte war zu groß. Die Bäume konnten soviel Früchte nicht ernähren. Es fehlte vor allem an Wasser.

Hat das Problem den ganzen Iran betroffen?

Alle Anbaugebiete außer Khorassan im Osten.

Khorassan ist schon 2016 eine Ausnahmeregion gewesen. Die schlechten Bedingungen trafen vor allem die traditionellen Gebiete wie die Provinz Kerman, dazu Yazd, Sirjan, Zarand.

In allen diesen Regionen waren die Pistazien leichter.

Was sagt uns das für die kommende Ernte im Herbst 2018?

Has the problem affected the whole of Iran?

All growing areas except Khorassan in the east. Khorassan has been an exceptional region since 2016. The poor conditions particularly affected the traditional areas such as the province of Kerman, as well as Yazd, Sirjan and Zarand. In all these regions pistachios were lighter.

What do you expect for the upcoming crop in autumn 2018?

2018 is an „off“ year, and our forecasts predict maximum 100,000 t, that is half of 2017. Although density will not be a problem in 2018, the volumes are smaller. Basically, everyone is unhappy: exporters and farmers. Both are worried because their profits are dwindling while the costs remain the same.

2018 ist ein „off“-Jahr, und unsere Prognosen liegen bei nicht mehr 100‘000 t, also bei der Hälfte von 2017. Zwar wird das Problem mit der Dichte 2018 nicht auftreten, aber die Menge ist geringer. Im Grunde sind alle unzufrieden: die Exporteure, die Farmer. Gerade diese klagen, weil sie bei den gleichen Kosten schwindende Erträge haben.

Könnte es sein, daß bei einer kleinen Ernte 2018/19 die „neuen“ Anbaugebiete in Khorassan die Lösung darstellen?

Das trifft so zu. Die traditionellen Regionen im Süden haben eine wirklich kleine Ernte. Wir werden nur eine Ernte von 100‘000 t erreichen, weil wir Khorassan haben.

Sind Sie als Firma dort engagiert?

Wir unterhalten ein Einkaufsbüro in Mashhad.

Unsere eigene Produktion beschränkt sich auf Yazd. Das sind 1‘000 ha Land, davon 500 ha Pistazien. Je nach Produktionsjahr fallen 1‘000 t Nüsse an. Wir verarbeiten zwischen 5‘000 und 10‘000 t. In dem Zusammenhang: wir eröffnen gerade eine neue Anlage in Kerman.

IRAN Maybe the „new“ growing areas in Khorassan are the solution for a small crop in 2018/19?

That’s true. The traditional regions in the south have a really small harvest. We will achieve a crop volume of 100,000 t mostly because we have Khorassan and other new areas.

Ja, wir nennen sie die Pistazienstraße. Die Gesamtinvestition betrug 10 Mio. Euro einschließlich 5 Mio. Euro Landerwerb. Wir haben das Land nicht gepachtet, sondern gekauft. In dem Betrag ist die Konstruktion der Gebäude enthalten. Es scheint schwierig, derartige Summen aus dem Pistazienexport zurückzubekommen. In der Fabrik sind auf 24‘000 m2 150 Mitarbeiter beschäftigt, und Maschinen aller Hersteller installiert. Diese Fabrik stellt alle Kapazitätserweiterungen für die nächsten zehn Jahre dar, das heißt 20‘000 t.

Is your company active there?

We operate a purchasing office in Mashhad.

Our own production is limited to Yazd where we have 1,000 ha of land, 500 ha of which is dedicated to pistachios. Depending on the crop year, 1,000 t of nuts are produced. We process between 5,000 and 10,000 t. Also worth mentioning is that we are currently opening a new plant in Kerman.

On the Zangi-Abad-Road, the ring road around Kerman?

Exactly there; we call it the Pistachio Road.

Total investment amounted to EUR10 m including EUR5 m for land acquisition. We didn‘t rent the land, we bought it. The amount includes the construction of the buildings. It seems difficult to get a return on such an investment from pistachio exports.

Wenn die Sanktionen fallen, werden wir auch in den USA Maschinen kaufen. Wir verarbeiten in Kerman Nüsse in der Schale und Kerne, und können sowohl sonnengetrocknete wie maschinengetrocknete Ware liefern. Aber wie wir die Zukunft sehen, wird das Übergewicht wohl bei der Maschinentrocknung liegen.

Wegen gestiegener Lohnkosten auch im Iran?

Ohne Zweifel ein Grund. Sehen Sie, der Aufwand an Gelände für die Sonnentrocknung ist gewaltig. Die Tendenz in der Branche geht sehr deutlich in Richtung maschineller Trocknung. Es kommen mehr und mehr modernste Maschinen in Einsatz. Wir haben Farbsortierer, wir verfügen über Laser. Verarbeiter und Exporteure meinen es sehr ernst mit der Vermeidung von Aflatoxin und Fremdmaterial in der Ware.

Wenn ich die Anlagen von uns und der Kollegen ansehe, dann stelle ich große Fortschritte fest. Wir waren übrigens die ersten im Iran, die vor fünf Jahren nach IFS und BRC zertifiziert worden sind. Die Zertifikate mögen nicht viel

IRAN The factory employs 150 people on 24,000 square meters, where machines of all manufacturers are installed. This factory stands for all additions to capacity to be realized in the next ten years, i.e.

20,000 t. If sanctions are lifted, we will also buy machines in the US. We process in-shell nuts and kernels in Kerman, and we can supply both sun-dried and machine-dried goods. But as we see the future, the majority of nuts will probably be machine-dried.

Because of the increased labor costs in Iran?

This is no doubt one of the reasons. You see, the amount of land required for sun drying is enormous. The industry trend is very clearly towards mechanical drying. More and more state-of-the-art equipment is being used. We have color sorters and lasers. Processors and exporters are very serious about eliminating aflatoxin and foreign material from the goods.

When I look at the equipment we and our colleagues are operating, I see great progress.

By the way, we were the first in Iran to be certified according to IFS and BRC five years ago.

The certificates may not mean much, but they are door openers to many markets.

Die nächste Frage, die mir meine Kunden stellen, ist: welche Arten von Risiken sehen Sie und wieviele Rückweisungen wegen erhöhter Werte haben Sie gehabt? Ich sage: in den letzten zwei Jahren keine.

IRAN What about the 100% guarantee of freedom from aflatoxin?

Hängt das mit den hochmodernen Maschinen zusammen?

The 100% guarantee of freedom from aflatoxin seems bold to me. What our company says is: We supply pistachios with a low risk. The next question my customers ask me is: What kind of risks do you see and how many recalls have you had because of increased values? I say: none in the past two years.

Nein, nicht direkt. Das geringe Risiko geht auf ein anderes Management zurück.

Is this related to the use of state-of-the-art machines?

No, not directly. The low risk is due to a different management.

Can you explain that?

It is important to know what the individual machines can do, but for me it is crucial to have an overview of the entire process from start to finish. If you compare California with Iran, the industry in the US consists of relatively few large producers, while we still have around 100,000 producers. Each producer uses his own method, perhaps for a ton of pistachios. What I’m saying is that the large number of small producers makes control difficult. As far as raw material inspection is concerned, we are far, far ahead of California.

Könnten Sie das erklären?

Es ist zwar wichtig, zu wissen, was die einzelnen Maschinen leisten können, aber für mich ist der entscheidende Punkt, den gesamten Prozeß von A bis Z zu überblicken. Wenn Sie Kalifornien mit Iran vergleichen, so besteht die Branche in den USA aus relativ wenigen großen Erzeugern, während wir immer noch gegen 100‘000 Produzenten zählen.

Jeder der Produzenten wendet seine eigene Methode an, vielleicht für eine Tonne Pistazien. Was ich sagen will, ist, daß die Vielzahl der kleinen Produzenten die Kontrolle erschwert.

Was die Kontrolle des Rohmaterials betrifft, liegen wir weit, weit vor Kalifornien. Wir haben sehr viel mehr praktische Erfahrung. Die Sache ist einfach: wir bekommen Rohmaterial, das belastet ist, und wir wollen es nichtkontaminiert nach Japan oder nach Europa exportieren.

Ich nehme das Beispiel eines Arztes in Afghanistan oder dem Irak. Der hat ein wesentlich breiteres Erfahrungsspektrum als einer in den USA oder Europa. Der untersucht pro Tag hundert, zweihundert Patienten, aber in Europa oder den USA sieht er vielleicht fünfzehn.

Wie handhaben Sie die Qualitätskontrolle?

Die Aflatoxin-Untersuchungen geschehen bei uns im Hause mit einem HPLC-Gerät (high performance liquid chromatography), das rund 100‘000 US$ kostet. Nicht nur das Gerät kostet viel, sondern auch das Personal, das erfahren sein muß und mit dem Gerät umgehen kann.

IRAN We have much more practical experience.

It’s quite easy: we get raw material that is contaminated and we want to export it non-contaminated to Japan or Europe. I take the example of a doctor in Afghanistan or Iraq. He has much more experience than one in the US or Europe. He examines a hundred, two hundred patients a day, but in Europe or the US he sees perhaps fifteen.

How do you handle quality control?

The aflatoxin tests are carried out in-house with an HPLC device (high performance liquid chromatography), which costs about US$100,000. Not only the device is expensive, but also the staff who must be experienced and able to operate the device. In our factory, we focus on aflatoxin analysis, which is why we had to invest in the device. And we use it, too. We do about 100 tests a week.

Depending on the circumstances, we test a batch up to 40 times. In addition to aflatoxin, we test for moisture content and mould, as well as physical inspections such as color, size and defects.

How is demand for pistachios developing?

With rapid strides and faster than we ever thought. The same is true for production. If the current crop volume currently averages 200,000 t, we will achieve 300,000 t in ten years. In the US this development is much faster and it is said that they are targeting a crop volume of 1 million t.

If you are now observing demand, you see that it is developing faster that production. As we know, there‘s a brake somewhere. If, driven by the demand, prices reach US$15 per kg, demand will decline. It‘s like a law of nature.

In unserer Fabrik liegt der Schwerpunkt auf der Aflatoxin-Analyse, und deswegen mußten wir in das Gerät investieren. Und wir benutzen es auch. In einer Woche kommen wir auf rund 100 Tests. Je nach Gegebenheit testen wir eine Charge 40mal. Neben Aflatoxin untersuchen wir auf Feuchtigkeitsgehalt und Schimmel, daneben die physischen Kontrollen wie Farbe, Größe und Defekte.

Wie entwickelt sich die Nachfrage nach Pistazien?

Mit Riesenschritten und schneller als wie je gedacht haben. Entsprechend sieht es für die Produktion aus. Wenn wir im Augenblick in Iran bei durchschnittlich 200‘000 t stehen, sind werden in zehn Jahren 300‘000 t erreicht.

In den USA geht das alles viel schneller und man hört, daß sie 1 Mio. t Produktion anpeilen.

Wenn man jetzt beobachtet, wie sich die Nachfrage entwickelt, so ist die Geschwindigkeit größer als die der Produktion. Wie wir wissen, ist irgendwo eine Bremse. Wenn, getrieben durch die Nachfrage, die Preise 15 US$ je kg erreichen, geht die Nachfrage zurück. Das ist so etwas wie ein Naturgesetz.

Your company is one of the largest in the field of raisins, Goldens and Sultanas. The 2017 harvest was a complete failure. How can you meet your obligations to your customers?

Ihre Firma ist eine der größten im Bereich von Rosinen, Goldens und Sultanas. Die Ernte 2017 war ein kompletter Fehlschlag. Wie können Sie Ihren Verpflichtungen gegenüber Ihren Kunden nachkommen?

The reason for the crop failure in 2017 was not the climate, but the lack of water. There was simply not enough rainfall. Compared to previous years, we had only half of the raw material. Once the farmers learned that the price of Goldens was much higher, they produced Goldens from fresh grapes which were also hardly available because they had been absorbed by the domestic market. Golden‘s share of the total crop was much higher. The quality was good, but there were not enough grapes. Remember, the domestic demand for raisins is high, amounting to 40‘000 t. In September 2017, when the farmers began to produce Sultanas, the price of Golden raisins was still high so there was only little raw material left over for Sultanas. We can’t gain all important markets for now. We told our customers: If goods are available from other countries like Turkey, please buy there.

Die Ursache der Mißernte 2017 war nicht das Klima, sondern der Wassermangel. Es hat einfach nicht genug geregnet. Verglichen mit früheren Jahren hatten wir die halbe Erntemenge an Rohmaterial. Nachdem die Bauern erfahren hatten, dass der Preis für Goldens viel höher liegt, produzierten sie Goldens von frischen Trauben, die aber auch kaum verfügbar waren, weil sie vom Binnenmarkt aufgenommen worden waren.

Der Anteil von Golden an der Gesamtmenge war viel höher. Die Qualität war gut, aber es waren nicht genügend Trauben da. Vergessen Sie nicht, die Binnennachfrage nach Golden Raisins ist groß und beträgt 40’000 t.

IRAN Have the grape plantations been modernized?

In some cases yes, but not yet in general.

Why? There is a fear that less and less water will be available. This really is a water crisis.

What I know is that the government is doing everything possible to avert this crisis. But nature seems to help. In February and March it rained much more than in the previous months, which is a good news for new crop.

You noticed it yourself: the hot spell has begun now, in mid March, instead of end of March.

Flowering occurs three weeks earlier than usual. If there is another cold spell now, the flowers and buds will be destroyed. Producers are monitoring the development until the end of winter. If we get enough rainfall, it looks good for the raisin industry.

What are these?

I guess figs, oranges, maybe apples. But such a development takes time. The decision is taken when producers see that other articles achieve better prices on the market than grapes.

As an entrepreneur you are not happy with this situation. What do you do?

We focus on other articles. Of course we are very strong in the raisin business. But we

Was ich weiß: die Regierung tut das Mögliche, um diese Krise abzuwenden. Aber die Natur scheint zu helfen. Im Februar und März hat es wesentlich mehr geregnet als in den Vormonaten.

Nicht genug, muß ich sagen, aber mehr als vorher.

Sie haben es selbst bemerkt: die Hitzeperiode begann bereits jetzt, Mitte März anstelle Ende März. Die Blüte kommt drei Wochen früher als gewöhnlich. Wenn jetzt noch einmal eine Kältewelle eintrifft, sind die Blüten und Knospen vernichtet. Die Produzenten beobachten die Entwicklung bis Ende des Winters.

Wenn wir genügend Niederschläge bekommen, sieht es gut aus für die Rosinenbranche.

Ich bin aber nicht zu optimistisch. Falls nicht, werden sich die Erzeuger anderen Produkten zuwenden.

focus on value-added products. There are consumer packs and private labels in which we have put a lot of money. We have now certified two BRC Food Grade AA systems, one for consumer packs and the other one for bulk products. We have recently commissioned a study on the needs of our customers and we found out that there is interest in date paste, for example. All our products are exported. A Persian proverb says that you should change failures into opportunities. Please bear in mind that we are experiencing the worst time of the embargo. We have learned to run our business well anyway.

You see, we are not involved in politics; we belong to the private sector. The US is one of the largest markets for our products.

Our company has been trading with America for 80 years, selling pistachios, raisins and dates there. We view the US with respect as a customer. Anyone who wants to buy Iranian products there is most welcome. Despite the embargo, we have never ceased to regard the

Als Unternehmer geben Sie sich nicht mit dieser Situation zufrieden. Was tun Sie? Wir konzentrieren uns auf andere Artikel. Natürlich sind wir im Rosengeschäft sehr stark.

Aber wir setzen Schwerpunkte bei wertgesteigerten Produkten. Da sind die Verbraucherpackungen und Handelsmarken, in die wir eine Menge Geld gesteckt haben. Wir haben jetzt zwei Anlagen BRC Food Grade AA zertifiziert, eine für die Konsumentenpackungen, die andere für Großgebinde. Kürzlich haben wir eine Studie über die Bedarfslage unserer Kunden machen lassen und festgestellt, dass zum Beispiel Interesse an Dattel-Pasten besteht.

Was wir produzieren, geht in den Export. Wir haben auf Persisch ein Sprichwort, das sagt, wenn wir wenig haben, wir umso stärker werden.

(Change failures into opportunities). Bitte bedenken Sie, dass wir zur Zeit der schlimmsten Zeit des Embargos leben. Wir haben gelernt, unsere Geschäfte trotzdem gut zu führen.

Iran has not a very proper image in the media unfortunately. But I‘m telling you: Iranians are normal people like others and they don’t harm you. On the contrary: we like to have contact with foreign countries. We would like to show the world the beauty of our country and its very long history as one of the oldest civilizations. The brand „A peaceful world“ is a counterpoint to negative press reports and applies not only to Iranian dried fruit, but also to the food industry in general. Every company that wants to sell its products under this brand is trained by us with regard to food safety. We help producers, for example, to obtain the BRC certificate. In a second step, we enable

Is the brand a conglomerate of different companies?

I started with my own company. Then I contacted processors of saffron and won them for cooperation, as well as honey producers. They exhibit together with my companies on different trade shows. AHT is my private company and „Peaceful World“ is a brand under my social responsibility. In view of the very high financing costs in Iran, I support companies, so-called SME‘s (small and medium enterprises), to offer their products under this brand.

And it remains their business! The selection criteria for the companies are a sustainable business model and the ability of the products to be competitive on the world market.

How many companies take part?

At the beginning there are five companies.

Die Marke „A peaceful world“ ist ein Kontrapunkt gegen negative Presseberichte und gilt nicht nur für iranische Trockenfrüchte, sondern für die Lebensmittelbranche allgemein. Jede Firma, die ihre Produkte unter dieser Marke verkaufen will, wird von uns im Hinblick auf Lebensmittelsicherheit trainiert. Wir helfen den Erzeugern, zum Beispiel das BRC-Zertifikat zu erwerben. Als zweiten Schritt ermöglichen wir die Teilnahme an Messen wie der Gulfood. Die Idee ist, verschiedene Produkte unter einer gemeinsamen Marke zu präsentieren.

Hat man sich die Marke als ein Konglomerat verschiedenster Firmen vorzustellen?

Ich habe mit meiner eigenen Firma angefangen. Dann habe ich Verarbeiter von Safran kontaktiert und sie zur Mitarbeit gewonnen, außerdem Honigproduzenten. Sie stellen zusammen mit meinen Firmen auf verschiedenen Messen aus. AHT ist meine Privatfirma und „Peaceful World“ ist unter meiner sozialen Verantwortung.

What‘s that?

You‘re right, actually export promotion is the government‘s job. But our government is busy with political issues, and so I think the private sector can contribute. A few days ago, an export campaign meeting was held for the second time with 500 participants. This involved the training of marketing managers.

That sounds very honorable. But is this not competition for your own company?

The export campaign is not about dried fruit and nuts. We want to give advice to make companies competitive on the world market with their articles. The government has signaled its support for the campaign. And the government will be present at the third meeting to be held in April 2018. When I said at the beginning that the raisin harvest was not good, I stressed that we would think of something else. That‘s it.

Wieviel Firmen nehmen teil?

Wir sind am Anfang, und es sind fünf Unternehmen. Da die Mitarbeit kostenlos ist, fragen sich die Unternehmer auch: Warum tut Herr Amin das? Wenn ich sehe, mit wieviel Engagement Jungunternehmer diese Chance, die ich seit drei Jahren biete, nutzen, dann fühle ich mich bestätigt, dass ich auf dem richtigen Weg bin. Außerdem startete ich die Exportkampagne, neu im Iran?

Was ist das?

Eigentlich, Sie haben recht, ist Exportförderung die Aufgabe der Regierung. Aber unsere Regierung ist mit politischen Themen beschäftigt, und daher, finde ich, dass der Privatsektor mitarbeiten kann. Vor wenigen Tagen wurde zum zweiten Male eine Tagung der Exportkampagne mit 500 Teilnehmern durchgeführt. Dabei ging es um das Training von Marketing-Verantwortlichen.

Das klingt sehr ehrenvoll. Schaffen Sie damit nicht eine Konkurrenz für Ihr eigenes Unternehmen?

Im Rahmen der Exportkampagne geht es nicht um Trockenfrüchte und Nüsse. Wir wollen sie beraten, um mit ihren Artikeln auf dem Weltmarkt wettbewerbsfähig zu sein. Die Regierung hat uns signalisiert, dass sie die Kampagne unterstützen will.

Und bei der dritten Tagung im April 2018 wird die Regierung dabei sein. Wenn ich im Anfang sagte, dass die Rosinenernte nicht gut sei, habe ich betont, dass wir uns etwas anderes einfallen lassen. Das ist es.

Pistachios are by the most important items in our business with a share of about half of turnover . As you know, the last crop was poor in respect of big sizes, however, the quantity was good. Last year we exported pistachios, mostly in shell and to a lesser extent kernels to 20 countries. Our objective is to export Dried Fruits and Nuts to all parts of the world, but for the 2017/18 crop we moved quite some to India, Russia, Europe, Australia, Middle East, North Africa and China. Das weitaus wichtigste einzelne Produkt in unserem Sortiment sind Pistazien mit einem Umsatzanteil von 50%. Wie Sie wissen, war die Ernte 2017/18 im Hinblick auf Größen schlecht, währen die Erntemenge groß war.

2017 exportierte unsere Firma Pistazien in der Schale und weniger als Kerne, in zwanzig Länder. Wir haben die Absicht, unsere Produkte überall auf der Welt bekannt zu machen.

2017/18 haben wir kleinere Mengen nach Indien, Rußland, nach Europa, Australien, den Mittleren Osten, Nordafrika und China

Notwithstanding we have our markets, because Iranian raisins are special in their shape and taste. There are certain customers who interest in Iranian raisins. We hope that the crop of 2018 would be much better. I can tell you that we had in mind to have a booth on the Alimentaria fair in Barcelona, but due to the lack of products it doesn’t make sense to attend. We would have loved to go there because the Spanish market is very fond of Iranian raisins. So we are pinning our hopes on the coming crop this year.

Einige Kunden haben schon Interesse an der Ernte 2018, aber wir wissen jetzt noch nicht, wie sie ausfällt. Wir hatten vor, die Alimentaria in Barcelona mit einem Stand zu beschicken, mußten dies aber fallenlassen, weil wir keine Ware hatten. Wir wären gern nach Spanien gereist, weil dort iranische Rosinen geschätzt werden. Jetzt hoffen wir auf eine bessere Ernte.

Wir liefern auch iranische Datteln wie die Sorten Mozafati, Piarom, Sayer und Zahedi in bester Qualität in Einzelhandelspackungen oder Großgebinden für den europäischen Markt.

It has many regions providing best conditions for growing the date palm. So the country is considered one of the potential centers for producing and exporting dates.

The raisin is a nutritious dried fruit produced by desiccating grape. Like other dried fruits, it is in stock all year long. It is high in calories and low in fat and sodium.

Grandor has managed to export this product to various countries of the world with the help of appropriate planning and its personnel’s efforts. There are many types raisins for including Sultana Raisins, Golden Raisins, Sun Dried Raisins and Green Raisins, which are exported to different countries. The company is proud of marketing Iranian raisins with highest quality in line with international standards.

They are sorted by laser and packed in 10 kg cartons under the brand name of Grandor.

The fig is a plant indigenous to Western Asia, having been under cultivation in Iran for millennia. It has a tasty, nutritious and energy booster fruit consumed fresh or dry. Fig is high in iron, calcium, phosphorous, sodium, potassium, magnesium, manganese, chlorine, sulfurous, copper and vitamin A, B and C. Feigen: Auch die Feige ist im westlichen Asien beheimatet und wird in Persien seit Jahrtausenden gepflanzt. Die Feige ist ein Powerpack voller Energie, frisch oder getrocknet. Sie enthält Eisen, Kalzium, Phosphor, Natrium, Potasche3, Magnesium, Mangan, Chlor, Schwefel, Kupfer und die Vitamine A, B und C. Die iranische Feige ist ein besonderes Produkt mit hohem Zuckergehalt (rund 60%). Trockene Feigen enthalten fünfmal mehr Zucker als frische. Die iranische Feige bleibt zum Trocknen am Baum und benötigt keine Zusatzstoffe. Grandor verkauft trockene, eingefeuchtete und Baby-Feigen. Alves: We only have exclusive representations.

The contracts run for 5 years. We do not buy and we do not sell under our own name, but we act exclusively as a sales department. The customer can carry out audits himself. We are close to our importers. We understand the position of our importers and we take care that difficulties are avoided. We ensure that problems are resolved as quickly as possible.

On the way in Tajikistan What are the ususal topics that you discuss with your exclusive suppliers?

An example: We have a representative from Peru, these are farmers who grow the goods themselves. Like so many in Peru, they have grown Qinoa - the competition has grown too fast and prices and demand have declined.

So I meet them to discuss what can be grown to make them different from others in the markets. Our job is also to tell the supplier that he has to be creative - and not always imitate what his neighbor does.

Which partnerships have proven to be the best?

These are once our partners in Pakistan.

We started with basmati rice. It took a long time to find a buyer for basmati rice from Pakistan. Today this company is the largest organic exporter from Pakistan, with certificates according to IFS, Cedex and Fairtrade.

My second favorite project is in Burkina Faso, with whom we have been working for 10 years and is now the largest supplier of organic mango. We are currently building a fully

How do you rate the situation in Burkina Faso??

Burkina Faso had no significant processing industry. The raw material has almost always been exported. The government is changing that. Over the next few years, it will become clear whether this will be realized.

GERMANY You have been at Biofach for over 25 years. What has changed?

It has become an industry - and a tough business. That was very different 25 years ago.

You can lose a long-standing customer today because of 2 cents difference in price. Of course, today it‘s about larger quantities - and I do not want to say that it has gotten better or worse.

20 years ago, it was still quite family. It was a different relationship. It was also called the hippie fair. The organic world has become very commercial in recent years. What bothers me is that the Biofach is everywhere in the world today - and not just in one place. As a result, not so much international audience is coming to Biofach.

How did you get on the Biofach?

At that time we had a representation in South Africa - a young man who wanted to exhibit at the Biofach. At that time we had the smallest tea and medicinal plants. That‘s how we started - and then we got a lot of requests

Burkina Faso hatte bisher keine nennenswerte Verarbeitungsindustrie. Die Rohware ist bisher fast immer exportiert worden. Die Regierung ist dabei, das zu verändern. In den nächsten Jahren wird sich zeigen, ob sich das realisiert.

Sie sind seit über 25 Jahren auf der Biofach. Was hat sich verändert?

Es ist eine Industrie geworden – und ein hartes Geschäft. Das war vor 25 Jahren noch ganz anders. Sie können heute einen langjährigen Kunden wegen 2 Cent Preisunterschied verlieren.

Natürlich geht es heute um größere Mengen – und ich will nicht sagen, dass es besser oder schlechter geworden ist.

Vor 20 Jahren war das noch ganz familiär. Es war ein anderes Miteinander. Man nannte sie ja auch die HippieMesse. Die Bio-Welt ist in den letzten Jahren sehr kommerziell geworden. Was mich stört ist dass die Biofach heute überall auf der Welt ist – und nicht mehr nur an einem Ort. Dadurch kommt nicht mehr so viel internationales Publikum auf die Biofach.

GERMANY Wie sind sie auf die Biofach gekommen?

Wir hatten damals eine Vertretung in Südafrika – ein junger Mann, der auf der Biofach ausstellen wollte. Wir hatten damals den kleinsten Stand mit Tee und Heilpflanzen. Damit haben wir angefangen – und dann haben wir sehr viel Anfragen für andere Produkte bekommen. Eine meine ersten Vertretungen war in Burkina Faso. Später kamen Trockenfrüchte und Ölsasaten dazu.

Wie wichtig ist Bio-Ware für Sie?

How important are bio-goods for you?

Basically, this is not the main focus, because there are some suppliers who produce great products in a sustainable way, without having certificates. There are some conventional products that are better and safer than organic products.

Where do you see the biggest challenges in the European market?

Im Grunde steht das nicht im Vordergrund, denn es gibt einige Lieferanten, die tolle Produkte auf nachhaltige Weise herstellen, ohne Zertifikate zu haben. Es gibt einige konventionelle Ware, die besser und unbedenklicher ist als Bio-Ware.

Wo sehen sie auf dem europäischen Markt die größten Herausforderungen?

Europa kauft Lebensmittel sehr günstig ein, fast alles ist anderswo teurer. Es könnte sein, dass andere Länder in Asien künftig viel mehr Ware kaufen und für Europa eben nicht mehr so viel übrig bleibt. China kauft in Afrika so viel Anbaufläche – in Zukunft könnten bestimmte Waren für Europa nicht mehr verfügbar sein, oder zu ganz anderen Preisen. Bei Cashewnüssen ist diese Entwicklung ja bereits zu beobachten.

Europe buys food very cheaply, almost everything is more expensive elsewhere.

It may be that other countries in Asia will buy much more goods in the future and Europe will not have that much left. China is buying so much acreage in Africa - in the future, certain goods might become unavailable to Europe, or at very different prices. With cashew nuts, this development can already be observed.

You’ve attempted to place Iranian pistachios on the market. What has become of this?

Sie haben iranische Pistazien auf dem Markt platziert. Es war ein Versuch. Was ist daraus geworden?

We’ve put a lot of effort into it. So far, I must say, they have not yet established themselves on the market. We’re not giving up. A special packaging was created for “Persian pistachios” in two flavors, salted and with pepper and salt. In Iran we have learned that the nuts are also eaten with pepper. Our expectations in terms of volume were not met.

Is this because of the suppliers?

No, the relationships with our suppliers were stable. The quality of the nuts delivered was right - and without compromise. Product quality, ability to deliver, everything was right.

To me, the Persian pistachio is the pistachio itself. It has proved difficult to explain the difference between pistachio and pistachio to the consumer. I am perfectly aware that such a thing takes time.

Pistachios have become a mass product in Germany. Seeberger quality is something special. We offer pistachios from California and Iran at the same price. The Iranian

Wir geben nicht auf. Es wurde eine besondere Verpackung geschaffen für „persische Pistazien“ in zwei Geschmacksrichtungen, salzig und auch mit Pfeffer und Salz. Im Iran haben wir gelernt, daß die Nüsse auch gern mit Pfeffer gegessen werden. Unsere Mengenerwartungen wurden nicht erfüllt.

Hängt das mit den Lieferanten zusammen?

Nein, die Beziehungen zu unseren Lieferanten waren stabil. Die gelieferte Qualität der Nüsse hat gestimmt – und zwar ohne Abstriche. Produktqualität, Lieferfähigkeit, das hat alles gepaßt. Für mich ist die persische die Pistazie an sich. Es hat sich als schwierig erwiesen, dem Verbraucher den Unterschied zwischen Pistazie und Pistazie zu erklären. Mir ist vollkommen klar, daß so etwas seine Zeit dauert. Pistazien sind in Deutschland ein Massenartikel geworden. Seeberger-Qualität ist

Which is the most popular nut?

You won’t believe it but it is still almonds.

And the product range continues to increase: smoked almonds, salted almonds, roasted without salt – there are six or seven flavors.

When I think back to the early days of the Seeberger assortment, almonds had a firm place in the baking ingredient range, packed a little coyly in a transparent block bag. How have almonds become a snack nut? Do you source the raw material only from California?

We try to position ourselves more broadly with regard to origins. Australia is worth mentioning, but Spanish almonds are also used for

eben etwas besonderes. Wir bieten Pistazien aus Kalifornien und aus dem Iran zum gleichen Preis an. Vom Einstandspreis her liegen die iranischen höher, weil wir besondere Maßnahmen der Qualitätssicherung ergreifen müssen.

Ich glaube nicht, daß bei einem solchen Artikel der Verbraucher nicht nach Preis entscheidet.

Welche ist denn jetzt die Trendnuß?

Sie glauben es nicht: es ist die Mandel, immer noch. Und das Sortiment wird immer größer: Rauchmandeln, Salzmandeln, geröstet ohne Salz – es zeigt sich eine Fülle von sechs oder sieben Geschmacksrichtungen.

Wenn ich an die Frühzeit der Seeberger-Sortimente denke, da hatte die Mandel einen festen Platz im Backsortiment, ein bißchen verschämt, verpackt im durchsichtigen Klotzbeutel. Wie kommt es zu dieser Aufwertung der Mandel als Snacknuß?

Stammt das Rohmaterial nur aus Kalifornien?

GERMANY nut snacks and blends. We do this to increase the taste. We don’t always use the main varieties like Marcona or Larghetta.

Overall, almonds are a huge trend.

We now operate our own almond roastery - the products are handcrafted, very similar to the nuts sold at fun fairs. Roasted almonds have been in our product range for 15 months. We have recently added hazelnut seeds, peanut seeds with sesame and pumpkin seeds. Roasted nut kernels are a specialty for us, and we supply the consumer with something special here too.

It has a nostalgic touch, and we first assumed that consumption would concentrate on the holiday season around Christmas. To our delight - I must emphasize – it has turned into a year-round article, because we are clearly different from industrially manufactured goods.

Our almonds are roasted in a copper vat. With the machine equipment we also bought two “real” confectioners.

Both equipment and staff means investment.

Yes, it was a huge investment. We started with some small copper vats. As we did not want to start industrial production, our technicians tried different things. What we were looking for was not available on the market. In the meantime, we developed a system in-house. The task was to find out: When does sugar caramelize? Of course, this must be controlled by experts. This example shows: As a brand, we must be prepared to invest time and again in new products.

When I think of displacement marketing, which certainly also exists in the Seeberger range, are

Wir versuchen, uns mit den Herkünften breiter aufzustellen. Da ist Australien zu nennen, aber bei Nuß-Snacks und bei Mischungen kommt auch die spanische Mandel zum Einsatz. Wir tun dies wegen der Geschmacksvielfalt. Es sind nicht immer die Paradesorten wie Marcona oder Larghetta. Insgesamt steht die Mandel für einen Riesentrend.

Wir betreiben jetzt eine eigene Mandelbrennerei – die Produkte sind handwerklich hergestellt, sehr ähnlich wie auf dem Jahrmarkt. Die gebrannten Mandeln sind seit 15 Monaten im Sortiment. Wir haben es aktuell erweitert auf Haselnußkerne, Erdnusskerne mit Sesam und Kürbiskerne. Die gebrannten Nußkerne sind für uns eine Spezialität, und wir liefern dem Verbraucher auch hier etwas Besonderes.

Das Ganze hat so den Anstrich der Nostalgie, und wir dachten, der Verbrauch konzentriere sich auf die Festzeit um Weihnachten.

Zu unserer Freude – muß ich betonen – hat sich daraus ein Ganzjahresartikel entwickelt, weil wir uns deutlich von industriell gefertigter Ware unterscheiden. Es handelt sich um eine im Kupferkessel gebrannte Mandel.

Mit der maschinellen Ausrüstung haben wir zwei „richtige“ Konditoren eingekauft.

Beides – Maschinen und Personal -- eine Investition Ja, eine riesige. Angefangen haben wir mit kleinen Kupferkesseln, dann hatten wir einige davon. Da wir nicht industriell

GERMANY there any products which have disappeared?

Macadamias treated with spices have not succeeded. They were not accepted. We loved them, but consumers did not. There are still macadamias in our product range, but only whole kernels, slightly roasted. It’s almost unbelievable: our range includes nearly 120 products. Six or seven years ago we had 70 articles. We have changed our philosophy.

We no longer claim to sell all 120 articles to all our customers. It is important to us that the large supermarkets carry a large assortment which varies according to country or region, for example in Russia or the Arab countries.

We offer the right choice for every market.

How is export doing?

France is our largest export market, but we are well represented in all European countries except the UK and Spain, including Russia.

Some of the articles we offer come from the US and are therefore affected by the trade embargo.

We can only sell 40% of our assortment on this market. Of course we would be very pleased if the embargo were lifted very soon.

Innovation is a nice buzzword. What does innovation mean for Seeberger?

Our innovation is muesli. One and a half years ago, we asked our trading partners: what kind of products could you imagine us to add to our brand? They suggested bars and muesli.

Das Beispiel zeigt: Wir müssen als Marke bereit sein, immer wieder in Neuheiten zu investieren.

Wenn ich an das Verdrängungsmarketing denke, daß es sicher auch im SeebergerSortiment gibt, gibt es da Artikel, die einfach verschwunden sind?

Was sich nicht durchgesetzt hat, waren mit Gewürzen behandelte Macadamias. Sie haben sich nicht durchgesetzt. Wir fanden sie toll, aber eben unsere Konsumenten nicht.

Es sind noch Macadamias im Programm, aber nur die ganzen Kerne, leicht geröstet.

Es ist fast unglaublich: fast 120 Produkte umfaßt das Programm. Vor sechs oder sieben Jahren führten wir 70 Artikel. Wir selbst haben unsere Philosophie geändert. Wir erheben nicht mehr den Anspruch, allen unseren Kunden alle 120 Artikel zu verkaufen. Uns ist wichtig, daß die großen Verbrauchermärkte ein großes Sortiment führen, je nach Land oder Region verschieden zusammengesetzt, zum Beispiel für Rußland oder für die arabischen Länder. Wir halten für jeden Markt die richtige Auswahl bereit.

GERMANY We’ve opted for muesli, which we’ve initially started to sell on the domestic market, but we are also seeing opportunities in exports.

We adopted existing recipes from a start-up and we are now developing them further under our brand. Today the mixtures are still called “Müsli-Glück”, but we are striving to use our brand exclusively in future.

When I came to your booth, I noticed a new logotype. A rejuvenation?

Yes, it was overdue. This summer we will revise our brand logo and then gradually extend it to our products. Our last brand lifting was in 2010.

The consumer will hardly notice the difference, but as a brand we have to keep our finger on the pulse of trends, right? This is not the only novelty we have in mind. In the medium term, we will be converting the packaging of almost the entire range to resealable stand up pouches. So far, almost half of our products are packed this way.

Wie geht es dem Export?

Frankreich ist unser größter Exportmarkt, aber wir sind in allen europäischen Ländern gut vertreten außer Großbritannien und Spanien, Rußland inklusive. Einige Artikel, die wir anbieten, kommen aus den USA und fallen dort daher unter das Handelsembargo. Wir können auf diesem Markt nur 40% unseres Sortiments verkaufen. Wir würden uns natürlich sehr freuen, wenn das Embargo recht bald fallen könnte.

Innovation ist so ein schönes Modewort.

Wie sieht die bei Seeberger aus?

Wir haben eine: Müsli. Vor 1 ½ Jahren haben wir unsere Handelspartner gefragt: was können Sie sich noch unter unserer Marke vorstellen? Da kamen dann Riegel und Müsli.

Wir haben uns für Müsli entschieden, die wir zunächst auf dem einheimischen Markt verkaufen, aber wir sehen auch Chancen im Export. Bestehende Rezepturen wurden von einem Start-up übernommen, und wir entwickeln sie jetzt unter unserer Marke weiter. Jetzt heißen die Mischungen noch „Müsli-Glück“, aber wir streben an, in Zukunft nur noch unsere Marke dafür einzusetzen.

Als ich auf den Stand kam, habe ich gedacht: das ist doch ein neuer Schriftzug.

Eine Verjüngung?

Muß sein. Im Sommer 2018 werden wir unser Markenlogo überarbeiten und dann nach und nach auf die Produkte ausbreiten. Das letzte Marken-Lifting hat im Jahre 2010 stattgefunden.

Der Verbraucher wird den Unterschied kaum wahrnehmen, aber als Marke gehen wir mit dem Zeitgeist, nicht wahr? Das ist nicht die einzige Neuheit, die wir vorhaben. Wir stellen mittelfristig fast das gesamte Sortiment auf den Standbeutel mit Wiederverschluß um. Bisher ist knapp die Hälfte der Produkte erfaßt.

Pili nuts grow on trees on the ash fields around the 2,642 m high active volcano Mount Mahon (named after the princess-heroine Daragang Magayon = beautiful lady) on the island of Luzon in the Philippines. The soil is extremely rich in minerals. The 500,000 trees in different provinces are very tall with a height of 25 m.

Die Pilinüsse wachsen auf Bäumen auf den Ascheflächen rund um den 2‘642 m hohen tätigen Vulkan Mahon (genannt nach der Prinzession Daragang Magayon = beautiful lady) auf der philippinischen Insel Luzon.

Die Erde dort ist äußerst mineralstoffhaltig. Die Bäume sind mit 25 m recht hoch.

Die Nüsse werden gesammelt und in Wasser von den dortigen Wasserfällen vorgekeimt und anschließend in einem 17 Schritte umfassenden Vorgang (SloDry) getrocknet und nicht geröstet. Bei dem Keimungsprozeß werden die Proteine und Vitamine freigesetzt. All dies geschieht auf den Philippinen, und es werden in der neuen Anlage im ehemaligen amerikanischen Luftstützpunkt Subic Bay, heute Subic Bay Freeport Zone, nur Einheimische beschäftigt. Unter Aufsicht des Landwirtschaftsministeriums wurde eine Genossenschaft gegründet, mit deren Hilfe die gerechte Bezahlung der Arbeitskräfte garantiert werden kann.

Die wildwachsenden Bäume sind sehr robust: in der Gegend kommen pro Jahr siebzehn Wirbelstürme vor. Die Nüsse sind sehr gesund, der Gehalt an Proteinen und Ballaststoffen

mountain spring water and then dried in a 17 step process (SloDry) and not roasted. It is the beginning of the germination process and enhances the protein, fiber and and bioavailable vitamin profile of the nuts. This process is happening in the Philippines, and only locals are employed at the new facility in the former US Naval Base Subic Baynow renamed Subic Bay Freeport Zone.

Under the supervision of the Ministry of Agriculture, a cooperative was established to guarantee fair payment for workers.

The wild trees are very robust: the growing area experiences around seventeen typhoons a year. The nuts are very healthy with an exceptional protein and fiber content. They also contain magnesium and more vitamin E than other nuts, as well as omega 9 fats, which are also found in olive oil, and eight essential amino acids.

One product line is salted with Himalayan Pink Salt; another one is coated with Ecuadorian cocoa and coconut sugar.

The pili nuts contain no chemical additives and are non-GMO, halal and kosher certified as well as vegan approved.

The processors claim that pili nuts have everything: they are nutritious, prevent disease and improve health. Organic cocoa and coconut sugar are used for coating. The nuts are exported to the US and sold via organic supermarkets.

Distributors for Europe are still wanted.

In mid-March, the almond trees in the interior of the province of Castellón are in full bloom. They belong to the late varieties. The weather conditions are mostly favorable with a lot of sunshine and midday temperatures exceeding 20ºC.

A mediados de marzo, en el interior de la provincia de Castellón, los almendros se encuentran en plena floración. Por las fechas que son se trata ya de variedades tardías. La climatología está siendo mayormente favorable con días muy soleados y temperaturas que sobrepasan los 20º en las horas centrales del día.

In general, this year’s flowering in Valencia is very irregular and particularly long due to the weather conditions. At the end of January it was very hot, so that the early varieties blossomed earlier. In February came the cold and with it the dreaded frosts. Until the beginning of March temperatures remained relatively low, leaving the flowers on the trees.

Damages by the frosts that occurred in Valencia at the end of February are not as high as initially expected. Early estimates predicted high losses, especially in early varieties such as Marcona, which was in full bloom at the time.

Valencia is the largest Spanish growing area for these varieties. Later, however, it was discovered that frost damage had not occurred everywhere, but only in the valleys. Higher areas were only slightly affected, according to Ramón Mampel of the Valencian agricultural

Naturalmente la respuesta hay que buscarla en la climatología, a finales de enero hizo mucho calor, lo cual adelantó la floración de las variedades más tempranas, luego en febrero llegó el frio –y las temidas heladas - y desde entonces hasta prácticamente principios de marzo las temperaturas se han mantenido relativamente bajas, lo cual ha permitido aguantar la flor en el árbol.

Regarding water shortage, it should be mentioned that it has rained several times in Valencia since the beginning of the year which has had a positive effect on all crops including almonds. Nevertheless, rainfall in the Levant and south-east of Spain is still insufficient.

In the rest of Spain, the water reserves in the dams increased this winter due to heavy rain and snow. In mid-March, Spanish water reserves stood at 53.7% of their capacity.

En cuanto a la escasez de agua, apuntar que en la Comunidad Valenciana desde principio de año ha llovido en varias ocasiones, esto ha repercutido de forma positiva en todos los cultivos, también los almendros. Sin embargo la precipitación caída sigue siendo muy insuficiente en toda la zona de levante y sureste español. En el resto de España, gracias a los temporales de lluvia y nieve de este invierno, los embalses están aumentando sus reservas. A mediados de marzo la reserva hidráulica española se encuentra al 53,7% de su capacidad.

Worry about Xylella fastidiosa continues

The industry remains very concerned about the appearance of the bacterium Xylella fastidiosa, for which there is no known pesticide.

It spread out even further after a sixth outbreak was identified in the province of Alicante, about which the Valencian Ministry of Agriculture officially informed on February 19, 2018. The first infestation was reported in June 2017 in a lot of land in Marina Baixa/Alicante.

Junto a la evolución de los cultivos, uno de los temas que sigue preocupando y bastante al sector es la Xylella - bacteria patógena, sin cura conocida - sobre todo después de la aparición de un sexto foco en la provincia de Alicante, del cual informó el pasado 19 de febrero la Consellería de Agricultura de la Generalitat Valenciana. To fight the disease the Regional Ministry of Agriculture has redefined the already confined areas around the new infected lots, as well as the measures for clearance and control. At the same time, the Ministry has announced compensation of EUR2.3 million for clearing and control of Xylella.

Some of the producers concerned disagree with these measures, though. In protest, they blocked machines that were to chop up almond wood on a lot of land in Castell de Guadalest in the province of Alicante. This action aimed at drawing attention to the economic, agricultural and ecological effects of clearing 1,250 hectares.

The three districts concerned in the province cover a total area of 4,700 ha with non-irrigated almond plantations. In view of the severity of the plant disease, the Valencian Ministry of Agriculture insists on the enforcement of measures and compliance with the relevant European regulations in order to prevent the expansion to other growing areas.

Valencia is an important and traditional almond growing region in Spain. Last year production amounted to 6,275 tons of almond kernels, 1,840 tons of which were Marcona.

Taking into account the excellent volumes in 2017/18, possible losses due to frost damage and other cultivation aspects, it is expected that the 2018/19 crop season will be 25% 30% smaller than last year.

Apuntar que las medidas de contención no están siendo bien recibidas por algunos agricultores en las zonas afectadas, incluso a modo de protesta se han llegado a parar las máquinas que iban a triturar los almendros en una parcela de Castell de Guadalest (Alicante). El objetivo denunciar el impacto económico, paisajístico y medioambiental que supone erradicar 1.250 has.

Las tres comarcas alicantinas afectadas suman un total de 4.700 has de almendro de secano. Desde la Consellería se insiste, ante la gravedad de la enfermedad, en la importancia de la aplicación de las medidas de erradicación y el cumplimiento de la normativa europea, para con ello evitar la expansión a otras zonas productoras.

La Comunidad Valenciana es una importante y tradicional zona productora de almendra en España. El año pasado la cosecha se estimó en 6.275 tn de almendra en grano, siendo de estas 1.840 tn de marcona. Para la próxima campaña - teniendo en cuenta que el año pasado la producción fue buena, los posibles daños por heladas, entre otros aspectos agronómicos - la cosecha podría estar entorno a un 25 o un 30% por debajo de lo alcanzado el año pasado.

Ahmad M. Ebrahimzada came 1981 to Hamburg from Afghanistan. He found that although many immigrants from his country, from Pakistan, Iran and India lived in Germany, it was difficult for them to buy food they were familiar with.

Ahmad M. Ebrahimzada kam Anfang 1981 aus Afghanistan nach Hamburg und stellte fest, dass in Deutschland zwar sehr viele Immigranten aus seinem Land, aus Pakistan, dem Iran und Indien lebten, dass sie aber Schwierigkeiten hatten, sich mit den ihnen vertrauten Lebensmitteln zu versorgen.

This led to the founding of Pamir GmbH in Hamburg, which initially imported only rice from India. This was very well received by oriental supermarkets, and soon there was an increasing demand for other traditional food from the migrants’ home countries...

Today, the company imports its own rice from India, Pakistan and Thailand as well as pickled vegetable, cookies and sweets from Iran and Afghanistan, and in addition special nuts and dried fruits. And this proves to be difficult.

“We import from Afghanistan mainly green, red and black raisins, mulberries, figs and apricots with kernels, plus apricot leaves,” says Ahmad

But Afghanistan is still a war zone. This makes it almost impossible to import equipment and material that help growers prepare their dried fruit and nuts for the world market after harvesting. “A big issue for us is quality assurance,” says Ebrahimzada. “We simply do not get the fumigants for treating the dried fruit and nuts with gas which is actually needed.

These chemicals can also be used for military purposes. For this reason, we have difficulties importing them.

Processors buy the agents alternatively in China or Iran, but the products are not so good, so that we detect worm infestation or other impurities when the goods arrive in Germany.

Then they must be treated and cleaned again.

This increases costs, aside from the loss of goods, which accounts for 5 to 10% of the value.”

„Wir importieren aus Afghanistan vor allem grüne, rote und schwarze Rosinen, Maulbeeren, Feigen und Aprikosen mit Kernen, dazu Aprikosenblätter“, sagt Ahmad M. Ebrahimzada von Pamir, Hamburg „Die Anbaugebiete sind Herat und Kandahar. Vor zehn Jahren haben wir begonnen, Trockenfrüchte aus Afghanistan nach Deutschland zu bringen. Wir waren die ersten, die das wagten. Zu Beginn waren es kleine Mengen pro Jahr. Heute ist es etwas mehr.“ Doch nach wie vor ist Afghanistan Kriegsgebiet. Und deshalb ist es nahezu unmöglich, Geräte und Substanzen einzuführen, die den Anbauern helfen, Trockenfrüchte und Nüsse nach der Ernte für den Weltmarkt vorzubereiten. „Ein großes Problem für uns ist die Qualitätssicherung“, sagt Ebrahimzada. Wir erhalten einfach nicht die Mittel für die Begasung der Trockenfrüchte und Nüsse, die wir eigentlich brauchen. Diese Chemikalien können auch für militärische Zwecke verwendet werden.

Aus diesem Grund haben wir Schwierigkeiten, sie zu importieren.

Die Verarbeiter kaufen ersatzweise in China oder Iran, aber die Produkte sind nicht so gut, so daß wir bei Ankunft der Ware in Deutschland Wurmbefall feststellen oder andere Verunreinigungen. Dann muß erneut behandelt und gereinigt werden. Das erhöht die Kosten, einmal abgesehen vom Warenverlust, der 5 bis 10% des Wertes ausmacht.“ Trockenfrüchte: Naturbelassen und in Bio-Qualität Der Boden ist gut und die Afghanen haben eine natürliche Begabung für Landwirtschaft.

Das Land böte fast unbegrenzte Möglichkeiten für den naturbelassenen Anbau, wenn Frieden herrschte und die technischen Voraussetzungen geschaffenen würden. „Die Früchte, also

Dried fruit: Natural and organic quality The soil is good and Afghans have a natural talent for agriculture. The country would offer almost unlimited possibilities for natural cultivation if only there were peace and the technical conditions were created. “The fruits – raisins and apricots – are sun-dried. Unfortunately, in Afghanistan you cannot get foil on which they can be dried in the sun. Therefore, the farmers put the fruits on the ground. Well-advanced producers are pouring out asphalt onto the ground.” Ahmad M. Ebrahimzada wants to support local producers in Afghanistan by importing their goods to Germany. But he also knows about the deficits in harvesting and processing.

“For harvesting mulberries foil is spread out under the trees, but some fruits also fall next to the foil. These are collected, together with sand and small stones. Then all fruits are mixed up, and this can spoil an entire shipment.”

The importer finances training courses for farmers in Afghanistan. “This problem is caused by lack of training and education which we must solve. Sometimes 100 kg are shaken from the tree, and all berries are clean.

But then 10 kg are added which were collected from the ground. That’s not a problem in

Ebrahimzada will die einheimischen Produzenten in Afghanistan unterstützen, indem er ihre Ware nach Deutschland einführt. Aber er weiß um die Defizite bei Ernte und Verarbeitung. „Die Ernte bei Maulbeeren erfolgt so, daß unter dem Baum eine Folie ausgebreitet wird, aber es fallen auch einige Früchte neben die Folie, und diese werden eingesammelt und damit auch Sand und kleine Steine. Dann wird alles gemischt, und so wird unter Umständen eine ganze Lieferung verdorben.“ Der Importeur finanziert Weiterbildungskurse für die Farmer in Afghanistan. „Das ist ein Trainings- und Erziehungsproblem, das wir lösen müssen. Vielleicht sind 100 kg vom Baum geschüttelt, und die Beeren sind sauber. Dazu kommen aber 10 kg vom Boden. In Afghanistan ist das kein Problem.

Wenn da ein Stein in der Ware ist, wird er herausgenommen, aber beim Import nach Deutschland stellt so eine Verunreinigung ein riesiges Problem dar.“

“Sometimes raisins are sulfured. This reduces spoilage, but the taste suffers. Sulfured raisins are completely green, sulfured apricots are white. And the treatment isn’t healthy either.”

Nuts for Europe not in line with the market In addition to dried fruits, pistachios, almonds and walnuts are also produced in Afghanistan. The prices for nuts are not competitive.

Walnuts and almonds are 30 to 40% more expensive than Californian goods. “Our pistachios are very small, but with an excellent taste.

However, in comparison with pistachios from Iran, they are still very expensive. The nuts are

Nur - im Vergleich mit Pistazien aus dem Iran immer noch sehr teuer. Die Nüsse werden vielfach nach Indien exportiert. Ein Grund dafür ist, daß aflatoxinbelastete Pistazien nicht nach Europa gebracht werden dürfen. In

AFGHANISTAN often exported to India. One of the reasons is that pistachios contaminated with aflatoxin cannot be exported into Europe. In Afghanistan pistachios are still dried on the ground.

The nuts remain for a relatively long time in the shell where aflatoxin can occur.”

Ahmad used to travel regularly to Afghanistan to talk and negotiate with producers. In Herat he runs an orphanage with his wife, where children live, are fed and cared for. He would like to go back to the Hindu Kush together with his children, who work in the shop and founded the company “Natural Healthy Food” with him.

“In recent years, the security situation has intensified and we can no longer go there. The risk of kidnapping is also high in Herat. They say it’s better up north. If it becomes safer to travel, I will gladly bring machines for cleaning or sorting to the country.” Ahmad M. Ebrahimzada is convinced that many farmers could build up a sustainable existence by growing dried fruits.

Great demand on the German market

Gerne würde er zusammen mit seinen Kindern, die im Geschäft mitarbeiten und mit ihm zusammen die Firma „Natural Healthy Food“ gegründet haben, wieder an den Hindukusch fahren.

“In den letzten Jahren ist die Sicherheitslage verschärft, und wir können nicht mehr dorthin. Das Risiko einer Entführung ist auch in Herat groß. Im Norden, sagt man, sei es besser. Wenn es sicherer wird, zu reisen, ist es mein Wunsch, auch Maschinen zum Reinigen oder Sortieren ins Land zu bringen.“ Durch den Anbau von Trockenfrüchten könnten sich viele Bauern eine nachhaltige Existenz aufbauen, davon ist Ahmad M. Ebrahimzada übezeugt.

AFGHANISTAN Buyers in Germany include Afghan or Iranian shops and supermarket chains. “For the German market,” says Ahmad Ebrahimzada, “the quantities are still insufficient. Moreover, the goods are not sorted, and re-sorting here is very expensive. There is certainly also demand for large raisins, for example, which we could sell as quality goods at a higher price.”

At the Afghanistan meeting held in Dubai in February, agriculture was described as one of the great opportunities to rebuild the country. Ahmad agrees, but he adds: “First the country must be safe, and we also need local experts to be able to ship exportable products”.

Wir hätten sicher auch Nachfrage zum Beispiel nach großen Rosinen, die wir als Qualitätsware teurer verkaufen können.“ Anläßlich der Afghanistan-Tagung im Februar in Dubai wurde die Landwirtschaft als eine der großen Möglichkeiten bezeichnet, das Land wieder aufzubauen. Ahmad sieht das genauso.

Aber: “Erst muß das Land sicher sein, und wir brauchen auch Fachleute dort, um exportfähige Produkte herstellen zu können.“

Not a week goes by without incidents involving numerous victims being reported from the Central Asian Republic of Afghanistan. Supported by the US Agency for International Development (USAID), the Commercial Horticulture & Agricultural Marketing Program (CHAMP) works with leading Afghan processing and export firms to initiate or promote trade in fresh and dried fruits, nuts and spices in the sense of ‘Aid by Trade’.

In cooperation with the government and other aid projects, the CHAMP organization is developing the marketing chain, attracting more market interest in Afghan products and, in particular, promoting the employment of women.

Over the past twenty years, Roots of Peace has realized projects for more than one million farmers and their families in collaboration with USAID, said Heidi Kühn.

CHAMP enabled exports of 80,000 tons of fresh fruit worth US$ 100 million. “This,” explained the Roots of Peace founder, “can only

Nasir Ahmad Durrani has been Minister of Agriculture, Irrigation and Livestock since late September 2017. He commissioned a study to record the status of agriculture in different parts of the country on the basis of reliable data. Dies soll ein privatwirtschaftlich organisiertes System sein. „Die Gulfood Messe hat sich als gutes Instrument zur Promotion unserer Produkte gezeigt“, so der Minister abschließend. „Es ist unser Bestreben“, erklärte Kamila Sidiqi, Staatssekretärin im Ministerium für Handel und Industrie, „den afghanischen Produkten in Zukunft auf den Märkten den Platz zuzuweisen, den sie aufgrund ihrer Qualität beanspruchen. Russia has always found itself in the middle of cultural crossroads. With its vast territory, extended across two continents over the Northern Eurasia, trapped between the ancient Great Silk Way and the Route from the Varangians to the Greeks, Russia shows an example of Eurasian style in everything.

Rußland hat sich immer am Schnittpunkt der Kulturen befunden. Die unendliche Weite, ausgebreitet über zwei Kontinente des nördlichen Eurasiens, eingebettet zwischen der alten Seidenstraße und der Route von den Warägern zu den Griechen, macht Rußland zu einem Beispiel eurasischer Kultur.

These traditions are neither purely Asian, nor truly European. They are Russian and Eurasian.

Here one can still find influence of the Ancient East to serve the sweet course on nicely decorated dishes, placing it in a special way, forming rich ornaments. But at the same time, one can also easily find typical Slavic tribal addiction to the “wild stuff”, rapidly expanding belief that the nature itself is the best nutritionist.

And certainly, another major impact on consumer traditions was made by this mix of religions: the Russian Orthodox Church, which imported its fundamental beliefs and traditions from the western orthodox church of Byzantium, taught Russians to consume nut and dried fruit during religious such holidays as the Lent, Easter and Savior’s festivals. But Islamism believers form another big religious and ethnic group, so their traditions re to be considered too. And sometimes both cultures melt in a unique way.

To promote the products a special project with a good budget, aimed at the period 2017-2025 is being launched. Obviously, Russia wants to build upon the 2017 food exports success, when, according to Alexander Tkachev, the agriculture minister, the country hit US$20 bn (US$3 bn more than previous year) in agricultural export revenues. It’s also worth mentioning that the alimentation industry and agriculture in general turned a true (alternative to gas and oil industry) locomotive for the economy.

But this increase was achieved mainly thanks to several products, in which Russia has always been strong: wheat, fish and seed-oils.

As a very first step to implement the promotion plan in January this year to a delegation from Siberia visited the Madrid Fusion – 2018 chefs’ show, where new brands were introduced to European restaurants managers and cooks. Alexei Alpet, the general director of the Siberian Cedar Eco-Factory company, which took part in the show, said they brought to Spain a new cold-pressed pine nut oil as an exotic alternative to the country of olive oil manufacturing global leadership.

Zur Bewerbung dieser Produkte hat die Regierung ein Projekt 2017-2025 mit einem satten Budget ausgestattet. Offenbar stützt sich dies auf den großen Exporterfolg für russische Lebensmittel im Jahre 2017. Alexander Tkachev, Landwirtschaftsminister, nannte einen Umsatz von 20 Mrd. US$, 3 Mrd. US$ mehr als im Vorjahr.

Es ist nicht zu übersehen, daß die Nahrungsmittelindustrie und die Landwirtschaft sich zu eienr wahren Lokomotive für die Wirtschaft abseits der Öl- und Gasbranche entwickelt haben. Dieser Zuwachs geschah in den Produktsektoren, in denen Rußland schon immer eine stark Stellung hatte: Weizen, Fisch und pflanzliche Öle.

Die Promotion begann Anfang dieses Jahres mit einer Delegation aus Sibirien, welche in Madrid die Food Fusion besuchte. Hier präsentieren Küchenchefs ihre neuesten Kreationen vor Restaurantbetreibern und Chefs. Alexei Alpet, Generaldirektor der Cedar Eco-Fabrik in Sibirien, sagte, sie hätten ein neues kaltgepreßtes Piniennußöl als Alternative zum Olivenöl mitgebracht.

Meanwhile in Russia the Easter festival is coming, meaning Russians will start buying in huge volumes dried fruits and peanuts for Easter cakes, puddings and pies. And then, in the summer time, they will go to the Black sea, where on every beach they’ll buy this typical Caucasian churchellas, a big candle-shaped candy, stuffed with almonds, walnuts and hazelnut. And afterwards, in September Muslims will celebrate Kuram-Bairam, and it goes with shaker-puri pastry, heavily stuffed with nuts and dried fruits. And all year around is like this: there are some 160 nationalities living in Russia, and all of them have culinary traditions. All it takes is to know them.

Alpet believes that although he works in “wild” segment of geographically-indicated brand “Siberian nut”, his main goal is not to bring traditions, but rather new nutritional and diet product, which will be appreciated without any territorial consideration. “The Russian Flavors” exposition, displayed in Madrid, was a very first attempt to penetrate the EU market in a truly organized and well-planned way, supported by a special state export agency.

In a world where the consumption of nuts increases rapidly, a trader does not need new customers to increase his business.

The location of Allnuts, Herk-de-Stad in Belgium became too small only to satisfy his current buyers. This spring, they will open their new plant that is ten times bigger than the old one. ‘Now we finally can afford to do some acquisition’, owner Alco Kappé tells.

Die Nachfrage nach Nüssen steigt kontinuierlich. In dieser Situation braucht eine Händler keine neuen Kunden zur Entwicklung seines Unternehmens. Die Geschäftsräume von Allnuts, Herk-de-Stad, ließen eine zufriedenstellende Bedienung der Kunden nicht mehr zu. In diesem Frühjahr eröffnet die Firma ihr neues Gebäude, das zehnmal größer als das alte ist. “Jetzt können wir“, sagt Inhaber Alco Kappé, auch wieder Neukunden aufnehmen.

It all started with a job in a nut shop on the local market about 25 years ago. There he learned the basics of quality and the needs and longings of end consumers. Only a few years later, he produced his first machine to make packages for nuts and dried fruits the way he wanted them.

Now Alco Kappé is managing director of a company that delivers the market with quality nuts, dried fruits, seeds, nuts and even herbs.

He sells to restaurant businesses and catering industry, to retail, but also to companies that produce salads and full meals. Companies that present their product with a small bag of pine nuts and other seeds. Most of his customers are located in Belgium, but more and more in nearby countries like France, Germany, Belgium, and Great-Britain.

Kappé can talk for hours. About his equipment. How he can change small details on his machinery which makes the procedure more efficient. About a simple change of producing some packaging material that makes it cheaper and makes it easier to reach food safety standards simultaneously.

He likes to tell all the secrets about his products. Where he buys his raw materials. And especially where he doesn’t. ‘There are some traders and even some countries I will do no business with.’ He will not mention names, but there are suppliers who deliver optically beautiful products for a price 10 to 15% lower than regular. ‘But the taste or the durability is not adequate enough to me.’ They may be popular with others, but if you know the culture and behaviour behind the products they deliver, doing business with them is out of the question.’

Jetzt ist Alco Direktor der Firma, welche den Markt mit Nüssen, Trockenfrüchten, Saaten sowie Kräutern beliefert. businessman will not sell his USP’s. He will not even tell what kind of markets are most important to his company. He only wants to say that about 30 percent of his sales exists of organic products. ‘But that’s mainly because of one big customer.’

And he also can tell that he doesn’t do any concessions on quality. And he can afford it because he has a lot of experience, and he built a wide network throughout the years.

During those years, he has not done a lot of investment in expanding the business. He foremost invests in quality.

But now his loyal customers see their business in nuts and dried fruits growing, which makes it inevitable for Kappé to expand. His capacity simply became too small. He needed more room for his warehouse, his packaging machinery and mixing and roasting equipment.

His seven employees will move to another hall, next door, with more space and some new tools. And room for some more workforce.

Only two totally different packaging machines will be introduced: One for doypacks with zip pouches and one machine that can handle a wide range of sacks, from 5 grams to over a kilo. But also a range of different sacks: with a flat bottom, a squared bottom, transparent

Er nennt keine Namen, aber er erwähnt Lieferanten, die optisch prima Artikel mit 10 bis 15% Rabatt anbieten.“ Aber der Geschmack und die Haltbarkeit gefallen ihm nicht.“Passen vielleicht zu anderen, aber nicht zu mir.“ Er erzählt stundenlang, will aber auch nicht, daß der Journalist alles notiert. Zum Beispiel, welche Märkte für ihn am wichtigsten sind. Er erwähnt noch, daß 30% seiner Ware „bio“ ist. Zur Erklärung:“Betrifft nur einen Abnehmer!“ Bei der Qualität macht er keine Zugeständnisse, denn er hat sehr viel Erfahrung, und er unterhält ein Netzwerk, das er im Laufe der Jahre aufgebaut hat.

Seine loyalen Kunden sehen, daß sich der Umsatz bei Nüssen und Trockenfrüchten vervielfacht. Deshalb mußte Kappé ausbauen. Er braucht mehr Platz für das Lager, seine Verpackungsabteilung, für die Mischung und Röstung der Produkte. Seine sieben Mitarbeiter ziehen in eine andere Halle um die Ecke mit mehr Platz und mehr Maschinen. Es werden auch einige dazukommen.

Zwei neue werden den Maschinenpark erweitern: eine für Beutel mit Reißverschluß und eine für Beutel von 5 g bis 1 kg mit Flachboden, einem viereckigen Boden aus transparentem Material oder metallisiert. In big bags for the restaurant business and wholesale, and the smallest packages and containers with his own brand or under private label for retail, small shops and for their own webshop.

But also food processors who need special ingredients for their sausages, chips, cookies or chocolates know to find Allnuts. And if Kappé gets a particular question from a customer who needs some specific product or flavour he cannot produce, he will find out through his wide international network.

And he tells about a customer for whom he put the flavour of cranberries on an apple. ‘Cranberries are difficult to process, because of its shell.’

An apple, on the other hand, is very easy to use because of its structure. ‘You cannot always use juice. Sometimes you need a dry product.’

It’s those kinds of innovations and the diversity of raw materials that makes Allnuts popular.

They develop more products than the company is able to produce itself. Drying fruits is not in their capacity. But if needed, they will be involved in every procedure intensively. Another example: from Thailand, they buy dried pineapple. ‘But we can also that supplier to develop

Er erzählt den Fall eines Kunden, für den er einen Cranberry-Geschmack für einen Apfel gefunden hat. „Cranberries sind schwer zu verarbeiten“, berichtet er, „und zwar wegen der Schale. Äpfel dagegen leicht. Man kann nicht immer mit Saft arbeiten; hin und wieder braucht man ein trocknes Produkt.“ Solche Art von Veredelung verhalf Allnuts zu ihrem Bekanntheitsgrad. Die Firma entwickelt mehr Produkte, als sie selbst herstellen kann.

So überläßt man das Trocknen Spezialfirmen.

Zum Beispiel Ananas aus Thailand. Unser Lieferant kann aber auch getrocknete Mangos in besonderer Farbe liefern.“ Dem Besucher bietet Alco Kappé einen Snack an, der wie gewöhnliche Chips aussieht. Der Geschmack ist anders. Frisch und ein bißchen salzig, sehr knusprig. “Mein Hobby“, erklärt Kappé. Es mache Spaß, das Produkt herzustellen, aber er macht das nicht selbst. Die

He offers the editor a small snack which looks like wellknown chips. But it does taste different. Fresh and only a bit salty, with a normal crunchy bite. ‘It’s a hobby of mine’, he tells. ‘I know the procedure and it’s fun to do.’ But he didn’t produce it himself. ‘No, I don’t have the equipment. I just did the development.’

His network is his biggest capital. He has a dense network of suppliers and producers.

Because of the quality, he relies on specific deliveries. ’90 percent of all products come from one harvest’, he tells. ‘Or two, when products are harvested more than once a year.’

Spring has hardly started, but he already negotiates contracts for the end of this year.

He doesn’t visit the countries he buys from. He relies on his network. ‘My goal is satisfied customers. New customers are not the most important, I want my existing customers to come to me again. I only work with traders who understand this attitude.’

The new production location is already in use but will be completely ready in June. The former location just became too small. Even for his current customer base. ‘We became too small but didn’t actually have to turn down a sale. But we had to delay our deliverances more often.’

Now there will be room for new customers.

Finding them will not be a problem, he expects.

‘Yes, we will do a bit of acquisition. But our main focus will be on our existing relations.’

Finding new markets will not be a problem, in the eye of Kappé. ‘Keeping the customers satisfied is always a challenge.’

Deshalb arbeite ich nur mit Händlern, die das auch verstehen.“ Obwohl in der neuen Fabrik bereits gearbeitet wird, ist sie erst im Juni vollständig ausgestattet. „Wegen der kleineren Produktionsfläche mußten wir Verspätungen bei unseren Lieferungen in Kauf nehmen.“ Jetzt kann er neue Kunden begrüßen.

Sie zu finden, meint er, kein Problem. „Wir investieren in die Werbung, aber mir liegt sehr daran, den bestehenden Kundenstamm zu halten.“

Helmut Oswald Maucher of the General Assembly. The dialogue with these groups, including the on-going campaign for breast milk nutrition for infants, will continue to accompany the company for some time.

The General Meeting took note of the death of Helmut Maucher, Delegate of the Board of Directors, who headed Nestlé from 1981 to 2000 and made the company a global corporation. The coverage of huge losses in Argentina and the fight against the “degeneration of Nestlé into an administrative apparatus” - as he said - brought Maucher as the first German to the top of the food giant. The author of the book “Marketing ist Chefsache” aquired brands like Buitoni, Rowntree (Kitkat) and Perrier, which turned out to be great successes. Maucher died on 5 March 2018 at the age of 90.

Supplying dried fruit and nuts to world markets is a challenging and highly competitive business. Within this context South Africa might not rate as a major supplier, yet it is safe to say it punches above its weight in many aspects of the trade. Based on quality, consistency and sound business practices South African suppliers have carved a niche for themselves in world markets.

Having a wide selection is a desirable mix of products when entering the dried fruit and nut trade. It would certainly have helped lay the foundation for Gerhard van der Westhuizen and three of his four sons when they launched their business, Empire Nuts and Dried Fruit, in 2005. The fourth son, Johan, who is also a shareholder, holds a senior post abroad with an internationally listed company.

Being a family business is not unusual but having three sons and two daughters-in-law all involved leads to a new meaning to the concept. Gerhard is a Civil Engineer with vast experience of agricultural development which he has been able to apply in his role as the company’s founder, mentor and guide.

The dried fruit range is equally impressive with a full selection of products from across the board. To meet customer requirements Empire also offers a range of Mixes, Seeds, peanuts, corn products, caramelised products, selected sweets, yoghurts and more.

Their new lines introduced recently include Psyllium Husks, Couscous, Quinoa and Glaced Fruit, all reflecting the focus on healthy products. The international move towards healthier eating has found Empire in the right place, at the right time, with the right products.

Finding solutions for clients The basic policy at Empire is to procure as much of their product range from local sources as possible such as macadamia nuts. However, given their substantial range of offerings it means also going elsewhere into Africa or abroad to fill their product ‘basket’. Man möchte vermuten, daß diese Geschäfte eine starke Reisetätigkeit bedingen. Das ist nicht ganz richtig, denn Sohn Marthinus reicht es, wenn er seine Kunden und Lieferanten auf den großen Messen Anuga und Sial trifft, um neue Beziehungen anzubahnen oder bestehende aufzufrischen.

Neue Projekte sind die Eröffnung einer Verarbeitungsanlage für Pecannüsse mit Packstation in Hartswater in der nördlichen Kapprovinz.

Die Anlage ist betriebsbereit für den Beginn der Saison im Mai. Führend in der Branche Eine andere Trockenfrucht- und Nußfirma ist Pioneer Foods, eine der ältesten Lebensmittelunternehmen des Landes. Another well-known company supplying both nuts and dried fruit is Pioneer Foods, one of South Africa’s oldest food companies. They boast a pedigree which started in 1912 and has grown with the local agricultural sector to become one of the leading Fast Moving Consumer Goods companies in this country.

Their list of well-known brands – many of them household names - reads like a who’s who of the food sector.

There are some commonalities between companies like the products and where they originate. Nature makes the decision of where fruit varieties grow best and for what purpose. Mankind then adds the other components like sourcing, quality, food safety, packaging, branding, logistics and customer relations.

Quality and food safety are always uppermost in people’s minds. The dried fruit business is no exception as companies apply the necessary protocols to ensure compliance.

Quality starts in the orchard or vineyard and must be preserved throughout the supply chain after harvesting. This means that staff undergo training in quality control and food safety while processing and packing facilities are maintained to the highest standards.

In South Africa employment is always a crucial issue. The dried fruit sector boasts an enviable record of providing work for thousands of people. Women are the main component of the work force – accounting for 80% or more of those employed. In some of the smaller towns scattered through the Western Cape it is the dried fruit businesses which are the biggest employers ensuring income and sustainability for the families residing there. There’s a long and proud heritage in the fruit business in South Africa and the dried fruit sector has shown that it is no exception.

Both product and packaging options for example, are constantly under review and development.

Supplies of sun-dried raisins and sultanas are up 30 per cent on 2007 levels, according to reports from the October 2017 Dried Grape Conference held in Monterrey California.

With a per capita dried vine fruit consumption of 126 grams per person, the UK plays an important role on the world market. The country attracts dried vine fruits from 12 different origins and 24 different varieties.

As a result, the latest 2018 figures are not yet available from Southern hemisphere countries.

Peter Meadows, UK Marketing Director of California Raisins, says: “California Raisins has just over 300k tonnes available this year, including carry-over from last year.

“Last year’s new crop was down to 220k from 300k the previous year due to poor weather at key times of the year; there was very wet weather in January and February 2017, followed by a heatwave in the summer.”

Deshalb gab es keine Schäden.“ Er sagte, auch von einem weltweiten Mandel könne keine Rede sein; vielmehr seien in den meisten Herkünften die Kosten für das

He points out there is no global shortage, but, he points out there has been a rise in raw material costs from the majority of producing countries and regions.

Indische Unternehmer machen es anders.

India still features senior traders with big bulky landline phones and a memory like an elephant. In the same country young entrepreneurs have created the fastest growing B2B agribusiness platform in the world. At the World Cashew Convention we had the chance to sit down with the founders and learn about the future of trading.

In Indien gibt es immer noch Händler mit sperrigen Festnetztelefonen und einem Gedächtnis wie ein Elefant. Agribazaar does not sound like the next Amazon or Alibaba. But the online trading platform for agricultural goods in India is developing at a remarkable pac. I talked to Sushan Rungta, CTO and Bashir Uddin, Manager for Mobile Technology in at the World Cashew Conference in Macao.

What is Agribazaar?

We have built a marketplace for agricultural commodities. You can consider this the Alibaba for the agriculture industry. We connect buyers, sellers, warehouse, logistics and insurance companies. We bring people together for transactions – and the financial transaction can be done entirely on the platform.

WORLD When did you start Agribazaar?

We started a year ago. It was an idea of a group of people. We did a lot of trials and rework. For 6 months we built the basic components of the site and then we piloted it from India. We did some research: We examined how traders work – and we did not find laptops in their workspace, they do everything with the smartphone. When we started there was no agritrading app.

Everybody knew about Alibaba and Amazon and people are using it. Quite a few people are still very old-fashioned, they take commodity prices from the newspapers. Trades are often done on the phone so you can still find a lot of bulky vintage landline phones in the companies. But as soon as they learn about the convenience of app-based trading they start to shift.

We charge a brokerage fee from the buyer and the seller. It is a fixed percentage which varies from country to country based on volume. For cashews the brokerage fee would be around 5% for each transaction party.

Nein, wir haben von vorne angefangen.

Currently the value of goods traded is about 4-5 m USD every day.

That is impressive. Did you already have ties or experiences in agribusiness?

No, we started from scratch.

How do payments work at Agribazaar?

The moment the buyer receives the goods the payment is processed. The seller receives the money from Agribazaar. We developed a completely new payment gateway from scratch for Agribazaar. On our gateway we are not charging anything from our customer. Every trader who gets registered with us gets a unique wallet account, which is directly integrated in the banking account. They buyer transfers the amount for the transaction into the wallet account. In the moment the transaction is completed the money is being transferred to the wallet of the seller.

The major argument against trading agricultural goods online is trust. How can you trust your trading partner when you do not know him, you have not verified his trustworthiness?

Jeder Trader, der sich bei uns registriert, erhält ein einzigartiges Wallet-Konto, das direkt in das Bankkonto integriert ist. Der Käufer überweist den Betrag für die Transaktion in das Wallet-Konto. In dem Moment, in dem die Transaktion abgeschlossen ist, wird das Geld an die Brieftasche des Verkäufers überwiesen.

Das Hauptargument gegen den Online-Handel mit Agrargütern ist Vertrauen. Wie können Sie Ihrem Handelspartner vertrauen, wenn Sie ihn nicht kennen, Sie haben seine Vertrauenswürdigkeit nicht bestätigt?

Sie müssen dem Lieferanten gar nicht vertrauen. Ein Käufer braucht eine Ware. Es spielt keine Rolle, ob Lieferant A oder B das, was er benötigt, mit einer standardisierten Qualität liefert. Bevor eine Ware von einem Verkäuferort versendet wird, wird sie getestet. Wenn ein

WORLD You do not need to trust the supplier. A buyer needs a commodity. It does not matter if supplier A or B is providing what he needs with a standardized quality. Before a commodity is shipped from a sellers location it is tested. If a buyer needs cashew nuts he has to exactly specify what he needs in terms of quality and characteristics. Agribazaar hires a third party lab that tests the commodity at the sellers location. The quality matrix is shared with the customer. We choose the quality inspection team. So traders can trust the lab and us.

How do disputes work at Agribazaar?

We developed end-to-end warehousing solutions. And we have a settlement system which tracks the quality of the products. Most disputes are about the quality of the products.

Either the buyer does not get the desired quality or the quality deteriorates due to issues during the logistics process. All these factors are incorporated in our platform.

As you might know Android-based smartphones have a penetration of 95% compared to 5% with Apple iOs. In India there are far less iPhone users, there are only about 2% iPhone users. Surprisingly 12-15% of our users are iPhone users. And it is actually a lot of fun as well. Traders are saying that using our app is like playing a video game. You just order, pay, receive. No need to go through a bank with charges.

Processors who buy raw material and sell processed material like cashew processors can do all their transactions with the app, buying and selling. As the app handles the transactions they can just take away the margin and a lot of working capital can be used in other areas.

Do you allow ratings for your users? Ratings that would help clients understand which source is more or less reliable?

Not yet, but it is on our to-do-list. For the ratings you have to have a certain base of buyers and sellers. We already have an

Verarbeiter, die Rohmaterial kaufen und verarbeitetes Material wie Cashews verkaufen, können alle ihre Transaktionen mit der App tätigen, kaufen und verkaufen. For the one-to-one trade it is quite simple to do something like what Amazon has established. For now it is much more important that they trust the platform rather than trusting individual sellers.

Our clients are buying from Agribazaar. We take responsibility for the product. All purchases for government goods are supposed to go trough NAFED (National Agricultural Cooperative Marketing Federation of India) in India. We have created a platform for NAFED. If suppliers on this platform have issues like not delivering in time or not delivering at all we blacklist them. But we will establish something for Agribazaar in the near future. The most important aspect for trades is the product itself, the payment and timely information.

WORLD Your platform could offer a lot of additional services. Are you talking about partnerships like for example for logistics?

Yes, we are in talks already with companies like DHL and there is great potential. As soon as we feel that everything is done for our platform with the basic services we will expand our portfolio. We might embed services from third parties and charge a commission fee.

Is the Blockchain an option for you as a tool for secure trading?

We are currently experimenting on it. The current situation is still ‘analogue’: Whenever a physical delivery is being placed in the warehouse a physical note is issued which is called the CIS. We will put the CIS in the Blockchain you can certify it and immediately transfer to any person. This can be used as certificate to pick up the product at the warehouse. Fortunately the Bitcoin has raised awareness for the Bitcoin and people start to notice and understand. Until now Blockchain has not been acknowledged by most countries around the globe.

What are the next steps for Agribazaar?

Wir experimentieren gerade daran. Die derzeitige Situation ist immer noch „analog“: Immer wenn eine physische Lieferung ins Lager gebracht wird, wird eine physische Notiz ausgegeben, die als CIS bezeichnet wird. You obtain a lot of valuable real-time market data.

What do you do with it?

We acquire a lot of data and we use it to understand and predict demand, supply, prices. For example we learn if a country like Ivory Coast is producing more cashew nuts. Gradually these data will help us understand and predict quantities and quality, value and other aspects of the trade. As we are a newcome in the market we do not have sufficient data at the moment. We are currently developing an artificial intelligence system that allows us to determine the quality of a commodity by simply analysing pictures.

Did you get any funding for your startup?

We financed everything ourselves.

Was machen Sie damit?

Wir erfassen viele Daten und nutzen sie, um Nachfrage, Angebot und Preise zu verstehen und vorherzusagen. Zum Beispiel erfahren wir, ob ein Land wie die Elfenbeinküste mehr Cashewnüsse produziert. Allmählich werden diese Daten uns helfen, Mengen und Qualität, Wert und andere Aspekte des Handels zu verstehen und vorherzusagen. Da wir eine Neuheit auf dem Markt sind, haben wir im Moment nicht genügend Daten. Wir entwickeln derzeit ein System künstlicher Intelligenz, mit dem wir die Qualität einer Ware durch einfache Analyse von Bildern bestimmen können.

The Clipper talked to Amos Bucher, Founder of Cashew for You, about sustainable farming with nuts and snacks.

How did you become a cashew trader?

We started in 2014. In 2015, we traveled to Nigeria for the first time and built cashew production from scratch. In 2015 we sent a test delivery of 200 kg and it arrived very well. Since then we are growing. And we are working to include more and more nuts in the field of organic / fair trade sector.

Did you have experience with the trade of nuts?

My father is a carpenter, I have studied engineering and worked as a mechanical engineer until 2017. When I did my bachelor‘s degree in the company, I met Oke, who is from Nigeria.

I always had the desire to create a company in the field of sustainability. We talked about cashews and decided to fly to Nigeria and have a look. We received a very warm welcome and

Wir haben 2014 angefangen. 2015 sind wir zum ersten Mal nach Nigeria gereist und haben dort die Cashewproduktion aus dem Nichts aufgebaut. Hatten Sie denn Erfahrung mit dem Handel von Nüssen?

Mein Vater ist Schreiner, ich selber habe Ingenieurswissenschaften studiert und habe auch bis 2017 als Maschinenbauingenieur gearbeitet. Als ich meinen Bachelor im Unternehmen THE CLIPPER 2-2018

ORGANIC gemacht habe, habe ich Oke kennengelernt, der aus Nigeria kommt. Ich hatte vorher schon den Wunsch, ein Unternehmen im Bereich Nachhaltigkeit zu gründen. Wir haben uns über Cashewnüsse unterhalten und beschlossen, dass wir nach Nigeria fliegen und uns das einmal anschauen. Wir wurden sehr herzlich aufgenommen und dann haben wir gemeinsam das Unternehmen in Nigeria gegründet. Das deutsche Handelsunternehmen hat seinen Sitz in Konstanz - in meiner Wohnung.

Sind die Cashewnüsse denn Bio-zertifiziert?

Are the cashew nuts certified organic?

No. In Nigeria, the cashew tree belongs to the natural vegetation. There are no plantations there, but the harvest is collected wild. It is therefore difficult to certify the nuts, because the nuts come from very different trees and places. The nuts are 100% organic, because they are not treated with pesticides, they come from a wild plantings. More organic is not possible, but it is impossible for us to certify the product.

How does the export to Europe work?

We set up a business locally so that we could even export to the EU. We then asked in the village who would like to participate. 28 of our 30 employees are women. The employees process the nuts in the

Wie funktioniert der Export nach Europa?

Wir haben vor Ort ein Unternehmen gegründet, damit wir überhaupt in die EU exportieren können. Wir haben dann im Dorf gefragt, wer sich daran beteiligen möchte. 28 unserer 30 Mitarbeiter sind Frauen. Die Mitarbeiter

Dann werden die Nüsse zum Hafen gebracht.

Von dort werden sie nach Hamburg transportiert. Wir importieren Sie - alles aus einer Hand. Dadurch sind wir in der Lage, das zweibis dreifache der üblichen Löhne vor Ort zu bezahlen.

Wie erfolgreich sind sie mit diesem Konzept?

traditional way. Then the nuts are brought to the harbor. From there they are transported to Hamburg. Then we import the goods ourselves - everything from one source. This enables us to pay two to three times the usual local wages.

How successful are you with this concept?

Wir haben schnell gemerkt, dass wir mit diesen Mengen nicht in der Lage sind, in Deutschland übliche Löhne zu bezahlen, weil wir klein sind und nicht wirklich günstig produzieren.

Deswegen haben wir uns darum gekümmert, auch Cashewnüsse anderer Produzenten mit aufzunehmen. In Elfenbeinküste haben wir dort mit dem Bauernverband Kontakt aufgenommen, der schon nach Fairtrade und Bio zertifiziert ist. Diese Cashews haben wir mit im Programm, vermarkten diese und veredeln sie - gebacken, gesalzen, mit Rosmarin, Knoblauch oder Pfeffer. So erweitern wir unser Produktsortiment und dort können wir auch etwas Marge erzielen. We quickly realized that with these quantities we are not in the position to pay usual wages in Germany because we are small and do not really produce well. That‘s why we‘ve taken care to include cashew nuts from other producers. In Ivory Coast we got in touch with the farmers‘ association, which is already certified to Fairtrade and organic.

These cashews we have in the program, market them and refine them - baked, salted, with rosemary, garlic or pepper. So we expand our product range and there we can also achieve some margin. For this we have a small manufactory in Freiburg - an industrial kitchen, where we also roast and salt peanuts and Brazil nuts.

Cashew kernel prices came down significantly during March with some processors selling W320 as low as US$4.25 fob for prompt and nearby shipments. Prices have moved up a few cents during April but still lower than the levels traded during January and February. Difference between the lowest and highest offer at any given time has widened considerably.

Current range of prices is W240 from US$4.75 to 5.00, W320 from US$4.40 to 4.85, W450 from US$4.35 to 4.60, SW from US$4.30 to 4.50, Splits from US$4.15 to 4.40 and LP from US$3.50 to 3.75 fob.

Raw cashew nut (RCN) prices also declined during March - lowest levels were US$200300 lower than the highs of January/ February.

Now, prices seem to have bottomed out and there is a slight pick up in the last two weeks.

Im März rutschten die Preise für Cashewkerne, da einige Verarbeiter W320 für 4,40 bis 4,85 US$ für Direktkauf anboten. Das Niveau ist um einige Cents im April gestiegen, aber niedriger als im Januar und Februar. Die Schere zwischen geringstem und höchsten Angebot ist deutlich größer geworden.

WORLD Current prices are in the range of US$1,900 to 1950 for Ivory Coast, US$2,000 for Ghana, US$2,050 for Benin and US$1,900-2,000 for other origins (Burkina, Togo, Conakry) The current RCN prices are lower than the peaks of November 2017 up to February 2018 but higher than the range in which the majority of the 2017 crop was traded. The current kernel prices are lower than the peaks of mid 2017 and near the bottom of the range traded during 2017. As noted before, RCN prices have moved up about 60-70% in the last 3 years where kernel prices have moved up only 30-35% Overall, supply of kernels in 2018 is likely to be the same as 2017. Vietnam and Cambodia will have bigger crops than they have had in last 2-3 years but the earlier expectation of huge crops in these two origins has been tempered down from 600,000-650,000 to about 450,000 or max 500,000 t. There is some concern about crop size in some areas of India. No adverse news from West Africa but kernel yields are certainly lower than normal at this stage of the crop. This is a trend we have been seen for the last few years - African crops are bigger but kernel yields are lower.

Vietnam und Kambodscha meldeten größere Ernten als in den letzten zwei bis drei Jahren, aber die Voraussage von Rekordernten war zu optimistisch. Von den erwarteten 600‘000 bis 650‘000 sind noch 450‘000, maximal 500‘000 t geblieben. In einigen Anbaugebieten Indien gibt es Grund zur Sorge.

Aus Westafrika ist nur Gutes zu berichten, aber die Kernausbeute fällt kleiner aus, als sie zu diesem Zeitpunkt sein sollte. Dies trifft mit dem Trend zusammen, den wir seit einiger Zeit beobachten.

Vietnam hat bisher in Westafrika nicht viel geordert. Ein Grund ist, daß sie im letzten Vierteljahr in Tansania sehr aktiv waren und nun in

WORLD Vietnam has been slow in buying from West Africa. One reason is that they made higher purchases in Tanzania in the last quarter of 2017 coupled with bigger crops in Vietnam and Cambodia. Other is reluctance of processors to pay the very high prices quoted in February and early March in the face of slow kernel market. Large processors have been buying in the declining market. In the last couple of weeks, there are signs of more processors starting to buy.

Indian processors have bought reasonable quantities in West Africa mainly because low purchases in East Africa meant stocks were low. They will probably continue to buy if prices remain around current levels.

Kernel buyers have been comfortable with their strategy to buy small quantities for nearby shipments as prices have been coming down.

As there is no concern on supply, they have not felt the need to take any large forward covers - especially when the processors are asking significant premiums for deliveries beyond couple of months.

Große Firmen haben gekauft, als der Markt schwach war. In den letzten Wochen gibt es Anzeichen dafür, daß die Verarbeiter wieder kaufen wollen.

Indische Verarbeiter haben größere Mengen in Westafrika geordert, weil ein schwacher Markt in Ostafrika ein Zeichen dafür war, daß die Bestände gering waren. Wenn die Preise so stehen wie im Moment, werden sie möglicherweise wieder aktiv werden.

Die Käufer von Kernen waren mit ihrer Strategie gut beraten, kleine Mengen für den Moment zu ordern, da die preise fielen. Da es keine Zweifel an guten Mengen gibt, hatten sie keinen Ansporn, einen späteren Bedarf zu decken, insbesondere, da die Verarbeiter größere Zuschläge für Lieferung in allernächster Zeit berechneten.

WORLD Schwert. Es heißt nämlich, daß die Verarbeiter jetzt regelmäßig eindecken müssen, um operationell zu bleiben. Zudem müssen sie regelmäßig nachkaufen, um der Nachfrage von Röstereien und wiederum Einzelhändlern nachkommen zu können. Und da könnte ein Problem entstehen, wenn die Rohnüsse nicht billiger werden oder teurer ohne die Kernpreise mitzunehmen. Die Verarbeiter würden die Käufe von Rohnüssen einschränken. Das würde auch die Verfügbarkeit für eine gewisse Zeit einschränken, auch wenn eigentlich genug Rohnüsse da sind.

Wir haben mehr als einmal miterlebt, daß der Cashewmarkt sich so verhält, wie wenige es erwartet haben, aber...?? is a double edged sword. It means that processors will need to sell at regular intervals to maintain inventory and cash flow levels. It also means that buyers will have to buy at regular intervals to have enough product to deliver to roasters and again roasters to retailers. There could arise a problem, if the RCN prices do not come down further (or go up) without an increase in kernel prices or kernel activity. Processors would reduce RCN buying and this could result in reduction of conversion and kernel availability for some periods although RCN availability may be okay.

Wir haben den Eindruck, daß die Rohnußpreise in den kommenden Wochen mit kleinen Ausschlägen stabil bleiben werden. Wenn das so ist, werden die Verarbeiter die Kernpreise anheben müssen, denn ihre Erträge sind bei jetzigen Preisen sowie unter Druck. Was dann wiederum die Aktivitäten bei Kernen belebt, wenn die Käufer den Markt in Bewegung sehen.

Zusammengefaßt, sehen wir keine höheren Preise, und wir wären nicht überrascht, wenn das Niveau im oberen Segment bleiben würde.

Bis irgendetwas Größeres passiert, wird es ruhig bleiben.

We have seen more than once that cashew market can do what very few expect, BUT …

Our feeling is that in the coming weeks, RCN prices will stabilise around current levels or move up a bit. If that happens, processors will be forced to increase kernel prices as their margins are already under pressure with current prices. And that may lead to an increase in kernel activity if buyers see the market turning.

Although we do not expect prices to move up too much, we would not be surprised if W320 are trading around the high of the current range. Unless something big happens, downside is limited.

When is the end of PPOPasteurization coming?

About 10 years ago the salmonella outbreak in Canada was traced back to raw almonds. Over the following years, a few more outbreaks were caused by these nuts grown in California. Infected produce came from different growers and no measures taken after finding the source of the poisoning managed to solve the problem effectively.

Vor etwa 10 Jahren wurde der Salmonellenausbruch in Kanada auf rohe Mandeln zurückgeführt. In den folgenden Jahren wurden einige weitere Ausbrüche durch diese in Kalifornien angebauten Nüsse verursacht. Infizierte Produkte stammten von verschiedenen Züchtern, und nach dem Finden der Quelle der Vergiftung konnten keine Maßnahmen ergriffen werden, um das Problem effektiv zu lösen.

The USDA (US Department of Agriculture), CDC (Centers for Disease Control), California Almond Board, and FDA (Food and Drug Administration) combined their forces and developed a piece of legislation enacted on the 1st September of 2007. According to this law, all California-grown almonds must be pasteurized.

Currently there are two main methods being used to pasteurize the almonds. One uses steam to sanitize the nuts, while the other uses the chemical propylene oxide, aka PPO, which is considered a possible carcinogen. Most conventional almond growers pasteurize their almonds using PPO. The industry is aware that PPO has to be discarded as a method. Consumer awareness is constantly rising – public criticism of the PPO process is just a matter of time.

Today there are several manufacturers of nut pasteurization systems using steam. One

2017 Log5 received the Industry Excellence Award in the category ‘Processing Innovation’ at Gulfood Manufacturing. The Clipper talked to Tom Velthuis, International Sales Manager at ANUGA FoodTec about their innovative processing technologies.

What kind of machinery do you develop and what is special about it?

We pasteurize nuts without changing the properties of the product. The pasteurized products in our system do not change in colour, texture, taste and appearance and the skin. Tree nuts such as almonds are susceptible to quality changes such as, cooked flavor notes, coloration and loss of skin during the pasteurization process, when excessive condensation occurs during treatment.

We even have a sample here at ANUGA FoodTec with pasteurized and raw products and we let people guess which one is pasteurized. People cannot make a difference between the raw and the pasteurized product.

How does it work?

Um die ursprüngliche Qualität Ihres Produkts zu erhalten, sind neue Pasteurisierungstechniken erforderlich. Wir haben hier auf der ANUGA FoodTec sogar eine Probe mit pasteurisierten und rohen Produkten und lassen uns raten, welche pasteurisiert ist. Menschen können keinen Unterschied zwischen dem rohen und dem pasteurisierten Produkt machen. Die Hälfte der Leute rät richtig, die andere falsch. Es ist wirklich nicht sichtbar.

Wie funktioniert es?

Wir heizen das Produkt auf eine Pasteurisierungstemperatur von etwa 80 ° bis 90 ° C auf.

We do cocoa processing and chocolate processing. We have clients worldwide such as: Nestle, Olam, Cargill and Barry Callebaut.
