New School Year, New changes in Town

Many have noticed the “ONE WAY” signs that went up the week school started back. The town discussed these changes at their last town council meeting. They felt it necessary to put in one-way streets near Pearl River High School to help with the traffic flow and student safety as they walk to and from school. When driving to the school in the mornings or afternoons, drivers will no longer be able to turn from Pine Street to Peach Street or take Oak St. to Tupelo St. to get to PRHS. The council says this will be a temporary/trail basis while still attempting to put sidewalks in on Peach Street. If you have any suggestions or concerns, you are encouraged to let them know.

Speaking of PRHS, the students are enjoying the improvements made to the campus over the summer break. The students now have a brand-new breezeway that runs through the back campus with a sidewalk continuing all the way through the track area and leading to the back parking lot. Before these improvements, the students would often take short cuts through the mud to get to classes and walk in the busy street behind the school to get to their cars. These improvements were much needed, thank you Principal Priola and STPSB. Congratulations to PRHS’s Teacher of the Year 2019-2020, Mrs. Amy D’Antoni. During the summer Mrs. D’Antoni represented PRHS at the Slidell Chamber of Commerce luncheon. She will also be our PRHS representative at the St. Tammany Parish School Board Annual Luncheon held later this year. She will have a designated parking spot, a plaque and of course “bragging rights”. Mrs. D. (as the students often call her), has taught at PRHS for the last 17 years. When speaking to her she said she was honored to have been named PRHS’s Teacher of the Year. “It has been rewarding to help the young people of this community grow and develop into successful adults and I look forward to many more years working with the students and families of Pearl River.

There is truly no place I would rather be.”

Last but most certainly not least, Pearl River residents, please do not forget to attend the Softball Tournament Fundraiser taking place at Poitevent Park on Aug.24th starting at 9am. This tournament is to help raise money for, Teresa Smith Weaver. Teresa was in a terrible car accident May 1st, her family and friends have worked hard to put together this tournament to help with her ever increasing medical bills. If you were able to attend our Towns 4th of July event this year, you may have been lucky enough to get a taste of some yummy handmade pies made by a local business “Early Halloo”. Interesting enough, the name of this business, was the name of our town before it was even a town. Business owner Paige Dover said she wanted to name her pie company after the towns original name to show how much the town means to her and her family. Paige says, “The town gave and continues to give so much to us ever since we moved here after Katrina. We wanted to bring as much heritage and community around the business as possible. The town means a lot to us, so we wanted to help put it on the map even more and show everyone how proud we are to live here.” Although these pies are in high demand, up until last Friday you could only buy them by going to places out of our area. Basil-Crusted Salmon

Salmon has come a long way in the past decade regarding popularity. To many times salmon was considered having a fishy taste. It’s a fish that has always been construed as a healthy fish with plenty omega-3; good fat. That is the positive side of salmon. Any fish with a strong scent is usually due to a lack of freshness. It’s simply not as fresh as it should be. Nowadays, salmon is better cared for from its stages of fabrication, cryovac packaging, and shipping to supermarkets.

My Basil Crusted Salmon was always a favorite for parties when cooking the whole half side of fish. I crust only the top side with basil. Chop the basil just before using so it doesn’t turn black.

After you season the salmon with salt and pepper, rub it down with hand-softened unsalted butter. This will provide the perfect sear and sticky surface for the basil. Sprinkle the basil on like the photo shows. The butter makes an excellent adhesive and flavor balance for the salmon.

The trick to searing the whole side of salmon is having a long enough pan or a roasting pan.

You will need to have a long spatula and a second smaller one to assist when flipping and transporting the long fillet to a cutting board or carving station.

Roses take a beating in the Gulf south. The hot humid climate during the summer months put a lot of stress on the plants. Blackspot disease can almost completely defoliate a rose bush under stress. Several species of beetle, flower thrips, leafhoppers, and spidermites can wreak havoc on a stressed plant. Rejuvenate tired, stressed out roses by pruning and fertilizing in August. The removal of damaged foliage through pruning will encourage the plant to produce new leaves.

As temperatures start to cool down later in September, the plant will produce a second round of blooms. It won’t be as plentiful as in spring, but just as delightful.

Follow these easy steps to prepare your rose bushes for the fall.

1. Using a pair of sharp hand pruners, remove any broken or damaged branches from the bush.

2. On the second pass, look for and remove any branches that rub or cross.

3. You may lightly shape the top but do not remove more than one third of the bush height.

START is an all volunteer 501 C3 organization made up of members who rescue, foster and care for homeless cats and dogs. Our rescues are fostered in the homes of our STARTCARES@HOTMAIL.COM volunteers until they are ready to be adopted. We are always in need of foster homes, WWW.STARTFOSTERS.COM especially for dogs. We greatly appreciate donations of dog and cat food, as well as funds to spay/neuter and provide veterinary care for the rescued pets. We can be contacted by email. Meet Hurk, a handsome 3 year old boxer-lab mix. Hurk is very friendly and playful. He enjoys being with other dogs, loves people of all ages and thinks cats are cool! Hurk is neutered and current on vaccinations and heart worm prevention. An inside home with a fenced yard is required for Hurk, as well as a family willing to provide him with lots of love and attention.

Can a senior cat find happiness after being abandoned?

Finley waited for over a week for someone to take her home. People gave her bits of their lunch and occasionally someone would buy her a can of cat food, but most passed by without noticing her. Still she waited and finally someone with a heart for pets, who knew she could not survive on the street for long, took her home. From there she went to a foster home where she thrived. Finley was adopted recently and is doing great in a home where she is wanted and loved.

Senior pets can find happiness because there are people who care and realize how much these pets have to offer.

Adult cats and dogs are wonderful pets! Please consider an adult when adopting an animal. They will bond with you and be just as devoted as a kitten or puppy will eventually be. There are several advantages to adopting an adult: 1) They generally are calmer and more attentive to you than a puppy or kitten.

2) They are often already trained.

3) You can know their personality from the beginning. With a six to eight week old pet it is sometimes not obvious.

4) They know what it is like to be abandoned and have to fend for themselves in many cases, so they love you all the more for giving them a home!
