LOUISIANA SUMMER DRIVING TIPS Just like winter, summer has its own set of seasonal hazards that require your complete attention as a driver. Here are some to be particularly mindful of: • PEOPLE In your neighborhood, on city streets, in parking lots, and especially around parks, beaches, or any popular summer attraction, people are outdoors and often more focused on their enjoyment than on personal safety. Children are out of school and they might be playing in the street in a quiet neighborhood or chasing a basketball bouncing away from a driveway hoop. In summer, there is simply more human activity everywhere, and it’s up to you to slow down and stay alert.

• BIKES AND MOTORCYCLES Bicyclists and motorcyclists are also more active in good weather. Pay attention and take extra care in areas that attract cyclists.

• GLARE The sun’s glare is bright in summer, and even harsher when the sun is low and in your face.

Have your sunglasses handy if you’re not already wearing them, and be ready to flip down the visor so you don’t spend even a second driving while blinded by the glare.

• ROADWAY OBSTACLES: A busy roadway is no place for a sofa. But, with scores of people completing summer moves, you might just encounter one. Keep an eye out for roadway obstacles and plan as far ahead as possible on how to safely maneuver around them. Thunderstorms and tropical storms can further clutter the roads with debris, tree limbs, or even downed power lines.

• HEATSTROKE: Finally, don’t forget the dangers of summer parking. Children and pets left in parked cars are vulnerable to injury or even death from heatstroke. At an outside air temperature of 60 degrees, a car’s interior temperature can reach 110 degrees, which is a lethal level for children, according to the National Highway Traffic Safety Administration. Rolling down car windows does not provide sufficient cooling, so don’t be tempted to leave children or pets for even a minute. It can be lethal—and in many states illegal—to leave children and pets alone. To help keep your car cool for when you return, park in the shade or place a removable sunshade in the windshield.

• ROAD TRIP SAFETY: A road trip with family and friends can make a memorable summer for both the right and the wrong reasons. Make it the right reasons with some careful planning and driving. There will be plenty of time for fun once you reach the campground, resort, or cabin.

Grilled Bacon Wrapped Scallops

During my younger years, scallops were not my favorite choice of seafood. While traveling the globe, I watched other cooks prepare these delectable large saltwater clams the proper way, and I slowly developed a new scallop appreciation. Mostly, I learned how to cook the perfect scallop.

Cooking scallops is not difficult, but it does take a little extra care. If scallops are over-cooked, they can become rubbery.

If you’re lucky to purchase fresh scallops in their own clam shell, tightly closed, and alive, these are the freshest. This is usually a special order from a seafood supplier or ordered online.

Scallops are easy to acquire these days, and not too expensive. Whole Foods has fresh-frozen scallops in the seafood freezer section. They are cleaned, wrapped in smoked bacon, and sold on a small cedar plank. These are sold seven half-dollar size scallops, tightly sealed in a cryovac bag for only $10. This is the exact product I am using for this recipe.

MY Grilled Bacon Wrapped Scallop recipe is easy. When grilling, pre-heat to 400 degrees, and place the frozen plank of scallops above the hot coals or gas grill flames. Place the scallops 6 - 8 inches above the flames. Cooking times will differ depending on how hot the coals remain or if your using a gas grill. The scallops should be ready to flip after about 20 minutes.

You cannot go wrong when bacon is wrapped around scallops. Even if they were a bit overcooked, your scallops will still turn out delightful in this recipe. The bacon keeps the scallops moist. Bacon wrapped in anything is a treat. My other favorites are bacon wrapped shrimp, pork tenderloin, and stuffed chicken breast.

Pan fried bacon was always a weakness of mine, and it didn’t matter if it was served alone or as a BLT, bacon had that rustic taste I enjoyed. Back in my hotel cooking days, I prepared numerous sheet pans full of bacon for breakfast banquets, and I could never resist eating my fill of crisp hot swine that just came out of the oven.

When grilling, keep a close eye on the scallops. A gas grill can flare up faster than using coals due to the bacon grease dripping off of the plank. Do not burn the scallops or the bacon. Try not to drop any rolling scallops into the hot coals when flipping them over on the cedar plank.

Grilled Bacon Wrapped Scallops Makes about 2 servings

- 7 scallops wrapped in bacon on a cedar plank • ½ cup Cajun Asian Sweet Chili BBQ Sauce

Method: Pre-heat the grill to 400 degrees. Place the plank with scallops above the flames. No extra salt or pepper is needed. Once the bacon begins to defrost on the grill, you will see the bacon begin to render its fat. This will tell you it’s about time to flip the scallops with tongs.

The bacon might stick on the plank so be careful when flipping so you do not tear the bacon or drop the scallops off of the plank.

Once the scallops are flipped, and the bacon slowly begins to crisp, start basting gently with the Cajun Asian Sweet Chili BBQ Sauce. Brush two coats of sauce on the first side, and allow the scallops to cook for about 5 minutes more, then flip again, and baste the other side the same way.

The final product is when the bacon is lightly crisp, and the scallops have a shiny glaze.

Use organic mulches in flowerbeds and around trees to insulate the soil and prevent excess water evaporation. There are several different types of mulches available including, pine bark, pine straw, colored hardwood chips, and cypress bark. Choose a color and texture that works best with your landscape and apply a 2-3 inch layer to the root zone for maximum effect. The eventually breakdown of organic mulches will provide nutrients and help with compacted soils over time.

Keep a watchful eye on container plantings. Container soil is designed to be very well-drained and will be subject to drying out more often than native soil. A simple water breaker and wand are great tools that allow you to reach in and around potted plants. Thoroughly soak with water until it drains from the bottom of the container.

Irrigation systems can make lifer easier while supplementing irrigation. There are many different types of applicators including, drippers, micro sprays, and drip tape. Irrigation systems can made custom to almost every situation. Applicators that apply water directly to the soil are more efficient than overhead types.

Adjust irrigation systems to run in the early AM. Plants take up more water during the first half of the day than at the end of the day. In addition, watering in the morning allows for excess water to be evaporated throughout the day, preventing many disease issues.

Adjust irrigation system frequency to water for longer periods of time, not so often. Deep waterings followed by dry conditions promote expansive root systems, which in turn make plants drought resistant. Short daily irrigation intervals encourage shallow root system and should be avoided.

Routinely inspect irrigation systems for leaks and proper working spray heads. Most systems are designed with flushable enclosures. It is a good idea to flush the system from time to time to clear any debris that might have found its way inside.

Check weather forecasts. Watering the garden before a rainfall event can actually improve water penetration into a soil.

Anthony could not be happier. He was recently adopted and is now

totally devoted to his new family. They think he is the smartest and most well-behaved dog ever. Finding the right family for a homeless pet takes time and patience, and hard work. We are so proud of Anthony, and grateful to his new family for providing Anthony with the perfect forever home.

Spy Girl is a beautiful solid black cat with a fluffy coat. She is very affectionate, but also a little shy. Spy Girl needs a quiet home with adults only or a family with older children. Brady is a spayed female, black with white markings. She loves to play with toys and enjoys cat treats.

Adult cats and dogs are wonderful pets! Please consider an adult when adopting an animal. They will bond with you and be just as devoted as a kitten or puppy will eventually be. There are several advantages to adopting an adult: 1) They generally are calmer and more attentive to you than a puppy or kitten.

2) They are often already trained.

3) You can know their personality from the beginning. With a six to eight week old pet it is sometimes not obvious.

4) They know what it is like to be abandoned and have to fend for themselves in many cases, so they love you all the more for giving them a home!
