THE SOUTHEASTERN CONFERENCE MEDIA DAYS: A LESSON IN BOREDOM

Ingredients: Take about a thousand so-called media types from the Southeast Conference sports reporting pool, stick in an undersized hotel in beautiful Hoover, Alabama, and what have you got? Well, you don’t have much excitement, that’s for sure. For the first time in many a year, the SEC is producing less than a handful of explosive offensive and defensive players, guys who are true difference makers during the season and will compete and garner the majority of the major college football awards. The conference didn’t produce much in the way of quotes from players or coaches. In fact, this event was totally unnecessary this year. Everyone is chasing Alabama, outside of LSU’s Derrrius Guice and Alabama’s Calvin Ridley, there aren’t any Heisman threats from this league and frankly, maybe its time to take a season off from going goofy over the SEC. To be perfectly honest, this may be the most ho-hum collegiate football season this century. Teams are making obscene profits, there’s no real new offensive wrinkles being touted and outside of Southern Cal’s quarterback, no one is salivating over the signal callers suiting up this year. I don’t know how LSU’s Media Day will be this year: it was cancelled last year due

Can offensive coordinator Matt Canada do at least half of what most people thought Tom Herman could bring to the table if he had come to Baton Rouge? In other words, can Tiger fans actually get excited about performance and not just potential? Preseason number three in the West and 4th overall doesn’t translate well for autumn anticipation and only three home league games are….meh.

Is that okay BYU? It’s not okay BY Me! We lost Wisconsin to Texas in 2015 and we don’t need to send prime beef to Texas to kiss butt over there. We need to keep Nick Saban’s butt out of northeast and southeast Louisiana and maybe convince him that the rest of his career should be spent as a jockey…somewhere.

Grilled Bacon Wrapped Scallops

During my younger years, scallops were not my favorite choice of seafood. While traveling the globe, I watched other cooks prepare these delectable large saltwater clams the proper way, and I slowly developed a new scallop appreciation. Mostly, I learned how to cook the perfect scallop. Cooking scallops is not difficult, but it does take a little extra care. If scallops are overcooked, they can become rubbery.

If you’re lucky to purchase fresh scallops in their own clam shell, tightly closed, and alive, these are the freshest. This is usually a special order from a seafood supplier or ordered online.

Scallops are easy to acquire these days, and not too expensive. Whole Foods has fresh-frozen scallops in the seafood freezer section. They are cleaned, wrapped in smoked bacon, and sold on a small cedar plank. These are sold seven half-dollar size scallops, tightly sealed in a cryovac bag for only $10. This is the exact product I am using for this recipe.

MY Grilled Bacon Wrapped Scallop recipe is easy. When grilling, pre-heat to 400 degrees, and place the frozen plank of scallops above the hot coals or gas grill flames. Place the scallops 6 - 8 inches above the flames. Cooking times will differ depending on how hot the coals remain or if your using a gas grill. The scallops should be ready to flip after about 20 minutes.

You cannot go wrong when bacon is wrapped around scallops. Even if they were a bit overcooked, your scallops will still turn out delightful in this recipe. The bacon keeps the scallops moist. Bacon wrapped in anything is a treat. My other favorites are bacon wrapped shrimp, pork tenderloin, and stuffed chicken breast.

Pan fried bacon was always a weakness of mine, and it didn’t matter if it was served alone or as a BLT, bacon had that rustic taste I enjoyed. Back in my hotel cooking days, I prepared numerous sheet pans full of bacon for breakfast banquets, and I could never resist eating my fill of crisp hot swine that just came out of the oven.

Bacon has become very popular in the past 10 years due to its many ways to enhance food with its smoky – salted flavor. Savory and sweet balanced correctly is an inviting combination.

This scallop recipe uses my Cajun Asian Sweet Chili BBQ Sauce during its final grilling process.

Cajun Asian will add that light sweetness for the perfect blend of bacon, and a mild seafood scent from the scallops.

When grilling, keep a close eye on the scallops. A gas grill can flare up faster than using coals due to the bacon grease dripping off of the plank. Do not burn the scallops or the bacon. Try not to drop any rolling scallops into the hot coals when flipping them over on the cedar plank.

Grilled Bacon Wrapped Scallops Makes about 2 servings

Ingredients: 6 - 7 scallops wrapped in bacon on a cedar plank ½ cup Cajun Asian Sweet Chili BBQ Sauce Method: Pre-heat the grill to 400 degrees. Place the plank with scallops above the flames. No extra salt or pepper is needed. Once the bacon begins to defrost on the grill, you will see the bacon begin to render its fat. This will tell you it’s about time to flip the scallops with tongs.

The bacon might stick on the plank so be careful when flipping so you do not tear the bacon or drop the scallops off of the plank.

Once the scallops are flipped, and the bacon slowly begins to crisp, start basting gently with the Cajun Asian Sweet Chili BBQ Sauce. Brush two coats of sauce on the first side, and allow the scallops to cook for about 5 minutes more, then flip again, and baste the other side the same way.

The final product is when the bacon is lightly crisp, and the scallops have a shiny glaze.

Serve Immediately!

SHIPPING AND PACKAGING INDUSTRY CONTINUES TO SHRINK WITH LATEST SLIDELL CLOSURE; HOWEVER, THE BEST REMAINS The surprising closure of the original The UPS Store in Slidell reflects not only the inroads made in this industry by the major carriers who now directly interface with previously locally handled customers but the threat to these same shipping giants by even larger entities like Amazon, where millions ship without ever turning to Big Brown or Purple and Orange. The reasons for the closure of the store at Brownswitch and Robert Roads will remain private. However, the facts are that at least TEN stores claiming to be shipping and mailing centers have closed in Slidell since Katrina. Four of those have been The UPS Stores, which has to be some sort of a record for percentages of shuttered operations in any market for UPS. A fifth store, a Mail Box Etc., never converted to The UPS Store mantra and became Mail Mart for ten years until their doors closed in 2015.

When my wife Hilda opened Postal Plus 20 years ago, it was the sixth store of this type in Slidell (the only one on the South side), facing two MBEs, two independents and a freight and hazmat specialist, all with storefronts. All of those are gone for various reasons. Gardening is always talked about as being a relaxing hobby that can bring calmness and peace of mind to those who indulge. Indeed it is, but who says that it must be an outdoor activity. Those looking for shelter from the heat of the summer can look to gardening indoors to bring nature inside, to add décor, and to purify the air. Growing plants indoors can be just as easy as growing outside. Some plants prove more challenging than others, but whatever the case, it is a great alternative way to enjoying gardening.

The first thing you want to do before choosing an indoor plant is to take notes on the amount of sunlight that the plant’s room receives. Rooms with very little direct light, like those with a north facing window will not receive much light, so you will need to pick plants accordingly. Plants such as, cast iron plant (Aspidistra elatior), peace lily (Spathiphyllum spp.), zz plant (Zamioculcas zamifolia), and Chinese evergreen (Aglaonema spp.) prefer little direct light.

For rooms with moderate light like, those rooms with an eastern facing window, consider plants such as corn plant (Dracaena fragrans), pothos vine (Epipremnum aureum), spider plant (Chlorophytum comosum), and snake plant (Sansevieria trifasciata). Rooms with very bright light can make excellent homes for tropical plants that need to be brought in during the winter time.

While my role in Postal Plus is even below minimal, due to my publisher obligations and my dislike for anything cardboard, fostered after working three summers in a corrugated container factory, it still brings me pride and pleasure to hear what virtually everyone says to me about Postal Plus. BACKYARD PUMPKINS

Have you ever thought about growing pumpkins in your home garden? Pumpkin growers are starting to plant their crops and so should you. One of the most important steps in growing pumpkins is to know when to plant in order to get a crop ready for use near the end of October. This will depend on the specific variety you choose to grow. Use the “days to maturity” information supplied on the seed packet to help you count backwards in the calendar. Let’s take for example the variety ‘Howden’. It says that it takes 115 days until maturity. That equates to 16 ½ weeks or slightly over 4 months. If we want pumpkins to finish around October then we need to count back 4 months all the way to mid-June. The “days to maturity” can be different depending on what variety you grow.

As for a location, look for an area that receives at least 8 hours of direct sunlight and does not hold water after a rain storm for more than a couple of hours. Work and cultivate the soil down to 6-8 inches while adding in some organic compost material. Pumpkin plants will need space for the vines to grow. This is yet another value piece of information that can be found on the reverse side of the seed packet. Smaller vining and bush like types should be spaced 2-3 feet apart and larger growing varieties should be spaced 3-4 feet apart. I would suggest starting with a smaller growing varieties recommended by the LSU AgCenter such as ‘Aspen’, ‘Spirit’, or ‘Frosty’. The industry standard is ‘Howden’ and it typically what you will be purchasing from a retail store.

USE OBSERVATION AND COMMON SENSE WHEN USING ARTIFICIAL BAITS. Notes from Forrest Green’s “Fish Whisperer” seminars in Lacombe every Thursday evening 5-6:30 Little tricks to change a lure’s appeal are important. For example, some lures you can alter to produce better results. One lure I had created a “wobble, wobble” sound when I retrieved it and I was catching more fish with that noise. The wobbling noise was created when the hole where part of the lure held another part had widened with use, creating the squeaking noise which attracted the fish and led to more strikes. So I took a punch and widened the hole on my newer lures and wham! That wobble sound was created and the fish began to hit it more often. Sometimes its the observation that a store bought lure does not look like what Nature provides. For example, biting off part of the head on a soft plastic grub and inserting on your hook looks more like the way the little bait fish appears to the predator fish. Result: more strikes, more action, more meat in the ice chest. Now that altered lure is not going to last your for the season and maybe not even for the rest of your morning on the water. But if it brings you even only one more fish, that fish could be the difference in the success of your day, whether its a local tournament, hitting your limit or just providing another delicious South Louisiana fish to cook up in your kitchen.

Observation spreads to other areas. There are sprays that will neutralize the smells produced by the fishermen - material off your sandwich, for example, or your hair spray on the surface of your lure or hook. Use the sprays or be extra careful in what you touch before you cast. Your Frito chomp just before casting out could have found itself on that VuDu lure or plastic topwater.

Those fish depend on smell much more than we do to survive. Fishing’s tough enough without stacking the deck against yourself. Use your powers of observation to determine where fish are biting. Don’t take someone else’s fishing honey hole…..figure out why that honey hole is producing and look for a similar structure close by. Ask about fishing depth, speed of retrieve and other non-threatening questions. You know fish like moving water and points, areas where physical conditions form a traffic jam, forcing six lanes of fish traffic into a bottleneck where smart predators wait and feast. Where there’s one predator, there’s others waiting to take his place. So if you eliminated a predator, it won’t be long before the next fish up moves into the neighborhood. You’re really not “fishing out” an area….other factors - water movement, temperature, etc have probably slowed the bite. Taking one fish out of an area of traffic is only one fish. Cast the same and retrieve the same way that brought you success the first time. But pay attention to the wind, the temperature and the water clarity and movement.

Lure quality doesn’t determine price but hook sharpness does. Get the sharpest hooks you can find and afford. Tie them on with good fishing knots and don’t use swivels. Fish don’t go for bling unless its part of the actual lure and that only works some of the time. Seeing a brass or shiny reflection behind a lure or bait could easily be a turnoff for the fish you’re trying to catch.

Your pole selection is less important but if you want the thrill of having an average fish fight like a big one, use lighter tackle, lighter line, freer reels and enough weight on the end to get your business end of the tackle to where it needs to go. Not near to where it needs to go. To where it needs to go. You may lose more line and lures in the long run but you certainly won’t lose the fish or the opportunity to catch more fish when you deliver your cast to the exact neighborhood you’re trying to reach. It’s like flycasting but with a lot more room for error and recovery from an inaccurate cast.

Thyme for Seasonal Pizza I saw a cute cartoon the other day. It was a picture of a row of culinary herbs in pots on a windowsill; a basil, thyme, rosemary, sage, chives, parsley, tarragon. The Basil pot says to the other herbs” Enjoy the sunshine while you can.... Eventually we will all end up in a recipe!” This is sage advice and a rosemary thought. Remeber to keep cutting your herbs to increase growth for a long season. Pizza is the perfect food for all your herbs, year round. Thyme five minutes and you can make pizza dough with just a medium bowl and a spatula. Divide the dough into 4 pieces. Knead each one about four folds and and roll into 4 balls. Cover with a cloth and let rest about twenty minutes and then you are ready to stretch dough balls into a pizza pie.

While they rest, go get some simple toppings and lots of fresh herbs. Adding fresh herbs after the pizza cooks is the finishing fragrance to the pie. There are many combinations of veggies, fruit, cheeses, meats & seafood that you can put on your pizza.

Get creative. Use up all your leftovers. Don’t forget pickled jalepenos, red onions and yellow banana peppers are crunchy and hot additions. Grill or roast veggies & fruit. I don’t like too many ingredients on a pizza. It can get soggy and looks messy. I use low- moisture mozzarella cheese, also. Just make more pizza to taste more flavors. I cook my pizza in a 450* oven. If it’s too hot to open your oven in the Summer, just grill your pizza. Get inspired. Go to your Farmer’s market and buy local produce. Cut pieces very thin to cook fast. Go easy on the cheese and sauces to let the beauty of the bounty look brilliant on your pizza palate. A fine drizzle of a good extra virgin olive oil and flakey salt will make everything glisten. Sprinkle herbs as the finishing touch to drive your senses crazy! Try some of my favorite combinations. But I will bet my tango tarragon you will come up with your own fennel fancy creations! Linda Franzo, Passionate Platter PIZZA DOUGH FOR 4 PIES! PIZZA COMBINATIONS: 4 cups( scoop & swoop) unbleached flour, plus more for dusting Pizza Marguarita~ a thin layer of fresh Tomato sauce, shredded Mozzarella, thinly sliced Tomatoes, torn Basil 1 1/2 cups warm water 110* luke warm Fig, Havarti, Proscuitto, Rosemary 1 packet active dry yeast or 1 Tablespoon yeast Pesto, Asparagus, Shrimp, Mozzarella, Ricotta 1 teaspoon sugar Zucchini ribbons,chopped Green onions, Alfreddo sauce, Chives 1 Tablespoon kosher salt Golden Youcon Gold potatoes, match stick Yellow squash, Goat cheese, Pecans, Tarragon & Basil 1 Tablespoon olive oil Pear or Apple, Havarti or Goat cheese, Pecans, Tarragon Oven 450* Roasted Butternut squash, saute’d Greens, Gouda, Sweet pickled jalepenos, Thyme Proof yeast~ add yeast and sugar to the water & stir.

Rouasted butternut squash, cooked Panchetta, Havarti, Sage In a medium bowl, Add flour, salt and oil.

Roasted sliced Beets, Goat cheese, Pickled Red Onions, Fennel fronds, Pistachio Add liquid to dry mix and stir to form a shaggy ball.

Kale, Swiss Chard or Spinach, saute’d with garlic, Mozzarella, Red chili flakes Flour hands and counter and knead dough by pressing dough flat, Mushroom, Mozzarella, Oregano, Red Pepper flakes fold in half, then quarter turn and continue a few times to get a smooth ball.

Grilled Eggplant, Mushrooms, Red onions, red roasted peppers, Cheese, chopped Parsley, Basil, Chives,Tarragon Divide into four sections and roll each piece into a ball. cover with a cloth or put Bacon crumbled,scrambled Eggs, Chives each piece in a plastic 8 ounce container, covered to rest 20-30 minutes.

BLT~ Bacon, Leaves(spinach), Tomato, Herb Mayo base Stretch out dough and cover with toppings. Bake to a golden edge & bubbly!
