Instructions: EXECUTIVE CHEF ANDRÉS

Ingredients:

For the Beef Stew:

• 2 lbs beef stew meat

• 2 Tbls olive oil

• 1 onion, chopped

• 3 cloves garlic, minced

• 2 carrots, peeled & chopped

• 2 potatoes, peeled & chopped

• 1 cup beef broth

• 1 cup red wine

• 1 tsp dried thyme

• salt and pepper, to taste

For the Crusty Bread:

• 1 1/2 cups warm water

• 2 tsp active dry yeast

• 3 Tbls olive oil

• 1 tsp salt

• 3 cups all-purpose flour

CHEF'S CORNER

BEEF STEW WITH CRUSTY BREAD

Instructions:

For Beef Stew

1. Preheat your oven to 300°F.

2. In a large Dutch oven, heat the olive oil over medium-high heat. Add the beef and cook until browned, about 5 minutes. Remove the beef from the pot and set it aside.

3. Add the chopped onion to the pot and cook until it's softened and lightly browned, about 5 minutes. Add the garlic, carrots, and potatoes, and cook for an additional 5 minutes.

4. Add the beef broth, red wine, and thyme to the pot. Stir to combine, then return the beef to the pot. Bring the mixture to a boil, then cover the pot and transfer it to the preheated oven.

5. Braise the stew for 2 1/2 to 3 hours, or until the beef is tender and the vegetables are cooked through.

6. Remove the stew from the oven and let it cool slightly. Serve the stew hot, with slices of the crusty bread on the side.

For Crusty Bread

1. While the stew is cooking, prepare the crusty bread. In a large bowl, combine the warm water and yeast. Let the mixture sit for 5-10 minutes, until the yeast is activated and foamy.

2. Add the olive oil, salt, and 2 cups of the flour to the bowl. Mix the dough until it comes together

3. Gradually add the remaining cup of flour, kneading the dough on a floured surface until it becomes smooth and elastic.

4. Place the dough in a greased bowl, cover it with plastic wrap, and let it rise in a warm place for 1-2 hours, until it's doubled in size.

5. Preheat your oven to 425°F. Punch down the dough and shape it into a round or oblong loaf. Place the loaf on a baking sheet lined with parchment paper.

6. Bake the bread for 25-35 minutes, until it's golden brown and sounds hollow when tapped on the bottom.

BOATING & MARINA NEWS

Happy New Year!

What a great year 2024 was. We continue to offer first class services with your safety and comfort in mind. Don't forget if you need boating instructions, further boating education, inspections, etc, let us help guide you and give direction.

Safe Harbor Peninsula Yacht Club is here for YOU!

Avoid Potential Hazards:

The best way to avoid potential hazards is knowing and monitoring your boat. Make sure you have a thorough preventive maintenance plan. If you don’t have one, get one and let us help. Be sure to keep it simple yet thorough! You should know your vessel inside and out. Be observant and aware of anything that seems out of the ordinary, excessive water, temperatures, discoloration at electrical connections, etc. Have a checklist and keep a log if needed. Get in the habit of checking areas that are not always in plain sight. Be sure and make a checklist custom to your vessel. These preventive methods will also be helpful throughout the boating season to help ensure a safer time on the water. Be proactive not reactive and let us help!

Marina Manager Reminder

You may have heard about the fire down on Lake Wylie last month. It seems that a light bulb in a bilge may have been the cause.

This may be a quick alternative to winterization for a lot of boaters, especially when up against frigid weather, but this is simply not safe!

Anytime there is the potential risk of spark, heating sources coming in contact with something flammable, is a disaster waiting to happen!

Please remember we do not allow light bulbs to be used as a heating source for any reason in the marina. We are happy to help with the proper winterization process or provide options for safe heating alternatives.

FLEET COMMITTEE NEWS

As your 2025 Fleet Committee Commodore, I’d like to extend my heartfelt gratitude to Chris Slocum, our immediate Past Commodore, for his outstanding leadership of the Fleet Committee in 2024. It was a fantastic year, marked by strong collaboration with SHPYC management, staff, and our many dedicated volunteers to bring memorable events to our members.

A recent highlight was the rescheduled Peninsula Cup Regatta, which, despite the colder December temperatures and Hurricane Helene’s disruption, drew an impressive turnout—proving once again that sailors are true die-hards!

The year kicked off with our annual Polar Plunge, benefitting Special Olympics, held in the club’s pool (which, I’ve heard, might be even colder than the lake!). In true SHPYC spirit, the Outrigger Bar was open to warm up after the plunge. Our Raft Ups, always a member favorite, were made even more enjoyable with fun new themes. Additionally, the Lake History Tours, led by our own historian and Past Commodore John Johnson, continue to be a highlight for both new and seasoned members. June brought an exciting weekend to SHPYC, featuring the Poker Run and the Chips for Charity Silent Auction, which supports our three local charities—a testament to our commitment to both fun and philanthropy. Rounding out our fall calendar was the Pirate Treasure Hunt, a volunteer and participant favorite!

We are planning many exciting events for the Members for 2025: February 22- Commodore's Ball featuring Silent Disco

March 1- Polar Plunge benefiting Special Olympics

March 6- Volunteer & Sponsor Reception

March 22- Spring Fellowship Regatta

March 27- CPR Training Dinner

April 6- Sail Crew Party

Each year, the incoming Commodore selects a theme that reflects their values and vision for the year ahead. For 2025, the theme is “Members Matter Most.” This reflects my belief that our members are at the heart of everything we do. Your Fleet Committee, along with its dedicated volunteers, is committed to enhancing the membership experience at SHPYC, ensuring that every event, program, and opportunity is designed with you in mind.

I look forward to seeing you at the Commodore's Ball on Feburary 22nd, where you will experience a surpirse or two and have the opportunity to dance to your own beat with the Silent Disco! Let's come together and make the most of the exciting and memorable events planned at SHPYC this year!

The 2025 LKN lakewide sailing season kicks off on January 1st with the Ice Bucket Race. The PYC Icicle Series on January 11th and PYC Spring Fellowship Regatta quickly following in March. There are over 90-days of sailing events already scheduled between all of the yacht clubs. We hope to get more SHPYC boats out of their slips and sailors on the water in 2025!

January sailing on Lake Norman is truly amazing with the clear skies and always a brisk breeze. I hope to see you on the water!

To fair winds and following seas, Tim Harbick
