Ingredients
• 3 Tablespoons olive oil

• 1 yellow onion , diced
• 3 carrots , chopped
• 8 whole beef short ribs

• salt and pepper , to taste
• 1/4 cup all-purpose flour
• 1 cup dry red wine (such as Cote du Rhone or Pinot Noir)
• 2 1/2 cups low-sodium beef broth
• 2 Tablespoons tomato paste
• 2 sprigs fresh thyme
• 2 sprigs fresh rosemary
Directions
1. Preheat oven to 350 degrees F.
2. In a large pot with a lid, heat one tablespoon of oil over medium high heat. Add onion and carrots and cook for a few minutes, stirring constantly. Remove veggies to a plate.
3. Season the ribs with salt and pepper and coat on all sides with flour. Add 2 more tablespoons of oil to the pot and turn heat to high. Add ribs and brown on all sides, about 60 seconds per side. Remove to a plate.
4. Add the wine to deglaze the pan. Scrape the bottom of the pan to release any browned bites of flavor. Bring to a boil and cook 3 minutes.
5. Add beef broth, salt and freshly ground black pepper. Stir in tomato paste.
6. Add ribs, veggies, and (whole) sprigs of thyme and rosemary to the pot.
7. Cover with the lid and place into the oven. Cook at 350 degrees for 2.15 hours, then reduce heat to 325 degrees and cook for an additional 25 to 40 minutes. Ribs should be very tender, nearly falling off the bone.
8. Remove the pan from oven and allow rest for 20 minutes, with the lid on, before serving. Skim off any fat that has risen to the top of the liquid, before serving.
9. Serve ribs over mashed potatoes with a spoonful of gravy from the pot.
IN THE DINING ROOM
We love the first Fridays of every month because it means we get to listen to beautiful melodies played by amazing musicians! This month we will feature Fred Lee IV. He has played at the Yacht Club before and is always a crowd favorite. See you out there!

Cheeseburgers have been around since the 1930s yet are still held near and dear to our hearts like our first love. It comes as no surprise to us that there is a national holiday dedicated to this master piece of a meal. The man who first called this creation a cheeseburger, Charles Kaelin, would be warm hearted to know that we will be celebrating his work nearly 90 years later. Come celebrate with us on September 18th with a juicy cheeseburger.

11:00am - 3:00pm $15++
Reservations: 704-999-2235
Now the cheeseburger's spicy and slimmer cousin, the Quesadilla, has been around much much longer than its hefty counter part. They are dated all the way back to the 1500s. Come celebrate this national holiday with a quesadilla completely customized to your liking. Steak, veggies, or just straight up cheese, it will be the best quesadilla you'll have all year!

CLUB EVENTS
We are ready for our third Raft Up of the year! We hope you are enjoying them as much as us. This Raft Up will be a different time than the past three so make sure to get a good look at this flyer. Come out with your friends and family or come meet some new friends at this sunset Raft Up event! If you don't have a boat, let us know and we will make sure you have a ride out!

It has come time to celebrate all of you hard working members out there with a Labor Day pool party! This will be our last pool party of the year as we are closing the pool the following day for our off season. This is your last chance to enjoy a live band, delicious food, and splashing in the pool with friends and family. Be sure to register online for us to properly prepare for your attendance!

BOATING & MARINA NEWS

End of Season Boat Assessment
Fall, as you know, is the best time for boating! Cooler days, calm water and less people. This really makes this time of year “prime boating time”. Fall is also a great time to assess things, especially after a busy boating season.
Suggested items to assess.
• Shore power cord- inspect and replace if needed. Call the marina for an inspection!
• Dock line- replace any frayed or weathered dock line. Make sure lines are properly sized for your boat.
• Covers- properly sized and secure, snaps, tie downs, etc.
• Boat condition- scheduled a full detail or a boat wash to maintain the gelcoat.
• Routine Maintenance- oil changes, impellers, spark plugs, etc.
• Come up with a plan to winterize. (Let us help!)
• Inventory all safety equipment.
• Assess PFD and throw out any worn out or weathered jackets

Marina Manager Reminder
Although boating tends to slow down this time of year it doesn’t mean to stop thinking about safety!
Schedule your on the water power boating instruction. Learn hands on boat handling, docking, tight area navigation.

The Dobbins
Today we meet some members who have been here since the very beginning. Steve and Lynda Dobbins are some of our OG members here at The Safe Harbor Peninsula Yacht Club. Not only have they been members but they have been an integral part of how the club was formed 27 years ago. In fact, Lynda was on the Steering Committee which helped mold the backbone of the Club's rules and regulations. "I was the first Social Director for the first two years [of the Club's opening]" Lynda added. Steve got busy by starting the now famous Christmas Boat Parade! At the time, there were just 3 boats that participated and now, as we know, it has become a lake wide event!
Though the Dobbins were active behind the scenes, they have also enjoyed the amenities of being members. Steve said, " [...] not many marinas on the lake have a restaurant, a pool, a full bar, so yes [...] if you want the best place to be... this is the place".

If you're looking to find The Dobbins out and about you will most likely find them enjoying their beautiful "floating condo," as Lynda put it, or at some of their favorite events. Of course one of those events would be the Christmas boat parade. They will invite friends and family to enjoy the event. For the most part though, they are indulging in the gorgeous lake views and spending time with their slip neighbors. "The biggest thing for me is that it's a second neighborhood!" Steve caringly said.
This ensures that our values of being your home away from home are being received and loved by the members that fill this club and in this case members that have helped shape this club to be what it is today. Thank you Dobbins family for your continued loyalty and suppor to SHPYC.

CLUB EVENTS
Grab your shrimp forks and lobster crackers, it's LOBSTER FEST people! Be sure to come hungry because your plate will be loaded up with a hearty seafood feast. While you are enjoying your meal, Holly Hopkins Jazz Duo will be setting the perfect vibes for a night you won't forget! Reservations are required for this event and there will be no a' la carte served for dinner.

During the fall season the tour takes place on the North end of the lake. Some of us have lived here our whole lives, some have found their forever home here, and some are just passing through. Regardless of your situation, one thing remains true and that is that this lake is an integral part of all of our stories. Lake Norman actually has quite a bit of stories of its own and it feels like we owe it our attention and love to hear where it came from and where it has gone since!

SHM LKN A DAY AT THE LAKE

The Safe Harbor Peninsula Yacht Club FAMILY

SHPYC Dogs of the Month
Bowie (also known as Bo-Bo, Boman, Bosun, Mister Goofball, Wigglebutt or most commonly just “Bo”) is a justturned-one year old Black Lab. His parents, Jennifer and Michael Hess, got him soon after moving here from New York, and he is their third lab over the past 25 years. He’s still getting used to boating and swimming, but the Hesses are confident that he will be a water-lover like their previous dogs. His favorite food is… all food… and his favorite toy is anything that will fit in his mouth. Though like all retrievers, he is perfectly happy—and very proud—to just carry a stick around. Bo loves to go on walks, runs and other outings, including visiting the many dog friendly breweries in the area with his parents. More than anything, Bo loves people, and has lots of human and furry friends around his new neighborhood.
If you see Bo, Jen and Michael around town (look for his ship’s wheel and anchor collar), he—and they—will definitely want to say hi.

Do you have a fur baby that loves the spotlight? Send us a message! They just may be our next Dog of the Month!

If you didn’t get a chance to take a ride on the X-Shore, an all electric boat, at our lakewide member event or if you want to go again, here’s your chance!
This month only we will be taking out the X-Shore for a Wine Down Cruise. Complimentary Wine and Cheese & Crackers will be provided.
