Serves: 4-6 People

Ingredients
- 4 small lobster tails (6-12 oz each)
- 3 cups of Water
- 3 Tbsp Extra Virgin Olive Oil
- 1 large yellow onion, chopped
- 2 cups Spanish rice or mediumgrain rice, soaked in water for 20 minutes and then drained
- 4 garlic cloves, chopped
- 2 large pinches of Spanish saffron threads soaked in ½ cup water
- 1 tsp sweet Spanish paprika
- 1 tsp cayenne pepper
- ½ tsp chili pepper flakes
- Dash of Salt
- 2 large Roma tomatoes, finely chopped
- 6 oz French green beans, trimmed
- 1 lb prawns or large shrimp or your choice, peeled and deveined
- ¼ cup chopped fresh parsley
CHEF'S CORNER

Directions

1. In a large pot, bring 3 cups of water to a rolling boil. Add the lobster tails and let boil very briefly (1-2 minutes) until pink. Turn the heat off. Remove the lobster tails with a pair of tongs. Do not discard the lobster cooking water. When the lobster is cool enough to handle, remove the shell and cut into large chunks.
2. In a large deep pan or cast iron skillet, heat 3 tablespoons of olive oil. Turn the heat to medium-high and add the chopped onions. Saute the onions for 2 minutes then add the rice, and cook for 3 more minutes, stirring regularly. Now add the chopped garlic and the lobster cooking water. Stir in the saffron and its soaking liquid, paprika, cayenne pepper, and salt. Stir in the chopped tomatoes and green beans. Bring to a boil and let the liquid slightly reduce, then cover (with lid or tightly with foil) and cook on low heat for 20 minutes.
3. Uncover and spread the shrimp over the rice, pushing it into the rice slightly. Add a little water if needed. Cover and cook for another 10 minutes or until the shrimp turns pink. Finally, add the cooked lobster chunks. When the lobster is warmed through, turn heat off. Garnish with parsley.
4. Serve the paella hot with your favorite white wine.

BOATING & MARINA NEWS
BY: HARRY SMITH - MARINA MANAGER“VSC” (Vessel Safety Check) Information provided by cgauxlkn.com

Start the season off right, schedule your complimentary “VSC” today! Even Experienced Boaters Need a Free Vessel Safety Check
Have you been wondering if you have the proper safety equipment aboard your boat? Getting a late start on the season, or did you just acquire a new vessel and want to make sure you're ready to get out on the water for the first time?
Vessel Safety Checks are FREE and take only about 10 minutes, depending on vessel size. They are performed by qualified US Coast Guard vessel examiners. There are no negative consequences if you do not pass and solely serve as an educational opportunity to help you, family and guests on your vessel be safer on the water. Vessels that pass will receive a sticker on the spot indicating to other boaters that the vessel passed a Vessel Safety Check this season, but we can come back again for free if there is anything your vessel is missing the first time!
Call Flotilla 26-01 (704) 663-3333 and schedule today or go to Free Vessel Safety Check USCG Auxiliary Lake Norman (cgauxlkn. com)
An Example of Some of the Items Checked Include:
• Proper display of numbers
• Registration/Documentation
• Personal Flotation Devices
• Life Jackets
• Visual Distress Signals
• Fire extinguishers
• Ventilation
• Backfire flame control
• Sound producing devices
• Navigation lights
• State requirements
• Overall vessel condition
All of these items are currently required by state and federal laws and, if missing or non-operating, can result in a citation if your vessel is inspected by the Coast Guard or local Lake Patrol Officers. The Vessel Safety Check gives you a risk-free way to check that you meet the legal minimums and to potentially avoid a citation later.

Fueling Safety Tip
Please make sure all passengers are off the boat during fueling! Always properly ventilate engine compartments after fueling. PWC’s must remove seat to do so!

FLEET COMMITTEE NEWS
BY: JASON WINGE - SAFETY & EDUCATIONAs fast as time seems to pass these days, after what felt like a long off season, lake season is almost upon us! This is a time to get excited, but also to prepare and be prepared.
Being this year’s Safety & Education Chair on the Fleet Committee has caused me to reflect on my past as a person who grew up on Lake Norman. I have seen a lot; I have been part of a lot. All the close calls, I realize how lucky I am to be in one piece. At 11 years old, I slid off a swim platform onto the prop of a raised outdrive. At 18, I was part of a jet ski collision where we were both thrown from our watercraft and ended up sore but were only a few inches from serious injury or death. At 21 I was on the wrong side of an island and didn’t see an incoming evening thunderstorm and ended up riding out a severe thunderstorm on a pontoon boat. Reflecting back as a 45-year-old, I now realize how lucky I am to only have a permanent scar on my heel. I had a classmate from elementary school through high school that was part of a jet ski collision with injury as a teenager, then later drowned at a raft up on the lake in their 20’s.
Lake Norman is a place of so many irreplaceable memories for me, it has formed everything from my attitude on life to my personal style, but it also commands a lot of respect. As SHPYC members, I would like to think that none of us are the problem on the lake, but we can’t control what everyone else does out there, including a lot of rental boaters. We all want a world where everyone follows the rules

of the road. After my first full season on the lake in a while last year, my advice is to be a defensive boater. Control what you can control, don’t expect the other guy to do what they are supposed to do, expect the unexpected. Give other boaters a wide berth, keep your distance where you can. If you are a parent to teenagers, do your best to make them aware of the worst that can happen out there, have them take an available seminar.
May is a great time to check all your equipment, overall safety, fire extinguishers, batteries, etc.
Review the current regulations. There are recent changes with fire extinguisher regulations, make sure you’re in compliance and that your fire extinguishers are in date. Consider keeping a marine radio on board. Marine radios and our smart phones make it easy to always be weather aware.
At the time of the writing of this article, there are some great lessons in the works, watch the club emails and calendar. Harry, as always, is a great resource with safety. Reach out to myself as well. Have fun and be careful out there!

SAILING SCENE : SAILING IS MAKING WAY ON LAKE NORMAN!
There are a few Safe Harbor Peninsula Yacht Club (SHPYC) vessels taking part in sailing events on Lake Norman this spring and summer. John Protor’s Luffrbouy placed third during the 150 Bridge Race in April and he is also racing his Jeanneau 349 in the nonspinaker class during the Wednesday Night Series this season. The Mad Hatter, a 30-foot Catalina, is also racing in the Wednesday Night Series in the cruiser category. Also, the Fleet Committee is gearing up to hold summer camp events for future young aspiring sailors, so be on the lookout for the upcoming schedule of events. Even if you have never been sailing before, but would like to try and get involved, there are many opportunities to crew during racing events on the Lake. There is nothing
like quietly cruising along with, or into the wind with your favorite beverage, watching the sunset after a brief sailing event experiencing our area’s great climate. The Fleet Committee is planning upcoming events for owners, crew, and folks interested in sailing all year long.
Please reach out to me at markalancook@yahoo. com or Rob Higgins at rob.higgins@gmail.com, our Sail Fleet Commander, if you would like to learn more about our sailing programs.
Fair winds!
