Once Again Moves Peanut Butter Production into New Building

Western Foods is located in Woodland, California, which is in the heart of the California rice growing district, renowned for its high-quality non-GMO medium grain japonica rice. Once Again Nut Butter, a leading nut butter brand that’s been spreading integrity since 1976, has moved all peanut butter production over to a new SQF Level 3 Certified, 37,000 square foot facility. The move is designed to prevent the cross contamination of allergens and make the company’s products even safer for its consumers with special dietary needs. The new facility also increases the company’s annual peanut butter production capacity along with its almond and cashew butter production. Designed by Once Again’s employee-owners for ultimate efficiency, the state-ofthe-art peanut butter facility was originally opened in 2016. This year, a new jar line was installed to complete the transition. Tree nut and seed butters are still produced in dedicated rooms at the company’s main headquarters, a.k.a. the Potter Thaler building, which is just down the street from the new plant. In the near future you will notice that all of Once Again tree nut and seed butter labels will indicate its butters are “made in a peanut butter-free facility.”

A Universal Technique for Rapidly Analyzing Fat Content in Any Food Sample

The ORACLE is the only rapid fat analyzer that can quantify fat in any food product with no method development. The system utilizes low-resolution TD-NMR to selectively isolate fat in any food sample without prior knowledge of the sample. What that means is that a user can walk up the ORACLE and in 30 seconds receive an accurate and precise fat result. This has never been possible with a rapid fat analyzer, without first completing method development. The technology was two years in the making. It was verified with over 30 different Certified Reference Materials (CRMs) and numerous other food matrices that were submitted to third-party laboratories for comparison. The ORACLE has the ability to analyze fat at all levels, including as low as 0.05 percent and as high as 100 percent pure oil. Select the Right Pan with LloydPans An interview with Paul Tiffany, Senior Manufacturing Engineer, LloydPans®.

FMD: You’ve often talked about the ‘systems approach’ in terms of what customers should know before selecting pans. Would you explain that approach, and why it’s necessary?

PT: A restaurant is a food factory. First decisions must involve menu and service rate to define production requirements – including all downhill contributors of equipment, utensils, space and processes. All hardware must be selected to make the concept work, or it will fail.

FMD: ‘Smallwares’ is used to describe pans necessary to food production, but you dislike that term. Why is that? PT: Despite being priced lower than

ovens or hoods, pans are not interchangeable commodities. In the systems approach, the right pan must fit the concept – even if it’s not the lowest priced option – in order to achieve success.

FMD: Seasoning is a term used in the pizza industry to describe a necessary process for bare pans prior to production. What does seasoning involve?

PT: Seasoning involves applying a thin coat of oxidizable oil and baking it until a polymerized film is produced. Typically, 5-20 bake cycles are needed to achieve a ‘seasoned’ surface with some release properties. Alternatives include silicone glaze, PTFE non-sticks, and permanent, stick-resistant release finishes.

FMD: Selecting bare pans is often seen as less expensive. Are there limitations to

FMD: Can you explain the difference between competitive release finishes and LloydPans Pre-Seasoned Tuff-Kote® finish?

PT: PTFE non-sticks offer approximately 5,000 release cycles, but they’re not metal utensil safe and don’t often last long in hot pizza ovens. Silicone glaze is less durable, and offers about 1,000 release cycles with the same limitations as PTFE coatings. LloydPans Pre-

FMD: What demands are changing the landscape of solutions you provide?

PC: Food safety – with one in six Americans contracting foodborne illnesses each year, one 250-person outbreak has the potential to cost a QSR up to $1.9 million.
