ELVIS NEVER FORGOT A FAVOR Wednesday, August 16th, will come and go with little fanfare other than the tens of millions of fans who will flock, physically or spiritually, to Graceland in Memphis, to honor the memory of the greatest popular singer in the history of the world. Elvis Aaron (Aron) Presley would have been 82 this year and what he did to change America puts him among the 15 most influential Americans of all time. Elvis was a struggling day laborer with a tough guy look but a persona that attracted women of every age and social strata when he walked into Sun Records on the outskirts of downtown Memphis in 1955 and recorded his first hit, “That’s All Right, Mama.” Two years later, the kid making a dollar an hour delivering for a wholesale electric company made over a quarter million dollars on his way to becoming a pop rock multimillionaire. Elvis stories abound in the South. My favorite one involved a black music teacher in Shreveport by the name of Mr. Mims. Mims was a bald, unassuming soul who sold men’s clothing part-time at a local store where I also worked. Each summer, when school was out, he would tell me “I’ll see you in September, Tony. I’m going to work my summer job.”

The second year he told it to me, I asked him what that job was. He kind of blushed and said I might think he was lying if he told me. Since Mims never lied about anything, I told him I would believe what he would say. He said, “I take the place of the guy who took Scotty’s place during some sets in Las Vegas.” I was floored. I stammered, “are you talking about Elvis’s Scotty”? (his lead guitarist from Memphis). Mims said “yes, that Scotty.” So I asked him how that came to be. Mims said in the mid-50’s he was working at a local music store in downtown Shreveport as an instructor and general cleanup man (segregation was still in effect then) when he overheard an argument between the store’s owner and a “scruffy-looking young guy who seemed all worked up” about something. Mims said the kid looked forlorn and down and he thought the guy might need some help. So Mims slipped out the alleyway door from the store and turned up towards the store as the guy was leaving. Coming out of the alleyway, the guy thought Mims might be trying to rob him and he took a fighting position. But Mims said he told the guy that he had heard him and the owner arguing about something in the store. The guy said he was trying to get a guitar on credit because he had a gig starting that night on KWKH’s Louisiana Hayride and had broken his guitar in Nashville following a tough situation there. Mims told me there was something about the guy that made him believe and trust him.

Mims knew the owner wouldn’t sell this traveler a guitar without some track record but he told the guy if he came back after the store closed and knocked on the alleyway door, he would let him in and let him borrow a guitar with the promise to return it after the show. The guy was very grateful and said he would have it back Sunday morning when Mims told him he would be

at the store to take back the instrument. Mims then asked the guy his name after introducing himself. The guy said “Elvis Presley.” Mims said he laughed and asked him what kind of a name was Elvis? Elvis then spent a few minutes explaining his background and thanking Mims.

That Sunday morning, following a knock on the door, Elvis appeared with the guitar in the same shape he received it and told Mims “if I ever get a chance to help you down the road, I will.”

Mims told him about his musical background as a guitar player and wanting to teach music.

Then Elvis left. Years later, Mims was sitting in his lounge chair watching television when the phone rang. Mims answered it and heard this “Mims….that you? This is Elvis!” Mims, annoyed at having his television show interrupted, hung up at that point and was walking back to his chair when the phone rang again. Before Mims could say a word, Elvis Presley said “No, really, Mims, this is Elvis. Remember I said I would see if I could help you down the road?

Well, do you still play lead guitar?” Mims, now convinced it was The King, listened to Elvis and beginning that summer, would relieve Elvis’s lead guitarist in Vegas for much more money per week than he made as a teacher in a month. He did this for several years in the 1970’s until that fateful August day when the world mourned the loss of one of the most versatile pop singers to ever take a stage, record a song or appear on mass media. There was only one Elvis and 40 years after his death, the tens of thousands of Elvis tribute performers (including one here in Slidell) and the millions each year who visit his home along the Mississippi River’s east bank below downtown Memphis will never forget him.

BENSON’S LATEST PURCHASE MIGHT HAVE HIM WHISTLING DIXIE

REOPENING EARLY AUGUST

The 90-year old beleaguered owner of the New Orleans Saints and Pelicans took on a different kind of draft last week when he and his wife Gayle purchased the majority interest in Dixie Beer from owners Joseph and Kendra Bruno.

Putting aside fears that this 110-year old New Orleans product might become the official and exclusive beer of his teams, Benson said he was committed to building a new brewery in the city, perhaps in New Orleans East. The old brewery on Tulane Avenue is just a facade of itself, having sacrificed the remaining portion of its square footage to recent medical construction.

Sounds about right. Because Dixie Beer has been a facade of the beer that was oh, so popular here in the city before Katrina. ‘Way before Katrina. Dixie Beer is an acquired taste, much harder to wrap your palate around than say, Jax, which was a more popular and drinkable beer in the city through the 1970’s. Their commercials were some of the best nationwide, perhaps the best local commercials produced until Popeye’s started creating incredibly effective and entertaining advertising several years ago. Locally, Dixie is available only in kegs, with cans and bottles to follow soon enough. The beer has been brewed in Wisconsin for the past many years, which seems to be the right thing to do to produce a drinkable brew. But self-admitted cheapening of the product has brought down a staple that has a long way to go to get traction back in this area. Survival or not, reducing the fermentation time of your beer and spending less on ingredients (say: cheaper) has brought this formerly number one local beer to a crossroads.

Whether Benson’s moving the brewery to Memphis as a stopgap measure and introducing several craft beer products will work in the short haul is unknown. Meanwhile, I’m sticking to my Abita, Miller, Corona and locally crafted beers and if I do attend a Saints or Pelicans game I would like a choice of suds there as well. I salute the Bensons for this move. It’s not a financial reach for the man and I applaud his efforts to return this former favorite to a place of honor.

Dixie fans should be filled with optimism today but probably not filled with a glass of Dixie from a keg. Not yet.

REPAIR OR REPLACE WITH NORTHSHORE PLUS!

DITCH MITCH By: Jeff Crouere Yesterday morning, the rationale for why conservatives across the country should support Republican Party candidates and enable the GOP to control Congress was completely shattered. By losing a 49-51 vote, the Republican led U.S. Senate failed a pass a “skinny” repeal of Obamacare, condemning the nation to more suffering from the horrors of socialized medicine.

It was a stunning failure for Senate Majority Leader Mitch McConnell (R-KY), who was tasked with crafting legislation that would attract at least 50 Republican votes. In the end, McConnell was only able to muster 49 Republican votes, so the reform measure failed.

Three turncoat Republicans joined all 48 Democrats to defeat the best chance to repeal at least some of the most offensive aspects of Obamacare.

It was a bitter defeat for the GOP, the President and all healthcare reform supporters. Now, health insurance premiums and deductibles will continue to increase. Insurance companies will continue to withdraw from certain states and choices for struggling Americans will become more limited.

For Americans who do not want health insurance, they will continue to be mandated to buy the product. Others who cannot afford the skyrocketing premiums will have to pay an outrageous fine to the IRS. In addition, many employers will be forced to trim the number of full time workers to escape their expensive Obamacare coverage mandate. Thus, the lack of GOP leadership in the Senate will result in real pain for the American people.

Most of the blame for this debacle rests squarely on the shoulders of Majority Leader McConnell. Since the November 2016 election of Donald Trump as President, McConnell has had over eight months to develop legislation that would pass the Senate. With such an embarrassing failure, McConnell should be removed as Senate Majority Leader. Republicans need a leader who can deliver for not only the country, but also for the Republican Party.

Mitch McConnell has enjoyed over 10 years as Republican Party leader in the Senate. First as Minority Leader and since January of 2015 as Majority Leader. In that time, he has not been an advocate for conservative reform. In the presidential election, he was not a strong advocate for Donald Trump. In fact, he spent the entire presidential campaign trying to distance himself from the populist oriented GOP nominee.

McConnell is the ultimate insider, he is a creature of the swamp that controls the Beltway and our federal government. As a Senator for 33 years, McConnell long ago ceased being a reformer and became part of the dreaded Republican Party establishment. He is ill-suited to promote Donald Trump’s “drain the swamp” agenda.

Along with his failure to pass the Obamacare repeal, McConnell has allowed the Senate to delay action on dozens of Trump administration nominees. What is the use of having Republican leadership of the Senate when its’ leader cannot produce any legislative accomplishments?

On the major items in the President’s agenda, the Senate has not been able to provide victories on even one of them, except the confirmation of Supreme Court Justice Neil Gorsuch. At least the House passed a healthcare reform bill, even though it was imperfect.

Unfortunately, the Senate seems incapable of doing anything, which is why McConnell should be fired as Majority Leader. If he had any decency, he would resign his post, but we should not expect such a selfless act from a lifelong politician like Mitch McConnell.

Under McConnell’s leadership, the Senate has produced six months of worthless talk and debate, but no legislative victories for President Trump. If this continues the GOP will suffer the same result in the 2018 mid-term election as what happened in the 2006 election, after four years of Republican Party leadership of the Congress and the White House.

In that period, Republicans used their majorities to deliver more debt, grow government, increase federal regulations and bureaucracies, add entitlement programs and start a brand-new government department. Thus, the Republicans acted like Democrats and the base reacted by withdrawing support for the party.

Eventually, this GOP abandonment of their principles paved the way for the 2008 election of President Barack Obama and Democrat majorities in Congress. The result was a hard-left agenda and possibly the most damaging President in our nation’s history.

Similarly, the current failures will probably ensure Democrats make gains in the 2018 midterm elections and possibly take control of Congress. In this case, with the GOP Congress doing nothing, the GOP base will be demoralized and will not turnout in substantial numbers in the next election. In contrast, the left is stark raving mad about Donald Trump and is very energized to elect a Democrat Congress in 2018.

Liberals know that if Democrats are elected to Congress, they will deliver legislative victories for their base. For example, the stimulus bill and the “Affordable Healthcare Act” were rammed through in the first two years of the Obama presidency. In contrast, conservative voters should have no confidence that congressional Republicans will deliver anything of real substance. The sobering result is that no matter which political party controls Congress, the federal leviathan grows.

Over the weekend I got together with a group of friends and went for a 30-mile bike ride (believe me; this bunch takes their workouts seriously!) It was in the 90s and I knew it was going to be a long one, so I needed something to stay hydrated, and since this was my first ride in a while, I needed to keep my stamina up as well. Hmmm, what should I drink? Highcaffeine energy drinks don’t mix well with exercise. Energy drinks have a large dose of caffeine and caffeine-like stimulants (such as guarana) which creates dehydration. They are formulated to deliver caffeine and other stimulants to give the drinker a rush of energy, but they are not designed to replace lost fluids during exercise.

Traditional sports drinks such as Gatorade and PowerAde include water, salt and sugars in proportions that help the body absorb fluids and salts lost in sweat and in the breath while exercising. The sugars not only help the body take in water, but also provide fuel for muscles that need sugars to keep performing well during long workouts. But notice how I say “long workouts”. I see people in the gym all the time swilling down huge bottles of Gatorade that are meant to be 3 to four servings, and then they wonder why they are not losing weight.

Although they do serve a huge purpose, do I really want all that refined white sugar? Well, there is a sure fire way to stay hydrated, while keeping your energy levels up even on your hardest workouts!

And the lemon isn’t the only star here…

Lemons are an excellent source of vitamin B6, iron and potassium. They are loaded with vitamin C, and contain magnesium, manganese, phosphorous and zinc.

They are a tasty source of bioflavonoids, which are natural compounds in fruits and vegetables.

They protect against damage caused by free radicals and enhance the antioxidant effects of some nutrients. They help maintain capillaries and help the blood clot. Weak capillaries can lead to easy bruising, brain and retinal hemorrhages, bleeding gums and other abnormalities. They may help prevent heart diseases. They act as natural antibiotics and may protect the body from cancer-causing substances.

Lemon juice is antibacterial. You can use a solution of half lemon juice and half hot water as an effective gargle for mouth ulcers, canker sores and sore throats. The anti-bacterial properties

Lemons may lower your cholesterol and blood sugar levels. Lemon pulp and skin contains pectin, a compound that studies have found may reduce cholesterol levels and lower blood sugar levels in diabetics. Modified pectins may also prevent the spread of cancer.

Oh, and one last little tidbit - 1 tree can produce 3,000 lemons in a year!

Chia seeds are presented as modern day food, but the truth is they have been used for centuries to be able to sustain tolerance and energy. The Mayans and Aztecs used chia seeds in their every day nourishment routine because they knew what theses tiny little seeds could do for them. These highly potent seeds increase stamina and keep you hydrated throughout your workout. When inside the body, the seeds help you stay hydrated longer, and they retain electrolytes in your bodily fluids due to the fact that the seeds can soak up to ten times their weight in water. This ability to hold on to water offers prolonged hydration. After eating these little gems, the nutrients travel to the cells very quickly due to the way they are easily digested and assimilated. The gel that is formed in the stomach creates a physical barrier between carbohydrates and the digestive enzymes that break them down, thus slowing the conversion of carbohydrates into sugar so you have more stamina because you are not getting that rush all at once.

The health pioneer Paul Bragg did an experiment on an endurance hike with friends. They divided up into a chia eating group and another group who ate their own choice of foods to stay hydrated and keep up endurance. The group eating only chia seeds finished the hike four hours and twenty seven minutes before the non chia eating group, and some did not finish at all, and yes, they were all in about the same shape.

So the next time you are on your way out the door for your workout of choice, why not start with chia seeds? Whether you choose to eat them in porridge or drink them in your favorite drink, you will definitely see the results in your workout! Check out this great chia seed lemonade recipe!

Start your base by mixing 2 cups of water with the chia seeds. Stir, and then set aside in the ridge for at least 30 minutes. The chia seeds need to gel up before adding to the rest of the drink.

Add the strawberries and 4 cups of the non chia seed water to blender and blend until the strawberries are completely pureed. Add the lemon juice and the maple and blend once more briefly to mix everything together.

Add the chia water to the lemonade and stir to combine. Taste and add more sweetener if needed.

Transfer the lemonade to a pitcher and serve. The chia seeds may settle over time so make sure you give the lemonade a quick stir before serving if that happens.

HOW TO MAINTAIN A 24’ ROUND ABOVE GROUND POOL WITHOUT GOING CRAZY You may have a similar pool to mine - 4 1/2 feet deep, vinyl liner, skimmer and main drain. They’re like having a child, only without a cellphone, usually a lot cheaper to maintain and ‘way cooler, especially in the summertime. But it takes upkeep to make sure it is always ready to use and looks inviting. Upkeep is faster, cheaper and less stressful than major fixes, such as draining the pool to remove algae that’s been turned into sludge by Dropout. If your pool has two drains, this is the time to use them. If not, forget the drain in the bottom of the pool and only use the skimmer. The main drain is a leaf magnet and although it gives you a complete circulatory system, it’s not that important for a well-maintained pool. Get a Kreepy Krauler to keep the leaves, dusty looking dead algae or just plain dirt and pesky little chir’ren off the pool bottom.

There should be a go-to place for help. There is only one place on the Northshore that I have found like that and it is New Orleans Pool and Patio on Robert Street in Olde Towne Slidell. They are extremely knowledgeable, service oriented and will test your water every time to tell you what you need to keep your pool in All American condition. “Bekka”, Gail and the whole gang will shoot straight and you won’t spend money on something you don’t need or that could be counterproductive to your pool’s health. And they’re fun to be around.

There is a definite pecking order to the stuff you put in your pool to keep it safe and attractive. Number One is CHLORINE. Use the tabs or sticks in your floater and keep the chlorine level between 3 and 5.

I use one tab per month in my floater in January and February, two in March and April, three in May through September and two in October. Go back to one tablet in November and December. Testing the water will show if some of your chlorine is not free. You want 100% FREE CHLORINE. Adding FREE CHLORINE with COMBINED (USED) CHLORINE equals TOTAL CHLORINE. The COMBINED CHLORINE needs to be burned off because its useless and causes the burning sensation that your eyes sometime encounter. Use the Number Two chemical, SHOCK, to burn off the combined chlorine. Shock is sort of like a spice on food; you usually don’t need much unless you have a bad algae problem. Buy it in bulk because many times you may only need a few ounces to correct a problem and the shock bags are all one pounders and can absorb moisture quickly after they are opened and not completely used. The 3rd most important chemical is a PH CORRECTOR, PH UP or PH DOWN. Once your pool reaches the nirvana of 7.2-7.4 PH, you’ll most likely keep it in that range with PH DOWN. Good thing, because keeping your pool higher on the basic side means fewer problems than letting your pool go to the acidic side (below 7.0). However. with all our rain, you will use an inordinate amount of PH CORRECTOR. Just look at it as the price you pay to swim with few problems. Add a half gallon of MURATIC ACID to the pool around the circumference twice a year, early spring and early fall. It’s inexpensive and helps with your PH balance but using more could weaken your vinyl liner.

Let’s bring in ALKALINITY at #4. You have to add this to your pool from time to time to fight the acid sources that like to mess up a pool and to also give the PH CORRECTOR something to work with (PH is your relative state of acidity or alkalinity). Use a pool packaged alkaline product, not a sodium bicarbonate wannabe that in the long run won’t be that much of a dollar saver or chemical answer to this aspect of pool maintenance. Next is CALCIUM or HARDENER, coming in this week at #5.

This product helps adjust our oh-so sott Southern water to a hardness that helps keep equipment in better running order and also is a plus for Gunite pool owners. I also believe that swimming in softer water requires more work than in harder water and harder water feels better to the swimmer (think: soapy shower). Just me. One of the best chemical values is PHOSPHATE REMOVER, #6. If your pool ever looks like someone has taken a bubble bath in it, you have too much phosphate in your water.

Phosphate remover is cheap, doesn’t require much to do its job THE FIRST TIME and is very effective.

Keep a bottle on hand year-round. ALGAECIDE. Now we come to the elephant in the room. Listen closely, for in 17 years this lesson has cost me hundreds of dollars and dozens of hours in frustrated, hot, sticky, messy wasted time. IF YOU DO EVERYTHING I OUTLINED UP TO THIS POINT, YOU WILL NEVER NEED ALGAECIDE! Algaecide is used to rid your pool of algae that will never form if everything else is maintained. It is NOT a maintenance chemical and it adds copper to your water in dosages that could spell trouble for your mechanical parts, such as your pump. It’s expensive, hard to measure and is totally unnecessary. When you violate pool upkeep and need to kill algae with algaecide, that dead algae, now in a suspended state, will need to be collected most of the time by using DROPOUT. This turns nasty green water into nastier green slime on the bottom of your pool which you will probably have to remove by draining your pool and literally shoveling the junk out that your draining system (see main drain) doesn’t take care of. Do it once and you will never do it again if you pay attention to this or find someone like the staff at New Orleans Pool and Patio to advise you. CLARIFIER. Everyone likes a real sparkly pool. This inexpensive stuff does an okay job of blueing and shining up your water but really, it’s not necessary. Other chemicals used are STABILIZER and a METAL REMOVER liquid or pouch. Don’t give any thought to the stabilizer if you go to a professional pool store. They will let you know the rare times you need to add this product to the pool and its relatively inexpensive. Use the metal remover liquid if your iron, copper or other metals are off the chart but once they fall into the “nearly perfect” range, no amount of them will have any effect. Let Mother Nature handle the final removal.

Now - the rest of the story. A net (and NOT Funicello). That web-like device on the end of your pool pole It removes leaves and junk from the surface and bottom of your pool, limiting the amount of acidic soup and algae your pool is exposed to in the fall and winter. A brush. Overrated, but some people just like to try to brush powdery waste along their pool bottom. Use the net and your brush will last forever.

Kreepy Krauler. Or whatever. The propelled device we mentioned at the beginning of this article. It’s a vacuum, removing particulates otherwise removed only by serious backwashing and it picks up those nasty leaves, twigs, stems and occasional bugs. Prime the hose, stick the free end into the input hole to your pump filter through the skimmer port and watch that guy go! FILTERS. Clean them. Take the in-line pump filter out at least every two weeks and empty it thoroughly. BACKWASHING. Once a week.

Words to GREAUX by SUMMERTIME LAWN PESTS The heat of summer predisposes our southern turfgrasses to two common insect pests that feed during this time of year. Mole crickets and chinch bugs will typically start hatching around the first week in June with the juvenile growth stages causing the majority of damage from now until the end of September. Look for brown, dead patches of turf occurring during late summer and into fall. Mole crickets damage plants by borrowing throughout the root systems of turfgrasses and disrupting their function while chinch bugs feed on plant fluids inside the leaf. Mole cricket damage Will Afton appears to be random with visible, raised trails while chinch bug damage will occur in drier areas (e.g. areas near large hardscapes like sidewalks and driveways. Proper cultural practices should be followed including applying supplemental irrigation. The implementation of a soil fertility program is also helpful in managing this insect problem. Chemical control is available if needed. Look for products labeled for use on home lawns and list mole cricket as a target insect.

Bifenthrin (an active ingredient labeled for mole cricket and chinch bug control in home lawns) is highly effective when applied as per label directions.

GARDEN ZINNIAS, SUMMER STANTOUTS When thinking about summer flowers in South Louisiana, it’s not hard to recall the beautiful yet resilient forms of Zinnia. The zinnia plant originated somewhere in Southwest America and Central Mexico. In South Louisiana, the zinnia is a broad statement when it comes to summer flowering and the long days of summer. These flowering plants will last from spring to fall in most landscape settings. They are easily distinguished by their daisy like flowers that perform best from June until September. The ‘Dreamland’ series of zinnia features large heads over 3 inches wide and come in shapes of red, pink, and yellow with a mix variety option available. These plants perform well in full sun locations where they are occasionally used as cut flowers. The ‘Profusion’ series of zinnia flower has become quite popular amongst growers as of late because of its smaller form yet similar flowering habit. There are a few options to choose from. Look for Red, Purple, Pink, Salmon, Yellow, and White selections. ‘Zahara’ zinnias are similar in appearance to the ‘Profusion’ but have a slightly larger flower and come in even more color options. If you looking for a variety to plant in the garden in order to have fresh garden flowers from time to time look at the ‘Benary’s Giant’ series of zinnia.

They produce large 3 to 4 inch flowers on long stems. With a maximum height of almost 3 feet tall, these zinnias can also be used in the back of bed to add some bright colors. Whatever your need is zinnias are excellent choices for South Louisiana. Get out to the garden center to see what varieties are available to you.

TEMPER YOUR FISHING TIME DURING SUMMER’S HEAT AND HUMIDITY. Notes from Forrest Green’s “Fish Whisperer” seminars in Lacombe every Thursday evening 5-6:30 Summertime is the time we need to spend as little time on the water fishing as we can. This is the time to do those things to your rig and tackle that you neglected to do in the winter because summer weather not only tests your physical resolve but your equipment as well, with sudden thunderstorms and fronts that can tear up equipment that is not ready for the heart of summer’s rigors. Soon the August skies will turn bluer and the first hints of lower humidity and temperatures under 90 degrees will be with us again. But until then, fishing the shoreline with shrimp and artificial baits for specks can be productive this time of year even though most fish are in deeper water to escape the higher water temperatures near the surface. Although I use lighter gear than most of you for many of my fishing trips, that’s just me. What I tell you in these Thursday get-togethers should be filtered and you take the few pointers that apply to you and run with them. Not everyone is Mr. Green and you probably won’t match my consistent fishing success. But much of what I do is daily routine. Most of you don’t fish every day. So some of what I say would have to be accelerated or condensed to help you in your efforts. Take my choice of hooks.

I used three size hooks - Owner Cutting Points.

Numbers 3, 4 and 5 (see pictures). I want my fish to stay hooked and get hooked at the slightest bite. Too many fishermen skimp on buying hooks or buy your father’s Eagle Claw or some such well-known tackle. But if your hooks are producing for you, don’t change them just because of what I say. I want my bait and hook setup to be as natural as possible. So I use

equipment that will help me keep my artificial worms straight and secure on the hook shank (see picture). I make sure the eye of the hook is in the bait, then slide the bait down until it is perfectly straight. If you don’t set it up that way, after five or six casts, you’re going to have problems with your line and your bait will get all curved up and riding up on the hook shank. If it looks like that, it doesn’t look natural and my mantra is always make sure your presentation is as natural as possible, because fish aren’t stupid when it comes to survival.

Summer is here and for most of us that is also our time for vacations . Kids are off school and the weather is just great for some beach time.

My vacation is over and It was truly amazing and I don’t know what was better . If the fact that It last five weeks or that I got to see my homeland again. Every year I save all my vacation to go to Europe. Main reason I go , of course , is my family , but I do enjoy traveling a lot and since I have several weeks without snoozing my alarm clock I always pick new countries to explore You can go online and google all these beautiful places, but It will never be even close to what it really is. That much I know about traveling already.

To be honest with you my favorite part of getting to know new lands and cultures is tasting local food. And since you know already , that I have a sweet tooth local desserts are never missing on my vacation to do list.

This year I got to go to Malorca which is an Island belonging to Spain and I can tell you It was stunningly beautiful. I love the temperament of local people and breathtaking beaches with clear water.

Island is full of tourists craving fun and good food and you can find it all in this little European paradise .

We enjoyed well known traditional specialties such as Paella (mix of rice ,meats and vegetables cooked in fish broth with saffron ) or Flan (caramel dessert similar to pudding) but what cought my eye was a dish called Arroz Brut which literally means dirty rice and it is exotic version of Louisiana dirty rice with meat ,mostly used is rabbit and snail with lots of mushrooms and green beans. I defiantly recommend for you to try it!

Our next stop was Hungary , which is a great country with very hospitable people located in Central Europe . It is bordered by Slovakia –my country , Austria, Serbia, Croatia, Romania, Slovenia and Ukraine.

It is well known for its paprika and spicy green pepper and very specific cuisine. You can find many amazing dishes such as Halaszle (delicious fish soup ) or Gulash (stew with lots of meat, potatoes , bell peppers and tomatoes) but my very favorite one is Kurtoskalacs or Chimney cake in English . I remember this delicious cake to be sold on Hungarian Farmers markets around Christmas time when I was a little kid and today you can buy it pretty much on every corner at any time of the year .

This Hungarian Pastry - Kurtoskalacs is sold by street vendors all over Hungary. It is yeast dough, wrapped around a cylinder, rolled in cinnamon sugar and then baked over an open flame.

Usually cooked over coals or a low gas fire, the pastry is wound around dowels and rotates continuously while cooking to perfection. Since I have no desire to bake outside in the winter, and I don’t have one of these ovens made specifically for this pastry, I did some research.

First, I had to find a recipe. Every recipe I found was for making these, of course, over the special oven/grill.

I finally found a recipe that made them in the oven.

INGREDIENTS: • 2 1/2 cups all-purpose flour • 3 Tablespoons plus 1 teaspoon sugar, divided • 1/2 cup warm milk, divided • 1/4 cup butter, softened • 2 eggs • 2 1/4 teaspoons instant yeast (1 envelope)

Read us online at: www.issuu.com/northshoreplus 1. Combine yeast, 1 teaspoon sugar and 1/4 warm milk in a small bowl, stir just to moisten and let sit for 10 minutes. Until risen and bubbly.

2. In mixing bowl, combine flour, sugar, 2 eggs, butter and proofed yeast mixture. Start mixing on low speed and add in remaining 1/4 cup warm milk.

3. Once fully blended switch to dough hook or knead on counter by hand for about 5 minutes.

Until smooth.

4. Let dough rise in bowl for 30 minutes, in a warm location, covered with a damp cloth.

5. While dough is rising, cover 8 half pint (8 ounce) jars with aluminum foil, set aside.

6. Make an egg wash by combine egg and 1 teaspoon of water, whisking until well combined.

7. Combine sugar and cinnamon to make cinnamon sugar.

8. Once dough is risen, turn out onto counter, roll into a thick log and divide into 8 equal pieces.

Roll each piece into a long rope, about 2 to 2 1/2 feet long.

9. Rub each foil covered jar with cold butter then wrap 1 rope of dough around each jar. Dough should go around the jar almost 3 times.

10.Spread cinnamon sugar out on a baking tray or 9x13 pan (something big enough to roll your pastry covered jar in).

11.Brush pastry with egg wash and then roll pastry in cinnamon sugar to coat, pressing down as you roll. Place pastry covered jar on a parchment covered or lightly greased baking sheet, open end down. Make sure to space jars 2-3 inches apart.

12.Bake in a preheated 400 degree oven for about 15 minutes. Remove from oven and carefully slide warm pastry off jars.

13.Best eaten while still warm.

Notes :Instead of jars, you can also use small tin cans as molds.

You can make this pastry with many different variations and pretty much put anything your heart desires on the top – chocolate and sprinkles, nuts, cocoa…

I have to say they mastered this desert in Czech republic , which used to be one country with mine – Czechoslovakia and split in 1993 and many people know my country by this name still.

When we moved to another stop on our travels – Prauge , which is one of my favorite places in the world and I also lived there for several months we found a place selling this dessert , but instead of having a hole in the middle it was shaped as an Ice cream cone and served with ice cream, strawberries and whipped cream , nutella, fresh fruit , sorbet and many more. So If you ,good people, happed to be in Prauge , which I really hope that everyone experiences this beautiful and amazing city do not forget to ask for some Trdelnik in local Czech language or Chimney cake in English.

Since I am already giving you some good foodie tips for your European vacation , when you are in Austria, which was one of our stops , well known for its beautiful nature , Weiner schnitzel(fried breaded pork chops) beer and Weiner burst , to Americans known as Vienna sausage you really need to stop in Vienna and give yourself one of lifetime experience visiting amazing restaurant Schweizerhaus and order Pork knuckle with some sauer kraut and local beer. Just thinking about it makes me drool. You will never forget the crispiness of the skin and tenderness or that juicy meat ever in your life. Ever since I tried one I call it ,,pork gold,, and you will understand why once you try it.

There are many delicious and popular desserts in Vienna ,but my very favorite is ice cream place Tichy. Their ice cream is extraordinary but they are better known for ice cream ,, dumplings,, which is something like soft hemisphere shaped ice creams with all kinds of different fillings and people are standing in long lines for it.
