1. For the meatloaf: Preheat oven to 350 degrees. Heat oil in a medium skillet. Add onion and garlic, saute until softened, about 5 minutes; set aside to cool.
Ingredients
2 teaspoons vegetable oil
1 medium onion, chopped
2 garlic cloves, minced
2 large eggs
1 teaspoon dried thyme
1 teaspoon salt
1/2 teaspoon ground black pepper
2 teaspoons Dijon mustard
2 teaspoons Worchestershire sauce
1/4 teaspoon hot red pepper sauce
2 pounds meat-loaf mix (2 parts ground chuck, 1 part ground veal, 1 part ground pork)
1 1/3 cups fresh bread crumbs
3 bacon slices
2. Mix eggs with thyme, salt, pepper, mustard, Worchestershire, pepper sauce. Add egg mixture to meat in a large bowl, along with bread crumbs, parsley and sautéed onions and garlic; mix with a fork until evenly blended and meat mixture does not stick to bowl.
3. Move meat mixture onto a work surface.
4. Cover a wire rack with foil; prick foil in several places with a fork. Place a rack on a shallow roasting pan lined with foil for easy cleanup.
5. Set formed loaf on rack. Brush loaf with all of glaze, then arrange bacon slices, crosswise, over loaf, overlapping them slightly and tucking them under to prevent curling.
6. Bake loaf until bacon is crisp and loaf registers 160 degrees, about 1 hour. Cool for at least 20 minutes. Slice and serve.

This month we take a look at some members who embody the water life! Here we have Tim and Rochelle Harbick. They have been members at The Safe Harbor Peninsula Yacht Club since November of 2018.
"Being sailors, we went around to all the yacht clubs [on Lake Norman] and found [SHPYC] to be something that met our needs from a boating and community perspective," Tim said, while sharing why they chose to join our club.
The Harbicks are active members here at the club and have grown to love some of the annual events we put on each year. Rochelle said, "I love the holiday lighted boat parade. [...] It kicks off the holidays for me." Of course, Tim being an active member of the sailing community, he really looks forward to all sailing events, including the upcoming 31st Annual Pen Cup Regatta. To speak more about Tim's affiliation with Lake Norman's boaters, he is our Sail Fleet Captain on the Fleet Committee as well as involved lakewide with all other sailing clubs. He shares a surprising fact that "sailing season on Lake Norman is year round [and
that he] spends at least 70 days a year on the water."
One main reason that attracted Tim and Rochelle to club is the melting pot of members that walk this property. Tim talked about how having the opporunity to socialize with not only yacht members but social members as well. They have met some of their closest friends and feel that they really joined a family here rather than just a club.
You can find The Harbicks at the club enjoying dinner, conducting meetings, attending events, or most likely out on the water sailing the beautiful Lake Norman waters. Thank you, Tim and Rochelle, for your continued loyalty and support to the club.
This month we feature the loveable, good boy, Kirby. Kirby is a seven year old Yellow Lab. He belongs to The Morgans, SHPYC members. A very popular sport on the east coast is lacrosse and Kirby is no stranger to the beloved game. Playing fetch with a lacrosse ball is one of his favorite activites. When not breaking a sweat playing lacrosse, Kirby loves to hunt. His favorite things to retrieve are ducks and doves. We may need to hire his services this Thanksgiving!!
Kirby's personality is a loving and tender one. He helps his humans daily. Kirby has a great personality. He loves treats and his favorite time is meal time. All meals for Kirby are referred to as "breakfast" and he gets very excited. If the Morgans say "Kirby, you want to go?" he will run and sit by his favorite transportation which is riding in the convertible. Of course one of his go to destinations is SHPYC. He visits with his humans often for meals, walks on the dock, swimming at the boat ramp and loves to ride on their boat on E dock. Hope to see you around the club, Kirby!!
The famous boat parade is back!
This year we are excited to announce that we will join the lake-wide parade this year with the rest of the Lake Norman community. Stay tuned for exclusive offerings we will have at the club for the parade night.
If you're interested in decorating your boat, keep an eye on our social media and eBlasts for information on decorating parties!
Our Commodore's Hours are a great way to get to know your fellow members of the club. Typically these events are held three times a month in the Dining Room Bar. Please register online at www. peninsulayacht.com to let us know you're coming!

As we are now in fall and the leaves are beginning to change, we can enjoy our year-end events in cooler temperatures! October is a particularly eventful month: Fall Fellowship Sailing Series – Races 2, 4 and 5 always bring stiff competition as sailors warm up and tune their rigs for the Pen Cup.
31st Peninsula Cup – the “Pen Cup” is held October 13 – 15 with both on-water and on-shore activities for both competitors and members. This will be a great weekend for all with a Member Mixer on the 13th, the Land & Sea dinner, with a band, on the 14th, and a BBQ on the 15th. Oh, and a lot of sailing in between meals!
The annual Treasure Hunt follows the Pen Cup on October 21st. Dress up as a pirate and come on out for the festivities geared towards kids – but enjoyed by adults as well. Walk the plank, hunt for treasure, watch out for meandering pirates, visit the stockade, and join in on an actual battle at sea! Duck as the cannons roar!
If you would like to get involved in any of these events, just reach out!
We are now in the midst of the busy and fun fall sailing season. There’s nothing like a cool breeze on a sunny day to relax the soul.
The Fellowship Series starts/stops near the Club. Come on out and cheer on the competitors!
The 31st Pen Cup begins with a Member Mixer on October 13th. This is a great venue to mingle with members and Pen Cup sailors. There may even be a crew opportunity or two available. Just ask around. Volunteers are always welcome as well!
To fair winds and following seas, Tim Harbick
Lastly, this month’s safety tips:
• Get a free Vessel Safety Check from the U.S. Coast Guard Auxiliary to verify the presence and condition of certain safety equipment required by state and federal regulations.
• Take a Boating Course. New boaters and experienced experts alike need to be familiar with the boating rules of the road, operating guidelines, and safety tips.
• Be weather-wise. Always check local, route and destination weather and water conditions before departure and ensure it is safe to go out.
Tim Harbick Sail Fleet CaptainThe Social Committee is the perfect opportunity to get involved in club events and meet other members!
Next Meeting: October 5th
The Fleet Committee is a group of volunteer members who work in partnership with the SHPYC club management.
