A delicious soup that the whole family will enjoy. Sweet potato and carrot soup with Thai pesto. Start with a few shopping bags to get the ingredients and get your apron on - we are about to have your kitchen smelling delicious.

400gsweetpotato,peeled,cut into3cmpieces
400gcarrots,peeled,cutinto 3cmpieces
2tbssmoothpeanutbutter
1L(4cups)MasselVegetable LiquidStock
400mLcoconutmilk
Thaipesto
2cupslooselypackedThaibasil leaves(fromAsianfoodshops) ½cuplooselypackedcoriander leaves
¼cup(35g)choppedunsalted roastedpeanuts
2tspsesameoil
¼cup(60mL)peanutoil 2garliccloves,chopped ½tspdriedchilliflakes 1tsplightsoysauce
Heatcoconutoilinalargesaucepanover mediumheat.Addonion,garlicandginger,and cook,stirringoccasionally,for4-5minutesoruntil onionhassoftened.Addthecurrypasteandkaffir limeleaves,andcook,stirring,for2minutesor untilpasteisfragrantandbeginningtosticktothe baseofthepan.

Addsweetpotato,carrot,peanutbutterand stock.Bringtotheboil,thenreduceheatto lowandcook,looselycovered,for25-30 minutesoruntilvegetablesaretender.

Removefromheatandallowtocoolslightly.Using aslottedspoon,removeanddiscardkaffirlime leaves.Inbatches,transfersouptoablenderand whizuntilsmooth.Returntopanovermedium heat.Stirthroughcoconutmilkandcookuntil warmedthrough.
4.FortheThaipesto,placeallingredientsina smallfoodprocessorandwhizuntilfinely chopped.
