LOUISIANA SUMMER DRIVING TIPS Just like winter, summer has its own set of seasonal hazards that require your complete attention as a driver. Here are some to be particularly mindful of: • PEOPLE In your neighborhood, on city streets, in parking lots, and especially around parks, beaches, or any popular summer attraction, people are outdoors and often more focused on their enjoyment than on personal safety. Children are out of school and they might be playing in the street in a quiet neighborhood or chasing a basketball bouncing away from a driveway hoop. In summer, there is simply more human activity everywhere, and it’s up to you to slow down and stay alert.

• BIKES AND MOTORCYCLES Bicyclists and motorcyclists are also more active in good weather. Pay attention and take extra care in areas that attract cyclists.

• GLARE The sun’s glare is bright in summer, and even harsher when the sun is low and in your face.

At an outside air temperature of 60 degrees, a car’s interior temperature can reach 110 degrees, which is a lethal level for children, according to the National Highway Traffic Safety Administration. Rolling down car windows does not provide sufficient cooling, so don’t be tempted to leave children or pets for even a minute. It can be lethal—and in many states illegal—to leave children and pets alone. To help keep your car cool for when you return, park in the shade or place a removable sunshade in the windshield.

• ROAD TRIP SAFETY: A road trip with family and friends can make a memorable summer for both the right and the wrong reasons. Make it the right reasons with some careful planning and driving. There will be plenty of time for fun once you reach the campground, resort, or cabin.

Huli Huli Style Hawaiian Barbeque Chicken Recipe When I moved to the Big Hawaii Island of Hawaii back in the mid 1990’s there was a particular aroma that permeated the streets with smoke, and the scent of Hawaiian style barbeque Huli Huli Chicken. Being unaware as a Haole (Hawaiian slang for white man), my friend said; “You need to taste this!” Huli Huli Style Hawaiian Barbeque Chicken became my ultimate favorite, and still to this day I get excited when I see the smoky attraction calling people in all day to purchase a whole or half chicken. Personally, I take my chicken to the beach, and devour it.

Back in the 1950’s, a man named Ernie Margado worked for Pacific Poultry, and shared barbeque with farmers with his own style of teriyaki chicken. Whatever his original recipe was the flavor of the chicken was a success. This became what is known as Huli Huli Chicken because the chicken was cooked between 2 grills, and needed flipping. Huli Huli means to turn.

Now, a large flatbed is parked roadside, and filled with rotisserie chicken being smoked and barbequed over wood while constantly turning. The chicken is basted throughout the cooking process, and slowly cooked. The flavors are simple. I don’t think eating Huli Huli Chicken in Hawaii enhances the flavor, but it does lift the ambience, and authenticity.

There are dry rubs that are considered Huli Huli style. You can find these online or if you decide to travel to Hawaii on the Big Island, there will be those wagons selling roadside barbeque yard-bird Hawaiian style. There are also wet marinades that people have created calling them Huli Huli. I’m sure these products will be close to the original flavor since the original recipe is a trade secret.

The flavors are coming from the overnight marinade, slow cooking, constant basting, and the smoky wood. Huli Huli Style Hawaiian Barbeque Chicken is really something you must try.

You can substitute pork chops or baby back ribs for an extra appreciation for Huli Huli.

ALOHA!

Huli Huli Style Hawaiian Barbeque Chicken Recipe Makes about 8 servings

½ cup ketchup ½ cup soy sauce ¼ cup light brown sugar ¼ cup honey ¼ cup sherry 2 tablespoons sesame oil 2 pieces of ginger root, sliced with skin on 3 cloves garlic, crushed 3 tablespoons Worcestershire sauce 1 tablespoon red pepper flakes Method: Marinate the chicken all night for best results or a minimum of 2 hours. Use the same marinade to baste the chicken until the chicken is more than half done, than stop.

Heat the grill with coals, and use apple wood chips for a mild flavor. If you have a rotisserie, I would definitely suggest this method of cooking for the whole chicken. If you are going to barbeque, then half chicken or cut in pieces are best so you can Huli Huli, turn.

Make sure your wood chips are soaked in water prior to putting on the grill so they burn slower.

This is not a rushed cooking process so baste your chicken every 15-20 minutes to enhance the flavor. If you are using the dry rub, make sure the coals or gas grill is high enough so the flames do not burn the spices. Once the chicken is fully cooked, allow it rest for about 10 minutes. ENJOY!

Producing your own fruits and vegetables or growing pretty flowers aren’t the only reasons why people enjoy gardening. There are gardeners of all types. When you start looking into the different garden ideas, you’ll notice there’s a niche for just about everything. From kitchen gardens to school gardens and succulent gardens to rose gardens, there is a little something for everyone. One gardening theme that has always been interesting to me is hummingbird gardening.

Gardens are essentially mini ecosystems that support life for all organisms. In order to create a hummingbird garden you must ensure Will Afton that the garden can provide food, water, and shelter. When all three items are provided, your garden will support a healthy hummingbird population that you can enjoy all season long.

Shelter is defined as a place that provides temporary protection from bad weather or danger. For birds in the garden, shelter is found in larger growing trees and shrubs. Hummingbirds use the interior canopy of trees and shrubs to protect themselves from predators, to seek refuge during thunderstorms, and to rest after long periods of flight. Any type of larger growing shrub will suffice this requirement. Azaleas, gardenias, and camellias are popular flowering shrubs along the Gulf coast. Viburnum, ligustrum, and pittosporum are larger growing choices that fit the same concept.

Water is needed daily by all organisms to stay alive. In many instances hummingbirds, find water on their own throughout the landscape. However, when planting and designing specifically for them it is important to include a water feature nearby. Accomplish this by using a birdbath or plant saucer and filling it with water. Fill the container with sand or pea gravel to provide a place for the bird to stand to stand. Believe or not, hummingbirds can drown if not given a safe place to access the water. Prevent issues with mosquito larvae by refilling the water daily.

Lastly, provide food by planting a selection of flowers, shrubs, trees, and vines that produce a continuous supply of nectar. Hummingbirds feed on nectar found in flowers and the insects that are attracted to nectar. The general rule of thumb when it comes to determining whether or not a plant has potential for attracting hummingbirds is having a tubular shaped flower. Citrus and loquat (Eriobotrya japonica) trees produce nectar in their flowers and provide good cover due to their size. Cigar plant (Cuphea ignea), turk’s cap (Malvoviscus arboreus), shrimp plant (Justicia brandegeana), and lantana (Lantana camara) make for excellent shrub like hummingbird plants.

As far as annual and perennial flower plants look for cardinal flower (Lobelia cardinalis), salvia (Salvia spp.), red hot poker (Kniphonia uvaria), firecracker plant (Russelia equisetiformis), and beebalm (Monarda fistulosa). Try planting a mixture of flowers to create diversity in food source to keep your hummingbirds interested during the entire growing season.
