From Diane’s Desk...

I raise my glass and cheers to you - the Shawnee Life readers! I hope the season of St. Patrick’s Day invites you to celebrate good times and feel lucky! This is an exciting month as we close out winter and anticipate the beginning of spring. Moving here from California four years ago, continues to make me realize how much I appreciate actually experiencing seasons. My son, Evan, and I, still find all the different types of weather to be quite exciting, while my good ol’ “Lucky Charming”, Nick, (a Lima native), just shakes his head.

This issue contains something new we have never done before - an online apparel store for Shawnee Life. We see Shawnee Life as a way of life. It is a beautiful life so let’s celebrate our community and show our pride in where we live! Honestly, there is no pressure to buy anything, but I thought it would be fun to see if there is any interest so Chad Gray at Gray’s Cappie Sportswear, put together some of the best-selling apparel and added our logo for you to peruse online until March 19th.

And if you happen to be thinking ahead to Easter, please consider “Egging Your Lawn” with alreadyfilled, non-candy eggs that will be delivered right to your door. We featured the Autism Life Center in a past Making a Mark article and decided to partner with them, as this is their biggest fundraiser of the year!

As usual, please remember, this is the Story of Us, so if you ever want to contribute an article, I would love to receive your submission at Diane@ShawneeLife.com.

Meet the Family Eddy

Know Your Neighbors

Meet Rick and Laura Eddy of Atalan Trail in Indianbrook, along with their three children: Ritchie Eddy, Raven Spencer, and Falon Spencer. While Rick and his son have been lifelong residents of the Lima community, Laura and her two daughters moved to their current home in Shawnee from Tiffin, Ohio, in 2017.

Rick is the Chief Prosecutor for the City of Lima and has practiced law in all courts in Allen County and is a special prosecutor in surrounding counties. Laura is the Accounts Payable Specialist for HCF Management here in Shawnee. Ritchie is a senior at The Ohio State University majoring in hospitality management and is also enlisted in the ROTC program. He currently works as an assistant manager for Marriott in Columbus. Raven earned her bachelor’s degree in criminology from The Ohio State University in 2021 and is currently in her second year at Ohio Northern Pettit College of Law. She is currently working as a local law clerk/legal assistant. Falon is a senior at Apollo Career Center in the Spa and Esthetics Program. She is a licensed manicurist

and is looking to attend the Ohio State Beauty Academy upon graduation this spring.

The Eddy family also has five fur babies: Danny, Nola, Sky, Maggie, and Cash. Four of their pets are rescues and two of the four only have three legs! Danny is a lab mix and he was born with three legs, while Maggie (the puppy) lost a leg following an accident. Despite their handicaps, they both are active and even love boating!

Together the family thoroughly enjoys Ohio State Football, boating on Lake Erie, and also watching baseball. In addition, they like going out to eat at Milano’s, but on Sundays you will find them at home enjoying Laura’s homemade family recipe of Sicilian meatballs.

8 •MARCH 2023 SHAWNEE LIFE

Music is also a common passion for most of the members of the Eddy family. Rick is a guitar player with quite an extensive collection. He started playing right out of high school. While in high school he actually played the drums in the school band at Shawnee. He also plays the piano. Ritchie plays a little guitar, while Falon sometimes plays the ukelele. Raven is a drummer (with quite a few drum sets) and was in the drum line at her high school. She has also played in the band with Rick at Shawnee Alliance. Laura simply enjoys listening to them all!

The Eddys love living in Indianbrook.

“I enjoy attending the Indianbrook

Ladies Game Night,” said Laura. They all like that the neighborhood is so welcoming and family-oriented. Their favorite neighborhood events include the luminaries, food trucks, pet parade, and the summer block party.

Even though Laura is Italian, Rick is Irish…and with March being the month of St Patrick’s Day (and who isn’t Irish on St. Patrick’s Day?) when I asked Rick and Laura what their greatest blessing was they said, “Our biggest blessing would be our kids and how successful they have been.” With that being said, may this Irish blessing come to you and yours in 2023:

May love and laughter light your days, and warm your heart and home. May good and faithful friends be yours, wherever you may roam. May peace and plenty bless your world with joy that long endures. May all life’s passing seasons bring the best to you and yours!

Local Treasure: Chef Trevor Remy

Have you ever wanted to hire a private chef to prepare a delicious meal that leaves you wanting more? Call Trevor Remy. In November I was planning a dinner party for Ohio Northern Law students. I was looking for less traditional meal ideas and on the recommendation of Pat Johnson of Squire Lane, I reached out to Trevor. I explained I wanted a very special meal for the students. When we met to discuss details, I found he was passionate about his family heritage and food. Trevor, like his mother, was born and raised in Lima, but his father is from the West Indies nation of Trinidad and Tobago. Trevor explained that he grew up in a family of amazing cooks. “My American side and West Indian side were always cooking something. We would host dinner

parties for each other and others in our community. I grew up in Greenfield Heights where everyone contributed and fed everyone.”

Trevor went on to tell stories of his cousins being his first “clients.”

“When babysitting the younger cousins, my mother trusted me to finish a meal or make something for everyone.”

With love in his eyes and passion in his voice, Trevor described his most beloved dishes from his childhood. His soulful depictions included curry chicken, Trinidad Pelau Chicken with Pigeon peas, Trinidad Corn soup, and beef roti. I asked him to make a few of these dishes for my party. With a nod and big smile, he promised to do just that. He said he would take my guests to the West Indies through his food. And that he did. The day of my party he arrived with loads of fresh vegetables, spices, herbs, and other secret ingredients. The succulent aroma soon permeated the house.

I could not stay away. I had to know more about Trevor. I peppered Trevor with questions as he prepped. Not once did I see him use a measuring cup or spoon – he just feels it. Trevor indulged my curiosity. I asked if he could confirm the rumors that he has cooked for the Rolling Stones, and Five Finger Death Punch. Flashing a sheepish smile, he nodded yes. I couldn’t believe it. The man who has had the honor of cooking for Mick Jagger is in MY kitchen! Trevor is very humble so it took me a little bit to get him to tell his story.

He explained that previously he was part of a team called The Mediatwist Group that produced Monster Jam Truck shows. At a show in Kanas City, Zoltan Bathroy of Five Finger

Death Punch was driving a truck named The Knucklehead Monster.

Trevor learned that Zoltan and his girlfriend could not go out to eat in the area because they are strict vegans and food options were nil.

Trevor had never shared his West Indian cooking abilities with the group so they had no idea that he could prepare amazing vegan food. Trevor pointed out to me that West Indian food was originally vegetarian and vegan. His long-time friend was with him and said to Trevor, “Brah do it. Do your thing.” So they went to a Family Dollar and bought a $15 grill and he prepared a vegan spread for the couple and a non-veg meal for everyone else. Zoltan was so impressed that he made Trevor his personal chef and Chief of Catering for the band’s 2016 tour. Word spread and other musicians requested Trevor to prepare meals during their national tours.

After listening to Trevor, I was more excited for dinner. As Trevor explained each course to my guests, I noticed three women prayerfully holding hands. They smiled and were giddy as Trevor talked about his dishes. I later learned these women were from, respectively, Ghana, Haiti, and Jamaica. They said Trevor’s food was like being home again. They had not eaten “home” food in years. They ladies went on to tell stories of their grandmas and aunties preparing similar food. They thanked Trevor for bringing them home. At the end of the night, I asked him what are his must haves while in the kitchen. He said, “God, a cast iron pot, and Trinidad seasoning.” He must have had all three with him that night because he prepared a well-seasoned, heavenly meal for my guests.

Trevor sees himself as a food afficionado with dreams of being a personal or private chef. If you would like to move like Jagger and have the chef to the stars prepare flavorful, mouthwatering food for you and your guests, reach out to Trevor Remy. Your tastebuds will thank you.

Parties at Old Barn

Talk of the Town

Shawnee resident, Matt Briggs works for Santa Fe, a local company that does firefighter work at the refinery. They held their company work party at Old Barn and invited the well-known and super popular band, Naked Karate Girls to perform! The Old Barn was turned into an absolute party pad and rocked late into the evening!

Nick Schoonover celebrated his 48th birthday in the Washington Room at Old Barn with 48 friends and family members, after making a grand entrance on his remotecontrolled skateboard to the song, “Low-Rider!” Planning this party couldn’t have been easier with a wonderful buffet full of dishes suggested by the owner of Old Barn and free-flowing drinks. The dessert table was also full of deliciousness from Sara’s Sweets, Miss Mel’s Bakery and Monica’s Treats. Kevin Wiegand from Ultrasound DJ played all of their favorite songs and lead several fun rounds of the game Singo.

Making a Mark

Bella Etzkorn, current 8th grader at Shawnee Middle School and creator of “Bella’s Buddies,” saw the need to give back to the community. In March 2021, Bella decided to take the initiative and show others, including herself, how easy it was to do so. Bella’s Buddies provides awareness through social media challenges, philanthropy, and different opportunities for the public to show their support and contribute to Bella’s vision. Bella’s vision is not only spread through motivational posts on Instagram to encourage positivity but through actions and generosity. Throughout the year, Bella and her team

hold drives and fundraisers throughout the year for different organizations located in Allen County, including the Ohio SPCA and Humane Society and Family Promise.

The holidays also provide an opportunity for the community to spread positivity, love, and kindness to others. From Valentine’s for Vancrest Health Care Center residents to the Halloween costume drive for children at Family Promise, there are multiple opportunities to showcase the good in our communities. Bella asks for donations in order to give flowers and Valentine’s Day cards to lift the spirits of the residents of Vancrest. Her gift of giving doesn’t stop there.

Bella has also hosted many different drives collecting everything from supplies needed for the Ohio SPCA and Humane Society to socks and personal hygiene

16 •MARCH 2023 SHAWNEE LIFE

supplies at her middle school for Family Promise. This past Christmas, Bella’s Buddies provided gifts for 7 families in Allen County with the generosity of donations and Christmas Spirit. If there is a need, Bella uses her talents and kindness to pay it forward in hopes that others will find joy and spread their own kindness by seeing what can be done when that is at the forefront.

Bella’s Buddies has also organized and provided a free fun jump and a goodie bag with Hero Day in the Lima Mall for 50 underprivileged kids with the help of many sponsors such as Sara’s Sweets, Peak Community Wellness, Pat’s Donuts and Kreme, and Bella Notta’s Pizza.

Bella’s favorite part of Bella’s Buddies “is getting to see the smiles on people’s faces when we’ve done something good to help them or their organization! It’s the best feeling seeing joy in other people!”

Bella wants to use her platform to encourage all people, both young and old, to give back and provide the public with opportunities to do so! “My goal for Bella’s Buddies is to encourage and motivate others to get involved in their own communities, no matter where they live.”

Bella has been competing in scholarship pageants since she was 7 years old, and one thing many people don’t realize about these pageants, is that many of them have a community service aspect tied to them. They want to see strong, motivated, young women giving

back to their communities and making a difference in various ways, which is why Bella uses Bella’s Buddies as her platform. Her next competition is in July, and she is always looking for sponsor support.

You can help spread the vision of Bella’s Buddies by following her Facebook page and Instagram Page @bellasbuddies0511 and participating in challenges that include acts of kindness, inclusion, and thankfulness, as well as donations. These contributions to the community cannot be done alone. It is the hope of Bella’s Buddies to spread positivity and kindness in a world where others might not feel that.

“I would love to see more people join the Bella’s Buddies movement, and get behind the #dogoodtogether movement, because I think when people come together to help others, there is no limit to how much good we can all do together!”

Our Top 5 Favorite Neutral Wall Colors

I teach two types of interior design; I teach DIY design lovers how to decorate their own homes AND I teach new interior design professionals how to uplevel their businesses.

What do these two groups have in common? A lot of confusion when it comes to wall colors!

If I had a dollar every time one of my students asked me to help them select the perfect paint color for a room, I’d be one rich woman. So, while I don’t offer online paint consultations (color is far too subjective for that!) I can tell you five of my all-time favorite neutral wall colors. Read on, lovely!

Every year, multiple people write in to ask me what the wall color is in this soothing, chic family room I designed. Alpaca by Sherwin Williams has warm undertones, but can read cooler in certain lighting conditions, making it a flexible greige option that can work with many different color palettes

Edgecomb Grey is a true greige, making it a go-to neutral for many designers. Be wary, however! It’s subtle pink undertones can become more prominent under certain lighting conditions.

Savvy Spaces

Shoji White is an excellent work-horse color to keep in your arsenal both as an interior design pro and as a DIY design lover. It is a warm, off-white that doesn’t read yellow like many off-whites can. It’s a great choice if you’re looking for a touch of warmth in your walls while keeping your spaces feeling bright and open.

City Loft SW7631

Warm grey undertones give this neutral a calming quality. It is quite flexible, making it an excellent choice when trying to marry disparate finishes. In spaces with plenty of natural light, it appears more as an off-white. In darker spaces, it leans more taupe.

I hope you enjoyed this peek into my go-to wall color toolbox. But, before you pull out your paint brush please remember, COLOR IS SUBJECTIVE! Every space comes with its own unique lighting, architecture, and materials. Be sure to look at any color you are considering in the actual space before you commit!

City Loft by Sherwin Williams is a true favorite among design professionals. It has a soft pink undertone, which is very common amongst greige paint colors. We adore it in spaces that could use a little more depth than a typical offwhite can provide, like this cozy media room!

Called the nation’s leading interior design coach, Donna has empowered thousands of women through her engaging and actionable online courses. “I show women how to put more beauty, balance and joy in their life by teaching them the strategy they need to create spaces with an individualized aesthetic, across any design style, that makes them feel great and supports them to live their BEST lives!” Find Donna’s online courses and products at theinteriordesignadvocate.com

The Shawnee Life, what are you doing with it?

What do you write in a column, to an audience that you respect, are friends with, and may be full of professionals that are potentially more educated, reserved, or more eloquently spoken? These are the questions that I asked myself, after I responded to a request for submissions from Shawnee Life readers.

Lately, I have been very self-reflective, and extremely focused on not making the most out of my life, but impacting those around me with the decisions that I make in it. If part of the definition of life is the power of adaptation to environment through changes originating internally, then it seems like one of the most important things I can do is decide to impact the environment in which I live with the purpose that is greater than me.

So now I turn it to you, what are you doing with your “Shawnee Life” to make the environment around you better? Are you processing changes that need to be made, or still leaning on the excuse of, it’s not my job or not in my makeup to better the place I live!

The biggest place that we call home is the mindset in which we wake up with. So I challenge you to encourage someone this week, write a nice handwritten thank you note to someone (something I have seen Troy Breidenbach put into practice), or simply pick up the phone and have a converswation with someone that has impacted you. You never know what that will do for them, and for you!

Some of you do not realize the impact that you have had on my life, personally, and professionally, for that I am grateful. In trade, I hope that the thoughts that I share in this column will give you that extra boost, or challenge you to live, love, lead, and listen in ways that are full of purpose!

HEALTHCARE HERO: Dr. Daniel Murtagh Jr., MD

Mercy Health - St. Rita’s Urology

Meet Dr. Daniel Murtagh Jr., MD, a Urologist at Mercy St. Rita’s. Dr. Murtagh treats a wide variety of urological disorders such as: prostate diseases and voiding dysfunction, kidney stones, screening and treatment of urologic cancers, female urology - incontinence and pelvic prolapse, and men’s health - low testosterone and erectile dysfunction. His clinical interests include administering robotic-assisted surgery of kidneys, bladder, and prostate. Part of his practice at St. Rita’s Urology is also dedicated to medical education and he is involved with teaching residents. Dr. Murtagh is known for practicing compassionate medicine and tailoring his practice to the needs of each patient. One of his patients shared, “I trust Dr. Murtagh and believe he has my best interest in mind.”

Dr. Murtagh always had an interest in medicine but followed a path of trial and error before deciding to go to medical school. He began his journey by attending Miami University of Ohio for Architecture and then Business before ending up on the Pre-Med track with a degree in Zoology. After receiving a Bachelor of Science from Miami University, he then completed his master’s degree of Science and Biomedical Sciences at the University of Toledo. He then chose to stay in Toledo to obtain his medical degree for four years, and then continued for six years of training in Urology and Renal Transplantation at the University of Toledo Medical Center. Dr. Murtagh’s father was a urologist spanning 40 years. While completing a rotation in Urology in medical school Daniel found a good work/ life balance, the technology in the field was really cool, and he enjoyed urology and the relationships with patients as well, just like his dad.

Another lucky coincidence was meeting his future wife, Katelyn, during residency. She was a nurse that worked in the recovery room at Toledo Hospital and was perfectly described as Super Woman by her coworkers. After following his heart and “going for it,” Daniel and Katelyn

are coming up on their five year wedding anniversary in October. They had a beautiful wedding ceremony in Toledo at the Toledo Country Club, situated on the Maumee River. Now, they share a busy and wonderful home life. They have three children, Jack and Henry, 3-year-old twins, and Nora who just turned two. Dr. Murtagh quickly goes from doctor to dad when he gets home. As a family, they like to visit the Florida Keys to go fishing, boating, and golfing.

Dr. Murtagh loves the world of Urology and his patients. One of the special parts about his job is that he works with great partners (Dr. Khan, Dr. Mostafa, and Dr. Buck) who he has known since grade school. They came together again during medical school and went through residency together. “It is very unique to work so closely with your partners,” he shared. Through daily talks and similar work ethics, they trust each other in both practice and judgement. Dr. Murtagh practices in Toledo and as of five years ago, Lima, Ohio as well. He and his partners were immediately impressed with what St. Rita’s had to offer with their state-of-the-art medical equipment and a mission to offer high quality care to patients. Thanks to the amazing staff and leadership at St. Rita’s, Dr. Murtagh and his partners have built the strongest and busiest Urology practice in the area. To schedule an appointment, please call the St. Rita’s Urology offices.

But giving back to his community has always been the priority.

As a veteran of the United States Navy, he initially studied civil engineering at The Ohio State Univer-

Awards amassed by Michael have been significant, including the world's highest scoring wedding album, International Photographer of the Year, an honorary master's degree from Europe, and the International Leadership Award from the United Nations. He credits his mentors for his success, many of whom are counted as the greatest photographers in history.

According to Michael, the studio was founded on a simple principle: "Be different and better," and this has garnered attention from the community, including the 2012 West Central Ohio Small Business of the Year. Lastly, Michael's principle for his portrait, corporate, and wedding imaging is simple, stating: "I don't wish to photograph just what my clients LOOK like, but what they ARE like."

The Importance of Family Portraits

If not now, when?

Why is it important to capture memories? Not only do memories make us who we are but they are also a big part of our family history. They serve as a physical reminder of the people we love and also help keep memories alive. But what many people don’t realize is the deeper meaning behind taking family photos. Without a doubt, capturing memories is more than just a way to remember what happened yesterday or last week. It’s a way to document our lives and preserve our legacy for future generations. So, the next time you’re thinking about taking a family picture, remember that it’s not just a way to capture a moment in time. It’s a way to connect with your past, celebrate your heritage, and preserve your legacy for future generations.

If you’re looking for a professional photographer to capture your family’s special moments, contact Michael Ayers of The Ayers Incorporated Master Imaging

For a limited time this month, the studio is offering a FAMILY PORTRAIT SESSION GIFT CERTIFICATE for HALF OFF! This is the biggest discount ever offered! The session has NO EXPIRATION, so call 419-236-8418 today!

Sharks find a home at Lima Refinery gym

make a long-term commitment and provide some stability.

The refinery did that and then some, partnering with Veolia to purchase a new scoreboard and providing staff to get the gym ready for games and practices and serve free concessions. In 2012, when the new central control facility was built, the gym received a new floor and bleachers.

The season kicks off with practices in early November and by February the Sharks are usually making a run in the playoffs. The team trophies are on display in cases near the gym entrance.

“Dennis was able to get the cases for the trophies the Sharks have won over the years. That always brings a smile to my face and so many others when we step inside the doors to the gym,” said Stacy Crouse, Allen County Special Olympics Local Coordinator. “Cenovus continues to be one of the Sharks’ biggest fans and we all greatly appreciate it.”

Crouse has been involved with the organization for 23 years, getting involved when her then 8-year-old son started participating. The commitment to the organization, she said, is returned tenfold with the joy of seeing the Sharks play.

Dennis said the competition and sportsmanship have motivated him to stay involved for all these years as well.

Cenovus Says

There’s no place like home. And since 2006, “home,” for the Allen County Special Olympics Sharks basketball team has been the Cenovus Lima Refinery gym. The team practices and hosts home games in the gym and a group of Cenovus employees volunteer their time to make it happen.

The partnership began when the team’s former coach had a relative who knew refinery Coordination and Economics Manager, Dennis Parsell. Dennis, a 39-year refinery employee, learned about how the Sharks had bounced around community gyms and church multipurpose rooms, and were looking for a place that could

“The team has a good following, and we have a full gym to watch them play,” Dennis said. “You know, there are days when I see NBA-style knock down competition, and then there are days when I see one player hand it back to someone on the other team to try another shot. It’s special. I know they think of this place as their home and I’m glad we can provide that.”

Creating Your Pot of Gold!

March, the month for green. Not in the sense that spring is coming complete with the anticipation of green leaves and green grass that needs mowing (sorry, that part can wait). No, green as in money. Specifically, making, keeping, and saving more of it to be used to fulfill on your purpose. Whatever purpose that might be. It’s early enough in the year to be able to maximize the benefit of starting early.

When ole’ St. Patrick drove the serpents out of Ireland it wasn’t his intention to lead the Irish to the proverbial pot of gold (ever heard of the luck of the Irish, not so much) but the holiday named in his honor is a perfect reminder that we should be creating our own pot of gold. By taking advantage of all the legal ways we can keep more of what we make. IRAs, 401(k)s, MERPS, HSAs, SIMPLES. DBs, ROTH, hire the kids, hire the spouse, hire the brother-in-law, and the myriad of other acronyms and Internal Revenue Code sections used to describe all sorts of discounts in the tax code just waiting for you to put them to use.

Unfortunately, we’re accustomed to taking our tax bill as it may come. That usually occurs something like “Oh, I got a refund this year, less than I thought it would be, but still a refund” or, “crap, I had to pay.” We’re not accustomed to think in terms of being able to decide what discounts we put to work in our situation and we get to decide if and when we want to change our situation. It might be starting a simple business or side gig. That could be as easy as turning a hobby into a money-making endeavor or joining a network marketing organization. If the intent is to make a profit, it’s a business. No fancy filings or entities necessary to get started. Owning a business is the best tax discount available to us. The discounts in the tax code for businesses are voluminous whereas the tax code contains far fewer discounts for individuals.

An example of a tax discount, consider HSA contributions. If you have an HSA compatible health plan you can put money into a savings account and deduct the contributions or have them withheld pre-tax from your paycheck. Like a pre-tax retirement plan, but without income limitations, you save $15-$40 for every $100 you put in the account. But, the bonus is that if the money is used to pay or reimburse qualified medical costs, the money is never taxed. Most people use them like healthcare ATMs. Put the money in and take it out right away. Consider making contributions and leaving the money in the account for later. Years later. You can always take money out to reimburse already incurred medical expenses but it’s likely you’re going to need it in the future. Give it a chance to grow.

Maximizing retirement savings runs a close second in regularly missed individual tax discounts. Especially ROTH contributions within employer 401(k) plans. The 2023 401(k) ROTH limit is $22,500 (under 50) vs $6,000 for a ROTH IRA. Further, 401(k) ROTH contributions are not reduced as your income increases. If your income exceeds $153,000 ($228,000, MFJ) you cannot contribute directly to a ROTH IRA. Though the ROTH discount does not result in immediate tax savings, a ROTH account can grow tax-free 5, 10, 15 or more years before you access tax-free distributions. There currently are no required distributions from ROTH accounts. The benefit of that tax discount could be difficult to beat. If you own your own business your company can sponsor its own 401(k) plan.

If you’re following the rules and correctly implementing legitimate tax discounts you have no need to worry about possible shenanigans from the IRS. Go astray however and the IRS Leprechaun’s might stop by for more than to share a pint. Happy St. Patrick’s Day! The day everyone is Irish, even St. Patrick.

BAPTISM CHICKEN

Combining Family History with America’s Favorite Fowl

From the Kitchen of Cyndee and Ron Morris of Homestead Farm Estates

Family milestones make great inspirations for memorable recipes, which is exactly the case for Cyndee Morris of Shawnee’s Homestead Estates since 2013. This scrumptious recipe was served at her cousin, Darcy’s baptism, and has become a family tradition ever since at her own Thanksgiving and Easter dinners. Husband, Ron, has worked almost three decades managing Lima’s Fraternal Order of the Eagles, and even features this dish he calls Chardonnay Chicken on the Eagles’ menu. Cyndee’s inventive name spelling goes way back to her Delphos Middle School days, and that creative spark has stayed with her through her chosen college radio-TV-film major/ art minor, transitioning into teaching Delphos preschool, making wedding cakes for twenty-five years, being in medical field management for twenty years, then doing remodeling and wallpapering afterwards!

Ingredients and directions:

Chicken breasts (as many as you and guests will eat)

Dip in lime juice

Shake in:

• ½ c. flour

• 1 t. salt

• 1 t. paprika

• 1 t. pepper

Brown in butter 20 min. Place in baking dish

Sprinkle:

• garlic

• ¼ c. chopped parsley

• ½ t. rosemary

• Chopped celery

Mix w/the drippings:

• 1 c. dry white wine

• ¼ t. pepper

• 2 10 oz. cans mushroom soup

Cook til bubbly

Pour over all ingredients

Bake at 300 degrees for 1 ½ to 2 hours

Cyndee suggests serving her Baptism Chicken over brown rice, or with sliced red potatoes, topped with butter, parsley and parmesan.

Phnom Penh

The “Cincinnati” of Cambodia

A bit north of the equator, Cambodia is an inviting place to visit when Shawnee days are short and cold. I visited Phnom Penh for a week in early December

to provide training for the Cambodia Arbitration Center, which resolves labor disputes between garment workers and the factories that made the clothes that you gave and received at Christmas.

From a map, Phnom Penh looks a lot like Cincinnati. It’s an inland river city, with a downtown that hugs the Tonle Sap where it meets the Mekong. The Mekong flows from the Tibetan Plateau through seven different countries before it empties into the ocean in Saigon, Vietnam.

Phnom Penh had roughly the same population as presentday Cincinnati when, in 1975, the communist Khmer Rouge marched into the city. Initially welcomed as an alternative to a dysfunctional government destabilized by a U.S. bombing campaign, the Khmer Rouge had a utopian vision of an entirely agrarian society. Within 72 hours, Phnom Penh became a ghost town, its million-plus residents killed, imprisoned, or relocated to the countryside to farm rice.

The Khmer Rouge turned a local high

school into a torture facility where the regime’s perceived enemies – anyone with more than a middleschool education – were held until they could be transported to a local “Killing Field.” The killing was brutal – to save the cost of bullets, the executioners used hoes, metal rods, and knives to kill people before burying them in mass graves. Nearly 2 million people died throughout Cambodia in the two years the Khmer Rouge were in power. Whole families – including children and babies – were slaughtered.

Today, the countryside of Cambodia is heavily agricultural, with an emphasis on rice and various kinds of fruit. One of the great joys of visiting is eating fresh mangoes, bananas (which have far more flavor that anything we can get in the U.S.), avocados bigger than a grapefruit, and – my favorite – durian (which smells like a cross between sewage and a rotten corpse but has the taste and texture of a sweet, delicate custard).

32 •MARCH 2023 SHAWNEE LIFE Travel Tales
durian fruit

Khmer cuisine is not as well-known as its Thai or Vietnamese cousins, but the world’s best peppercorns are grown here. The black ones we’re familiar with have an extra kick when grown in the Kampot region, and the white and red varieties offer subtle variations when used on fish, beef, and even ice cream.

Once you get here, living is cheap! My (very nice, on the river) Airbnb cost about $40/night, meals ranged from $1-5, and a week’s worth of fruit less than $3. You can get anywhere in the city via tuk-tuk for $3, and a bus ride to the beach or to the Angkor Wat temples costs about $20.

Fringing Phnom Penh are hundreds of clothing, shoe, luggage, and handbag factories. These factories are typically owned by Taiwanese and Korean companies, and they make items for sale in the U.S. and Europe by brands such as Gucci, Adidas, Ralph Lauren, and the like. Local Cambodians – the vast majority of whom are women – work in these factories for $200 per month. The working conditions in most of the factories here, though far from ideal, are much better than in neighboring Laos, Myanmar, and Bangladesh. One medium-sized factory alone can produce a million articles of clothing per month!

Neither the factory owners nor the workers have much faith in the courts, which is why past labor disputes often ended in bloodshed. Today, thanks to the International Labour Organization, the U.S. Agency for International Development, and several other organizations, the Arbitration Center can resolve these disputes early and safely. My visit, organized by the National Academy of Arbitrators, was to help provide training and support to the Center. I hope to return many times in the coming years to continue the relationship.

Catholic Schools Week

Lima Central Catholic, Saint Charles, Saint Gerard, and Saint Rose celebrated Catholic Schools Week, January 29February 4, 2023, along with Catholic schools all over the nation. National Catholic Schools Week is an annual celebration of Catholic education in the United States. This week is an opportunity to recognize the importance, value, and contributions of Catholic education to the church and world. This tradition began in 1974 and is now an annual event, where Catholic schools across the nation celebrate the week through a variety of activities such as masses, assemblies, and open houses, that emphasize the importance of Catholic education. These activities highlight the traditions and value of Catholic education.

Each day of the week has a different theme. Sunday is the first day of Catholic Schools Week and its theme is celebrating your parish. As a Catholic school, we benefit from religious guidance, prayers, and from support that parishes provide throughout the year. Schools often start the week by inviting people from the community and parishioners to events centered on the church or that feature the school’s academics and religious education.

On Monday Catholic schools celebrate their community. An important aspect of Catholic education is service to others and learning the importance of it. When we take part in service projects throughout the year, we display the faith and values that we gain through our Catholic education. Going to a Catholic school, we have the opportunity to live out our faith and values that we gain through our education to serve others and make the world a better place. At Lima Central Catholic, students had an out of uniform day for a donation of $2, which was used to buy cookies for the Lima Police Department and Fire Department. Students also signed thank you cards for them. Students in Teen Leadership made and delivered Valentine’s Day cards for senior citizens.

Tuesday’s theme was celebrating the students. Catholic schools celebrate students by planning enjoyable activities for them and recognizing their accomplishments. The students were encouraged to reflect on how they have benefitted from their Catholic education and how focusing on faith, knowledge, and service will help them throughout their lives. To celebrate, students at Lima Central Catholic

were allowed to have a free out of uniform day and take part in the theme of “anything but a book bag.” Students got to bring in whatever appropriate random item they wanted and could use that as their book bag. At lunch, students were also celebrated by having ice cream sundaes at lunch. The teachers showed their appreciation for their students by leaving positive notes on the desks of the students in their homeroom.

On Wednesday, the theme was celebrating the nation. Leaders and military men and women were praised for their service. Students shared the benefits of Catholic education and how Catholic schools prepare students to be good citizens. They prayed for the nation and for all those who serve. At Lima Central Catholic, students wore red, white, and blue accessories to show their support for the nation. Military personnel came to LCC to share information with the students during lunch. Students also wrote letters to servicemen and women that are alumni from LCC.

On Thursday, the theme was celebrating vocations. Catholic schools focus on faith, knowledge, and service and

support students in using their talents given by God later in life. Catholic Schools Week allows students to explore the many paths of life that let them use their talents in the service of God and others. While focusing on vocations, students were able to be open to God’s call for their life.

Friday’s theme was celebrating faculty, staff, and volunteers. Teachers are the backbone of Catholic schools. They dedicate their time and talent to Catholic schools. This day is used to honor the teachers, administrators, and volunteers. Students have the chance to thank their teachers and show how grateful they are that their teachers choose to work at a Catholic school. At Lima Central Catholic, teachers were provided with breakfast and lunch. Students wrote positive notes for teachers and posted them on the doors of the teacher’s classroom. Students at Lima Central Catholic are able to grow close to their teachers and appreciate everything that they do for them and the school.

Students also look to religious people in their life and thank them for everything they do for the school and parish. At Lima Central Catholic, students wrote cards to the priests at St. Rose, St. Gerard, St. Charles, and LCC. All the students from St. Rose, St. Gerard, St. Charles, and LCC gathered at St. Gerard’s Church to celebrate mass as an entire community. At this mass, the students presented the cards they made to all the priests.

Saturday’s theme was celebrating families. Parents, grandparents, and guardians play a huge role in Catholic education. They volunteer at the schools throughout the school year and instill values, expectations, and faith in their child at home. Catholic schools acknowledge the roles that families play in the success of Catholic schools and Catholic education. The families are appreciated for all that they do for the schools and for their kids.

This week is usually remembered as one of the most favorite times of the entire school year! St. Charles School celebrated every day with fun activities, dressing crazy, having treats and spreading love to the community.

“Catholic Schools are Crazy Cool!”

Students wore their clothes backwards and had crazy hair! They also wrote thank-you notes to wrap around snacks that were delivered to the Lima Police and Fire Departments, Sheriff’s Office, St. Rita’s and Lima Memorial.

“Jammin for Jesus”

On this day, pajamas and slippers were allowed at school, and students were invited to bring a drink for the movie in the afternoon! Principal Scheid even rocked the intercom throughout the day with a song so the students had to get up and “jam!” The 8th graders also played the teachers in volleyball.

“Patriotic People Supporting Heroes”

Red, White and Blue was seen all around, as students showed off their patriotism. Donations were also encouraged for the military care package project.

“Answer the Call”

Students were challenged to wear clothing that represents what they want to be or do when they grow up.

“Hats off to Catholic Schools Week”

Hats were allowed at school along with the uniform after attending an All School Mass at St. Gerard Catholic Church.

A Pair of Pasion Pets

When we think of the most wolf-like of dogs, a few breeds usually come to mind. Be it the akita, German shepherd, or malinois, many pups bear a striking resemblance to their wild ancestors, from nose to tail tip. But one of the breeds most closely related to the wolf has none of these sharp features. Instead sporting short legs, a flat face, and long, silky fur famously worn in a bow, the Shih Tzu shares a surprising amount of its DNA with wolves - right up there with the husky in terms of it. As if one ferocious predator wasn’t enough, the Shih Tzu has also been associated with lions. It is said that a Buddhist god took a small dog resembling a Shih Tzu everywhere, and this dog had the ability to transform into a full-grown lion. In fact, the name for Shih Tzus in Mandarin Chinese translates directly to “lion dog.” A wolf-lion-dog hybrid sounds like a beast you would never want to cross, but Shih Tzus are sweet and cuddly dogs that would much rather lay on the couch than terrorize humanity.

Two of these pooches live on Fairway Drive with the Pasion family. Pax and Piper are both ten-year-old Mal-Shis (a cross between a Shih-Tzu and a Maltese). The two pups were brought home as biological siblings in 2012, shortly after the Pasions moved back to Lima. Being from the same litter, Pax and Piper have always shared a special bond. Always caring for and watching over the other, they are practically inseparable.

Piper isn’t the only one who keeps Pax company. Strangely, one of Pax’s closest friends is a rock named Bilbo! Pax adopted Bilbo from Crystal Lake, and now the literal pet rock can be found lying about the house, where he serves as a tripping hazard to all not watching their step!

Pax and Piper are always up for cuddles, but when the time comes to defend their lawn, the two are always ready to ward off any encroachers! Mailmen, golfers, squirrels, birds, and many more nearing the Pasion house have been met with ferocious and persistent yaps until the threat is deemed neutralized by the furry enforcers. They spend so long protecting their territory that a bald spot has been permanently worn into the lawn, where the pups race back and forth between barks!

Pax is known by his family to have a feisty side, which he shows whilst trying to hoard all the bones and toys away! Piper, on the other hand, is a more gentle and calm dog, behaving more as a little old lady.

“I call her my spirit animal. She would never leave my side if possible!” says Amanda Pasion.

Despite their old age, these dogs still know how to have fun! One of their favorite things to do is to head down to the family lake house along Lake Michigan, where they spend their time on the water in boat rides. Pax and Piper also adore their groomer, Keri, and will become very excited whenever they hear her name!

The dogs live with parents Amanda and Joe Pasion, and children Nicholas (17), Everett (14), and Laina (12). All three kids attend Shawnee in 11th grade, 8th grade and 6th grade respectively. Amanda works at St. Charles Catholic school, and Joe is the President of Urban Elsass & Son Inc., a metal recycling center in Piqua. The Pasions live in Fairway Estates, where they enjoy friendly neighbors and a view of the golf course. Pax and Piper are adoring their retirement days with their family, where they are given treats, pats, and love every day!
