The Art of Preserving Wine It is well known that once a bottle of wine is opened, it is exposed to oxygen, which can initially soften the flavors (allowing it to breath), but then the quality begins to rapidly decline after only a few hours of being exposed. This process of oxidation is a chain reaction that can only be paused by eliminating 100 percent of the oxygen from the bottle as quickly as possible.

Most wine consumers don’t realize that the longer a preservation method takes, the more damage can be done. So, any wine preservation device that allows oxygen to remain inside the bottle will essentially be less successful at preserving wine, as the remaining oxygen will react with the wine to cause spoilage.

Within a four-hour preservation, there is no statistically significant decline in sul-

fur dioxide, so bottles preserved within that timeframe maintain their taste and aroma.

There are several methods currently available to consumers, which can extend the life of an opened bottle of wine, but only ZOS has been tested and confirmed to remove 100 percent of the oxygen within the four-hour time frame. In fact, ZOS’ testing validates that it removes 100 percent of the oxygen in less than 60 minutes.

Previous common methods of preserving opened wine included injecting Argon gas into the bottle, but testing shows that in most applications, approximately 5-19 percent of the original oxygen remains in the bottle. So while it might extend the life of the wine minimally, over time the wine will

Millennials: Modern Cooking in the Home

Millennials are equipping their kitchens with the latest and greatest gadgets and gizmos, and with Millennials standing at $200 dollars in buying power, according to the U.S. Chamber of Commerce Foundation, Lori Colman, co-Chief Executive Officer of CBD Marketing, says companies are wise to keep a close eye on these young adults to track the major trends that shape the way we cook our food as a society as we enter the new year.

“Millennials share their opinions and buying habits online via social media platforms and on other sites. Businesses and brands that mine this treasure trove of online data will be the ones that market their products successfully,” says Colman, who for the last two years has conducted research on the food industry by collecting data from Millennials’ social media profiles.

Susan Turgeson, who teaches Family and Consumer Science at the University

of Wisconsin and also manages her own cooking classes, tracks the habits of Millennials to help her teach them to cook. As someone who’s taught for over a decade, Turgeson says her college students are cooking differently than previous generations.

“It’s little surprise,” Turgeson says, that “Millennials care about the food they eat,” pointing out that as Millennials have families, and as they become responsible for their children’s health, nutritious foods are becoming more of a priority than before. “A lot of younger people are starting to realize the benefit of feeding their families fresh produce and clean foods,” she said.

From organic fruits and vegetables to grass-fed beef, Turgeson says that healthy food makes Millennials happy, but it’s no longer about just food that’s healthy for their bodies; Millennials also want their food to be good for the environment, and they expect the companies they buy from to be transparent about how they make and sell their products.

“They care about the environment and want to help make Earth a better place,” says Turgeson.

They’re also starting to cook more at home: Millennials are actually starting to prefer to cook at home from scratch by using more basic ingredients and using more fruits and vegetables and less premade ingredients. Turgeson says Millennials are going back to their roots to a time when people ate out less and cooked more. In a recent survey, The NPD Group, a market research company found that, on average, Millennials cook about 4.9 times per week. A study by Mintel, also a market research company, showed that the number of cooking enthusiasts in the U.S. rose each year from 2014 to 2017, and that in 2017, 80 percent of Millennials cooked from scratch which is up from 60 percent who cooked from scratch in 2015. “[Millennials] are going back to their roots,” says Turgeson. “We’ve gone back to how it was with my grandparents, to a time when people prepared meals in their kitchen. We’ve kind of gone back to making everything from scratch.”

But, call it a caveat to their interest

in cooking, Millennials want to make food at home faster. Turgeson says while there is a big belief that convenience foods are one of the only ways to eat quickly; people overestimate the time it takes to cook homemade meals. “People are busy, and they want meals that are fast to make. I find that my students always love comfort foods, and you know, things like macaroni and cheese.

While it’s easy to grab a box Kraft macaroni from the grocery store, it actually takes about as much time to cook macaroni and cheese homemade, and my students don’t realize that. Cooking from home can be pretty time efficient if you know how to do it.”

Many of them are looking to meal kits as a way to speed up their meal preparations. In a 2016 survey by Allrecipes, a food focused online social networking service, the company found that, “Food tech companies are providing services that make shopping for the kitchen ultra-convenient... ...more than 85 U.S. companies offer either meal kits, meal delivery, food e-commerce, online grocery shopping or online ordering.”

had become interested in whisky – the name for Scotch spirits, as differentiated from American and Irish whiskeys, but he thought that the existing glassware wasn’t doing it justice. “He wasn’t quite happy with what the options were,” Bahng said.

Recht thought he could do better. Most aficionados were drinking whisky out of a tulip-shaped glass, the classic Glencairn shape that’s revered for its tapered neck that gathers and condenses the aromas from the spirit while corralling the alcohol and its burn.

Other whisky drinkers use a tumblerstyle glass that’s traditional for a highball.

Recht thought that the idea glass might be a hybrid between those two styles – a glass whose interior shape married the capabilities of the Glencairn style with an outer form that had the aesthetic qualities of the tumbler. After numerous iterations, the Norlan Whisky Glass was ready to release. The result was a glass that enhances the drinker’s experience of the whisky while insulating the spirit from the warmth of the hand holding the glass.

Recht thought, though, that the glass, great as it was for neat whisky, didn’t quite do its best for an iced cocktail. He went back to his drawing board.

Ninety design iterations later, Norlan has now introduced the Rauk Heavy Tumbler, which features a tumbler-style shell with an inner vessel that has an array of extruded chevrons radiating from the center, which serve to provide friction points for gripping ingredients used in muddled drinks. For whiskey drinkers who prefer their spirit chilled in a heavy-bottom glass, the tumbler, weighing in at 575 grams, will delight.

Circumventing the ornamentation of traditional cut crystal, the entire surface of the tumbler, inside and out, is born in a single blinding moment of machinepressing the molten crystal into a complex five-part mold. Within this process,

the plunger forms the multichevron cross-shaped extrusion inside the glass. The chevrons of this specific pattern evolved through dozens of design iterations in search of an elegant and ideal form to aid in the art of cocktail making while visually reinforcing the compass shape on the underside of the glass.

While the tumbler’s base is precisionmodeled as a three-dimensional form allowing the glass to rest on four crystal points as though it were floating, perfecting this in mass production is a more nuanced process.

Combining the thickness of the glass bottom with this particular base, along with the desired thinness of the rim, required numerous rounds of sampling and even in production necessitates a delicate balancing act of timing and intuition during the machine-pressing process to keep the tumbler from either cracking or sinking on its feet. It’s a shape that’s too complicated for today’s technology to make from a single layer of glass, so the complexity of the manufacturing process is as complex and nuanced as a fine whisky itself.

“The heavy tumbler was a natural progression for us in creating a new glass,” Bahng said. The glass was designed specifically for people who enjoy having their whisky with ice or in cocktails. We wanted to have a glass specifically for them.”

“Our company is really focused on the ritual of whiskey drinking. We are actively working on developing products that would add to that ritual,” he added.

“We’re not looking at telling people how to enjoy whisky; it’s about how to improve on that ritual, how to provide an interesting experience for people.”

The floor was a wacky idea that came to Beers out of the blue. It took a fair amount of planning, but some serendipity came into play, too. It cost more than he expected – more than $1,000, “or $2.14 a square foot,” Beers points out. It was much more work to finish than he thought it would be, and his trusted employees helped with the work.

And yet the floor, with its giant ice cream cone motif made of shiny new pennies just inside the door, and its carefully designed border of darker, older pennies, is a stunning success. Customers remark on it the minute they enter the ice cream parlor, one of three side-by-side storefronts in the Strip that Grandpa Joe’s occupies.

Beers opened the store in the Strip, Pittsburgh’s functioning warehouse district and a popular tourist destination because of its ethnic grocers and restaurants, in 2012. “I chose this neighborhood because the area was missing a candy shop,” the 39-year-old Beers says.

one storefront. But as years passed, and neighbors retired or went out of business, the store expanded to occupy three storefronts at 2124 Penn Avenue, the Strip’s main drag. With two floors, the store stocks 265 kinds of soda from around the country, and more than 750 candy bar brands, for wholesale and retail sales.

The upstairs is devoted to bulk candy packaging, but the downstairs, with its floor-to-ceiling displays and its creaky wooden floors, is a maze of candy, toys and novelties, including a bacon-scented stick-on mustache, squirrel underwear and other oddities.

A big part of Grandpa Joe’s Candy Shop’s role in the community is generosity, Beers says. “We say yes to every donation request,” he says. “We take part in community events and festivals, too.”

He notes that the company’s Dilly Pickle Cotton Candy was such a hit at the

end of a community charitable run that the company ran out on the first day.

Beers says he uses social media, like Facebook, to promote Grandpa Joe’s Candy Shop, just as many business owners do. But he also looks at the photos that his competitors post. Perhaps they have brands that he should be carrying, he says.

On Instagram, he searches by geographic location near his stores to see what consumers are saying. When he’s considering a new location, those customers’ Instagram accounts can help him understand what they might want.

In fact, “staying alert and fluid” is part of his business strategy by design, he says. “We never carried fidget spinners because I totally missed that,” he says.

“But the guy across the street (from the Strip District store) made a lot of money with them.”

Krasne, who will continue on in his role as Chief Executive Officer and Chairman of the board of Krasdale Foods. “He is deeply involved in all aspects of the business and has earned the respect of our employees, customers and partners. I know he is eager to continue to drive future growth for the company.”

I told her she needed to get her artwork out there,” Niemann said. “She was hesitant, but I persisted. We came up with the idea of putting her art work on something people could actually use, and that’s how Rainy Day Illustrations started...”

Simmons began her career as an artist in the late 60s as an illustrator for fashion industry labels and retailers. In the late 80s when fashion turned from illustrations to photography, she reinvented herself as an illustrator, and started drawing storyboards for advertising agencies to help sell commercial concepts for major brands.

Simmons says her new found joy keeps her extremely busy, but she loves crafting each piece and is always looking for inspiration to create new ideas.

“I head straight for my studio every day,” said Simmons. “We just keep coming up with ideas for new illustrations.

With the process of trial and error, we’ve figured out what prints well and what doesn’t print well. The best (illustrations) are the fast ones. Sometimes I work on it for an hour and sometimes a whole day, and I’m having a wonderful time in the process.”

Meanwhile, as Simmons provides the artwork, her daughter manages the day-to-day business affairs.

“Our artwork now serves a purpose in people’s homes across the country and in our own lives,” Niemann said. “I use our towels every day to dry my hands, to clean and dry plates, wash counters, as napkins and as oversized bibs for my 2year-old...”

We like to say that Rainy Day Illustrations is capturing the beauty of our every day and adding elegance to nature’s natural beauty.”

Rainy Day Illustrations is a line of 100 percent cotton towels from a motherdaughter duo. The towels are carefully crafted with handpainted images on the front and are made for everyday use.

Rainy Day Illustrations are the brainchild of Suzanne Simmons and her daughter Annie Niemann. The two began their small business in 2015 when Simmons, a longtime fashion illustrator, gave her daughter a watercolor painting.

Taken aback by her mother’s talent, Niemann encouraged her mother to share her gift with the world.
