• 5 to 6 small squid, cleaned
• 1 onion, yellow or white
• 1 to 2 cloves garlic
• 1/2 red bell pepper
• 2 to 3 tablespoons Spanish extra-virgin olive oil
• 32 ounces fish stock
• 2 cups pearl rice
• 3 to 4 saffron threads
• Salt, to taste
• Freshly ground black pepper, to taste
• 1/2 (15-ounce) can peas, optional
1. Clean the squid thoroughly and cut them into rings. Use the tentacles, but be sure to remove the eye. Peel and finely chop the onion and garlic. Cut the pepper into small pieces.
2. Heat a few tablespoons of olive oil in a heavy-bottomed large frying pan. Sauté the onion and garlic over medium heat. When the onion is golden, add the red pepper and continue to sauté, stirring often, for about 5 minutes.
3. While the onion mixture is sautéing, heat the fish stock in a saucepan, but do not boil the stock.
4. Add the squid pieces to the onion mixture and sauté for three to four minutes. Add the rice to the frying pan and stir to coat the rice with oil. Add more oil if needed and “toast” rice for about 2 minutes on medium heat, being careful not to burn it.
5. Pour in fish stock, saffron, and stir. Add salt and pepper to taste. Simmer until the rice is cooked.
6. Some Spanish families prefer "soupy" rice and will serve this sort of dish with broth. If you'd like this to be more of a soup than a drier rice dish, add a bit more fish stock to the pan just before the rice is finished cooking. Otherwise, keep it as is, as a less soupy version.
7. Remove the dish from the heat and serve.
PYC has a number of fun and exciting watercraft for your enjoyment. No cost to you but we do require them to always be signed out.
Although fun, these watercraft must be taken seriously! Throughout the summer the marina can be a very busy place with a lot of boat traffic, so if using the watercraft make sure you always stay aware.
1. Approach blind spots with caution! You may see other boats but they may not see you.
2. All watercrafts must be signed out from the Ship’s Store.
3. PFD’s must always be worn.
4. Paddles and PFD’s must be returned to the store and watercraft signed back in.
5. Sailboats can only be checked out by an experienced individual and must be checked off by marina staff prior to taking them out.
6. You must be at least 16 years old to check out any watercraft.
Important statistics www.americancanoe.org
• 85% of canoe fatalities were not wearing a lifejacket.
• 48% of kayak fatalities were not wearing a lifejacket.
• Experienced paddlers are four times as likely to wear their lifejackets.
• Lifejackets not only provide additional flotation in case of a capsize or unexpected swim, they also provide an essential layer of warmth in cold water.
• Wear It! Lifejackets Matter
• Paddlers do need to be aware of a few of the “Rules of the Road” when sharing resources with other marine traffic. Importantly, keep a proper lookout. Remember to be courteous to other boaters and law enforcement officers. They’re there to help you to be safe and have fun

Today we take a look at one of the cutest little families to walk the docks of The Safe Harbor Peninsula Yacht Club. Here we have The Chubas! Joseph Chuba & Dr. Bridget Long have been members at the club for about seven years.
Shortly after their daughter Hazel was born, they didn't waste any time introducing her to the boat life. Mr. Chuba said, "Basically our daughter grew up here. This is her club as much as it is our club."
As you could probably guess, the kid events are a huge factor that brings the family into the club. From summer camps to kid movie nights, Hazel has hit them all! The couple went on to say how it's so nice to have an environment to be able to enjoy each other one on one while their daughter is nearby having fun
with her peers but also to have endless opportunities to enjoy time as a family as well.
Because Dr. Long grew up on a Lake around boating, The Safe Harbor Peninsula Yacht Club feels like home. "Boat people are my people," she caringly said. Since being yacht members, the family has been able to meet people at boating events like the Raft Up to where they can now plan a day out on the water to spend with other member families. The purpose of the SHPYC events are to provide an environment for our members to escape their busy lives to connect with themselves, their family, and their friends. It's a place to help facilitate new friendships and allow people to feel a part of a community. We are ecstatic to hear that The Chubas have found those experiences here and we hope their story can resonate with others. Thank you to Mr. Chuba & Dr. Long for taking the time to share their stories and make sure to give them a friendly wave out on the Lake Norman waters this summer!
Sometimes when things are just so cute it's best to double them up; which is why we have two doggies of the month! Here we have Bentley, who is a nine year old King Charles Cavalier. Bentley loves to go on walks, lay in your lap and his favorite snack is a good bowl of eggs!
Next we have Ascher who is a 12 year old German Shepherd and is a true trained protection dog. She loves her family and protects her little brother! Ascher's favorite toy to play with is her tennis ball and if you throw it in the water, she wouldn't mind because swimming is one of her favorite activities! Ascher also loves going on walks and runs with her family. Special thanks to the Colvins for letting us spend some time with these adorable pups!
Do you have a fur baby that loves the spotlight? Send us a message! They just may be our next Dog of the Month!

Our Commodore's Hours are a great way to get to know your fellow members of the club. Typically these events are held three times a month in the Dining Room Bar. Please register online at www.peninsulayacht.com to let us know you're coming!
Is there ever really anything better than brunch on Sunday? These are the times to relax, enjoy time with family, and eat all the food you were too busy to eat during the work week! Sunday Brunch at The Safe Harbor Peninsula Yacht Club allows you to do all three all at once!
Come take a ride on the Nopkehee! With a maximum of eight people, your sunset cruise will be an intimate moment out on the Lake Norman waters. The boat offers bench seating inside the cabin which is the perfect place to enjoy some light hors d'oeuvres paired with a glass of wine or beer. If this sounds like an evening you would enjoy, head to our website www.peninsulayacht.com to register!
It is that time of year when the weather is warmer and boating season is finally here! As we all prepare to take advantage of upcoming memory making gatherings, your Fleet Committee has been busy working with the SHPYC to make sure these events help create lasting friendships for all the club’s members. I am excited and honored to serve as the Fleet Committee’s newest Safety & Education Chair and look forward to continued promotion and spreading the importance of safety as a normal mindset, rather than an afterthought. The club’s staff, especially with the tremendous efforts from Harry Smith, Marina Manager, prioritizes safety as a goal so we all enjoy our time together at the club and on the water. The Fleet Committee also embraces this goal and promotes its awareness in an enjoyable way to assure we all have pleasurable memories and long-lasting friendships while keeping safety on the forefront. One example is a collaboration with the Lake Norman Marine Commission in supporting and sharing awareness for its “Love Where You Lake” mission. Please see the website for more information: https://lnmc.org/love-whereyou-lake/ As the Memorial Day Weekend approaches there will be a variety of wonderful on-water and off-water events, and we look forward to your participation.
Progressive Dock Party, May 13
Come join us for an enjoyable evening along the boardwalk with food sampling, drinks, music, and dancing.
The last time I counted, there were 70+ sailing events on the lake this year hosted by the various yacht clubs – including those hosted by our own SHPYC. Certainly enough to keep us all busy be it social, sunset cruises, nighttime, race or fundraiser events. We are very fortunate to call Lake Norman “our” lake. Sailing is a way of life to enjoy. Please reach out if you would like to get involved.
As you read this, our Spring Blood Drive is behind us having had a very successful turnout which will help 24 of our neighbors in the Community. We will once again partner with OneBlood for our Fall/November drive. Be on the lookout for flyers in late fall!
Raft Up, May 20
Our 2023 season’s inaugural raft up at Reggie’s Cove will surely be a fun time, with complimentary hot dogs, hamburgers, beer, wine, and mostly member camaraderie.
Pancake Breakfast, May 27
Join the 2023 Fleet Committee for a complimentary pancake buffet while having a wonderful morning of interaction, fun, and memories.
Fleet Commissioning, May 28
This is SHPYC’s official launch of the boating season over Memorial Day Weekend, which includes a brief ceremony, with bagpipes and celebratory remarks from club leaders.
These events, as well as others graciously offered through the SHPYC, underpin the key theme the Fleet Committee believes is central to the entire club membership and staff: “The Best Ships are Friendships.”
May’s Safety and Education Tip of the Month:SHPYC is proud to be certified under the NC Inland Clean Marina Program. As you prepare your vessel for a fun and safe boating season:
a) Contain and properly dispose of all trash and any hazardous waste, such as antifreeze, batteries, and oil.
b) Choose green products for any cleaning. Look for the EPAcertified Design for Environment / DFE label.
c) Prevent fuel spills by filling fuel tanks slowly. Do not top off or overflow your fuel tank.
Spring also means it is Fleet Commissioning season once again. The PYC Fleet recently participated in Lake Norman Yacht Club‘s Commissioning in April and would encourage you to join us for SHPYC’s on May 28. All are welcome.
To fair winds and following seas,
Tim HarbickThe Social Committee is the perfect opportunity to get involved in club events and meet other members!
Next Meeting: May 4th
