Italian Shrimp with Buffalo Mozzarella

How many dishes can people create from that one amazing protein, Shrimp? Well Bubba from the movie Forrest Gump certainly came up with quite a few, but here is one I believe Bubba missed; Italian Shrimp with Buffalo Mozzarella.

This is a refreshing way to use ripe tomatoes, and buffalo mozzarella cheese. The shrimp I use are 21-25 which means there will be approximately 21 to 25 shrimp per pound. You could use a smaller shrimp if you prefer, but freshness remains priority to maintain the best flavor.

LOUISIANA SUMMER DRIVING TIPS Just like winter, summer has its own set of seasonal hazards that require your complete attention as a driver. In summer, there is simply more human activity everywhere, and it’s up to you to slow down and stay alert.

• BIKES AND MOTORCYCLES Bicyclists and motorcyclists are also more active in good weather. Pay attention and take extra care in areas that attract cyclists.

• GLARE The sun’s glare is bright in summer, and even harsher when the sun is low and in your face.

Have your sunglasses handy if you’re not already wearing them, and be ready to flip down the visor so you don’t spend even a second driving while blinded by the glare.

• ROADWAY OBSTACLES: A busy roadway is no place for a sofa. But, with scores of people completing summer moves, you might just encounter one. Keep an eye out for roadway obstacles and plan as far ahead as possible on how to safely maneuver around them. Thunderstorms and tropical storms can further clutter the roads with debris, tree limbs, or even downed power lines.

• HEATSTROKE: Finally, don’t forget the dangers of summer parking. Children and pets left in parked cars are vulnerable to injury or even death from heatstroke. At an outside air temperature of 60 degrees, a car’s interior temperature can reach 110 degrees, which is a lethal level for children, according to the National Highway Traffic Safety Administration. Rolling down car windows does not provide sufficient cooling, so don’t be tempted to leave children or pets for even a minute. It can be lethal—and in many states illegal—to leave children and pets alone. To help keep your car cool for when you return, park in the shade or place a removable sunshade in the windshield.

• ROAD TRIP SAFETY: A road trip with family and friends can make a memorable summer for both the right and the wrong reasons. Make it the right reasons with some careful planning and driving. There will be plenty of time for fun once you reach the campground, resort, or cabin.

Buffalo Mozzarella is actually a soft milk cheese made from an Italian Buffalo. Mozzarella comes from a term that means “cutting by hand.” It’s a process of separating the curd into small balls. Buffalo Mozzarella is appreciated for its delicate flavor, and elastic texture.

The process I use to cook this dish is not complex. Fresh tomatoes and quality virgin olive oil are a must. I purchase my buffalo mozzarella from Rouses in their quality cheese section. You can actually purchase the ball already cut into bite size cubes which makes that final addition to the dish convenient.

The flavors of this dish are mild, and well balanced. Pasta did not accompany this tomato based dish, but rather toasted French bread on the side for dipping. You can substitute chicken if you have any seafood allergies, but shrimp is highly recommended if there are no health issues.

Topping each serving bowl with finely sliced (chiffonade) basil, drizzle virgin olive oil, and sprinkle a good parmesan cheese will enhance the first bite so the second is even more inviting. ENJOY!

Italian Shrimp w/ Buffalo Mozzarella 4 servings Ingredients: 1 pound shrimp • 21-25 fully peeled ¼ cup extra virgin olive oil for cooking 1 tablespoon garlic • chopped fine • 2 teaspoons sea salt ¼ teaspoon fresh black pepper 1 tablespoon Chef Paul Prudomme’s Blackened Redfish Seasoning 4 medium vine-ripened tomatoes, rough diced ½ cup chicken stock • 3 tablespoons butter, unsalted 1 pound Buffalo Mozzarella, small cubes For Serving 4: 3 tablespoons fresh basil • finely sliced 3 tablespoons, parmesan cheese • 4 teaspoons extra virgin olive oil 8 pieces of French bread • •

Method: In a medium pot turn on heat to high, and add olive and tomatoes Stir and add the garlic and mix well. Season with half the salt, pepper and Chef Paul’s Add chicken stock, and cook hard for 10 minutes. Puree with hand wand or food processor Preheat oven to 350 degrees Bring back to simmer, and add shrimp. Add the rest of the salt, and cook for 5 minutes or until shrimp are done Turn off the heat, and fold in the butter, stirring until all is melted, and combined. Taste to adjust seasoning to meet your needs Add the Buffalo Mozzarella to the sauce pot prior to serving. Stir gently to incorporate Slice French bread 1”– 2” thick which ever you prefer, and place in oven till warmed.

Warm each bowl slightly in the oven, and pour enough Italian Shrimp evenly in each bowl.

Top each serving with fresh basil, parmesan, virgin olive oil Serve Immediately with 2 pieces each of French bread

Tony’s Takes I’LL BELIEVE IT WHEN I SEE IT On this last week before the breakout of college football 2019 and on the 14th anniversary of Katrina, the LSU Tigers are finishing up preparations to meet Georgia Southern, a school that for some reason has little problem running on Alabama. That should be a decent test for the Tigers, whose lack of muscular beef between defensive ends has had an adverse effect on LSU’s ability to stop other team’s runners in recent years.

With so many questions remaining, it’s hard to really get excited about this team. Recoveries from injuries, unproven nose tackles, lack of an outside pass rush for the past several years….it’s a good thing that the Tigers have finally caught up to ‘Bama at the linebacker position and still exceed them in the secondary.

And that’s the defense. Offensively, John Brady’s RPO debut probably won’t wow too many fans on the 31st. One, LSU has never been a “wow” team and they’re not about to start this month.

Two, the Tigers are still too thin and too uneven on the offensive line (but so is Alabama) but they are one quarterback injury away from an 8 and 4 season at best. Myles Brennan, in his third year, still is a neophyte at the quarterback position and if Ed Orgeron is smart, he will play Brennan the entire 2nd and fourth quarters of this first contest, regardless of the score. Both Les Miles and Orgeron treat backup quarterbacks like they’re some sort of treasure, to be hoarded no matter what the game conditions are. Most third year quarterbacks in their same signing day programs at other schools are starting or at worst have a decent to substantial amount of on-field experience. Not at LSU, where backup signal callers receive their bachelor degree in Clipboard Holding and Earphone Wearing.

Expect the Tiger secondary to have their first real test in Austin the second week of the season. If the Tigers don’t show significant improvement from the past six years against Georgia Southern, then don’t get your panties in a wad if the Longhorns make it a Long Day on September 7th. The rest of September and the first week of October is Opponent Rental Month, even though Northwestern and Utah State and Vanderbilt had decent years in 2018. If the Tigers aren’t ‘woke’ by then, the remaining schedule will wake them and create a wake for them…..Florida, Mississippi State, Auburn and Alabama are the next four. They finish with Ole Miss, Arkansas and Texas A&M, the last two at home. A relatively easy front-load schedule is the perfect storm for LSU and they better have their rain slickers on tight when October 12th comes with a Gator visit. October 12th is Columbus Day, when America was discovered. Let’s hope LSU discovers their roar by then.

This season, the Tigers finally are selling beer and wine to the unwashed masses paying under $800 per seat which, at the reported adult beverage prices in stadium, probably will have minimal impact on the alcohol consumed during tailgating. Last year’s trot out of an esoteric culinary menu fell substantially short of what was reported. Lack of point-of-purchase signage, promotion and a general buzz left most of the new fare either missing or undiscovered. And a Fans’ Council to meet quarterly to help shape the Tiger Nation’s game day future experiences…. did Joe Alleva, in one of his final acts as the Bad Actor Athletic Director, put the kabosh on such a radical idea?

Now it’s time for new AD Scott Woodward to begin his reign over LSU’s most important sport and following in the footsteps of Joe Dean, Skip Bertman and Joe Alleva, Scott should have a cakewalk. Now let’s see if the Tigers can do their thing on the Big Catwalk.

Believe it or not, summer will be coming to an end next month. As the kids start going back to school, it’s time to start thinking about a backyard vegetable garden for the fall/winter growing season. If you have never grown a fall garden, then check it out. The days are shorter (literally!) and the weather is much more comfortable. You also get to grow a completely different set of crops for the fall along with a few spring time staples. Whether you are an experienced gardener or just getting started, now is the time to start planning a fall vegetable garden.

Will Afton Start preparing the garden by removing old mulch, unproductive plants from the previous season, and any unwanted vegetation. Sometimes plants like bell peppers, eggplants, tomatoes and okra may still be producing this time of year. Instead of pulling them up, work around them and allow them to continue. Once most of the vegetation has been removed, start cultivating the soil to prepare the planting beds. Next, start planning the layout of the garden. Start thinking of what vegetables will go where. Go ahead and take the time to take good notes. Draw a diagram and label it with the date. This information will come in handy over the years as you practice crop rotation in the garden.

Vegetables grown in the fall are different from what gardeners grow in the spring. Some crops can be grown in both spring and fall. Get a copy of the LSU AgCenter’ s Louisiana Vegetable Planting Guide. Check with your local extension office or visit www.lsuagcenter.com to download a digital copy. This publication contains valuable information on planting dates and recommended cultivars of all the different vegetable crops grown in Louisiana. Some of the crops that are seeded in late August and early September include snap beans, lima beans, beets, broccoli, brussels sprouts, cabbage, carrots, cauliflower, Swiss chard, Chinese cabbage, collards, cucumbers, kohlrabi, lettuce, mustards, English peas, Irish potatoes, radishes, and rutabagas.

Start looking for seeds of these vegetable plants to plant in the garden now. Later in the season you will start to see transplants of the more common fall vegetable crops.

To help ensure success with your fall garden, follow proper cultural practices. Plant spacing is an important concept that allows enough room for the plants to grow and develop normally but it also makes sure we don’t plant things too far apart where weeds tend to grow and become troublesome. Water is another important factor to think about. In cases where rain doesn’t provide adequate irrigation, you will need to supplement. Purchase a garden hose that reaches from the water faucet to the garden. Fertilizer is a must for productive gardens. Whether you prefer either organic or conventional fertilizer types, apply fertilizer at planting and again later in the season as a side dress application.

Fall vegetable gardening can be a very rewarding experience, but you will never know if you don’t give it a try. So get out there, pull some weeds, and grow a garden!

Adult cats and dogs are wonderful pets! Please consider an adult when adopting an animal. They will bond with you and be just as devoted as a kitten or puppy will eventually be. There are several advantages to adopting an adult: 1) They generally are calmer and more attentive to you than a puppy or kitten.

2) They are often already trained.

3) You can know their personality from the beginning. With a six to eight week old pet it is sometimes not obvious.

4) They know what it is like to be abandoned and have to fend for themselves in many cases, so they love you all the more for giving them a home!
